Eggless Strawberry Shortcake Recipe | Eggless Sponge Cake
Eggless Strawberry Shortcake – Not forgetting to share an eggless version, after sharing the egg version couple weeks ago. Many have requested eggless cake recipe without yogurt (I understand it’s not convenient to get during lockdown period). I hope you’ll enjoy this recipe without yogurt. I always like the cake to be moist and soft, using with only milk is not satisfactory. Thus, I made homemade buttermilk by using milk, to make the cake another level, not only it is not dense but the lasting softness even after storing for a few days. I hope you’re inspired and give this cake a try. Enjoy!

Ingredients:
• Eggless Sponge Cake
I am using 6-inch pan
205g [¾ cup + 1½ tbsp] whole milk
1 tbsp white vinegar
215g [1¾ cup] cake flour
1½ tsp baking powder
½ tsp baking soda
130g [¾ cup + 2 tbsp] fine sugar
96g [¼ cup + 3 tbsp] vege oil
¼ tsp salt
1 tsp vanilla extract
• Strawberry Sauce
(you may refer to this video link
150g [¾ cup] strawberries, chopped
50g [¼ cup] sugar
1 tsp lemon juice
• Whipped Cream Frosting
480g [2 cups] whipping cream
30g [2 tbsp] fine sugar
sugar syrup
[1 tbsp sugar + 2 tbsp hot water]
You will need a total of 400g [2 cups] fresh strawberries for the sauce, fillings, and the deco.
Instructions:
• Eggless Sponge Cake
1. Preheat oven at 180°C/355°F.
2. In a glass, add milk and vinegar. Give it a quick mix and set aside. (this is homemade buttermilk)
3. Sift all the dry ingredients. Set aside.
4. In a large bowl, add sugar, oil, salt and vanilla extract. Mix until well combined.
5. Add in the milk mixture in 3 batches, alternate with the sifted dry ingredients. Mix until combined.
6. Add in the sifted dry ingredients in 3 batches, alternate with the milk mixture. Mix until combined, do not over mixed. This simple alternate adding technique will give you a great cake outcome (fluffy and light, not dense). If you’re using a whisk, switch to a spatula to scrape the bowl to ensure even mixing.
7. Transfer to a 6-inch pan, greased and lined with parchment paper. Tap the pan on the table few times to release trapped air bubbles.
8. Bake in preheated oven at 180°C/355°F for 30-35 min or until inserted skewer comes out clean.
9. Once out of the oven, immediately remove cake from the pan and let cool completely before slicing.
10. Slice the cake into 3 sheets, 1.5cm thick each sheet.
11. Trimming the sides or brown edges is optional.
• Strawberry Sauce (you may refer to this video link
1. Chopped the strawberries.
2. In a pot, add the berries, sugar and lemon juice.
3. Cook it over a low heat until it become a thick sauce.
4. Use a mash to mash the berries.
5. Once the sauce is thickened, remove the pot from the heat.
6. Strain the sauce. Let the sauce cool. Set aside until needed.
• Whipped Cream Frosting
1. In a mixing bowl, add the cream and sugar.
2. Mix until the cream is thickened.
3. Transfer about half the cream into another bowl. Use a weighing scale to be precise. Cover the cream and refrigerate until it is needed for use. This cream is for covering the cake and piping the deco.
4. Continue mixing the other half until stiff. This half is for the fillings.
5. Transfer this cream into a piping bag.
6. For the other half of the cream, use a whisk instead of using an electric mixer because the thickened cream will soon reach the smooth consistency within a minute or two. Use your whisk to pick up the cream, the cream will be smooth with a small tail falling back, that will be the consistency we want for covering the cake.
• Strawberry décor
1. Slice the fresh strawberries, about 2mm thick.
2. Use a round cutter of about 1.5cm diameter. Cut each slice for round circles.
• Assemble the Cake
1. Place a layer of sponge cake.
2. Brush with sugar syrup.
3. Spread half of the strawberry sauce on the layer. (just leave a tiny bit for drizzle later)
4. Pipe a layer of whipped cream.
5. Add the chopped strawberry. Cover with a thin layer of cream.
6. Repeat no. 1 to 5.
7. Cover a thin layer of the same frosting. Refrigerate for about 10-15 minutes.
8. Cover the cake with the smooth and soft frosting that was whisked.
9. Decorate around the sides with the cut strawberry circles.
10. Drizzle the top with some strawberry sauce.
11. Decorate some fresh whole and strawberry halves.
12. Chill the cake for at least 30 minutes before cutting it.

Japanese Strawberry Cake in cups and gram ( Makes 6 servings):
- 2 Egg Yolks
- 4 Egg Whites
- 120 gr Sugar ( 1/2 cup + 2 tbsp)
- 110 gr Milk (7 tbsp)
- 45 gr Butter (3 tbsp)
- 120 gr All Purpose Flour ( 3/4 cup + 1 tbsp)
- 1 tsp Baking Powder
- 1 tsp good Quality Vanilla
- 1 tsp Lemon Zest ( optional )
- Pinch of Salt
- Strawberries for the filling
I used 7 inch pans. Keep in mind the layers are meant to be thin, just like the ones you see in the video.
Whipped Cream:
- 600 gr COLD Heavy Cream ( 22 ounces)
- 1 1/2 tsp Vanilla
- 3 tbsp Sugar ( BUT You can add more sugar based on your personal preference)
- Pinch of Salt
Whip to medium peaks.
For a sturdier whipped cream you can add 200 gr Mascarpone.

Vegan Shortcakes / Biscuits Recipe
Ingredients
2 cups Bob's Red Mill Gluten Free biscuit mix (or Self Rising flour the gluten version)
½ teaspoon cinnamon
5 tablespoons coconut oil
1 cup Coconut milk (if canned, refrigerate to separate milk from cream)
1 teaspoon Apple cider vinegar
½ teaspoon vanilla extract
optional sugar: ½ tablespoon agave nectar
Directions
1. Preheat oven to 425F.
2. Whisk together gluten free flour mix and cinnamon.
3. Using fingers, or pastry blender work coconut oil through the dry ingredients until there are no chunks of coconut oil left.
4. In a separate bowl, whisk together coconut milk, apple cider vinegar, and vanilla extract. Pour the liquid ingredients into the dry and stir until mixed using a fork.
5. Roll (or pat) out the dough on a floured surface until about 1″ thick.
6. Cut out into ~3″ circles -- I just used a glass. It should make 8 shortcakes. Though in the video, I just make one large shortcake equivalent to about 4 small ones.
7. Bake on an ungreased cookie sheet for about 12 minutes or until golden brown.
8. Remove from the oven and cool on a cooling rack.
Vegan Strawberry Shortcake Recipe
Ingredients
Shortcakes, biscuits, or scones
¼ teaspoon nutmeg
1 pound fresh sweet strawberries
2 cans of Coconut Milk (refrigerated to separate cream from milk)
optional sugar: ¼ tablespoon agave nectar
Directions
1. Carefully open cans of coconut milk and skim off the white coconut cream. Set the coconut milk.
2. Whisk the coconut cream and nutmeg until it holds peaks and is fluffy. Place in fridge until ready to use.
3. After the shortcakes are cooled, cut in half.
4. At this point you can neatly slice the strawberries or mash them with a fork to extract more juice.
5. On the bottom half, spread a dollop of coconut cream. Pile on strawberries and another dollop of coconut cream. Place the top half on the cream to create a sandwich. Add more cream and strawberries on top.

This video is about how to make vegan strawberry shortcake with a vegan strawberry shortcake recipe. I thought it would be a great time to post a strawberry shortcake recipe video because straberrys are finally in season. I picked my own strawberries and I used So Delicious cool whip on top.
Strawberry shortcake recipe:
Ingredients:
1 cup flour
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1/4 tsp cardamom
1/3 cup oil
2/3 cup milk
1 Tbl lemon juice
1/2 tsp vanilla
Instructions:
. preheat oven to 350
. grease and flour 8x8 pan
. combine and mix dry ingredients
. add wet ingredients
. pour in pan and bake for 20-25 minutes

In this video, I made strawberry shortcake.
You think 'oh you're not BEGINNER', but no, I don't know how to icing like some kind of bakery.
So in this video, I'll show you how I icing the cake, for not good at icing like me
Scraper literally changes my life. It makes I'm really good at icing the cake!
Please, follow my recipe. I highly recommend this. One of my favorite recipes in the past 5 years!
= INGREDIENTS =
• Genoise (high 15cm/6inch round pan)
3 eggs
120g(1/2cup plus 4tsp) sugar
120g(3/4cup plus 2Tbsp) pastry flour
Pinch of salt
5g(1tsp) vanilla extract
50g(3 1/2Tbsp) melted unsalted butter
• Simple Syrup
30g(2Tbsp) sugar
30g(2Tbsp) water
• Whipped Cream
600ml(2 1/2cups) heavy cream
60g(4Tbsp) sugar
Strawberries
-Genoise

1. In a bowl, put eggs and sugar. Using a double boiler, whip about 8~10min until fluffy. When water is boiling, turn off the heat and whip.
2. Add the sieved pastry flour, salt, and vanilla extract and mix until well combined.
3. In melted unsalted butter, put a dollop of the batter, and mix. Put it back to the batter and mix again.
4. Transfer the batter into the round pan. Tap it to get out air pockets, and bake 170C / 340F for 30~40min.
5. After fully chilled, slice the cake into 3 layers.
-Simple syrup
1. In a microwavable bowl, put sugar and water. Microwave and mix until all sugar are melted. Chill it in a room temp until use, or refrigerate up to 7~10 days.
-Assembly
1. Place one layer on a cake stand. Put the simple syrup with a brush or spoon, etc. Spread the thin layer of whipped cream evenly. Place halved strawberries on top. Spread whipped cream evenly, and place another layer of cake. Repeat with remaining layers.
2. Put the whipped cream in a piping bag, about 1/3~1/2cup.
3. Spread remaining frosting all over the top and side with spatula or scraper.
4. Pipe the whipped cream for decoration, and put some strawberries on top.
5. Refrigerate at least 30 min before slicing the cake.

[BAKING INSTRUCTIONS]
???? Kadhai/Cooker(No whistle & gasket): Preheat at medium flame for 10 min. Bake at medium flame for 10 min & then at low flame for 35-40 min.
???? OTG/Convection: Preheat at 180°C for 10 min. Then bake for 25-30 min.
[INGREDIENTS]
200 gm Strawberries
1/2 Cup + 2 Tbsp Milk
4 Tbsp Oil (Using Disano Extra light Olive Oil)
1/2 Tsp Vanilla Essence or Extract
3/4 Cup Powdered Sugar
3 Tbsp Milk Powder
1 Cup All Purpose Flour (Maida)
1 Tsp Baking Powder
1/4 Tsp Soda

I headed to Tosha's house to learn this is a super easy strawberry shortcake recipe and not only is is gluten free and sugar free (with a vegan option) but it is SOOO good. So many people think you can't modify recipes without sacrificing the taste but if you now how to do it you can make some delicious recipes!
Now just because it's gluten free or even vegan does not make it healthy. I would say it s healthier option but don't go eating sweets everyday just cause it's gluten free! Just a little PSA.

Strawberry Cake | Cake From Scratch | Beat Batter Bake With Priyanka
Learn how to make Eggless Strawberry Cake, an easy to make cake recipe with Priyanka.
It's the season of strawberries and let us all, take full advantage of it! Wondering how? Well lets bake this simply divine, moist, tender strawberry cake from scratch. Its so tempting and delightful you'll enjoying baking it and relish with each bite off it. So make heavenly Strawberry Cake along with Chef Priyanka only on Rajshri Food.
Ingredients:
Batter
- 100gms of regular flour
- ¼ tsp of baking soda
- ½ of baking powder
- 100gms of condensed milk
- 60ml of melted butter
- 1tsp of vanilla paste
- 45ml of milk
Strawberry Jam
- 1 cup of chopped strawberries
- ¼ cup of powdered sugar
Frosting
- 100gms of unsalted butter
- 150gms of cream cheese
- 1 cup of icing sugar
Method:
Batter
- Add flour, baking soda and baking powder and mix them properly
- Add condensed milk, melted butter, vanilla paste and milk together and whisk them properly
- Add the dry ingredients into the wet ones, in two batches and whisk the batter properly
- Add the batter into 6x8 rectangular tin and bake it at 180 degree Celsius for 15 minutes
Strawberry
- Add the chopped strawberries in a sauce pan to which add powdered sugar and cook it until the sugar is melted, after that keep the jam aside until it cools down
- De mold the cake while it is hot, and keep it aside to cool
Cream Cheese Frosting
- Whisk together unsalted butter, cream cheese frosting and icing sugar
- Add the Strawberry jam to the frosting and mix well.
Assembling the Cake:
- Remove the top of the sponge
-Cut it in the center, take the frosting and spread it over the sponge and top it up with the other sponge
and apply the frosting all over
- Refrigerate it for half hour and the cake is ready to be served!

Happy Canada Day!! ????????❤️????????❤️???????? In this week's video, I'm celebrating with vegan Strawberry Shortcake Donuts! This easy homemade strawberry shortcake donut recipe is the perfect individual-sized summer dessert made and topped with yummy ripe fresh strawberries! These sweet and delicious vegan strawberry shortcake donuts make a wonderful Canada Day treat! ????

INGREDIENTS:
4-5 fresh strawberries
1/4 cup almond milk, unsweetened
1 tsp vinegar
1 tsp vanilla extract
2 tbs apple sauce, unsweetened
1 cup all-purpose flour
1/2 cup cane sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp Himalayan salt
1/4 cup grapeseed oil
ICING:
1 1/2 cups powdered sugar
2 tbs vegan butter (I use Earth Balance)
2 tsp almond milk, unsweetened
6-8 strawberries, chopped
Preheat oven to 350˚F. Grease your donut trays and set aside.
To a blender - add strawberries, almond milk, vinegar, vanilla extract and applesauce. Blend until smooth and set aside.
In a large mixing bowl - add flour, sugar, baking powder, baking soda and salt. Whisk until well combined. Add strawberry mixture and grapeseed oil. Fold everything gently!
Add donut mixture to a piping bag and pipe into your greased donut trays. Bake for 12 minutes.
Let the donuts cool completely before adding you icing and toppings. Enjoy! ????

今日は、フレッシュないちごをたっぷり使ったいちごのレアチーズケーキを作りました。
レアチーズにはサワークリームを入れて濃厚な口当たりに。
サワークリームの替わりに、無糖のヨーグルトやマスカルポーネチーズに置き換えても美味しいです。
I made a non-baked cheese cake with lots of fresh strawberries today.
I put sour cream to let the cheese taste richer.
It is also good if you make with yogurt or mascarpone instead of sour cream.
▷Ingredients(φ15cm round mold):
■Rare cheesecake
100g biscuit
30g melted butter
200g cream cheese
90g sour cream
30g sugar
30g milk
6g gelatin
80g strawberry puree
200ml heavy cream
15g sugar
■Strawberry puree
220g strawberries
30g sugar
10g lemon juice
■Strawberry jelly
150g strawberry puree
35g water
5g gelatin
■Lemon jelly
200g water
10g lemon juice
40g sugar
7g gelatin
strawberries
▷材料(15cm丸型1台分):
■いちごピュレ
苺 220g
砂糖 30g
レモン汁 10g
■レアチーズ
ビスケット 100g
溶かしバター 30g
クリームチーズ 200g
サワークリーム 90g
砂糖 30g
牛乳 30g
粉ゼラチン 6g
いちごピュレ 80g
生クリーム 200ml
砂糖 15g
■いちごゼリー
いちごピュレ 150g
水 35g
粉ゼラチン 5g
■レモンゼリー
水 200g
レモン汁 10g
砂糖 40g
粉ゼラチン 7g

▷作り方:
1.クッキー100gを細かく砕き、溶かしバター30gを加えて混ぜ、型に敷き詰める。
2.クリームチーズ200g、サワークリーム90gを柔らかく練って砂糖30gを加え更に混ぜる。
3.牛乳30gに粉ゼラチン6gを加えてふやかす。湯煎に当てて溶かし、②に加えて混ぜる。
4.いちごのピュレを作る。いちごは水で洗ってヘタを取り、角切りにして鍋に入れ、いちご220g、砂糖30g、レモン汁10gとともに火にかける。水分が出たら火からおろしてフードプロセッサーなどでピュレ状にする。
5.いちごのピュレ80gを③に加えて混ぜる。残りは冷ましておく。
6.生クリーム200mlに砂糖15gを加えてゆるく泡だて、⑤に加えて混ぜる。ビスケットを敷き詰めた型に流し入れ、冷凍庫で1時間冷やす。
7.いちごゼリーを作る。水35gに粉ゼラチン5gをふやかして湯煎で溶かし、いちごのピュレ150gに混ぜる。表面が固まったレアチーズに流し入れ、冷蔵庫で1時間冷やす。
8.レモンゼリーを作る。水100gに粉ゼラチン7gをふやかしておく。
9.鍋に水100g、砂糖40g、レモン汁10gを入れて沸騰直前まで温める。⑧のゼラチンを加えて溶かす。氷水に当てて冷やす。
10.いちごを洗って半分に切り、いちごゼリーの上に並べる。冷やしたレモンゼリーを半分くらいまで注ぎ、冷蔵庫で30分冷やす。
11.残りのレモンゼリーを注ぎ、更に冷蔵庫で2時間冷やし固めて完成。

よく頂く質問などについて。
Q.バターは無塩ですか?有塩ですか?
お菓子には基本的に無塩バターのみ使用しています。
無塩バターに塩を加えるレシピは有塩バターではだめなのか?と質問をいただくのですが、狙った塩加減にしたいため無塩バターを使っています。
※一部過去の動画は「バター」のみの記載になってしまっています。
今後は字幕に「無塩バター」と表記するよう心がけますが、
それ以前の字幕に「バター」としか書かれていなくても
「無塩バター」を使用しています。
Q.オーブンは予熱しますか?
焼成温度に合わせて予熱しています。
家庭用オーブンは庫内が小さく扉を開けた時に熱が逃げやすいため、
焼成温度+10〜20℃で予熱し、焼くものを入れてから焼成温度に合わせて焼いています。
こちらも今後は字幕で「〇〇℃に予熱したオーブンで□□分焼く」といった形で表記するように心がけます。
Q.倍量で作りたいのですが。
12cm丸型を15cm丸型に→1.5倍
12cm丸型を18cm丸型に→2.2倍
