Salted Caramel-Chocolate Pecan Pie | Southern Living
Recipe:
A cross between a fudge pie and pecan pie, this is all the more stunning if you arrange the pecans from the center in a spiral pattern. It's the perfect pie for Thanksgiving dinner or a special celebration.
Ingredients:
Chocolate Filling
1 1/2 cups sugar
3/4 cup butter, melted
1/3 cup all-purpose flour
1/3 cup 100% cacao unsweetened cocoa
1 tablespoon light corn syrup
1 teaspoon vanilla extract
3 large eggs
1 cup toasted chopped pecans
1 (9-inch) unbaked deep-dish piecrust shell
Salted Caramel Topping
3/4 cup sugar
1 tablespoon fresh lemon juice
1/3 cup heavy cream
4 tablespoons butter
1/4 teaspoon table salt
2 cups toasted pecan halves
1/2 teaspoon sea salt

INGREDIENTS:
180 g Butter
85 g Caster Sugar
200 g Plain Flour
15 g Cocoa
220 g Pecans, Halved and roughly chopped
150 g Dark Chocolate finely chopped
90 g Butter
220 g Soft light Brown Sugar
1 tsp Sea Salt
400 g Condensed Milk
160 ml Double Cream
STEP 1: GREASE TIN AND MIX INGREDIENTS
Grease and line a 30cm x 20cm tray with non-stick parchment that reaches up the sides. Beat together the butter and sugar until light and creamy. Add the flour and cocoa and beat again. Press into the prepared tin using clingfilm on the top and a tin to get an even base, then chill for 1 hour.
STEP 2: PECANS
Whilst the shortbread is chilling, toast the pecans in a frying pan over a low heat until lightly browned. Pour onto a plate to cool.
STEP 3: CARAMEL MICROWAVE METHOD
To make the caramel, mix the butter, sugar and salt in a microwave proof bowl and microwave on high until the butter has melted – about 30 seconds to 1 minute. Add the condensed milk, stir and microwave for a further 3 minutes. Stop half way through to stir well. Add the double cream, stir well and microwave for 30 seconds. Leave to cool.
STEP 4: CARAMEL HOB METHOD
Melt the butter in a saucepan over a low heat. Add the salt and sugar and stir. Add the condensed milk, stir well and turn the heat up until the mixture bubbles. Keep stirring on a medium heat like this for 3 minutes. Add the cream, stir well and return to the heat for 1 minute, stirring all the time.
STEP 5: COMBINE INGREDIENTS
Scatter the pecans over the shortbread along with the chopped chocolate, then pour over about 600g of the caramel sauce – enough to cover the nuts completely and bake in a preheated oven at 180C/gas mark 4 for 25 - 30 minutes. The top of the caramel will bubble up and crisp, the caramel underneath will remain soft. (Keep the remaining caramel in a jar in the fridge and pour over ice cream or crumble).
STEP 6: FINISH AND SERVE
Allow to cool and then chill the tray bake in the fridge for 4 hours before cutting.

The first thing I do on Thanksgiving morning is to wake up, pour myself a cup of coffee, and bake a pie. I do this first because pie is my favorite thing to make (and eat!), but also because it warms up my oven and keeps it available for the turkey, side dishes, and all the other delicious things that will be going in and out of the oven all day.
Pecan pie is a beloved Southern dessert and a Thanksgiving fave (no offense, pumpkin!), but we found a way to make it even better -- add chocolate, of course. To make this pie, you'll need semisweet chocolate, eggs, corn syrup, sugar, vanilla extract, salt, pecans, and the pie crust we made together yesterday: . The result is ooey-gooey and utterly irresistible. Why not start with dessert?

Chocolate Pecan Pie with Bourbon | Food & Wine
For this pie, coarsely chopping the pecans makes the pie easy to slice, although David Lebovitz leaves some whole for visual effect.
Ingredients
CRUST
1 1/4 cups all-purpose flour
2 teaspoons sugar
1/4 teaspoon salt
1 stick (4 ounces) cold unsalted butter, cut into pieces
1/4 cup ice water
FILLING
2 cups (about 7 ounces) pecans
3 large eggs
3/4 cup dark brown sugar
2/3 cup light corn syrup
1 teaspoon pure vanilla extract
2 tablespoons unsalted butter, melted
3 tablespoons bourbon
1/2 teaspoon salt
3/4 cup semisweet or bittersweet chocolate chips

BETH'S CHOCOLATE PECAN TART RECIPE
Serves 8
INGREDIENTS:
For Pie Crust:
1 1/3 cups (160 g) flour
½ cup (120 g) of butter
2 tbsp (25 g) sugar
½ tsp (2.5 ml) salt
1 egg yolk
¼ cup (60 ml) ice water
For Filling:
4 oz (113 g) bittersweet chocolate
½ cup (120 g) of butter
¾ cup (150 g) of sugar
1 tsp (5 ml) vanilla extract
1 egg
3 egg yolks
¼ cup (30 g) of flour
½ tsp (2.5 ml) salt
1 ¼ cup (190 g) whole pecans
METHOD:
Preheat oven to 350F (176C).
To make crust place flour, sugar and salt in a bowl, whisk together. Then add chilled butter that is cut into small cubes. Work butter into flour with your hands until a coarse meal develops.
In a small bowl mix together the egg yolk and ¼ cup (60 ml) of ice water. Add egg mixture to flour mixture and stir with a fork until a dough forms. Then go in with floured hands and smush the dough around the bowl making sure the butter is incorporated and dough comes together. Add a little more water, a tbsp at a time if dough appears too dry.
Roll dough into a ball, then flatten into a disk.
Roll out dough on floured surface into a large circle 1/8 “ (3mm) thick. Fit into 9 (23 cm) tart pan with a removable bottom. Fold dough back over the sides and crimp to create a double crust around the edges.
Trim dough with a knife so edges are flush with the tart pan. Pop tin in the freezer while you prepare the filling.
Melt butter and chocolate in the microwave for 1 minute. Then add sugar, vanilla, egg and yolks. Stir to combine.
Then add flour and salt, stir to combine.
Remove tart pan from the freezer, pour filling into pan. And top with 3 rows of whole pecans in concentric circles. Place 2-4 pecans in the center decoratively however they fit.
Bake 20 mins. Then 5 mins more to turn pastry golden brown, but covered with foil so pecans don’t burn.
Serve with homemade whipped cream! (spiked with 2 tbsp (30 ml) of bourbon!)
HOMEMADE WHIPPED CREAM:
Ingredients:
2 cups (480 ml) heavy cream
2 tbsp (13 g) powdered sugar
1 tsp (5 ml) vanilla
2 tbsp (30 ml) bourbon
METHOD:
Beat cream on high until soft peaks form. Can be made a day ahead and stored in the fridge. Enjoy!

Ingredients
Makes about 10 servings
Pastry Dough
1 1/4 cups (160g) all-purpose flour
1 tsp (5g) sugar
1/4 tsp (1g) salt
1/2 cup (113g) unsalted butter, chilled, cut into small (1/2-inch) cubes
1 egg yolk
2 tbsp (30ml) ice water
Pecan Filling
2 eggs, room temperature
1 cup (100g) dark brown sugar
1/4 cup (50g) white sugar
1/2 tsp (2g) salt
1/2 cup (113g) unsalted butter, melted
1 tbsp (15ml) milk
1 tsp (5g) vanilla extract
1 tbsp (10g) all-purpose flour
2 cups (200g) pecans, divided
4 oz (120g) semisweet chocolate chips or chunks
1. Prepare the crust. In a medium bowl whisk flour with sugar and salt. Incorporate butter using a pastry blender, a fork or a pastry processor, until crumbs are formed. Add egg yolk and water and stir until incorporated.
2. Wrap the dough in plastic wrap, shape into a disk and refrigerate for at least 1 hour.
3. Slightly grease a 8-9 inch (20-23 cm) pie pan.
4. On a lightly floured surface roll the dough until it's about 12 in (30cm) in diameter.
5. Line the pan with the rolled dough and press the edges. Trim the excess dough and refrigerate for 30 minutes.
6. Preheat oven to 350F (180C).
7. Prick the crust with a fork. Line the crust with parchment paper and fill with pie weights or beans. Bake for 20 minutes.
8. Remove the parchment paper and weights and bake for 10 minutes more.
9. Let it cool slightly on a cooling rack.
10. Prepare the filling. In a large bowl, mix eggs with both sugars and salt until smooth and well combined. Add melted butter, milk and vanilla extract. In the end incorporate flour. Fold in 1 cup pecans and chocolate chips.
11. Slowly pour the filling into the prepared crust. Decorate the top with pecan halves.
12. Cover the pan with aluminum foil and bake the pie for 45 minutes. Remove the aluminum foil and continue baking for 10-15 minutes, until the center jiggles slightly.
13. Cool completely before serving. Serve at room temperature with fresh whipped cream or

Bourbon Chocolate Pecan Pie | Best Thanksgiving Dessert
Recipe Listed Below
1 cup sugar
1 1⁄2 cups corn syrup (I use 1/2 dark and 1/2 light)
4 eggs
1⁄4 cup butter
1 1⁄2 teaspoons vanilla
1 1⁄2 cups pecans, coarsely broken
1 unbaked deep dish pie shell
Half a Cup or Half a handful chocolate chips
1-2 tablespoons of Bourbon
How To
In saucepan boil sugar and corn syrup together for 2 to 3 minutes; set aside to cool slightly.
In large bowl beat eggs lightly and very slowly pour the syrup mixture into the eggs, stirring constantly.
Stir in butter, vanilla, bourbon, chocolate chips and pecans and pour into crust.
Bake in a 350°F oven for about 45 to 60 minutes or until set.

Thanksgiving - Chocolate Pecan Pie
Jack Scalfani is joined with special guest Joe Chavez as they make a classic Thanksgiving dessert even better.
Here is the recipe:
Chocolate Pecan Pie
1 pkg of 8 squares of Baker's semi-sweet chocolate
1 refrigerated pie crust
2 tbsp butter or margarine
3 eggs lightly beaten
1/4 cup firmly packed light brown sugar
1 cup of KARO light or dark corn syrup
1 tsp. vanilla
1.5 cups pecan halves or walnut halves
heat oven to 350 degrees F. Coarsely chop 4 squares of the chocolate and set aside. Line a 9 inch pie plate with your pie crust or use a premade.
Microwave remaining 4 squares of chocolate and butter until butter is melted. stir until chocolate is completely smooth. Brush pie crust with small amount of beaten eggs. Stir sugar, corn syrup, eggs and vanilla into chocolate mixture until blended. Stir in pecans and chopped chocolate pieces. Pour into pie crust.
Bake 55 minutes or until knife inserted 2 inches from edge comes out clean. Cool for a minimum of 2 hours. Serves 8 people.

Chocolate Pecan Pie Recipe: How to make chocolate pecan pie
This gorgeous chocolate pecan pie will be the perfect dessert to finish off any dinner with a flair. Lauren Chattman from Pillsbury shows how to make this extra special chocolate pecan pie.
Recipe: How to make chocolate pecan pie
1. Heat oven to 325°F. Place pie crust in 9-inch pie pan as directed on package for one-crust filled pie.
2. Tuck the edge of the crust underneath all the way around. Use a fork to make a herringbone design in the crust. Do this by pressing the fork into the crust at adjacent diagonals all the way around.
3. In a large bowl, combine corn syrup, sugar, butter, vanilla and eggs; beat well. Reserve 2 tablespoons chocolate chips for topping. Stir in remaining chocolate chips and 1 1/2 cups pecans. Spread evenly in crust-lined pan.
4. Bake at 325°F. for 55 to 60 minutes or until deep golden brown and filling is set. Cool 1 hour or until completely cooled.
5. Line cookie sheet with waxed paper. In small microwave-safe bowl, melt reserved 2 tablespoons chocolate chips in microwave oven on MEDIUM for 1 to 1 1/2 minutes or until melted; stir.
6. Dip each of 10 pecan halves in chocolate. Place on waxed paper-lined cookie sheet. Refrigerate 15 to 20 minutes or until chocolate is set.
7. Garnish pie with whipped cream and chocolate-dipped pecans.

INGREDIENTS
1 pie crust from scratch or from the refrigerated section
2 tablespoons unsalted butter
4 ounces unsweetened baking chocolate, chopped
1 cup light Karo® Syrup
3 large eggs
1 cup sugar
1 teaspoon vanilla
1/4 teaspoon salt
1 1/2 cups pecan halves, approximately
INSTRUCTIONS
1. Preheat oven to 425°F.
2. Place pie crust in a 9-inch pie plate. Crimp edges as desired, chill until ready to fill.
3. Place butter and baking chocolate in a large microwave safe bowl. 4. Heat in 30 second increments, stirring between each, until melted and smooth (about 1 1/2 -2 minutes, depending on your microwave).
5. Whisk in Karo®, eggs, sugar, vanilla and salt. Pour into prepared pie crust.
6. Top the pie with pecan halves. Make sure they’re in a single layer.
7. I suggest using a pie crust shield so that the edges of the pie crust don’t get too dark. If you don’t have a pie crust shield, you can place strips of foil around the edges of the crust.
8. Bake at 425° for 10 minutes, then lower the oven temperature to 350°F and bake for another 40-50 minutes, or until the pie is puffed and cracked around the edges. The center will be a bit jiggly (it’ll firm as it cools) and, if you have an instant read thermometer, the pie is done when it reaches 200°F internal temperature.
9. Cool completely before slicing. I recommend chilling the pie for storing, but the pie is best eaten at room temperature or warmed.
