Smoked Cheese | How To Cold Smoke Cheese
There is something I look forward to every year when the temps start to drop... and that is cold smoking cheese.
Because we live in the south, we have limited times we can cold smoke cheese down here because if it's warm outside - your cheese can melt.
Cold smoking cheese is really, really easy. The only thing you've got to do is be able to produce a nice, light smoke without melting your cheese.
You can cold smoke cheese in pretty much any smoker or grill. And you can use a few coals or wood chips for your smoke... but with this cheese I used a new product called the A-Maze-N-Tube. It allows me to have a nice, slow smoke without generating much heat.
But a word to the wise... the smoke you are producing in your smoker for your cheese does still carry some heat - and it doesn't matter if you are using a smoke tube or charcoal... So you have to watch it closely.
It's always a good idea to divert that heat the smoke produces by using some type of shield. You can use a deflector plate, foil or you can get a metal pan and fill it with ice.
Once you get the smoke rolling, all you need to do is place your room-temp cheese on the smoker and let it hang out in the smokey environment for 3 - 4 hours.
Now comes the hard part... To get the most flavor from your smoked cheese, you need to wrap it in plastic wrap and place it in your fridge for 7 days. This will get you the most evenly distributed and most amazing smoke flavor in your cold smoked cheese.
But once the 7 days is up, it's on! And there is nothing like smoked cheese you've done yourself at home.

Corned Beef Hash Waffles

Total: 3 hr 50 min
Active: 45 min
Yield: 4 waffles
2 1/4 pounds corned beef brisket, rinsed
1 tablespoon peppercorns
1 tablespoon coriander seeds
2 bay leaves
Nonstick cooking spray, for the waffle iron
4 cups store-bought shredded potatoes, such as Simply Potatoes hash browns
2 large eggs, beaten
1/2 medium yellow onion, sliced
Kosher salt and freshly ground black pepper
Chopped chives, for garnish
Special equipment: a waffle iron
For the corned beef: Add the brisket, peppercorns, coriander and bay leaves to a Dutch oven and cover with water. Bring to a boil and then lower to a simmer. Simmer until the meat is very tender, 2 1/2 to 3 hours.
Remove the brisket from the liquid, allow to cool slightly and shred with a fork. Transfer to a large bowl.
For the waffles: Preheat a waffle iron and spray with cooking spray.
Add the shredded potatoes, eggs, onion and some salt and pepper to the bowl with the meat. Scoop 2 cups of the mixture into the waffle iron, pressing down gently to spread out in an even layer. Cook for 10 minutes. Repeat with the remaining waffle mixture. Garnish with chives.

Smoky Turkey Chipotle Stack ~ Sandwiches You Will Love ~ Lunch Time Made Easy ~ Noreen's Kitchen
Today we have a quick and easy sandwich, inspired by a local eatery. They call theirs Sweet Chipotle Chicken and it has grilled chicken, sharp cheddar and a unique chipotle and peach sauce. It was delicious but it was expensive. So we came up with our own! This tasty, budget friendly sandwich starts with a delicious ciabatta bun that is slathered with a delicious sauce and layered with smoked turkey and smoked Gouda cheese. Nothing more nothing less. It is a delicious twist on your every day turkey sandwich that is perfect for lunch or dinner!
I love when I can recreate or rework something we ate out in our own kitchen. This sandwich is no exception. The sandwich is one of the most innovative ways to eat just about anything. I mean something that was said to be created for a man playing poker, and was too busy to stop to eat a full meal has got to be good right?
I believe that the real key to this sandwich is the sauce. It's always the sauce isn't it? This one is super easy and you probably have all the ingredients on hand. I start with good quality mayonnaise and add in apricot jam. Use peach if that is what you have then I add in a good tablespoon of chopped chipotle in adobo. Mix this all up and boom you have a sandwich sauce that will make the angels sing!
Spread a ciabatta bun (or a brioche bun) with that sauce and layer on smoked turkey breast and smoked Goulda cheese. You could use any cheese you like, muenster, smoked cheddar, smoked provolone or plain old American. I promise the smoked Goulda is amazing if you are able to get it!
That is it. This sandwich is satisfying and the flavor combination cannot be beat. Sweet, salty, smoky, and spicy all in one bite, with a great chew from the ciabatta bun. All you need is a salad or some chips and you are good to go. A side note, the sauce is also a great dip for those bbq chips. Ask me how I know?

Shows such as An Hot Dog Program, An Ice Cream Show, Sandwiches You Will Like, To Market to Market to Buy a Fat Pig, and most recently his documentaries A Few Good Pie Places and A Few Good Bakeries, made their debut. He is an incredible film maker with the ability to get right into the people, the region and the food. His perspective is always sweet and nostalgic and highlights the importance of food to our culture. If you get the opportunity please look up his work. Most of them can be streamed on your local PBS website.

Who doesn't love attending a holiday party? It is an excuse to drink sugary punch at an inappropriate time of day, give lingering hugs to attractive people in cashmere—that would otherwise seem creepy any other time of year—and most importantly, to imbibe in boatloads of salty, fatty treats. I've read in many prestigious medical journals that it is physically impossible for your body to absorb fat while the Jackson 5 Christmas Album is playing on a repetitive loop.
Since we can all agree that these parties are fun, why don't you be selfless and giving, and offer to throw one? It's really not as scary as you might think. With little to no planning, a strict budget, and about a half an hour's worth of grocery shopping—including a booze run—I threw this holiday party together in an afternoon. Give it a whirl. It ain't the Ritz, but I doubt you'll hear any complaints. Just keep little Michael crooning, I Saw Mommy Kissing Santa Claus, really loud.

BLUE CHEESE & BACON WRAPPED DATES with MALLASAURUS
BLUE CHEESE STUFFED BACON WRAPPED DATES
A perfectly sweet yet hearty treat. An appetizer perfect for any party or gathering. You can use different types of cheeses for the filling and also substitute prosciutto for the bacon! Dont forget- LIKE & SUBSCRIBE! Enjoy!
1 DOZEN MEDJOOL DATES (pitted and partially sliced)
8oz BLUE CHEESE (feta or goat are great alternatives!)
1 1/2TBSP HONEY
12 SLICES OF MED-THICK CUT BACON
Evenly place bacon strips on baking sheet lined with foil, and baking rack. Sprinkle pepper and drizzle honey on bacon. Bake at 400• for 10 minutes.
Add about 1tsp of cheese into date pits.
Slicing bacon pieces in half after cooling, wrap dates with bacon, then place evenly back on baking rack, end sides down. Drizzle with honey.
Bake stuffed dates at 400• for 7 minutes.
Let cool, serve, and enjoy!
