The term “mousse” refers to any preparation that is “light and creamy”. This particular mousse is used in a few ways within this course. Dumplings, timbales, stuffing, seafood terrine and seafood pate en croute. This particular ingredient formula can also be used with a few other selected fish fillets to make other types of fish mousses, such as pike, sole and scallops.

Salmon mousse
Salmon mousse is a tasty cream that is prepared in no time.
Ideal as an appetizer, excellent to be served on croutons or to fill canapes and vol au ven.
His best time is certainly on Christmas holidays but, once prepared, he will often be with us for other occasions!

Ingredients:
100 g of smoked salmon
60 g of ricotta
liquid cream
chives
salt
green pepper
Method:
In the glass of the cutter insert first the liquid cream, then the smoked salmon that we cleaned from any impurities, or dark spots of the cut. For the salmon mousse really few ingredients are needed, not least the ricotta, to mix everything and make it foamy. We can also use robiola in its place, personally I prefer the almost neutral flavor of ricotta to enhance smoked salmon. Before continuing, we adjust salt and pepper, green is best suited. We close the cutter and proceed to blend for a few moments, starting from a low speed and then moving to the highest, this to obtain a foamy creaminess typical of salmon mousse.
Let the salmon mousse rest in the refrigerator for an hour before serving. In the meantime we can prepare croutons on which to spread the mouse on salmon. We toast them in the oven or use slices of bread in the oven heated directly in the toaster.
We can garnish our salmon mousse crostini with fresh chives or a few grains of pink pepper.

SALMON MOUSSE IN PARMESAN TACOS
Ingredients
100 grams tinned smoked salmon fish, cut into cubes
1 cup grated parmesan
4 tablespoons fresh cream
1 tablespoon cream cheese
Salt to taste
Crushed black peppercorns to taste
1 teaspoon chopped fresh dill
1 small cucumber, peeled and cut into small cubes
½ small avocado, peeled and chopped
1 stalk spring onion greens, chopped
1 teaspoon capers
Segments of ½ small lemon
¼ cup olive oil
3-4 cherry tomatoes, cut into quarters
Onion seeds for sprinkling
Method
1. Blend together the fish, cream and cream cheese into a smooth mixture. Transfer in a bowl.
2. Add salt, crushed peppercorns and dill and mix well.
3. Combine cucumber, avocado, spring onion greens, capers, lemon segments, salt, crushed peppercorns and olive oil in a bowl and mix well. Add cherry tomatoes and mix.
4. Heat a non-stick tawa. Place a cookie cutter on it, sprinkle spoonful of parmesan in it leaving gaps in between. Sprinkle onion seeds on them and roast till crisp.
5. Immediately remove from heat, place a rolling in the centre and turn to give the shape of tacos.
6. Fill the tacos with the prepared salmon mousse and top with the prepared cucumber mixture.

Mango-Lime Mousse Tart with Coconut Ice Cream from Chef Peggy Hughes

cream accompanies the dish. The coconut ice cream can be
made several days in advance. The pastry tart shells can be

Hi guys! I finally re-did the oregano sauce recipe! This time I am spooning it over some salmon served alongside garlic, honey sautéed carrots & chopped up cinnamon roasted cashews.
I made a super quick delicious strawberry mousse for dessert too!
I hope you all try it and let me know what you think! ????
Oregano Sauce:
2 tblsp butter
4 cloves chopped up garlic
1/2 cup chicken stock
1/2 cup heavy whipping cream
1 tsp dried oregano
1 tsp salt
1 tsp course black pepper
1 tsp garlic powder
3 tblsp fresh grated parmesan cheese
1/2 tsp lemon zest
squeeze of half a lemon
Saute butter & garlic for a few minutes on medium heat, add the rest of the ingredients and bring to a simmer and let thicken a tad with the cheese.
*I have doubled this sauce to mix in with pasta and serve with sliced up grilled chicken. So good!
But today was absolutely amazing spooned over my go to salmon recipe for a lighter dinner variation! I think it would taste amazing spooned over blackened salmon/chicken too!
***Quick note...I boiled the carrots until they were softer with a tiny bit of crunch left....not all the way soft, you don't want that. Then saute them just until coated!
