For the crust:
One 8.8 oz sleeve of Biscoff Cookies
6 Tbsp Melted Butter
Pinch of Salt
For the Marshmallow Cream Filling:
Two 8 oz packages of Cream Cheese - softened to room temperature
One 7 oz tub of Marshmallow Cream
1 cup of Powdered Sugar
1 cup of Heavy Whipping Cream - Whipped
1 tsp Vanilla Extract
For the Hershey's Chocolate Ganache (Reserve some for the final drizzle)
3/4 cup Heavy Whipping Cream
4 Hershey's Bars
1 Tbsp Corn Syrup (only for the final drizzle)
For the Garnish:
1.5 cups of marshmallows
1 cup of crumbled Biscoff Cookies (about 8 cookies)
Hershey's Drizzle (see above)

FOR THE GANACHE
1 1/2 c. chocolate chips
3/4 c. heavy cream
FOR THE CRUST
1 sleeve graham crackers, crushed
5 tbsp. melted butter
1/4 c. sugar
pinch of kosher salt
1 sleeve of graham crackers, separated into sticks
FOR THE CHEESECAKE
16 oz. (2 blocks) cream cheese, softened
3/4 c. powdered sugar
1 1/2 c. cold heavy cream
1 tsp. pure vanilla extract
1/4 tsp. kosher salt
1. Make ganache: Place chocolate chips in a medium, heatproof bowl and set aside. Heat heavy cream in a small saucepan over medium heat. When bubbles begin to break the surface around the edges of the pan, turn off the heat.
2. Pour the hot cream over chocolate chips, whisking constantly until the sauce is smooth. Let cool slightly.
3. Make crust: In a large bowl, mix together graham cracker crumbs, melted butter, sugar and salt. Grease an 8” springform pan with cooking spray and press mixture into pan.
4. Pour about half of the ganache over the crust, then line the graham cracker sticks around the edges of the pan standing up to form a wall.
5. Make the cheesecake: In a large bowl using an electric mixer, beat cream cheese until light and fluffy, 2 minutes. Add sugar to combine, then gradually add cream and beat on high speed until stiff peaks form. Add vanilla and stir until combined.
6. Pour cheesecake mixture over the ganache and smooth out with a spatula. Pour remaining ganache over the cheesecake then top with mini marshmallows.
7. Freeze until firm, at least 5 hours and up to overnight.
8. Right before serving, broil until the marshmallows are golden, about 2 minutes.

Hi Bold Bakers! Where I live in California, we are heading into the season of warm weather and getting ready for picnics and BBQs. So I thought it was a good time to show you how to make my No-Bake S’more Cheesecake. So let's get baking!

S'more Cheesecake by Gemma Stafford
For the Crust:
2 sleeves (22 cookies, 2 ½ cup/ 8 oz/ 245g) crushed Graham crackers (or digestives)
8 tablespoon (4 oz/ 120g) butter,melted
For the Cheesecake:
1/2 cup (4oz/115g) sugar
1lb (16oz/454g) cream cheese, room temperature
2 teaspoon vanilla extract
2 cups (16oz/473ml) cream, all purpose or whipping cream
1 ½ cups (8oz/230g) Chocolate, Semi-Sweet or dark
3 cups (8oz/225g) mini marshmallows
1. To make the cheesecake base: Combine cookie crumbs with the melted butter and mix
2. Press into pan your springform cheesecake tin (9 inches). Set in the fridge and start on the filling.
3. Melt the chocolate in the microwave or over a bain marie and set aside to cool.
4. Beat cream cheese, sugar in large bowl on medium speed of mixer until creamy and there are no lumps
5. Gradually add in the cream and continue whipping until really thick
6. Add a spoon full of the cheesecake into the melted chocolate a mix it in to losen up the chocolate. Then QUICKLY add the chocolate into the the rest of the cheesecake mix and continue mixing fast so the chocolate doesn’t set. You will see the chocolate mix thicken up really fast spoon into your prepared in.
7. Refrigerate until firm, it will take around 4 hours. Also you can make it up to 2 days in advance.
8. Melt the marshmallows in the microwave or over the ban marie. You don’t need to mix it much, just let it melt. You don’t want to mix it and take out all of the air and volume
9. Take the cheesecake out of the tin by running a warm thin knife around the tin
10. Spread the marshmallow fluffy stuff over the top of the cheesecake
Note for toasting: Place under a grill to toast the marshmallow quicky. You don’t want to melt the cheesecake. If you have a kitchen blowtorch feel free to use that like I did.
To cut the cake: Use a HOT knife to cut through the marshmallow, it is a sticky job so a knife that was in hot water really helps.
What You’ll Need:
500g cream cheese
2 tbsp caster sugar
1 tsp vanilla essence
150g graham crackers/digestives
100g unsalted butter, melted
300ml double cream
50g big marshmallows, melted for 30 minute in the microwave.
100g mini marshmallows
How You Make It:
Bash your biscuits until you have course crumbs. Pop them in a bowl and mix in the melted butter. Pop a dessert spoon of the buttery crumbs into muffin cups, flatten with a teaspoon and pop in the freezer for half an hour or so.
Using an electric whisk, whip together your cream cheese, caster sugar and vanilla essence. Fold through the melted big mallows. Spoon a heaped dessertspoonful of this on top of your chilled biscuit base. Pop in the freezer for 20 minutes.
Heat your cream until almost simmering, then pour over your chocolate broken into pieces. Leave to sit for 5 minutes then stir to make your thick ganache. Pop a spoonful of this on top of the chilled cream cheese mix. Chill in the fridge for 20 minutes.
Top with mini marshmallows and grill for 1 minute. Watch them closely so they don’t burn.
Leave to cool slightly then dig in.
How to Make New York S'mores Cheesecake | The Sweet Spot
Graham Cracker Crust:
1 1/2 cups(127.5 g) graham cracker/digestive crumbs
3 tbsp(37.5 g) granulated sugar
5 tbsp(71 g) unsalted butter, melted
pinch of salt
24 oz(675 g) cream cheese, softened
1 cup(200 g) granulated sugar
1/2 cup(120 g) sour cream
1 1/2 tsp(6 g) vanilla extract
3 large eggs
7 oz(198 g) marshmallow creme
7 oz(198 g) milk chocolate, melted
Mini marshmallows to decorate top, optional
Graham Cracker Crust:
Preheat oven to 350 fahrenheit(175 celsius)
Line and spray 9-inch springform pan.
Crush graham crackers in food processor, or purchase them already crumbled.
Combine sugar, graham cracker crumbs, and salt.
Add melted butter till mixture becomes dense, resembling wet sand.
Press mixture into bottom of pan and up sides about an inch with a glass or cup.
Bake off for 10 minutes and set aside.
Preheat oven to 325 fahrenheit(162 celsius)
Wrap pan bottom with aluminum foil to prepare for water bath.
Melt chocolate in microwave in 20 second intervals till smooth, set aside.
Beat cream cheese with a stand or hand mixer for 2-3 minutes.
Add in sugar and continue beating till no sugar granules appear.
Mix in sour cream and vanilla till filling is silky and smooth.
Add eggs in one at a time and mix to combine.
Divide filling in half.
Combine marshmallow creme with the first half, may appear lumpy but that's fine.
Combine melted chocolate with the second half until completely combined.
Alternate pouring filling into pan until both are combined.
Take a sharp object and swirl the top of the cheesecake to create marbling effect.
Place cheesecake on a baking pan with sides and transfer to oven.
Fill baking pan about 2 inches with water. The water will create steam in the oven cooking both the outside and inside evenly at the same time, preventing cracking.
Bake off for 1 1/2 hours, then turn oven off and crack door for another hour.
Once cooled, place cheesecake in refrigerator for at least 4 hours.
*Optional, cover the top of the cheesecake with miniature marshmallows and broil for 30-45 seconds until they puff and brown.

6 tbsp. butter, melted
2 tbsp. sugar
pinch of kosher salt
FOR THE CHEESECAKE
2 8-oz. blocks cream cheese, softened
3/4 c. sugar
2 large eggs
1/4 c. sour cream
1/2 tsp. pure vanilla extract
pinch of kosher salt
FOR THE TOPPING
1 1/2 c. semisweet chocolate chips
3/4 c. hot heavy cream
2 c. mini marshmallows
1. Preheat oven to 325º and line a 9-x-9 pan with foil. Make the crust: In a large bowl, stir together graham crackers, butter, sugar and salt until completely combined and moist. Set aside.
2. Make the cheesecake: In a large bowl using a hand mixer or in a stand mixer using the whisk attachment, beat cream cheese, sugar, eggs, sour cream, vanilla and salt until completely smooth.
3. Spray crust with cooking spray, then add crust to foil and pack in tightly. Pour over cheesecake mixture and smooth top.
4. Bake until only slightly jiggly, 35 minutes. Let cool, then refrigerate until firm, 3 hours, or up to overnight.
5. Make the ganache: Place chocolate chips in a small heat-proof bowl and pour over hot heavy cream. Let sit 2 minutes, then whisk until no clumps remain.
Pour ganache over cheesecake bars and spread with a spatula. Top all over with mini marshmallows and broil until golden, 2 to 3 minutes.
6. Slice into bars and serve.

Brownie S'mores Cheesecake
Layers of decadent chocolate brownie, marshmallow cheesecake fluff, and chocolate ganache are topped with marshmallows and graham crackers.

Here is what you'll need!
S’MORES CHEESECAKE POPS
10 graham crackers
½ cup butter, melted
16 ounces cream cheese, softened
½ cup powdered sugar
2 teaspoons vanilla extract
3 cups mini marshmallows
4 ounces white chocolate, melted
16 ounces dark or milk chocolate, melted
2 teaspoons coconut oil (optional)
16 cake pop sticks or lollipop sticks.
In a freezer bag or food processor, crush the graham crackers to a sand-like consistency.
Transfer to an 8x8 baking dish lined with parchment paper and firmly pack it down to form the “crust.” Freeze until the cheesecake mixture is ready.
While the crust is freezing, combine the cream cheese, sugar, and vanilla extract, and mix until smooth.
Spread the marshmallows out on a baking sheet lined with parchment paper.
Broil the marshmallows for about 1-2 minutes, watching closely to make sure they don’t burn. You want them to brown up a little though to achieve a “toasted” flavor.
Carefully scrape the marshmallows from the sheet into the cheesecake mixture. Mix thoroughly.
Transfer the toasted marshmallow cheesecake mixture into the baking dish on top of the crust and smooth until even.
Freeze at least one to two hours until the mixture is firm enough to cut.
Remove the set cheesecake from the dish and cut into even square shapes, depending on how big you want your pops.
Dip each stick in melted white chocolate and place into each cut square, this will help secure the sticks into the cheescake.
Freeze until solid, about one hour.
Microwave the chocolate in 15 to 30 second increments to melt, stirring thoroughly each time. Add coconut oil if the chocolate seems too thick for dipping.
Dip the set pops into the chocolate and stand upright to set (a cardboard box or piece of styrofoam works best if you don’t have a stand).
Decorate with the remaining white chocolate and crushed graham crackers.

Toasted marshmallows, chocolate and a moist cinnamon cake, what's not to love about a s'mores cake??! This tender graham cracker cake is filled with a marshmallowy fluff, covered in chocolate buttercream, drizzled with dark chocolate throughout, and skirted with an addictive, crunchy graham cracker crumble. It’s a MUST make cake!!! I've baked this cake a few times and it's a total crowd pleaser. And yes, I think it makes a perfect birthday cake in case you're wondering.
What's my favorite part? I love the crunch from the Graham cracker crumble and the solidified chocolate in this cake, it contrasts well with the gooey marshmallow fluff! THis cake is SO YUMMY I really hope you ger a chance to make it soon.

- 10 whole graham crackers, crushed into crumbs
- 3 tablespoons melted butter
- 1 cup water
- 1/4 cup sugar
- 1 tablespoon + 2 teaspoons cornstarch
- 3 tablespoons cocoa
- 2 teaspoons vanilla
- 2 cups heavy whipping cream
- 1 14-ounce can sweetened condensed milk
- 1 jar marshmallow cream
Mix together the graham cracker crumbs and melted butter. Press mixture into an 8x8 baking dish.
Prepare the chocolate sauce by combining water, sugar, cornstarch, and cocoa. Heat in microwave on high in one-minute increments, stirring until thickened, about 4 minutes.
Stir in 1 teaspoon vanilla and set aside to cool.
In a separate bowl, whip the heavy cream on high until at stiff peaks.
Fold in the sweetened condensed milk, marshmallow cream, and 1 teaspoon vanilla until completely combined and no streaks remain.
Pour ice cream mixture over graham crust. Next, pour cooled chocolate sauce over ice cream. Use a knife to swirl chocolate sauce into ice cream.
Freeze 6-8 hours until hardened.
Cut and serve.

Ashley Makes A S’mores Cheesecake
In this video, Ashley is making a S'mores Cheesecake. If you make it a day or two before company arrives, it will have set perfectly and have a great flavor.
Preheat your oven to: 325 degrees. This cheesecake will cook for 45 minutes and then an additional 5 minutes after adding the second layer. A 10-inch springform pan is very helpful.
For the crust:
* 1 sleeve of graham crackers
* ½ cup sugar
* ¾ cup melted butter
* 1 bag mini marshmallows
* Hershey’s Hot Fudge Topping
For the filling:
* 16 oz. cream cheese (softened)
* 14 oz. sweetened condensed milk
* 3 eggs
* 2 tsp. vanilla
* 1 ½ cup marshmallows
* 1 cup Nestle Toll House Mini Morsels semi-sweet chocolate chips (a 12 ounce bag is more than enough for this recipe. I only used ½ the bag.)

Smores Cheesecake | The Bacon Betches
- 1 pack of cinnamon graham crackers
- 70 gr of melted butter
Cream cheese filling
- 420 gr of cream cheese
- 3/4 cup of sugar
- 1 cup of whipping cream
- 100 gr of condensed milk
- 1 tbsp of vanilla extract
- 2-3 cups of melted marshmallows

Here is our No Bake S'mores Cheesecake recipe:
Pre made crust
16 ounces cream cheese, softened (two 8-ounce packages)
½ cup powdered sugar
2 teaspoons vanilla
2 cups packed Kraft's Jet-Puffed Marshmallows (about 24 marshmallows), softened
3 Hershey's Milk Chocolate Bars
Soften the marshmallows by placing them in a microwave-safe bowl and microwaving for 30-45 seconds.
Place the cream cheese, powdered sugar, vanilla, and softened marshmallows in your food processor, and process until smooth and creamy.
Pour the filling onto the pre made crust. Spread evenly.
Place the chocolate bars in a microwave-safe bowl, and microwave in 30 second intervals, stirring between each interval, until the chocolate is melted, smooth, and creamy.
Pour the melted chocolate over the cheesecake filling in a spiral pattern.
With a butter knife or spatula, swirl the chocolate in with the marshmallow cheesecake filling
Eat it right away while the chocolate and marshmallows are still melted or chill it in the refrigerator until completely set, at least 2 hours.

Since it's camping week on Pastry Kids, I thought a super easy and delicious cheesecake would be perfect! Here's the recipe:
3 packets of biscuits
8 oz butter melted
8 oz regular cream cheese
24 oz whipped cream cheese
1 cup white sugar
1/2 cup brown sugar
1/2 cup melted dark chocolate
pinch of salt
1/2 tsp vanilla bean paste
1/2 can marshmallow fluff
