INGREDIENTS:
-3 large Egg yolks, room temperature
-2 large whole Eggs, room temperature
-100g (1/2 cup) Sugar, using granulated
-354ml (1 1/2 cup) Heavy whipping cream
-Splash of brandy
-8-10 Maraschino cherries cut in to small pieces
-70g Semi-sweet chocolate, its better to use a chopped bar of chocolate as it melts quicker than chips
DECORATING:
-Few Maraschino cherries
-Chocolate syrup
You can add anything you like, nuts, other fruits etc.,
*Leave in the freezer to set, 4-6 hours or overnight.
PAN:
-Loaf pan lined with a plastic wrap

This easy no bake recipe makes the most scrumptious chocolate truffle! They come together in a snap, are beyond addictive and yes they’re brimming with brandy!

Do you ever just want a bite or two of something sweet and or chocolatey, to satisfy a craving? I don’t always have a slice of cake at the ready — shocking considering how much I bake — so I decided to whip up some truffles. Since the weather is cooling down a bit, I used a drop (1/4 cup) of brandy helps to warm things up. I finished them off with a quick roll in the toasted coconut, pecan, and cocoa powder. Soooo GOOD! Does anyone else remember those little chocolates in the shape of liquor bottles? Not sure if I should have had those as a kid, but I guess the 80’s were a different time Enjoy this adult version of that.
I do think these truffles would be a PERFECT Valentine's Day treat in case you're wondering what to make.
Yes you can totally omit the alchohol if desired! To add some interest feel free to mix in toasted nuts, some coffee or candied cherries to make this recipe your own.

These tasty morsels pack a walloping dose of bourbon and they helped me win my episode of Cupcake Wars! They're filled with a crunchy and gooey pecan filling and finished with a smooth-as-silk brown sugar buttercream. So delish!
Chocolate Bourbon Pecan Cupcakes
Cupcakes
2/3 cup bourbon
1/2 cup heavy cream (or milk)
2 ounces unsweetened chocolate, chopped
3 tablespoons cocoa powder
1 cup all-purpose flour
1/2 teaspoon baking soda
1/8 teaspoon kosher salt
8 tablespoons (1 stick) unsalted butter, softened
3/4 cup firmly packed light brown sugar
2 eggs
1 teaspoon vanilla extract
Preheat oven to 350 degrees F. Line muffin pans with baking cups.
In a small saucepan, bring the bourbon and cream to a boil. In the meantime, put chopped chocolate and cocoa powder in a bowl. Pour boiling liquid over chopped chocolate. Let it sit for 2 minutes; whisk until smooth.
Stir together the flour, baking soda, and salt; set aside.
In the bowl of an electric mixer, beat butter until light and creamy, about 1 minute. Add brown sugar and beat on medium speed until light and fluffy, about 2 minutes. Add eggs 1 at a time, scraping down the sides of the bowl after each. Add vanilla extract; beat until well combined. Reduce the mixer speed to low; alternately add the flour mixture and chocolate mixture in three additions, starting with the flour. Scrape the sides and bottom of the bowl in between additions. Beat until just combined.
Fill baking cups 2/3 full with cake batter. Bake 16-20 minutes, or until a toothpick inserted in centers of cupcakes comes out clean. Cool the cupcakes in the pan for 10 minutes. Transfer to a cooling rack to cool completely before filling and frosting.
Pecan Pie Filling
1/4 cup molasses
1/2 cup brown sugar
2 tablespoons bourbon (optional)
Pinch kosher salt
1/2 tablespoon pure vanilla extract
1 cup pecan pieces, toasted
In a small saucepan, stir together molasses, brown sugar, bourbon, and salt. Bring to a boil; continue boiling for 1 minute. Stir in vanilla extract and pecan pieces. Cool just slightly before filling cupcakes.
Brown Sugar Swiss Buttercream
4 egg whites
1 c. packed dark brown sugar
Pinch kosher salt
4 sticks unsalted butter, cut into 6 pieces each
2 tablespoons molasses
1 teaspoon pure vanilla extract
Put the egg whites and sugar in the bowl of a standing mixer and place over a double-boiler. Cook, whisking often, until the brown sugar is dissloved and the mixture reaches 160 degrees F. Transfer bowl to electric mixer and whip on medium-high speed until the mixture is glossy and tripled in volume, and the mixing bowl is just warm to the touch. Add the butter one chunk at a time, beating until each chunk is incorporated before adding the next. If the icing begins to look curdled, keep adding butter one chunk at a time and beating, and it will come back together. Add 2 tablespoons molasses and 1 teaspoon pure vanilla extract.
Makes about 12 cupcakes

INGREDIENTS
FOR THE CUPCAKES
1 box Devil's Food Cake mix
1/2 c. vegetable oil
3 large eggs
3/4 c. Baileys
FOR THE FROSTING
1 c. butter, softened
5 c. powdered sugar
1/2 c. Baileys
1/4 c. cocoa powder
1 tsp. pure vanilla extract
1/2 tsp. salt
Chocolate curls, for garnish
Chocolate sauce, for garnish
DIRECTIONS
1. Preheat oven to 350° and line a muffin tin with cupcake liners. In a large bowl combine cake mix with vegetable oil, eggs, and 3/4 cup Baileys. Bake according to package directions and let cool completely before frosting.
2. Meanwhile, make frosting: In a large bowl, combine butter, half of the powdered sugar, Baileys, cocoa powder, vanilla and salt. Using a hand mixer, beat until smooth. Add the rest of the powdered sugar and beat until fluffy.
3. Pipe onto cupcakes and garnish with chocolate curls and chocolate sauce. Serve.

Hi Bold Bakers! It's Gemma with a favorite over-the-top recipe that I hope you'll love--my decadent Trifle recipe. It's layers of homemade salted caramel sauce, fudge brownies, caramel mousse, whipped cream & a rich chocolate sauce. I like to make mine in a giant glass Trifle dish but you can make it as big and bold as you'd like. Enjoy! FUDGE BROWNIE, SALTED CARAMEL TRIFLE
INGREDIENTS
FUDGE BROWNIE
4 Tbsp cold and unsalted butter
10 oz Good quality chocolate (72% cocoa solids)
1 1/2 Cups Firmly packed brown sugar
4 Whole Eggs, beaten lightly
2 tsp vanilla extract
1 1/2 Cups A.p flour
1/2 tsp Kosher salt
SALTED CARAMEL SAUCE
1 cup granulated sugar
Enough water to cover the sugar
6 Tablespoons (90g) unsalted butter, cut up into 6 pieces*
1/2 cup heavy cream
1/2 teaspoon salt
SALTED CARAMEL MOUSSE
1 cup Salted Caramel Sauce (above recipe)
2 Tblsp granulated sugar
2 packs (1 lb) Cream cheese, at room temperature
3 cups heavy cream, cold
CHOCOLATE SAUCE
8 ounces semisweet or bittersweet chocolate (I like 72 percent cacao)
1 cup heavy cream
METHOD
First layer to make is the fudge Brownies:
1. Preheat the oven to 350oF. Grease and line a 13x9 inch baking pan
2. Combine the butter, chocolate and sugar in medium saucepan; stir over medium heat until smooth. Set aside and allow to cool down.
3. Stir in the eggs, vanilla, flour and salt
4. Pour Brownie mix into the prepared tin and bake for 25 minutes. Take care not to over bake or they can be dry, and not fudgy
5. When baked, set aside to go cold until needed
6. The brownies freeze really well if you don't eat them all at once
For the Salted Caramel Sauce:
1. Heat granulated sugar in a medium saucepan over medium heat, stirring constantly with a rubber spatula.
2. Sugar will form clumps and eventually melt into a thick brown, amber-colored liquid as you continue to stir. Be careful not to burn.
3. Once sugar is completely melted, immediately add the butter. Be careful in this step because the caramel will bubble rapidly when the butter is added.
4. Stir the butter into the caramel until it is completely melted, about 2-3 minutes.
5. Very slowly, drizzle in 1/2 cup of heavy cream. Since the heavy cream is colder than the caramel, the mixture will rapidly bubble and/or splatter when added.
6. Allow the mixture to boil for 1 minute. It will rise in the pan as it boils.
7. Remove from heat and stir in 1 teaspoon of salt. Allow to cool down before using.
SALTED CARAMEL MOUSSE
1. Transfer cream cheese into Kitchen mixer. Beat at medium-high speed until smooth and no lumps, about 4 minutes.
2. Add in the reserved salted caramel sauce and sugar. Continue to beat on high until fluffy, another 3 minutes., the more air the better your mousse will be.
3. Whip the cream until soft peaks form. Divide the cream in half, half for the mousse and other half for cream layers.
4. Fold ½ whipped cream into the cream cheese mixture. Place in fridge until needed. Taste a spoonful so you know what you have to look forward to.
5. Place the other bowl of cream in the fridge until assembly of the trifle.
CHOCOLATE SAUCE
1. Heat the cream
2. Pour over the chopped chocolate and whisk until smooth. Set aside.
ASSEMBLING THE TRIFLE!!!
1. In a large trifle dish (or a big glass bowl) crumble in your fudge brownie. Leave some bits chunky so you have nice chewy texture to match the soft mousse and cream.
2. Next, spoon over the Salted Caramel sauce to moisten the brownie.
3. Scoop in a large spoonful of the Salted Caramel Mousse and move it around to reach the edges
4. Drizzle the rich Chocolate Sauce over the Salted Caramel Mousse layer
5. Lastly spoon on the whipped cream layer all the way to the edges.
6. Repeat the layers again from the start: Crumbled Brownie, Caramel Sauce, Caramel Mousse, Chocolate sauce, Whipped Cream.
7. To finish I crumble some brownie crumbs and drizzle over the gorgeous sauces.
8. Dig deep down to enjoy all your lovely layers together. Mix it up and try your own twist on layers using your favorite flavors.

Apples ( I used honey crisp)
For the poaching liquid
3 cups wine or one bottle ( I used moscato)
4 cups water
1 1/2 cups sugar
1 tablespoon cinnamon
1 tablespoon vanilla
1 box roll pie dough
for the caramel
1 stick salted butter
1 cup. heavy cream
1 cup brown sugar
1 tbs vanilla extract
1 tsp salt
oil for frying
ice cream for topping
pecans if you want !
* Notes... please eat this immediately.. let the deep fried apples cool for only two minutes and serve ..
* do not over poach the apples ..they should be tender and soft to touch, but not extremely mushy.. *

INGREDIENTS
4 tbsp. melted butter
2 tbsp. brown sugar
1 tsp. cinnamon, plus more for dusting
4 baking apples, tops sliced, insides scooped
2 blocks cream cheese, softened
1/2 c. powdered sugar
1/2 tsp. pure vanilla extract
Crushed graham crackers, for garnish
DIRECTIONS
1. Preheat oven to 400°. In a small bowl, mix together melted butter, brown sugar, and cinnamon.
2. Place apples in a baking dish and brush butter mixture onto apples. Bake 20 minutes.
3. Meanwhile, in a large bowl, beat cream cheese, sugar, and vanilla until creamy. Spoon mixture into stuffed apples and bake 10 minutes more.
4. Garnish with cinnamon and crushed graham crackers and serve.

DIRECTIONS
1. Dip the rim of each shot glass in chocolate sauce, then roll in crushed candy canes.
2. In a blender, blend ice cream, Oreos, milk and vodka until smooth.
3. Pour boozy milkshake into shot glasses. Garnish each glass with whipped cream and am Oreo wedge (one quarter of a whole cookie).

Who doesn’t love Brownies? This Recipe is not only healthy but a happy mouth-pleasing dessert
✅ High protein, gluten-free, grain-free and refined sugar-free, they're bound to be a hit with whoever you share them with.
????Ingredients: Serves 6
-1 tbsp Mother Nature Organic Moringa Powder ????????
-1 cup Raw Cacao Powder ????????
-1 1/2 cups coconut chips (very fine).
-1/2 cups pea protein or pea & hemp mix.
-1 tbsp vanilla powder
-1/3 cup maple syrup
-1 tbsp mesquite powder
-1/2 tsp Himalayan salt
????Directions:
✔️Add all the dry ingredients in a food processor and pulse to combine.
✔️The dough will have a brownie batter texture, not too wet or too dry.
✔️Pour the maple syrup in and process until combined.
✔️Line an 8-inch square pan with cling film. Transfer the brownie dough to the pan and press evenly.
✔️Freeze for an hour. When ready, take out and cut into squares. Enjoy! ????
