Sweet Potato Chick Pea Stew
PREP TIME: 1 HOUR
COOK TIME: 35 MINIUTES
SERVES: 4-6
INGREDIENTS
1 cup chickpeas, cooked.
¼ cup vegetable oil
1 medium onion, diced.
3 cloves of garlic, minced.
4 medium tomatoes, chopped.
2 tbsps tomato paste
1 tbsp cayenne pepper
1 tsp ground cardamom
1 tsp ground cumin
1 tbsp salt
1 cup chicken stock
2 medium sweet potatoes, diced.
2 bay leaves
DIRECTION
• Heat vegetable oil in a saucepan over medium heat, garlic, stir and let sweat for a minute.
• Add chopped tomatoes, stir and let simmer for 4 minutes then add tomato paste stir and let it simmer for 3mins
• Add cayenne pepper, ground cardamom, cumin, salt, stir and let simmer.
• Add chicken stock stir and let it boil then add cooked chickpeas, stir and let simmer for 5 minutes.
• Add sweet potato, bay leaves, stir and let boil for 7 minutes.
• Sweet potato chickpeas stew ready to serve.
• Serve with croutons.
Peas! Greek Vegan pea stew (arakas)
INGREDIENTS
1/2 cup olive oil
1 onion
1/2 kg (1 lb) frozen peas
1 cup chopped tomatoes or tomato sauce
Dill
3-4 potatoes
3-4 carrots
Salt and pepper
INSTRUCTIONS
Sauté the chopped onion in a bit of olive oil or water
Add the peas
Add the tomatoes and 1 cup of water, salt and pepper
Clean, peel and chop the rest of the ingredients and throw them in the pan
Stir well and once boiling, lower the heat to low-medium and cook for 30 minutes (until potatoes are soft but not melting)
Add the olive oil (optional but recommended)

This is a great and easy classic Greek recipe to follow, since you usually have the ingredients at home. It can be served as a main course but it is also perfect as a side dish with chicken or fish. Greek people consume this stew all year round and it is also very popular in the Lent Season. Fresh ripe tomatoes and good quality potatoes are important to maximize the flavors of this simple dish. Suitable for vegans and fasting.
Serves 3-4 persons
Ingredients:
250 gr. Large Peas fresh or frozen
1 kg. good quality Potatoes cut into small cubes
1 Onion dry chopped
1 Garlic Clove
2 medium very ripe Tomatoes
2-3 tbsp. Tomato paste (puree) (depends how red you like the sauce)
Some Olive oil
1/3 bunch of dill finely chopped or 2 tbsp. dry dill
Salt and ground Pepper
1 tbsp. Sugar
½ tsp. Turmeric (optional)

Σερβίρει 3-4 άτομα
Αυτή είναι μια υπέροχα εύκολη κλασική ελληνική συνταγή που μπορείτε να ακολουθήσετε, επειδή περιλαμβάνει υλικά που έχετε συνήθως στο σπίτι. Μπορεί να σερβιριστεί ως κύριο πιάτο αλλά είναι επίσης ιδανικό ως συνοδευτικό με κοτόπουλο ή ψάρι. Οι Έλληνες καταναλώνουν αυτό το λαδερό όλο το χρόνο και είναι επίσης πολύ δημοφιλές τη Σαρακοστή. Φρέσκες ώριμες ντομάτες και καλής ποιότητας πατάτες είναι σημαντικές για να απογειώσουν τις γεύσεις αυτού του απλού πιάτου.
Κατάλληλο για χορτοφάγους και νηστεία.
Υλικά:
250 γρ. Μεγάλα μπιζέλια νωπά ή κατεψυγμένα
1 kg. καλής ποιότητας Πατάτες
1 Κρεμμύδι ξερό ψιλοκομμένο
1 σκελίδα Σκόρδο
2 μεσαίες πολύ ώριμες Ντομάτες
2-3 κ.σ. Τοματοπελτές (εξαρτάται πόσο κόκκινη θέλετε τη σάλτσα)
Λίγο ελαιόλαδο
1/3 ματσάκι φρέσκος Άνηθος ψιλοκομμένος ή 2 κ.σ. ξερός άνηθος
Αλάτι και πιπέρι
1 κ.σ. Ζάχαρη
½ κ.γ. Κουρκουμάς (προαιρετικά)
