Twist Bread (with Pistachio & Fig)
We love bread. From bagels over sourdough to pumpernickel, we love all the bread out there and, in our opinion, bread is the ultimate snack and will always be.
You can find a written recipe here:
In todays video we show you how to make our festive version of a twist bread. We are baking a sugar free yeast dough, flavored with tangerine and fill it with a pistachio and sun-dried fig mixture.
It looks so pretty and tastes really good. You can eat it on its own or make it sweet or savory by combining it in different ways. We really like it with some nut butter or jam on top, but our winner is the combination with our homemade baked almond feta. So, if you want to try out something different as a sandwich base go ahead and bake our sugar free twist bread.
575g spelt flour (type 630)
7g active dry yeast
½ tsp cinnamon
200ml tangerine juice, lukewarm
150ml water, lukewarm
3tbs canola oil
zest of one tangerine
40g pistachios (without shell)
150g sun-dried figs

Kofta Wrap with Pistachio Hummus and Feta الكُفْتَة مع الحمص بطحينة والفستق الحلبي وجبنة الفيتا
That’s a wrap; kofta Wrap with Pistachio Hummus and Feta
الكُفْتَة مع الحمص بطحينة والفستق الحلبي وجبنة الفيتا بخبز التورتيلا
Warm tortilla bread stuffed with freshly grilled Kofta, creamy Pistachio Hummus, and tangy feta cheese.
If you are feeling bored of the same old kofta sandwiches or in a lunchtime rut, this combination will take your lunch or dinner to the next level.
The kofta is so fragrant with the mixture of fresh ground meat, using a combination of veal and lamb, onion, parsley, and green hot pepper along with simple spices - cumin, cinnamon and freshly ground pepper. Kofta is perfect for midweek meals and fantastic for summer grilling even with store-bought kofta!
Your heavy and rich flavor of meat requires a sweet creamy spreading sauce. Here comes the Pistachio Hummus; classic garlicky Hummus is irresistible and can be eaten anywhere and everywhere, however, I like the extra nutty flavor of pistachio and add an amazing twist to this dish.
And let’s not forget that I have added Feta Cheese also to this dish for a tangy, rich and slightly salty flavor. It is a delicate balance of rich tanginess that is like no other, and even though it is only a few crumbles, please do not skip it!!
Prep Time: 15-20 minutes
Cooking Time: 25 – 35 minutes
750 grams Kofta, store-bought
4 tablespoons of classic Garlic Hummus, store-bought
2 teaspoons of coarsely ground Pistachio Nuts
1 medium Tomato, cut in wedges
2 Tablespoons of Feta Cheese, crumbled
6-8 small Tortilla Bread or Pita Bread
Fresh Mint leaves, to garnish
Sriracha sauce or Paprika Powder, to garnish

Persian Pistachio Brittle
Persian Almond and Pistachio Brittle
Sweet and salty brittle gets a fun twist here with delicate Persian flavors like rose water, saffron and it’s loaded with almonds and pistachios.
CLICK HERE TO GET THE PRINTABLE RECIPE: ????️
1/8 tsp finely ground saffron threads
1 tbsp rose water
3/4 cup sugar
1/2 cup light corn syrup
3 tbsp honey
1/3 cup slivered almonds
2 tbsp unsalted butter
1 tsp kosher salt
1 tsp baking soda
1/4 cup chopped pistachios
1 tbsp coarsely ground dried rose petals
1/2 teaspoon flaky sea salt
Line a rimmed baking sheet with parchment paper and lightly coat with nonstick spray or line baking sheet with silicon mat.
Dissolve saffron in rose water in a small bowl. Set aside.
Bring sugar, corn syrup, honey, and 2 tablespoons of water to a boil in a medium saucepan fitted with candy thermometer over medium heat. Stir to mix and dissolve sugar. Cook, swirling occasionally, until thermometer registers 290°F, about 5 minutes.
Mix in almonds, butter, and kosher salt and cook, stirring often, until almonds are golden, butter is absorbed, and thermometer registers 300°F, about 2 minutes. Vigorously mix in baking soda, then saffron rose water mixture. Caramel will bubble at first but then look smooth and creamy.
Immediately pour onto prepared baking sheet and spread out as thin as possible with oiled spatula or by tilting baking sheet, work quickly. Sprinkle pistachios, rose petals, and sea salt over brittle. Let cool, then break into bite-size pieces.

Recipe | Lite Pistachio Mousse | ShaneeJudee
This is one of my favorite light desserts! After dinner, I often want something sweet, but I don't want the fat and sugar that usually go along with that!
This mousse satisfies all of the above! You still get the taste and consistency of a satisfying dessert without the guilt! I once made this for company and they couldn't believe it was light!
This recipe uses pistachio flavored pudding mix, but you can switch it up and use any flavor you'd like. (Chocolate is always a winner!)

CHEESE TWISTS RECIPE
2 x puff pastry sheets
1 x jar Barilla basil pesto
6 x slices provolone cheese
6-8 slices finely sliced prosciutto (you can also use ham or salami)
1 x egg
Handful pistachio nuts (or any nuts you have in the cupboard)
Flat baking tray
1. To make the Cheese twists, place one sheet of baking paper on top of the chopping board.
2. Place a sheet of puff pastry on top of the baking paper and drizzle extra virgin olive oil (EVOO) on top. Then, spread it all over the sheet using a pastry brush, covering each side.
3. Lather one side of the second sheet of pastry with EVOO too and put it to the side.
4. Get a generous scoop of Barilla basil pesto and put it in the middle of the pastry sheet. Then use the back of the spoon to lather the pesto all over it.
VINCENZO’S PLATE TIP: Cheese twists are best served with a cheese that stretches once melted, my favourite is Provolone Dolce.
5. Next, lay the slices of cheese side by side, covering the whole sheet and using between 6-8 slices.
6. Place thin slices of prosciutto on top of the cheese before sealing it with the second sheet of puff pastry (making sure you have the side with oil facing down.
7. Now cover the pastry with a sheet of baking paper, and using the rolling pin, press down gently (rolling back and forth) so that it all seals together really well.
VINCENZO’S PLATE TIP: If it’s a hot day, or you feel the pastry getting sticky, put it in the freezer for a couple of minutes as it’s easier to work with if it’s not too soft.
8. Remove the baking paper and place it on to your baking tray.
9. Use the pizza slicer (or a sharp knife) to cut the cheesy twist strips - making them approx. 3cm in width.
10. Place a strip on the baking tray and twist it by starting at the centre, and working down the ends next. Gently press any ingredients which may have popped out, back in.
11. Repeat this with each strip, and leave a gap between cheese twist as they’ll grow when cooking.
12. Put the tray of cheese twists in the oven at 200 degrees Celsius for 30 minutes, turning them once they have cooked for 15 minutes to keep each side nice and crispy!.
How to serve:
Enjoy with a Prosecco before you start a meal or as part of an antipasto/grazing board. They are best eaten straight out of the oven when they’re still hot and crispy, but can also be enjoyed cold.

Brigadeiro (Brazilian Truffles):
My favorite kitchen equipment:
MAKES 2 sausages
7oz (200g) cookies/biscuits/biscotti
9oz (250g) dark chocolate
6 tablespoons (90g) butter, unsalted
1 teaspoon vanilla extract
2 tablespoons milk
3.5oz (100g) pistachios, toasted
2-3 tablespoons liquor/coffee *optional
Powdered sugar for coating
1. Crush the biscuits
2. Melt chocolate and butter over double boiler, until completely smooth. Remove from heat and add alcohol or coffee (optional), milk, vanilla extract, crushed cookies, pistachios, salt and mix until combined.
3. Spread half the mixture onto plastic wrap and shape it into a log. Roll the plastic wrap and twist the ends to seal. Roll back and forth few times to make the log evenly round. Repeat with remaining mixture.
4. Refrigerate for at least 2-3 hours until firm.
5. Remove the plastic wrap, dust with powdered sugar from all sides (or roll in powdered sugar). Brush off excess sugar.
6. To give it an authentic salami look Wrap it up in kitchen twine.
• Instead of pistachios you can use almond/ pecans/hazelnut or any other nuts that you like.
• Keep refrigerated.
• For extra flavor you can add any liquor that you like or brewed coffee. But it is optional.
• If you are not using coffee or liquor, use the same amount of milk instead.
