A little sugar sprinkled on the top of the plums, along with the heat from the oven, causes the plums to soften and their juices to be released. So by the end of the baking time they have become wonderfully soft and almost jam-like with nicely caramelized edges. And the cake. Well, this cake is deliciously flavorful, and no electric mixer is needed to make the batter.

START BY MAKING THE STREUSEL..
IN A BOWL ADD THE FLOUR,SUGAR,CINNAMON,SALT AND THE BUTTER..
RUB THE INGREDIENTS TOGETHER USING THE TIPS OF YOUR FINGERS UNTIL THE MIXTURE IS CRUMBLY..
CUT IN HALF AS SHOWN IN THE VIDEO THE PLUMS AND SET ASIDE..
IN A BOWL BEAT UNTIL CREAMY BUTTER AND SUGAR..
ADD THE EGGS AND THE LEMON ZEST AND BEAT UNTIL WELL INCORPORATED..
ADD THE FLOUR AND THE BAKING POWDER AND MIX UNTIL WELL INCORTPORATED.
SWITCH TO A SPATULA AND CHECK IF EVERYTHING IS WELL COMBINED..
GREASE AND FLOUR A BAKING PAN AND TRANSFER THE CAKE MIXTURE INTO THE BAKING PAN..
SPREAD EVENLY AND PLACE THE PLUMS OVER THE CAKE MIXTURE..
SPRINKLE WITH BROWN SUGAR AND COVER THE PLUMS WITH THE STREUSEL..
BAKE IT IN A PREHEATED OVEN AT 175C/347F FOR 40 MINUTES OR UNTIL A TOOTHPICK COMES OUT CLEAN..
LET IT SIT IN THE PAN FOR 10 MINUTES
LET IT COOL COMPLETELY ON A WIRE RACK..

German Plum Cake | Easy Recipe
This German Plum Cake is a very tasty cake with a name which is impossible to pronounce.
Let's try it: Zwetschgendatschi.

1-1.5 kg plums (the riper the better)
lemon juice for your fingers
500 g flour
1 package yeast
1/4 l milk
50 g sugar
50 g butter
1 pinch salt
For the sprinkles:
250 g butter
200 g flour
250 g sugar

I really love Plum Cake, especially with crumbles (Streusel). This version is made with a yeast dough and is the version you will most likely get at a bakery in Germany. Another version is made with a different dough and I hope I can show that one next year, right now I don't have any additional plums for that.

GERMAN PLUMS CRUMBLE CAKE
Plum season in Germany is nearly over. So today I will be showing you how to make a PLUM CRUMBLE CAKE. It is very SIMPLE & EASY to make the cake.I will be using the PRUNE PLUMS which is different from the rounded PLUMS. PRUNE PLUMS are sometimes sourish but for my cake I am using the sweetish PRUNE PLUMS, so that I don't need to add so much sugar to the cake.
Give it a try. You won't regret making this cake.
My recipe have less sugar, less carbohydrates, I am using a mixture of Almond Meal/Flour and that makes a very nice texture.
In my video I kept mentioning the wrong names of my ingredients,it is PLUMS instead of ALMOND … I was completely lost there with my words :( :( but you can see that its PLUMS, right ! hahaha

You will need
26cm cake form lined with baking paper
Preheat oven at 180C
First step is preparing the cake batter
Mix all dry ingredients :
150gm Cake Flour or Self Raising Flour
100gm Almond Meal or Almond Flour
2 tsp Baking Powder
a pinch of salt
In another bowl beat
50gm cold butter with 125gm sugar till creamy and well combined
then add 2 eggs and continue to beat softly so that it does not fly all over the working surface
Then fold in the dry ingredients mixture, till a smooth paste is form.
Slowly add the 100-125ml Almond Milk and stir into paste to form a smooth cake batter.
Pour into the lined cake form. Spread it evenly.
Place the ready cut 500gms Plums (500gm Plums deseeded, cut into quarters) with skin side down. Set the cake aside while you prepare the crumbles.
In another clean bowl add
50-75gm cold butter
100gm Flour (Self Raising flour or Cake Flour as you wish)
With clean hands, using your fingers softly work it into crumbles and then add 2 tbsp chopped Almond brittle.
Once you have made it into crumbles, using your fingers distribute it over the unbaked plum cakes.
Bake the cake at LOWER MDEIUM LEVEL at 180C for 45mins .
REMEMBER each oven behave differently.
Using a wooden skewer, check that the cake is ready and crumble shows a light golden brown color. Its ready !.
Remove to cool the PLUM CRUMBLE CAKE for about 1 hour.
Remove from the cake form. Place over the serving cake plate and dust with POWDER SUGAR.
Serve with/without a dollop of Whipped Cream on the side as you wish.(If you are not watching your waistline hehehe!)

Streusel Kuchen Recipe - German Yeast Cake with Crumb Topping!
Streusel Kuchen is a traditional German Yeast Cake Recipe topped with a sweet crumb. It is basically the German version of a coffee cake. And can be made with or with out yeast.
It is a versatile cake that can be topped with apples, plums and even peaches! My German mom used to make this cake with applesauce and called it Applesauce Streusel. My brother and I always loved when our mom made this as it was such a wonderful tasty treat! And now I am officially passing the recipe on to my Oma's great grand daughter!

The following amounts will make 2 to 3 smaller cakes (9 round or square pan) or one larger cake (9x13 pan) plus one smaller pan - and depending on how thick you lay out the dough in the pan. My mom used to stretch the dough thinner, about 1/2 inch before baking. I made mine about 1 thick and then it rose to about 2 So it is up to you how high you want the cake to be after baking - it will pretty much double in size while baking in the oven.
Yeast dough Ingredients
400 grams - all purpose flour
2 tsp - dry active yeast
150 ml - luke warm milk
80 grams - regular granulated sugar
1 room temperature egg *(medium or large size egg is fine)
100 grams - unsalted butter that has been melted and cooled
pinch of salt (no more than 1/8 tsp)
Follow instructions in video for making the dough - You need to mix the yeast in luke warm milk first - it should begin to bubble and foam within 5 to 10 minutes - if it does not do this the yeast is probably dead and you will not get any rise in your dough.
Some recipes say to let dough rise for just an hour - I let mine rise for 2 hours. You basically want the dough to double in size. My mom told me she used to let it rise for one hour, then knead it once more and let rise for another hour. I did not do the extra kneading, and it turned out just fine.
While the dough is rising you can make the streusel topping and then place in the fridge until you are ready to use it.
For streusel topping you will need the following
200 grams - all purpose flour
150 grams - regular granulated sugar
125 grams - unsalted butter - softened
1 to 2 tsp - vanilla extract ( I think 2 tsps. of vanilla tastes better) - you can also use a packet of vanilla sugar
Optional addition - 1 tsp. almond extract ( almond is not typical for streusel, but this is how my mom used to make it)
Follow directions how to make streusel topping
Once the dough has risen to double in size, you want to do a very lightly kneading and roll or stretch gently to fit into your pan.
Make sure to lightly grease and flour your baking pans - then once dough is fitted into the pan - cover with a cloth and let it sit for another 15 to 20 minutes.
Then top dough with desired toppings - apple slices, apple sauce, peach slices, plums and top fruit with streusel. You can also make this with just streusel topping - but add a few bits of butter to top - this will help.
Bake in a pre heated oven at 375 to 390 F ( 180 to 200 C) for 20 to 25 minutes - depending how thick the dough is - if it is thicker than maybe 25 to 30 minutes. Juts make sure it does not burn on bottom and you can insert a toothpick and if it comes out clean then it is done.
Allow to cool completely on a rack before serving. I think this cake tastes best the day you make it - but you can store it for a couple days in air tight container or store longer in fridge.

My favorite kitchen equipment:
2.5 lb (1.15 kg) plums
1/2 cup (100g) white sugar
1 teaspoon lemon zest
2 tablespoons cornstarch
For the crumble:
1 cup (125g) flour
1/3 cup (30g) ground almonds
1/3 cup (67g) brown sugar
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla extract
6 tablespoons (90g) cold butter, cut into cubes
1. Preheat the oven to 360F (180C).
2. Slice the plums. Place in a large bowl, add white sugar, cornstarch, lemon zest and mix well, until combined. Transfer to a 9-inch (23cm) baking dish.
3. In a large bowl place the ingredients of the crumble and rub with fingertips until the mixture resembles crumbs.
4. Sprinkle the crumble mixture over the plum mixture. Bake for 30-45 minutes, or until the topping is golden-brown.
5. Cool slightly. Serve with ice cream.
