Peanut Butter Caramel Cookie Bars
A delightful combination but very, very sweet, so cut into small pieces.
Found this in a Pillsbury 45th Bake Off cooking magazine.
1 package refrigerated cookie dough (I used chocolate chip, but the original recipe called for sugar cookie dough) If you can't find this in your country, just use a regular cookie dough recipe from scratch.
1/2 cup butter
1 can (14oz) sweetened condensed milk
1 cup white granulated sugar
1 cup packed brown sugar
1 3/4 cups graham wafer cookie crumbs (if you can't find these, use any mild not-too sweet plain cookie or biscuit)
11 oz of chocolate chips (about 2 cups)
1/2 cup peanut butter
Additional chopped peanuts for topping if desired.
Grease 9x13 pan with cooking spray and spread the cookie dough in the bottom of it.
Bake at 350F for 15-25 minutes. This time will vary depending on your cookie dough, bake until set or golden brown.
Remove from oven and cool on a rack for 15-20 minutes.
In a heavy saucepan melt the butter over medium heat, stir in sweetened condensed milk, brown sugar, white sugar. Add graham cracker crumbs, mix well and bring to a boil, stirring constantly (This will burn very quickly, if you notice it is starting to stick to the bottom and you are scraping up brown bits, turn down the heat and don't stop stirring)
Once you see bubbles starting to come up through the mixture (boil) turn the heat down to low and cook 5 minutes.
Pour the sugar/milk mixture over top of the cookie layer and spread out evenly.
Melt the chocolate chips in a container in the microwave (1 minute approx. stirring halfway). Once the chocolate is melted add the peanut butter and stir together.
Spread the chocolate/peanut butter mixture on top of the caramel layer.
Place in the refrigerator until the chocolate layer is set.
Cut into bars (6 rows by 6 rows)
Store the bars covered in the refrigerator.
Using Your Spritz Cookie Press
Can you imagine a holiday without spritz cookies? Neither can we. The decorating possibilities are endless by using festive disk designs to press cookies, then topping with your choice of colorful sugars, sprinkles and more. Use your Cookie Press for fast and easy cookie gifts.
Making Chocolate Cake, 1950s - Film 98423
Marguerite Patten makes a cake - It is so easy even a man could make it.
Any volunteers? (Off screen - Go on Bert, have a bash!) Bert ( who is actually Glynn Houston, brother of Donald) walks onto set already wearing apron. Bert is a real expert because he has fried an egg or two and made tea for the missus in the morning. Marguerite puts ingredients in bowl - margarine, sugar and Cadbury's Bournville Cocoa. Bert bashes it around in a bowl and puts a few drops of vanilla essence in bowl. Marguerite fetches saucepan from hob and puts syrup in cake. Crushed biscuits placed in bowl. Bert stirs ingredients. Put mixture into loose-bottomed greased tin. Bert puts mixture into tin and presses mixture down with knife. Leave to set for three hours. Bert thinks was dead easy. Cadbury's uncooked cake. She gives Bert bowls to clear away and he walks off. (Off set Bert drops the pans and Marguerite winces). She starts to make the icing. Marguerite breaks Cadbury's chocolate into basin with water. Stands over basin of hot water. She walks to the hob and produces a basin she prepared earlier. This is emptied onto the cake and spread around. She produces cake set for three hours and takes it out of tin. She shows a decorated cake.
