Restaurant Style Mexican Rice
Learn how to make authentic Mexican rice just like you get in a Mexican restaurant. Light and fluffy and slightly smoky, this is great as a side to tacos or enchiladas or use as an ingredient in homemade burritos. You'll never buy Spanish rice in a pouch or box again!
What you'll need:
1 cup long grain white rice
1/8 small onion
1 clove garlic
1 Tbsp tomato paste
1 3/4 cups water, divided
1 tsp Knorr caldo de pollo
1/2 tsp salt
3 Tbsp corn oil
In a blender or food processor, puree tomato paste, onion and garlic with 1/4 cup water.
In a medium heavy bottomed saucepan, heat corn oil over medium-high heat. When it's hot, add rice. Cook, stirring constantly, until golden brown and smells toasty.
Add tomato paste puree to rice and cook, stirring constantly 1 minute.
Add in remaining 1 1/2 cups water, caldo de pollo and salt. Bring to a boil.
Once boiling, cover, turn heat down to lowest possible setting and simmer 20 minutes. Do not lift lid!
When 20 minutes is up, turn heat off, lift lid to release excess steam and heat and recover. Let rest 10 more minutes.
When 10 minutes is up, fluff rice with a fork and serve.
Makes about 3 cups of authentic Mexican rice. Served 4-6. Enjoy!

Yen Ta Fo Pink Noodle Soup Recipe เย็นตาโฟ - Hot Thai Kitchen!
This pink noodle soup is so good it made it to my Top 5 Noodle Soups in Thailand episode! For years I thought it was a dish you leave to the experts (i.e. street vendors), but then realized that it's actually really easy to make at home! The secret is in the sweet-tangy-spicy red sauce that gives this dish its iconic flavour. Other than that it's just a simple noodle soup! I use pork broth in the video, which is classic, but you can always use chicken broth as a base instead. Enjoy!

Rougaille with Red Kidney Beans and Mushrooms - Mauritian Creole dish (vegan/vegetarian recipe)
✿ Veganlovlie Recipes / Rougaille - Vegan : The Mauritian rougaille is a much treasured dish in Mauritius. It is a Creole-style tomato-base sauce to which other vegetables, beans or legumes can be added. In this recipe, I have added red kidney beans and mushrooms to the base rougaille sauce. I also have a tofu and mushrooms version on my blog.
✿ FULL PRINTABLE RECIPE ✿
As simple as this dish is to make, its uniqueness and complex flavours come from the combination of the fresh French herbs like thyme and parsley and Indian notes from the coriander and curry leaves. Added to that, a bold layer of heat from the chili, for as much as you can tolerate, used alongside the base components of a tomato sauce - onions, garlic and ginger. I have used curry leaves and coriander (cilantro) in this version but variations of this recipe would swap the coriander for parsley. You may omit the curry leaves if you don’t have them but they really do add another depth of flavour to this dish.
