Japanese Pancakes in grams and cups:
- 125 gr All Purpose Flour (3/4 cup + 1 tbsp)
- 1/4 tsp Baking Soda
- 1/2 tsp Baking Powder
- Pinch of Salt
- 1 Egg Yolk + 3 Egg Whites
- 25 gr melted Butter ( 2 tbsp)
- 150 gr Buttermilk (1/2 cup + 4 tbsp)
- 30 gr Sugar ( 2 1/2 tbsp) to add to the egg whites)
- Zest of 1/4 of a Lemon ( if you're not adding lemon zest add 1 tsp vanilla) DO NOT skip the flavorings.
- 1/4 tsp Cream of Tartar or 1/2 tsp Lemon Juice
Cook these on a low flame.

SOUR CREAM SOFTIES RECIPE:
-Measure 3 cups of flour, 1/2 tsp. baking powder, 1 tsp. salt, and 1/2 tsp. baking soda into small bowl
-Cream 1/2 cup butter and 1+1/2 cups sugar into large bowl
-Beat in 2 eggs and 1 tsp. vanilla to creamed mixture
-Alternate adding flour mixture and 8 oz. of sour cream to creamed mixture
-Drop onto greased cookie sheet and add sprinkles
-Bake at 350 for 12 minutes!

- 500g Heavy Cream ( 2 cups + 2 tbsp)
- 350g (12.5 ounces) Sweetened Condensed Milk OR 150g Fine Sugar (3/4 cup)
- 1 1/2 tsp Vanilla
- 1/8 tsp Salt
PLEASE READ: DO NOT cut the condensed milk/sugar! For best results use cream and condensed milk. You can substitute the cream for whole milk but as mentioned in the video, these won't have a creamsicle texture and flavor. If you're using the no mold method, line the bottom of your tray with parchment paper and cover well before putting the tray in the freezer. Enjoy!

1️⃣ 00:00:44 - Preheat oven to 450 degrees Fahrenheit. Lightly spray a muffin pan with nonstick spray or line with paper cups.
2️⃣ 00:00:53 - In a medium sized mixing bowl soak bran cereal and buttermilk for about 10 minutes until it gets all soggy.
3️⃣ 00:01:30 - Add in melted coconut oil, egg, brown sugar, vanilla extract, flour, baking soda, baking powder and salt. Stir thoroughly. This mixture will be very thick.
4️⃣ 00:02:34 - Divide the batter equally among the 12 muffin cups, filling almost all the way full.
5️⃣ 00:02:57 - Bake in the preheated 450 degree oven for 5 minutes. Without opening the door, reduce the heat to 350 degrees and let the muffins continue baking another 8 to 10 minutes. Remove from the pan and cool on a wire rack.

Today, I am going to talk about how to tenderize meat before cooking, which includes cutting, pounding, and marinading. Tip NO.1: Slice the meat against the grain
You’ve probably read in recipes and heard again and again that meat should always be sliced against the grain. What Exactly Is grain? It refers to the direction that the muscle fibers are aligned. Slicing the meat against the grain can shorten the fiber, which makes it easier to chew. If you cut it with the grain, the fiber is very long and it is quite tough.

Tip NO.2: Use a meat tenderizer
A meat tenderizer helps to break down the dense, tough muscle fibers and the protein that binds them. You just use it to pound the meat until the meat gets a little fluffy. This technique will be good for cooking steak, pork chop, and breaded chicken.

TIP NO.3: Marinate the meat correctly
1. Baking soda does an amazing job at tenderizing meat
Baking soda breaks down the meat fiber in a chemical way.It alkalizes the meat proteins and makes them hard to bond together which keeps the meat tender when cooking.
How to use baking soda?
If it is a large piece of meat that you tend to grill or pan-sear: Sprinkle baking soda on the surface. Rub it on both sides. Rest it in the fridge for 3 to 5 hours. Rinse the meat several times to remove all the baking soda. Wipe the water with a paper towel. Then you can cook the meat however you want.
If you want to marinate smaller meat pieces: Just add some baking soda directly into the meat with other seasonings. Let it sit for at least 20 minutes before cooking. One important note is that over adding baking soda bring a weird bitter taste. I will suggest no more than 1/2 tsp/ pound of meat.
If you use baking soda in the marinade, it is better not to use anything sour like vinegar, lime juice at the same time. Because baking soda will react with the acid and lose the effect.

2. Velveting helps you to create a juicy, tender texture of meat
Velveting is a technique in Chinese cuisine for preserving the moisture of meat while cooking. It is Chinese restaurants’ secret. They use it to create that juicy, velvety texture of meat.
Pre-coat the meat with a mixture of egg white, corn starch, some Chinese cooking wine, and other seasonings for at least 30 minutes before cooking. Then the meat can be stir-fried, which I have done it in my chicken and broccoli recipe; You can deep-fry it which I showed in my Mongolian beef recipe, or you can boil the meat, my spicy pouched beef recipe is a perfect example.
What the velveting mixture does is that it protects the meat fibers, preventing them from seizing up, which leads to the juicy tender meat. This technique gives the meat a starchy layer, which is perfect for recipes that have lots of sauce because then the meat can catch a lot of flavors.

3. Some fruits also have the ability to tenderize the meat, such as orange, Pineapple, green papaya.
It needs to freshly grind puree or juice. Long-life commercial fruit product does not work. Using fruit puree or juice as a meat tenderizer adds some freshness and fruity taste to the dish， which is what a lot of people love about.
Here is how I do it: Marinade the meat with whatever seasoning and spices you like. Then add in some freshly squeezed orange juice. Mix it for 5-8 minutes. Refrigerate until you are ready to cook.
If you use papaya or pineapple puree, just rub it on both sides of the meat. Leave it at room temperature. Unlike the acid in the orange juice, papaya uses an enzyme called papain to tenderize the meat which works better at room temperature.

Today I am making my Grandmother's soft flour tortillas. This is one of the first recipe I remember learning as a child. I have listed the measurements and tips below. Making a soft tortilla takes practice and familiarizing yourself with what the dough feels like and the texture before your roll out the tortilla. My best advice is keep on trying and don't give up. **NEW SOFT FLOUR TORTILLA VIDEO** Questions Answered :)
Here is the way I like to make my super soft flour tortillas just like my Grandma made them. These tortillas are perfect for burritos, wraps and tacos. The fat content in the recipe can be substituted with a healthy oil of your choice, butter or lard. If I had to give one tip to making good tortillas, it would be practice makes perfect. There are so many variables that can change the outcome, so hopefully with practice you can adjust and succeed making a great tortilla. Best of luck and don't give up!
NEW SOFT FLOUR TORTILLA VIDEO
FLOUR TORTILLAS WITH BUTTER
3 cups all purpose flour (400 g )
2 tsp baking powder (7.5 g )
8 oz hot water (236.59 ml )
1/3 cup lard or shortening (65 g) *use only 1/4 cup (59 ml) if using oil
1 tsp salt (5 grams salt) *use salt of choice
CAST IRON SKILLET
TIPS FOR SOFT TORTILLAS
*Be sure the dough is moist and slightly tacky before kneading.
*IF the dough is still too wet, add a Tbsp of flour at a time until workable
*Be sure to knead for 10 to 15 minutes dough should be smooth and soft after kneading
*Be sure to rest for 15 minutes to allow the gluten in the flour to relax which helps the tortilla to bubble while cooking
*Try to roll out your tortilla thin
*Over use of flour during the roll-out process may change the texture
