welcome friends welcome back to the kitchen today we are going to do a recipe that is super simple um that for some reason i've never done on the channel before and that is a pickled red onion now i just put down three quarters of a cup of water and i'm gonna match that with the exact same amount three quarters of a cup of apple cider vinegar and i'm going to pour both of those into this little pan and i want to bring this up to not quite a boil but i want to bring it up to at least a simmer because i need to dissolve in this salt and this is a super simple formula you want equal parts water and vinegar and you can use any vinegar that you want white wine vinegar red wine vinegar apple cider vinegar just plain white distilled vinegar pineapple vinegar any vinegar that you want as long as the acid content is at least five percent now to this i'm going to add salt and that was one and a half teaspoons of coarse salt so for every cup of liquid that is the combination of the water and the vinegar you want one teaspoon of coarse salt and you can just vary that up and down so you can scale this to as many onions as you want to do at a time or just down to one onion like i'm doing today and i usually only do one onion this isn't a pickle in the sense that it's something that you want to preserve for a very long time it's something that you want to make and eat quickly you don't really want this hanging around on a shelf or in your fridge for months at a time it'll last if you wanted to but really it's meant to be eaten quickly now that's all you need for the pickling liquid but i'm going to add some telecherry peppercorns and that's probably about a dozen peppercorns i'm just going to drop that in and let those steep with the water and the vinegar to get that flavor all the way through so i'll give that a stir just to help dissolve the salt a little bit and while that heats we will slice up our onions so top and tail a red onion i'm also going to put in some jalapenos and i cut it in half and peel it away and now that it's peeled i just cut a wedge out of the root end and then i like to slice across like this and keep them really thin

You’ll find a batch of these quick pink pickled onions in our fridge most weeks. Follow our tips and make quick pickled onions begging to be added to tacos, salads, grain bowls, sandwiches, and more!
These pickled onions are sharp, sweet and refreshingly acidic. We use a combination of fresh lime juice and apple cider vinegar. You can use just one acid, but we’ve found the combination adds a touch more complexity. There’s a lot of elbow room when it comes to adding spices or additional flavors. We use cinnamon sticks, cloves and red pepper flakes. Keep it clean and simple and add none or add a combination of the following: cinnamon sticks, whole cloves, crushed red pepper flakes, whole garlic, star anise, bay leaf, mustard seeds, fresh ginger slices, fennel seeds, coriander seeds or cumin seeds.

QUICK PICKLED RED ONIONS FOR TACOS AND MORE!! EASY REFRIGERATOR PICKLED ONIONS
Today I am sharing how I made the delicious, tender crisp, tangy, pickled red onions we used on our pork carnitas tacos in a recent video. These are a quick pickle that is super simple to throw together but can make all the difference when creating homemade street tacos from home. These onions are seriously amazing and they are great on more than just tacos! Use these on sandwiches, in salads, in deviled eggs or anywhere you want a little oniony zip! Add chiles or leave them out but make these! I promise you will love them!
Quick pickles are simply the best way to use up produce and give a little acidic note to just about anything. Cuisines the world over rely on a little pop of acid to clear the palate and help to level out flavors of foods that can coat the tongue. Much like carnitas, which can be a bit on the heavy side. These pickled red onions are the perfect way to add that pop to your taco.
I started with one large red onion and sliced it thin on a mandoline. You want these to have a bit of body but you don't want them really thick but you also don't want them too thin because they will just disappear once they hit the brine. I stuffed my sliced onion in a jar that I knew would best fit all the ingredients along with one very thinly sliced serrano chile. I did not remove the seeds or ribs from the chile I wanted the heat. You can leave out the peppers if that is not your jam. The onions provide enough heat on their own. You make the choice. As someone I once heard say, The world is your pickle.
The brine is very simple but packs a punch. Water, fresh lime juice (but bottled works too) and apple cider vinegar. Some salt and honey or other liquid sweetener for good rounded flavor make this the perfect flavor when blended together. If you don't like honey you can use agave nectar, maple syrup or other liquid sweetener that you prefer. I put everything in the jar and gave it a push with the spatula then popped the lid on and gave it all a good shake for a couple of minutes. That's it! Your simple, quick pickled red onions are ready to rest.
Now you can wait as little as 15 minutes or up to a few days. I recommend using these the day you plan to eat them and they are good for at least three to five days after that. Make sure you submerge the onions that remain in the brine so they don't dry out. Just tuck these into your fridge and enjoy whenever the spirit moves you.
That is how simple it is to make a quick and tasty condiment to go along with your tacos. These really are amazing and add just the right extra touch when serving favorites from south of the border and beyond! These onions are great tucked into a noodle bowl or some ramen to add just the right note of tangy acidity and spice. Give them a try!
I hope you make some of these pickled red onions some time soon and I hope that you love them!

How to Make Red Pickled Onion (easy recipe)
A simple tutorial showing how to pickle your own red onions at home, these delicious pickled onions can be used in many tasty food combinations; some of my favorites are in sandwiches or burgers to give a nice sour, sweet-salty taste element. It doesn't hurt that they are a beautiful bright pink/red and give a nice pop of color to your food dishes.
400ml water 400g
200 ml vinegar 215g
2 tbsp sugar 25g
2 tsp salt 8g
You can use pretty much any vinegar to pickle the red onions, I used white wine vinegar, but in the past, I used apple cider vinegar to give it a little more fruity taste.
the pickling jars I used are Mason Tops; here is that product:
accessories like glass slugs and muddler:
But you can use any jar and a weight to keep the onions under the pickling liquid level.

Pickled Onions Recipe | How To Make Classic British Pickled Onions
I love this easy pickled onions recipe and they can be made with any small onion or shallot. Goes fabulous with a good old fashioned ploughman's lunch, some sharp cheddar, salad, bread and a few pickled onions. What's not to like?
You can adjust the spices with anything you like, try some dried chillies to really warm it up
The recipe explains how to make pickled onions in any size jar with some simple calculations on ingredients but for this one:
- 300g small white onions or shallots
- 400ml malt vinegar
- 30g table salt
- 50g sugar
- 1tsp mustard seeds

Quick Pickled Onions Recipe (Quick Version)
How To Make Pickled Onions (Quick Version) Quick Pickled Onions Recipe
- 1 red onion, thinly sliced
- 1/2 cup vinegar
- 1 tablespoon granulated sugar
- 1 & 1/2 teaspoons salt (I used Himalayan pink salt)
- 1 cup hot or warm water
How to make the best homemade pickled red onions?
Slice the red onions as thin as possible into little strips. Rinse them quickly with boiling water and drain. This just helps to remove that super strong and pungent raw onion flavour.
In a mason jar, combine the vinegar, salt, sugar, and warm water. Stir thoroughly to dissolve the sugar and salt.
Add your sliced onions into the pickling mixture, making sure they are immersed in the liquid. let them set for an hour. After an hour, cover and store in the fridge for up to three weeks.
They only take about 5 minutes to make and they take so many dishes to that next level! What do pickled onions go with? They’re perfect to add a little zesty acidity to tacos, sandwiches, salads, wraps, soups, Buddha bowls, fajitas, avocado toast and anything else you want to throw them on!
Note: Apple cider vinegar can be used in place of white vinegar (but I’ve tried both and I prefer the flavour with plain white vinegar).
Make sure the sugar is organic to make it vegan.

Each week, the cast of America's Test Kitchen brings the recipes, testings, and tastings from Cook's Illustrated magazine to life on our public television series. With more than 2 million viewers per episode, we are the most-watched cooking show on public television.
More than 1.3 million home cooks rely on Cook's Illustrated and Cook's Country magazines to provide trusted recipes that work, honest ratings of equipment and supermarket ingredients, and kitchen tips.
