Easy Homemade Rosemary Focaccia makes the most delicious sandwiches and is heavenly alongside a bowl of soup. You are going to fall in love and make this all year long!

Easy Homemade Rosemary Focaccia
3/4 cup warm water
1/4 cup extra virgin olive oil
1/2 tablespoon yeast
1/2 tablespoon salt
2 teaspoons sugar
2 1/2 cups all-purpose flour
2 teaspoons extra virgin olive oil
1 teaspoon dried rosemary
1/4 teaspoon sea salt
1/4 cup freshly ground pepper
1. Dissolve the yeast in the warm water and olive oil in a large mixing bowl or stand mixer. Stir in the salt, sugar, and flour and knead until it forms a nice smooth dough (which should take less than 5 minutes, even when doing it by hand instead of in a mixer). Let rise 1 to 1 1/2 hours.
2. Lightly grease a baking sheet and preheat the oven to 425 degrees. Shape the risen dough into a ball and flatten it out with your hands, stretching it or rolling it into a nice 8-10 inch in diameter disc. It should only be about 1/2 inch thick. Lay it out on the prepared baking sheet.
3. Rub the surface of the dough with 2 tsp olive oil. Use your fingers to poke at the dough creating lots of little divots over the whole disc. Sprinkle rosemary, sea salt, and cracked pepper over the whole thing (or whatever flavor combination you desire).
4. Bake in the preheated oven for about 20 minutes, until golden brown.

This Macaroni Grill copycat recipe is one of the easiest breads you'll ever make - no shaping or special pan required, just mix, rise, plop and rise some more then bake!
ROSEMARY BREAD RECIPE
1 Tbsp Dry Yeast
1 Tbsp Sugar
1 C warm water
2 1/2 flour (all purpose, not bread)
1 tsp salt
2 Tbsp FRESH ROSEMARY, chopped
1 Tbsp olive oil
2 Tbsp butter
Measure the water and add the yeast and sugar, allow the mixture to become bubbly, about 5-10 mins.
Mix 2 cups of flour and the salt.
Add one tablespoon of the fresh chopped rosemary and the yeast mixture. Mix together with bread hooks until smooth and elastic.
Add flour if necessary, but not too much - just until the dough cleans the sides of the bowl
Let dough rise in a warm place for one hour or so until doubled.
Punch down dough and divide in half.
It's still VERY sticky, and should be, don't knead flour into it. Shape the dough into 2 small rounded oval loaves. Place on parchment paper on a pan.
Let dough rest about 5 – 10 minutes.
Melt the butter and brush over the top of the loaves. Sprinkle remaining 1 Tablespoon of rosemary and coarse salt over the loaves.
Let loaves rise again until doubled, about 45 minutes. In the meantime preheat oven to 425 degrees F. Bake for 12-15 minutes, until lightly browned.

Mussels with Rosemary and Parmesan Bread Bites
A fantastic dish for in-house chef Joe to cook up as our first in the Black Edition oven.
We stoked the Black Edition and got the wood burning nice and strong, letting those smokey notes fuse through the mussels and liquor. The bread bites were then crisped up to create the perfect addition to soak up that tasty sauce.

OLIVE AND PEPPER FOCCACIA
6-8 black olives
½ medium red bell pepper
½ medium yellow bell pepper
½ cup olive oil + to grease
1½ tablespoons fresh yeast
1 teaspoon sugar
2½ cups refined flour (maida) + for dusting
½ cup semolina (suji / rawa)
1 teaspoon salt
A few fresh rosemary sprigs
1 teaspoon sea salt
½ teaspoon crushed black peppercorns
1. Preheat oven at 180ºC. Grease a baking tray with a little olive oil.
2. Put yeast in a bowl, add one fourth cup warm water and half teaspoon sugar and mix well and let it froth.
3. Sift refined flour into a bowl. Add semolina and salt and mix well. Make a well in the centre and add the yeast mixture and mix well. Addtwo tablespoons olive oil to one and half cups warm water and add to the flour and kneadinto soft dough. Dust the worktop with some flour, take the dough out on the worktop and knead well.
4. Dust a bowl with some refined flour. Place the dough, cover with a moist muslin cloth and set aside in a warm place for twenty to twenty five minutes.
5. Dust the worktop with flour, and knock back the dough.
6. Grease a baking tin with olive oil, place the dough inside the tin and spread it using your fingers.
7. Cover the dough with a damp muslin cloth and set aside for another ten minutes.
8. For the topping, cut red and yellow peppers into thick strips. Slice the black olives.
9. Make finger incisions on the surface of the bread and generously drizzlethree tablespoons olive oil, top with the red and yellow peppers, olives and fresh rosemary sprigs. Sprinkle sea salt and crushed black peppercorns.
10. Drizzle the remaining olive oil on top and bake in the preheated oven for fifteen to twenty minutes.
11. Remove the focaccia from the mould, slice and serve at room temperature.
