No Knead Batter Bread
Homemade white bread at its most basic! This easy, no knead, sandwich loaf has just 5 ingredients and is finished in less than 2 hours. It’s a simple batter recipe that’s perfect for everything from toast to pb&j.
A great recipe for beginners.
During the video I talk about gluten flour. By this I mean vital wheat gluten. All purpose flour is a gluten flour and I am sorry if this is confusing! To one of the loaves I've added extra gluten to help it rise better and have a better texture.
Flour – I used all purpose flour. Adding some vital wheat gluten will help it rise better. You can use bread flour, all purpose flour, or part whole wheat flour.
Salt – I used kosher salt which has a slightly larger crystal than table salt. If you use table salt use about 1/4 teaspoon less.
Sugar – helps the yeast grow and the bread rise. I used white sugar but you could use brown, honey, agave, maple syrup, corn syrup, or some other natural sweetener. Don’t use sugar substitutes such as Equal. If you don’t want to use a sweetener at all you can leave it out but let the bread rise an extra 30 minutes to an hour.
Yeast – I use active dry yeast and, since I use it by the jar not packet, I always use a little extra to help it rise faster. You can use a packet of active dry yeast or use Rapid Rise if you want.
Butter – adds flavor and moisture to the bread. If you are out of butter you can use a light flavored vegetable oil, coconut oil, margarine, or leave it out all together.
Water is the liquid here. You can use milk if you like – it will enrich the dough, make the bread more tender and softer. You can use potato water if you happen to have made boiled potatoes recently.

Chappathi or roti is an Indian flat bread , made using atta (wheat flour) or all purpose flour (maida). It’s usually made by kneading the dough followed by resting for a couple of minutes & then flattening it using a rolling pin. In this video, am preparing these rotis using a liquid dough or a liquid batter, with out kneading or flattening. Unlike the normal rotis, these are cooked completely on a low flame. Idli Dosa Batter Recipe - How I Make My Dosa Batter Healthy - How To Make Idli Batter In Mixie/Mixer
idli dosa batter recipe, how to make perfect batter for Soft and spongy dosa idli in mixie - mixer/grinder
I used a small measuring cup with came along with my rice cooker.
2 cups - single polished white rice (the brown specks is the bran left on the rice, hence this is not white in color)
1/2 cup black urad dal
1/2 cup white urad dal (note if not using black urad dal, then use 1 cup plain white urad dal).
2 1/2 tbsp methi seeds
3/4 tsp pink himalayan salt
1/2 cup cooked rice
soak for atleast 2 hours, then rinse and drain the water until the water is clear.
Grind the soaked ingredients with salt and cooked rice.
Once ground, keep it to ferment overnight.
You can make soft idlis and crispy dosas with this batter. This will keep good for up to 4 days in the fridge.

Emergency Oatmeal Batter Bread - No Yeast. No Flour.
When you can't get to the store or you can't get the supplies you need this batter bread is the answer. Easy to make, it starts with old fashioned oats that are ground to a flour (includes suggestions for other possibilities if you don't have oats).
Old fashioned or quick oats - I've never tried it with instant
Flaxseed meal or whole flaxseed ground in the blender
Sugar - or other sweetener like brown sugar, molasses, honey, etc
Milk - whole milk, almond milk, fat free milk, or another liquid

Crispy Brown Rice Dosa & Idli Recipe | Batter Fermentation in Instant Pot |Healthy Breakfast Recipes
3 teaspoons salt brown rice- sona masoori rice-soaked for 5-6 hours
1 cup (whole skinless urad dal), soaked for 3 hours
1 teaspoon fenugreek (methi) seeds, soaked for 3 hours
Puffed rice-1/4 cup
3 teaspoons salt( as per taste)
1.To prepare the batter, soak the brown rice in a bowl of cold water for 5-6 hours. In a separate bowl, add the whole skinless urad dal and fenugreek seeds and puffed rice soak in cold water for 3 hours. Drain the water.
2. Put the drained rice in a blender and slowly pour in 1 cup of cold water while blending. Blend until the rice is mostly smooth. Pour this into the steel pot. Add the drained urad dal ,methi seeds , puffed rice to the blender and slowly pour the in remaining 1 cup of cold water while blending. Blend until the dal is a fluffy, almost foam-like consistency. Pour this into the steel inner pot. Mix the blended rice and dal together without adding salt
3. Press the yogurt button and set the time to 8 hours on normal mode. Secure the lid. You can close the valve or leave it open as it does not matter in this case.
4. Once the time is up, you should see that the batter has doubled in size and looks light and airy. Gently fold the salt into the batter. Perfect batter for Idli & add some water for dosa batter for crispy dosa too.
5. Use the batter to make idlis the first couple days, then use the batter to make crispy dosas or savory “pancakes” the rest of the week. You can store the batter in the fridge for up to a week, or keep it in the freezer for up to a month.
6. To make idlis, spoon the fermented batter into a greased idli mold.
7. Place 1 cups of water into the steel inner pot of the Instant Pot, then place the idli mold inside.
8. Secure the lid, valve in venting position and cook for 10 minutes in steam mode at normal pressure (the idlis will cook while the machine builds pressure). And off steam mode manually after 10 minutes( as per doesn’t countdown down. Open the valve to release any remaining pressure.
9. As valve button pop’s down, open the lid, soft brown rice idli ready serve with coconut chutney & sambar????????
10.To make dosa, pour 1 cup of idli/dosa batter into a bowl, Slowly add 1 tablespoon of water at a time until the batter is slightly runny (you may need 3-4 tablespoons of water total). Mix until well combined.
11. Heat a well-seasoned or non-stick crepe pan over medium heat, then ladle the batter onto the pan and spread it around the pan slowly.
12. The edges of the dosa will lift from the pan when the bottom side is done. Sprinkle a few drops of oil on top of the bread, then flip the dosa over to cook the other side for 30 seconds.
13.serve dosa with sambar & coconut chutney????????

How to Cut & Clean Chicken -
It serves 4-5 people.
For the chicken
300 gms Chicken breast boneless
1 tbsp Ginger garlic paste
1 tbsp Red chilli powder
Salt to taste
Oil to pan fry
For the gravy
500 gms roughly slit tomatoes
100 gms roughly cut onions
1 tbsp garlic paste
50 gms cashew
1 tsp kasoori methi
1/2 tsp garam masala
4 tbsp sugar
2 tbsp kashmiri chilli powder
5 tbsp butter
3 tbsp cream
2 tbsp malt vinegar / 1.5 tbsp White Vinegar
Salt to taste
- Marinate the chicken with ginger paste, garlic paste, red chili powder, and salt and keep it aside for 15 to 20 minutes
- In a pan heat, some oil then fries the marinated chicken pieces in it, once done place it into a bowl.
- In the same pan add onion, oil, a spoonful of butter and once the onions are cooked add tomatoes and cashew nuts
- Add some water and garlic paste, salt, malt vinegar, sugar, garam masala powder, and chili powder. Evenly mix it and let it simmer for 15-20 minutes
- Churn the mixture into a fine puree.
- Strain it back into the same pan make sure there is minimal wastage.
- Add butter, cream, chicken and kasoori meethi and let it simmer for 5-7 minutes.
- Garnish it with cream and kasoori meethi
Butter Chicken is ready to be served!

Sponge dosa are soft, spongy and light also known as set dosa. These are known as set dosa because these are served in sets of 3 dosa per serving. These are made from rice and urad dal. Do try this recipe at home and drop a comment for me. Do not forget to like, share and comment.
• 2 cups Rice
• 1/4 cup Urad dal
• Fenugreek seeds
• 1 cup Thick poha
• 1/2 cup Curd / Yogurt
• 1/2 cup Water
• Salt to taste
• In a bowl take rice and add urad dal.
• Mix well and wash it really good with water 3-4 times.
• Add fenugreek seeds and soak everything in enough water for at
least 5-6 hours.
• When rice and dal is about to get soaked, take thick poha into a
bowl and add curd, water.
• Mix well and soak the poha for just about 10 minutes.
• Transfer the soaked rice, dal soaked poha, and water into a
blender jar and blend it into a smooth batter.
• Transfer the blended batter into another pot.
• Add salt in the batter and mix well.
• The consistency of the batter should be a little runny and not too
• Cover and let the batter ferment for about 8-10 hours or
• When the batter is well fermented mix it gently with a spoon.
• Heat up the pan on very high heat first and then lower down the
heat to medium.
• Add a little oil and spread it all over the pan.
• Wipe the oil with the help of tissue paper.
• This gives nice, even golden color to dosa.
• Add a ladleful batter on the pan and spread it gently.
• When the surface of the dosa dries out completely add some oil
around the dosa and flip it over.
• Cook the dosa from other side for just about 20-30 seconds.
• Take the dosa off the pan into a dish. Sponge dosa is already.
• Serve the sponge dosa with chutney.

Dosa-Idli-Uttapam Batter Written Recipe
1 portion of Urad Daal
3 Portions of Rice (Any variety)
1-2 spoon of Fenugreek seeds
1 cup boiled rice
1 spoon sugar
1. Soak 1 portion of Urad Daal , 3 Portions of Rice (Any variety) & 1-2 spoon of Fenugreek seeds in warm water overnight / 7-8 hours.
2. After the above ingredients are soaked enough, wash them thoroughly.
3. Add the washed ingredients + boiled rice in grinding jar and add water gradually to form a smooth medium consistency paste (as shown in video). There should be no coars grains as it will suppress the fermentation.
4. Once the paste is ready add 1 spoon sugar to it, mix well and keep it in warm place. ( For cold weather conditions Use the oven technique shown in the video)
Sugar is added for best fermentation.
Batter will be ready in 10-12 hours (depending on the weather conditions , sometimes take little longer)
