Purple Sweet Potato or Ube Agar Agar Pudding Recipe
250g steamed purple sweet potatoes
150ml warm water
350ml coconut milk
40ml maple syrup
2 tsp (4g) agar agar powder
pinch of salt
- blend steamed purple sweet potato with warm water
- put in a pan with other ingredients
- bring to a boil and simmer for 5 minutes
- pour into silicon mold
- keep in the fridge for minimum 2 hours

PURPLE YAM PUDDING
Prep time: 20 minutes
Cooking time: 20 minutes
¼ cup Coconut milk
1 cup Purple yam, boiled and mashed
¼ cup Sugar
2 tsp Condensed milk
3 tbs Cream cheese
2 tsp Cream cheese
¼ cup Biscuit crumbs
1 kiwi, for garnish
1 Plum, for garnish
Few mint sprigs, for garnish
1. Heat a pan and add coconut milk in it.
2. Add mashed yam in it and mix well. Cook for 3-4 minutes and add sugar to it. Mix well.
3. Add condensed milk to the pan and combine everything together.
4. Turn off the flame and lastly add in cream cheese. Mix well. Let the pudding cool down.
5. For assembling, take a ramekin mould and add in the cream cheese first.
6. Then top it up with the prepared yam pudding.
7. Sprinkle biscuit crumbs on top of the pudding and garnish it with kiwi and plum fruit slices.
8. Lastly garnish with a sprig of mint and serve.

Purple Sweet Potato Puff Pastry Dessert | Vegan | Easy and Quick Snack Recipes 紫薯酥皮点心
►This is one of my families favorite puff pastry dessert recipe with purple sweet potato. Share it with your family or friends, or for your kids as a quick healthy after school snack. Inside the super light flaky pastry is a gorgeous bright purple color, definitely will bring a great surprise and delight to everyone. And they taste so amazing too.

►Here is my full recipe:
2 sheet puff pastry (300g)
450g (16 oz) purple sweet potatoes
2 tbsp plant based milk
¼ cup sugar (or more)
½ cup (50g) walnuts
¼ cup coconut
vegan egg wash (3 tbsp soy milk, 1 tsp vegetable oil, 1 tsp maple syrup)
Peal 2 purple sweet potatoes and cut them into about 1 cm thick slices. Put them in a bowl, separate them apart so that it will be easier to cook through. Add in 2 tbsp plant based milk. Then cover it with a plate, cook it up in a microwave on full power for 6 mins.
Take it out, add in ¼ cup of sugar. Mesh it up like meshing potatoes. You can add in a bit more sugar, like 1/3 cup, if you want it sweeter, but I like the natural sweet flavor of purple sweet potato, so ¼ cup of sugar is enough for me.
Chop ½ cup natural walnuts to smaller pieces, put into the meshed sweet potato. Then added in ¼ cup desiccated coconut. Mix it well. Divide it into 8 even portions. For your reference, each portion weigh about 65 - 70 g. Then roll the filling in my hands to form 8 balls, so that it will be easier to wrap them up in the pastry later.
Get one of the puff pastry sheets, make sure it’s soft and pliable. Then cut it in to 4 even squares. I just store bought frozen puff pastry, for today’s recipe, I need two of them. Take them out before preparing the other ingredients, or 15 mins before using them to let them thaw. Then pick up one portion of the filling, put in the center of the square pastry. Then wrap it up. Grab the 4 corners of the pastry one by one, pull them over the top the filling, then press the 4 sides of the pastry into the center to Seal it. You can glue the inside edge of the dough with some plant based milk to help it stick together if you want, but I found this step is really not necessary for the way I’m wrapping it. Then flip it over, so that the smooth side is facing up, then press it down to flatten it a little bit. Then use two palms to turn it and squash it into the center at the same time, so the pastry will become taller and slimmer again. Then press it down again to make it the shape you like. Repeat this process one or two times until it has a nicely round shape, and the bottom part should be nicely sealed too at the same time.(I wrap them up in this way is because I want to put as much delicious filling in it as possible. But you can definitely be a bit free style to wrap it up in your own way.) Cut 3 slits on the top with a sharp paring knife for ventilation.Then repeat the same process for all the rest of 7 pastries.
Transfer them onto a baking tray. Then brush some soymilk based vegan egg wash all around the pastries, it’ll give them a nice golden color and shine. Then bake them in a preheated oven at 200 Celsius or 400 Fahrenheit for 20-25 mins or until they are puffy and golden brown.
Then enjoy it with all your loved ones ;)

Ube bread pudding
Sugar 1 cup Ube Pandesal bread 2 days old 1510g (3 lbs 5 oz.)
Vanilla 1 Tblspn
Salt 1 tspn
Ground cinnamon 1/4 tspn as
Ube extract 3 Tblspn
Sugar 1/4 cup
Ground cinnamon 1 tspn
Heavy cream 248g (1 cup)
Butter 18g (1 Tblspn)
Salt 4g (1/2 tspn)
Granulated sugar 26g (2 Tblspn)
Vanilla 9g (1 Tblspn)
This recipe is for two cakes. Feel free to cut the recipe in half if you only want 1. If you don’t have Ube Pandesal you can still make this but you’ll need to add more Ube extract into your custard. Or if you just want to make a plain bread you can just use any bread and not add any Ube extract. The custard base is the same except no Ube extract.

Mix milk and pudding together, fold in cool whip. Place Butterfingers in ziplock bag and smash with a rolling pin into small pieces. Break cake into small pieces and layer half on the bottom of a 13X9 inch pan. Spread half of whipped mixture on cake then sprinkle half of the Butterfinger pieces on top. Repeat with remaining ingredients. Refrigerate for a couple of hours before eating.

VEGAN TEA CAKE RECIPE | CHINESE NEW YEAR PURPLE TARO DESSERT!
LAY HO MA everyone and GUNG HAY FAT CHOY (happy Chinese new year in Chinese)!! One thing I love about Chinese tradition is...well, we drink tea - lots of it! Its both a health and social thing I feel how its so deeply rooted in our culture. Being from Hong Kong (used to be British colony), they've adapted an afternoon tea that's a mix of Asian and Western style teas and finger foods. I absolutely love it, and when I'm in Hong Kong I always go with my friends. This recipe isn't exactly traditional Chinese, but I hope you'll give it a try and perhaps we can have some tea together!
1 small purple potato (roughly 1 cup worth)
1 medium chunk of taro (roughly 2 cups worth)
4 tbsp cane sugar
3 tbsp coconut oil
2 pinches of salt
1. Bring a pot of water to boil
2. Peel the taro and sweet potato
3. Chop the taro and potato into smaller cubes to help them steam faster
4. Place the taro on one half of the steaming basket, and the purple potato on the other half separated with parchment paper
5. Steam the potatoes and taro for 20-25min or until completely soft
6. Place the purple potato into a mixing bowl and drain out the liquid
7. Add a pinch of salt, 2 tbsp cane sugar, 1 tbsp coconut oil, and mash/mix well
8. In a separate mixing bowl, add in the taro
9. Add 2 tbsp coconut oil, 2 tbsp cane sugar, a pinch of salt, and mash/mix well
10. Line your ramekins with cling film or parchment paper
11. Add about 1 tbsp of taro and press to form the base
12. Use your hands to add more taro to form a wall around the inside of the ramekin
13. Add about 1 tbsp purple potato and flatten out with your thumb
14. Carefully collapse the taro wall into the purple potato
15. Add slightly more taro on top if needed and flatten firmly, but not too aggressively
16. Cover and place in the fridge for at least 6 hours or overnight
17. Carefully remove from mold and enjoy with your favourite hot tea or simply for dessert!

Today's recipe is one of my favourite dessert that originates from Taiwan Jiufen (台灣九份）

I changed the Taro balls to pumpkin balls instead, but my recipe works for Taro balls too, so no worries Taro fans!
Sweet potato balls can be kept in freezer for up to a month. Do not thaw and just cook it straight from freezer in boiling water with the same process as per shown in video!
