You’ll find a batch of these quick pink pickled onions in our fridge most weeks. Follow our tips and make quick pickled onions begging to be added to tacos, salads, grain bowls, sandwiches, and more!
These pickled onions are sharp, sweet and refreshingly acidic. We use a combination of fresh lime juice and apple cider vinegar. You can use just one acid, but we’ve found the combination adds a touch more complexity. There’s a lot of elbow room when it comes to adding spices or additional flavors. We use cinnamon sticks, cloves and red pepper flakes. Keep it clean and simple and add none or add a combination of the following: cinnamon sticks, whole cloves, crushed red pepper flakes, whole garlic, star anise, bay leaf, mustard seeds, fresh ginger slices, fennel seeds, coriander seeds or cumin seeds.

I freaking love Pink Pickled Onions. Or are they really Red Pickled Onions?
Loads of my favourite restaurants use them. They are a great way to zhuzh up any meal with a bit of colour and a bright note of acid. Plus they are really easy to make. I'm going to show you how to make Pink Pickled Onions
For the Pink Pickled Onion Recipe:
You need red onions, vinegar, salt, sugar and some aromatics.
4 large Red onions peeled and sliced thinly
4 tbs Salt
4 tbs White sugar
1 tbs black peppercorns
400ml White vinegar
400ml freshly boiled water. ⠀

• 1 red onion
• 1½ cups white vinegar
• 2 tablespoons sugar
• 1 tablespoon salt
OPTIONAL FLAVORINGS (Pick one or mix and match):
• 1/2 teaspoon whole black peppercorns
• 1 teaspoon whole allspice berries
• 2 sprigs fresh rosemary
• 2 sprigs fresh thyme
• 1 small hot red pepper
• 3 whole peeled garlic
• 1 teaspoons whole cumin seeds

00:02:15 - Thyme pickled red onions variation
00:02:37 - Cumin garlic habanero pickled red onions variation

1️⃣ 00:01:03 - Peel and slice red onion into thin slices. Place into a pint sized mason jar, or other glass, plastic, or ceramic container with a sealable lid.
2️⃣ 00:00:34 - In a small saucepan stir together vinegar, sugar, and salt. Add in 1 or more additional optional flavorings as desired. Bring to a boil, then remove from heat.
3️⃣ 00:01:19 - Pour mixture over onions in jar until full. Place the lid on and let cool to room temperature.
4️⃣ 00:01:29 - Place the lid on to seal and refrigerate.

Pickled Red Onions
These pickled red onions are a great pop of colour and super flavourful addition to salads, cheese boards, sandwiches and savoury dishes. They're very easy to make, all you need is a few red onions, some flavourings of your choice, I went with garlic and chilis, that is usually my go to but you can use a ton of other spices, mustard seed, fennel, dill, peppercorns, coriander etc. etc.
Then I just use a simple 1:1:1 pickling liquid. 1 part water, 1 part sugar, 1 part vinegar and then salt to taste. This recipe can be scaled up or down really easily so if you want to make a bigger or smaller batch just adjust it accordingly.

QUICK PICKLED RED ONIONS FOR TACOS AND MORE!! EASY REFRIGERATOR PICKLED ONIONS
Today I am sharing how I made the delicious, tender crisp, tangy, pickled red onions we used on our pork carnitas tacos in a recent video. These are a quick pickle that is super simple to throw together but can make all the difference when creating homemade street tacos from home. These onions are seriously amazing and they are great on more than just tacos! Use these on sandwiches, in salads, in deviled eggs or anywhere you want a little oniony zip! Add chiles or leave them out but make these! I promise you will love them!
Quick pickles are simply the best way to use up produce and give a little acidic note to just about anything. Cuisines the world over rely on a little pop of acid to clear the palate and help to level out flavors of foods that can coat the tongue. Much like carnitas, which can be a bit on the heavy side. These pickled red onions are the perfect way to add that pop to your taco.
I started with one large red onion and sliced it thin on a mandoline. You want these to have a bit of body but you don't want them really thick but you also don't want them too thin because they will just disappear once they hit the brine. I stuffed my sliced onion in a jar that I knew would best fit all the ingredients along with one very thinly sliced serrano chile. I did not remove the seeds or ribs from the chile I wanted the heat. You can leave out the peppers if that is not your jam. The onions provide enough heat on their own. You make the choice. As someone I once heard say, The world is your pickle.
The brine is very simple but packs a punch. Water, fresh lime juice (but bottled works too) and apple cider vinegar. Some salt and honey or other liquid sweetener for good rounded flavor make this the perfect flavor when blended together. If you don't like honey you can use agave nectar, maple syrup or other liquid sweetener that you prefer. I put everything in the jar and gave it a push with the spatula then popped the lid on and gave it all a good shake for a couple of minutes. That's it! Your simple, quick pickled red onions are ready to rest.
Now you can wait as little as 15 minutes or up to a few days. I recommend using these the day you plan to eat them and they are good for at least three to five days after that. Make sure you submerge the onions that remain in the brine so they don't dry out. Just tuck these into your fridge and enjoy whenever the spirit moves you.
That is how simple it is to make a quick and tasty condiment to go along with your tacos. These really are amazing and add just the right extra touch when serving favorites from south of the border and beyond! These onions are great tucked into a noodle bowl or some ramen to add just the right note of tangy acidity and spice. Give them a try!

My best recipe for Pickled onions, super simple and great for Tacos and everything that pickled onions go on.

How to make sweet pickled onions
Small to medium onions
2 litres of Brown Vinegar
3 tablespoons of honey
1 dessertspoon peppercorns
1 dessertspoon allspice
1 teaspoon ground ginger
2 dessertspoons salt
7 star anise
1. Take a few rounds of skins off to get small onions. Put in large bowl add some salt over the onions and cover with water. Leave overnight.
2. Wash jar/s in soapy water and drain. Place jar/s into cold oven and heat to 120 degrees C. Then Turn oven off and open door. Pack onions tightly into jar.
3. Boil vinegar, spices, salt, sugar, star anise and honey for a few minutes. Skim and cool.
4. Pour spiced vinegar when hot/lukewarm over the onions.
5. Seal jar and wait 5 weeks before using.

Here is a Very Simple Pickling Recipe good for 1 C of sliced Red Onions.
1 C White Vinegar
1.5 Tbl Salt
2 Tbl Peppercorns
1 Garlic Glove
Bring Vinegar, Salt, Sugar & Peppercorns to a boil then pour over the onions. If you like your onions soft then add them to mixture while boiling for 2-3 minutes to soften. Let pickle for 2 days in refrigerator then enjoy - Pickles will be good up to 4-6 months.

I chose onions because I’m obsessed with the pickled onions they serve at my favorite taco truck in Santa Rosa, CA. I wanted to have some of my own so I gave it a shot. It wasn’t a total disaster. They actually tasted pretty good! They turned out a little more tart than I had wanted but flavorful and spicy nonetheless. I’ve tried them on tacos, mixed green salad and a few sandwiches.
