INGREDIENTS
• 6 eggs
• 1 cup whole milk
• 2/3 cup flour
• 1⁄2 tsp salt
• 3 TBSP butter
• 3 large apples sliced
• 1⁄4 cup brown sugar
• 1 tsp cinnamon
DIRECTIONS
1. Beat eggs in mixer. Add milk and beat. Add flour and salt, beat until combined.
2. Preheat oven to 425.When hot, melt butter in pan (about9x9). When it melts,
add apples and put back in oven until butter sizzles.
3. When butter is sizzling, pour in batter and sprinkle with sugar and cinnamon.
4. Bake 20 minutes and enjoy right away!

German apple pancakes: the final result is puffy and airy
Easy and fun to make! INGREDIENTS
3 eggs
2/3 cup milk
1/2 cup flour
1/4 tsp vanilla extract
1/4 tsp salt
3 tbsp butter
METHOD In a blender, add 3 eggs, milk, vanilla and beat until combined.
Add salt and flour, beat again.
In an ovensafe pan, over medium heat, melt butter and pour the batter into the pan, fry for 2-3 minutes and bake it in the over .Bake at 425F/220C for 20-25 min.
Decorate with maple syrup, strawberries and powdered sugar.

APPLE DUTCH BABY PANCAKE rises before your eyes!
This version is made in a blender for quick and easy.
A Dutch baby pancake (must be a rather big baby!) is also referred to as a German pancake. It’s traditionally baked in a cast iron pan and although spectacular out of the oven due to its puffed up appearance, it quickly deflates into a pancake. This recipe uses granny Smith apples with brown sugar and a touch of cinnamon. For convenience I used a thick bottomed non stick pan, but if you have a good cast iron pan you will get even better results.

It’s apple picking season on Delmarva and we have some beautiful ones in the DelmarvaLife Kitchen. Chief of Community Relations with the Delaware Department of Agriculture‘s Delaware Grown program, Stacey Hofmann shows us how to make a Puffy Apple Pancake.
Puffy Apple Pancake
Ingredients
2 Tbsp butter
2 Tbsp brown sugar
½ tsp ground cinnamon
1 medium apple (Gala, Fuji), cored, peeled, sliced
2 large eggs
½ cup milk
¼ tsp salt
Directions
Preheat oven to 400°F. Melt butter in a 9-inch pie plate.
Remove from oven, brush butter on sides of pie plate. Sprinkle brown sugar and cinnamon on bottom of pie plate. Arrange thinly sliced apples over sugar.
In a bowl, whisk together eggs, milk, and salt. Pour over apples.
Bake for 30-35 minutes or until puffy and deep golden brown.
Remove from oven and immediately loosen edge of pancake. Turn upside down on to plate.
Handling & Storage
Apples should feel firm to the touch and be free of bruises.
Place apples in a plastic bag and refrigerate in the crisper for up to a month.
Do not peel or slice an apple until ready to use or it will begin to brown. Dip slices into lemon juice to slow down the browning process.

Apple Rose Pastry Dessert
How to make a rose shaped apple pastry. This simple recipe is really easy to make and looks fantastic. You only need a few ingredients, and it doesn't take long to make your own flower shaped dessert.
I used 3 red apples, 375g of puff pastry, 2 tbsp lemon juice, some icing sugar and cinnamon. Bake for 35 - 40 mins at 190°C / 375°F.

RECIPE:
Cream Cheese Filling
INGREDIENTS
1 8-ounce block cream cheese
¼ cup granulated sugar
½ teaspoon vanilla extract
PREPARATION
In a medium bowl, mix cream cheese, sugar, and vanilla until smooth.
Strawberry Pastry Diamond
Makes 9 pastries
INGREDIENTS
1 sheet thawed puff pastry
5 strawberries, halved with stems removed
9 tablespoons Cream Cheese Filling, recipe above
powdered sugar
PREPARATION
Preheat oven to 400°F.
Cut the puff pastry into 9 equal squares.
Taking one of the squares, fold one of the edges to the opposite edge.
Leaving a ½ centimeter border, cut about ¾ of the way from the bottom of the triangle to the tip on both sides, making sure the cuts do not touch.
Unfold the square.
Taking the top flap, fold it towards the 2 cuts near the bottom.
Take the bottom flap and fold it towards the top edge.
Place about a tablespoon of the cream cheese filling in the middle, then place a strawberry half on top.
Repeat with the remaining pastry squares.
Bake for 15-20 minutes until pastry is golden brown and puffed.
Serve with a sprinkle of powdered sugar!
Raspberry Pastry Flower
Makes 4 pastries
INGREDIENTS
1 sheet thawed puff pastry
20 raspberries
4 tablespoons Cream Cheese Filling, recipe above
Powdered sugar
PREPARATION
Preheat oven to 400°F.
Cut the puff pastry into 4 equal squares.
Leaving a ½ centimeter border, make 8 total cuts along the edges of the square, with each cut going about ⅓ of the way through the length of the edge. Make sure the cuts do not touch.
Place a tablespoon of the cream cheese filling in the middle of the square, then top with 4 raspberries.
Take one of the edge flaps and fold it towards the center, looping over the raspberry. Repeat with the other flaps. Place a raspberry in the center, on top of where all the flaps overlap.
Repeat with the remaining pastry squares.
Bake for 15-20 minutes until pastry is golden brown and puffed.
Serve with a sprinkle of powdered sugar!
Blueberry Pastry Pinwheel
Makes 9 pastries
INGREDIENTS
1 sheet thawed puff pastry
36 blueberries
9 tablespoons Cream Cheese Filling, recipe above
Powdered sugar
PREPARATION
Preheat oven to 400°F.
Cut the puff pastry into 9 equal squares.
Make 4 cuts on each square, with each cut starting from the outside corners of the square and stopping just short of the center.
Take one of the flaps and fold it towards the center. Fold every other flap towards the center until you have created a pinwheel shape.
Place about a tablespoon of the cream cheese filling in the middle, then place 4 blueberries on top.
Repeat with the remaining pastry squares.
Bake for 15-20 minutes until pastry is golden brown and puffed.
Serve with a sprinkle of powdered sugar!

FLUFFY PANCAKE RECIPE
Ingredients
1½ Cups | 190g Flour
4 Teaspoons Baking Powder
Pinch of Salt
2 Tablespoons Sugar (optional)
1 Egg
1¼ Cups | 310ml Milk
¼ Cup | 60g Melted Butter + more for cooking
½ Teaspoon Vanilla Essence
Instructions
In a large bowl mix together the flour, baking powder and salt with a wooden spoon. Set to the side.
In a smaller bowl crack in the egg and pour in the milk.
Add the melted butter and vanilla essence to the egg and milk and use a fork to mix together until everything is well combined.
Make a well in the dry ingredients and pour in the wet. Fold the batter together with a wooden spoon until there are no longer any large lumps.
To cook the pancakes heat a heavy based pan like cast iron over medium low heat. When the pan is hot add a small amount of butter and ⅓ cup of the pancakes batter.
Cook the pancake for 2-3 minutes each side. Repeat with remaining batter.
Serve the pancakes stacked high with butter and maple syrup. Enjoy.
Notes
You can add other flavourings to the pancakes such as blueberries or chocolate chips. Add the extra ingredients at the same time as you combine the wet and dry ingredients.

INGREDIENTS
Two-Crust Pie Dough
2 ¼ cup cake and pastry flour
2 Tbsp sugar
¾ tsp salt
1 cup cold, unsalted butter, cut into pieces
6 Tbsp cold water
1 Tbsp lemon juice or white vinegar
Apple Cinnamon Galettes
½ cup sour cream
2 Tbsp + 1/2 cup dark brown sugar or demerara sugar
½ tsp vanilla extract
4 cup peeled and thinly sliced Granny Smith, Cortland, or other tart apple (about 3 apples)
1 tsp ground cinnamon
6 tsp unsalted butter
1 egg, whisked with 2 tbsp water, for brushing
Turbinado sugar, for sprinkling
DIRECTIONS
Two-Crust Pie Dough
1. Stir the flour, sugar and salt to combine in a bowl or using a stand mixer fitted with the paddle attachment. Cut in the butter by hand with a pastry cutter or on low speed until just small pieces of butter are visible and the mixture as a whole just begins to take on a pale yellow colour (indicating that the butter has been worked in sufficiently).
2. Stir the water and lemon juice together and add this to the dough all at once, mixing until the dough just comes together. Shape the dough into 2 discs, wrap and chill for at least 2 hours before rolling. Alternatively, the dough can be frozen for up to 3 months and thawed in the fridge before rolling.
3. Shape into 2 logs and chill.
Apple Cinnamon Galettes
1. Preheat the oven to 375 F and line 2 baking trays with parchment paper. Pull the pie dough from the fridge 20 minutes before rolling.
2. Slice each log into 3 pieces and roll each piece out on a lightly floured work surface to just under ¼-inch thickness and 8-inches across. Place 3 onto each baking tray and chill while preparing the filling.
3. Stir the sour cream, 2 Tbsp of brown sugar and vanilla together. In another bowl, toss the apples, remaining ½ cup of brown sugar and cinnamon together.
4. Spoon the sour cream into the centre of each rolled piece of dough and top with the sliced apples. Place a teaspoon of butter on the top of each tart. Fold the dough over the apples, making 5 or 6 creases overlapping each other so that the apples are almost fully covered. Brush the pastry with the eggwash and sprinkle generously with granulated sugar.
5. Bake the galettes for about 25 minutes, until the pastry is a rich golden brown colour. Let the galettes cool for at least 20 minutes before serving warm, or cool completely and serve at room temperature.
6. The galettes should be served warm or at room temperature, but can be stored chilled for up to 3 days.

Hong Kong-Style Egg Waffle Recipe
Makes 3-4 waffles
INGREDIENTS
1 cup plus 2 tablespoons (140 grams) all-purpose flour
2 teaspoons (8 grams) baking powder
1 tablespoon custard powder
3 tablespoons plus 1½ teaspoons (28 grams) tapioca starch
2 large eggs
½ cup plus 3 tablespoons (140 grams) sugar
½ cup plus 2 tablespoons (140 milliliters) water
1 tablespoon plus 2¼ teaspoons (28 grams) evaporated milk
1 teaspoon vanilla extract
2 tablespoons (28 grams) vegetable oil
Oil, for greasing waffle machine
PREPARATION
In a medium bowl, sift together the flour, baking powder, custard powder, and tapioca starch. Set aside.
Set up a double boiler over medium heat. Add the eggs and sugar to the top bowl, whisking vigorously until the sugar is dissolved and the mixture has thickened slightly, about 5 minutes.
Add the water and evaporated milk to the egg mixture and stir to combine.
Slowly add the dry ingredients to egg mixture and mix until well combined.
Stir in the vanilla and vegetable oil.
Pour the batter through a fine-mesh strainer into a clean bowl to catch any lumps.
Cover the bowl with plastic wrap and let the batter rest in the refrigerator for at least 1 hour, or overnight.
Transfer the batter to a spouted liquid measuring cup for easy pouring.
Set an egg waffle machine and set to 400°F (200°C). Grease lightly with oil. Add about 1 cup of batter to the machine and cook for 2½ minutes, until crispy and slightly brown. Using a rubber spatula, transfer the waffle to a wire rack to cool slightly. To achieve a round shape, lay the waffle over a curved surface, such as a rolling pin, to cool. Repeat with the remaining batter.
Serve when the shell has cooled and become crisp but still warm, and enjoy!

蘋果、砂糖 少許、檸檬汁、起酥皮、橘子果醬、肉桂粉、糖粉、奶油
做法 :
1. 蘋果洗淨後去核,切成薄片
2. 放入切片蘋果、砂糖、檸檬汁、水,煮約1-2分鐘蘋果微變軟放涼備用
3. 起酥皮切成適量大小,用水將起酥皮黏成長條狀
4. 塗上橘子果醬,擺上蘋果片,灑上少許肉桂粉
5. 摺起起酥皮,並捲起,接縫沾一點水黏起來
6. 烤盤塗抹少許奶油,烤箱預熱約190度C,烘烤35分鐘,烤至金黃
7. 灑上糖粉,就完成啦~❤️
