Classic Scotch Eggs - Easter Treat
Scotch eggs originated in the United Kingdom. They are a delicious combination of a soft or hard boiled egg covered in sausage and dredged in flour, egg, and bread crumbs which makes a complete breakfast. I have them at least once a month. Print the recipe:
The recipe does have a few alterations, however. To kick things off, the egg can be soft or hard boiled depending on your preference. I prefer them soft, but it is entirely up to you.
We use mild Italian sausage in the recipe, but that too, is a matter of preference. I have also used my homemade burger recipe which turns out delicious. Use the sausage or meat of your choice.
We use Panko bread crumbs as they are larger, but any brand of crumbs can be used.
In this recipe, I find that the sausage provides enough seasoning but the flour or bread crumbs can have additional seasoning, as well.

2 cups bread crumbs
2 large eggs for egg wash
1 cup of flour
1 tsp onion powder
1 tsp garlic powder
1 tsp black pepper
1/2 tsp curry powder
1/4 tsp oregano
1/4 tsp dried parsley (optional)
1/2 tsp chiken season
1/4 tsp dry chilli pepper
1/4 tsp nutmeg

I’m going to show you how to make a homemade scotch egg with the perfect runny egg yolk. This really is the best scotch egg recipe out there!
The trick is in the cooking time for the soft boiled eggs and handling them very carefully! The pork mince is seasoned to create a spicy breakfast style of sausage and then carefully wrapped around the egg with the soft yolk. A coating in Panko breadcrumbs and a quick deep fry gives these scotch eggs a really crispy texture.
But where does the Authentic classic Scotch egg come from? There are two schools of thought regarding the Scotch eggs origin. Some people believe they were born in the Whitby area of Yorkshire in the late 19th century and other believe they were created in Scotland as part of the big Scottish breakfast. Either way they are a greta snack and this recipe is well worth cooking.

What this recipe consists of is basically just a boiled egg that is wrapped in a thin layer of sausage, then rolled in seasoned bread crumbs and fried. They are very simple to make and very tasty. Here’s the recipe of Scotch Eggs, an incredibly tasty dish!
200 grams mutton mince
1 spring onion, chopped
1 tablespoon chopped garlic
Salt to taste
Pinch of black pepper powder
Pinch of cayenne pepper
1 egg, for crumbing
3 tablespoons breadcrumbs
3 tablespoons refined flour (maida)
Oil for deep frying
1. Soft boil the eggs for four minutes in water.
2. Put mutton mince in a mixing bowl, add spring onion, garlic,
salt, pepper powder and cayenne pepper and mix well.
3. Refresh the boiled eggs in iced water. Drain and carefully peel
4. Place a piece of cling wrap on the work top, take a portion of
the mutton mixture and spread on it evenly. Place an egg in
the centre and coat the mince evenly around the egg. Shape
into a ball making sure the egg stays in the centre. Repeat the
same for the second egg.
5. For the coating, break an egg into a bowl, add salt and whisk.
Spread breadcrumbs on a plate.
6. Heat sufficient oil in a wok.
7. Dust some flour on the balls, then dip them in egg and then in
breadcrumbs. Shake off the excess crumbs. Slide them into
hot oil and deep-fry in moderately hot oil till they are golden or
till mutton is cooked. Drain on absorbent paper.
8. Cut into half, place on a serving plate and serve hot.

Baked Scotch Eggs
Making scotch eggs is really not as hard as some may think and makes such a great dish for either breakfast or any other part of the day. They can be a great picnic dish or party snack as well. The classic scotch eggs are deep fried but baking them makes them a bit healthier and they turn out really well.

Makes 4 servings
1 pound (450g) good quality sausage meat, casing removed
1/2 tsp (2g) nutmeg
1 tsp (5g) mustard
1/4 cup (14g) parsley
1/2 cup (14g) chives
Salt and freshly ground black pepper
2 eggs, beaten
Bread crumbs or crushed cornflakes
1. Put the eggs into a medium pan, cover with cold water and bring to the boil. Boil for 4 minutes, then transfer to a bowl of ice cold water. Peel them when cooled.
2. In a medium bowl combine sausage meat with nutmeg, mustard, parsley, chives, salt and pepper. Divide the mixture into four parts.
3. Take one piece of sausage mixture, form a ball and flatten into a patty. Roll the egg in flour and shape the sausage patty around egg. Repeat this step with the rest of the eggs.
4. Preheat oven to 400F (200C).
5. Roll each wrapped egg into flour, then dip into beaten eggs and coat with either breadcrumbs or crushed cornflakes.
6. Place on ungreased baking sheet and bake for 35 minutes until sausage is completely cooked.
7. Rest for 5 minutes before serving.

- 6 Eggs
- 400g minced chicken
- spring onions
- de stemmed leaves
- black pepper
- egg wash
- bread crumbs
- Add six eggs in a pot full of cold water and put it on the high flame till the water boils or until 8 minutes.
- Take the pan off the heat.
- Immerse the eggs again in ice cold water and leave it fridge for some time.
- In a bowl add minced chicken, chopped spring onions,
de-stemmed leaves and mix well and add salt and black pepper also add malt vinegar.
- Refrigerate it for few minutes.
- De-shell the eggs.
- On a silicone mat sprinkle flour then roll the chicken mince and make it in a pancake shape and coat egg with the mince chicken
- Wrap the mince tightly to the egg.
- Coat it in flour, egg wash and bread crumbs respectively.
- Fry them in boiling hot oil
- Once the scotch eggs are cooked take them off

Fried Scotch eggs with Italian sausage, traditionally a British recipe that's evolved all over the world. It's a perfect meal or a great picnic snack. You can have the yolk runny or boil them hard, it's up to you. I know I prefer runny. Buy good quality sausages as this makes all the difference, you want spicy, with herbs and garlic. This makes or breaks it, so buy from a reputable supplier you trust. They should be well seasoned and generally you don't need to add extra salt or pepper. You can serve them for breakfast with grilled tomatoes or anytime, just arrange them with pickles and a dipping sauce such mayonnaise, tartar sauce or even ketchup. I hope you're all having a great day so far....So here's a cracking wee recipe for Scotch eggs! It's a really simple recipe and I'm told that they're absolutely delicious :) I'm not a fan of eggs....but if you are, you're sure to enjoy these. I've listed everything I used below if you want to give these a go.

3 Shallots (finely chopped)
4 Medium sized eggs (at room temperature)
400g Pork sausage meat (seasoned with salt, pepper & dried parsley)
300g Plain flour
400g Dried breadcrumbs (I used Ruskoline but Panko is best)
1 beaten egg with a splash of milk (for the egg wash)
1 Level tablespoon of Dried thyme (sage works well too!)
1 Level tablespoon Cayenne pepper
1 Level tablespoon garlic granules
