Easy Pineapple upside down Cake
Baking time: 30-40 minutes (170grad Celcius)
-1/4 to 1/2 cup brown sugar (caramelized)
-Pineapple ring sized (6-7pcs)
For The cake:
-1/2 cup sugar,
1/2 cup melted butter or canola oil,
2 eggs medium size,
1/2 cup pineapple juice,
1 teas vanilla extract ,
1 1/2 cup all purpose flour ,
1 teaspoon baking powder,
1/2 teaspoon salt ,

Pineapple Upside Down Cake Recipe
270g self rising flour
1/2 tsp cinnamon powder
1 tsp baking powder
1 tsp vanilla essence (or any of choice)
1 can pineapple slices
6-10 cocktail cherries
(You’ll also need a baking pan lined with baking paper)
Bake on 200•C for 45 minutes or until a skewer comes out clean.

How to make Pineapple Upside Down Cake - Melanie Squires
PINEAPPLE UPSIDE DOWN CAKE
Preparation time : 25 minutes
Cooking Time : 30- 35 minutes
You will need a 21 cm round loose-bottomed cake tin.
150g butter, plus extra for greasing
3 tablespoons golden syrup
6 slices tinned pineapple (reserve the juice)
6 glace cherries
Splash of spiced rum ( optional)
150g caster sugar
150g ( all purpose) plain flour
1 1/2 teaspoons baking powder
60ml ( 4 tbsp) pineapple juice
Preheat the oven to 200 C /400 F / GM6.
Grease the cake tin well.
Microwave the the golden syrup for 20 seconds or heat it gently in a pan.
Pour the into the cake tin and tilt around to cover the bottom.
Pat the pineapple rings dry with kitchen paper and arrange on the bottom of the tin.
Pop a cherry into the center of each ring and drizzle a little rum over the pineapple rings, if using.
Ina bowl, cream together the butter and sugar until light and fluffy.
Beat the eggs, then add the flour and baking powder.
Slowly pour in the pineapple juice, and beat to form a smooth dough.
Pour into the cake tin, smooth over and bake for 30-35 minutes, until the cake is risen and golden.
Use the spatula to loosen the edges of the cake, then turn out onto a plate so that the pineapple rings are on top.

BETH'S PINEAPPLE UPSIDE DOWN CAKE RECIPE

1 cup (180 g) brown sugar
4 tbsp (60 ml) melted butter
7 pineapple rings, canned variety
1 cup (200 g) of sugar
1 tsp (5 ml) vanilla
1 cup (120 g) of flour
1 tsp (5 ml) baking powder
¼ tsp (1.25 ml) salt
Coconut Ice Cream
Beth's Caramel Sauce (see below)
2 tbsp (30 ml) Unsweetened Coconut flakes
For the Caramel Topping:
1 cup (200 g) sugar
½ cup (120 ml) heavy cream (AKA double pouring cream)
1 tbsp (15 g) unsalted butter
1/8 tsp (.75 ml) sea salt
Spray a 10 (25 cm) cake pan with baking spray. Then pour the melted butter into pan, sprinkle with the brown sugar until evenly distributed. Place pineapple rings on top filling the bottom of the pan in an even layer. Set aside.
In the bowl of an electric mixer beat the egg and the sugar on high for 5-7 minuets until doubled in volume and pale yellow. Add vanilla.
In a separate bowl whisk together the flour, baking powder and salt. Add slowly to the egg mixture until just combined.
Pour batter on top of pineapples and bake at 350F (175C) for 30 mins until golden brown and set.
Allow to cool for 15 mins and then reverse the cake onto a cake stand.
TO PREPARE THE CARAMEL TOPPING:
Heat white sugar in a deep saucepan. As it heats the sugar will melt and begin to caramelize. Keep swirling it in the pan, lowering flame if needed so that it does not burn. Once it reaches a caramel color, add the heavy cream allow it to bubble and then it will settle down. Add butter and salt. Use immediately. Or transfer to a heat safe container and refrigerate until ready to re-heat and serve.
Cut cake into slices and serve with coconut ice cream drizzled with caramel sauce and topped with unsweetened coconut flakes.

This is the perfect fall cake recipe! Apple Upside-Down Cake - just like it's pineapple upside down cake cousin, it's moist and delicious with a hint of caramel. This recipe adds a Northern touch with some maple syrup.
2 medium apples (400g) peeled and sliced
2 Tbsp (30g) butter
6 Tbsp (80g) brown sugar
1 Tbsp (15 mL) apple cider
1/4 tsp (1 mL) ground cinnamon
¼ cup (60 mL) maple syrup
1 cup (240g) butter
3/4 cup (190g) brown sugar, firmly packed
2 Tbsp (30 mL) apple cider
2 large eggs
1 1/2 tsp (7 mL) pure vanilla extract
1 1/2 tsp (7 mL) ground cinnamon
½ tsp (2 mL) ground ginger
¼ tsp (1 mL) ground cloves
Pinch coarse salt
1 tsp (5 mL) baking soda
1 1/2 cups (200g) all-purpose flour
2 medium apples - 400g - peeled and diced
Preheat the oven to 350°F (180ºC).
Grease a deep 9 round cake pan.
Line the bottom with a parchment round, and grease that as well.
Peel, core and slice the topping apples into ¼” rounds.
(Might as well peel, core, and dice the apples for the cake batter as well.
Place the apple slices in an artful display in the bottom of the cake pan.
Place the remaining topping ingredients in a small pan over low heat, stirring until the sugar is fully dissolved.
Pour the topping mixture over the apples in the cake pan.
Cream the butter in a bowl with an electric hand mixer.
Add the brown sugar and continue creaming until light and fluffy.
Add the eggs one at a time and mix thoroughly.
Add the cider, and vanilla and mix together.
Mix the baking soda, spices, and salt into the flour, and then stir into the batter.
Add the chopped apple, and mix until just coated.
Gently drop scoops of the batter into the cake pan - being careful not to disturb the apple arrangement.
Bake for 50 to 55 minutes, or until a cake tester inserted near the centre comes out clean.
Let the cake cool in the pan for 5 minutes on a wire rack
Turn the cake out onto a serving plate, and remove the parchment paper.

Get the Items in David’s Kitchen:
Pineapple Upside-Down Bread Pudding
1 cup whole milk
1 (14-oz) can sweetened condensed milk
4 large eggs
1 tsp vanilla extract
8 cups (12-oz) challah bread cut into 3/4 cubes
2-1/2 cups chopped fresh pineapple
4 Tbsp unsalted butter
1/4 cup packed light brown sugar
1/3 cup confectioners' sugar
1/2 tsp vanilla extract
3 Tbsp melted butter
2 tsp whole milk
Grease the Ninja multipurpose pan with cooking spray and set it aside. Whisk together the milk, condensed milk, eggs, and vanilla in a large bowl until evenly incorporated. Set aside.
Melt the butter over medium heat in a large skillet. Add the brown sugar and stir until the sugar dissolves. Add the chopped pineapple and cook, stirring, for 8 minutes, or until lightly brown and all the moisture has evaporated.
Place the cubed bread and 1-1/2 cups of the cooked pineapple into the egg mixture and toss. Let the mixture sit for a few minutes until the bread has absorbed all the liquid. Meanwhile, place the remaining cup of cooked pineapple on the bottom of the prepared pan. Pour the bread mixture on top and evenly distribute.
Pour 4 cups of water into a Ninja 4-in-1 cooking system pot. Place the metal rack inside, then place the prepared pan onto the rack. Set oven to 325°F and set the timer for 50 minutes. Do not lift the lid during the baking process.
When the timer beeps, remove the pan (with the rack) and allow the bread pudding to cool. Meanwhile, pour the glaze ingredients into a small bowl and mix until evenly incorporated and slightly thick. After 15 minutes, unmold the bread pudding onto a serving platter, drizzle it with the glaze, and serve immediately.

And the best part is you can save a little time by assembling it the first day and baking it off the next. We use fresh pineapple in this recipe, but don’t be afraid to use canned or chopped pineapple if you’re in a pinch. Apple Upside Down Cake
A delicious dessert that looks soo good, no other decoration is needed and this makes it perfect for any occasion or family gatherings.
Makes about 8-10 servings
50 g (1/4 cup) +1 tbsp butter
7 tbsp sugar
1 tsp ground cinnamon
75 g about 1/3 cup butter, room temperature
5 tbsp sugar
3 tbsp sour cream
Grated peel of 1 lemon
1 tsp vanilla extract
2 tsp baking powder
11 tbsp flour
1. Preheat oven to 350 degrees F (180 degrees C). Butter a 10-inch(26 cm) round cake pan.
2. Peel apples and sprinkle lemon juice over them. Cut them into wedges,remove the core and slice.
3. Melt the butter in a sauce pan. Add 5 tbsp of sugar and cook until sugar dissolves and mixture turns golden brown. Pour the mixture in the prepared pan and arrange the apple slices. Sprinkle 2 tbsp of sugar and add 1 tbsp of butter cut in small pieces over the apples. Cook in the oven until you prepare the batter for the cake.
4. While the apples are in the oven prepare the cake batter. Separate egg whites from the egg yolks. Whisk together the flour and baking powder in a small bowl and set aside.
5. In a large bowl, cream together butter and sugar until well mixed. Beat in the egg yolks, sour cream, lemon zest and vanilla extract. Stir in flour mixture and mix well.
6. Whip egg whites until very stiff and firm. Fold them into the butter mixture.
7. Remove the apples from the oven and sprinkle cinnamon on top. Pour the batter over the apples and bake for 25-30 minutes until golden and a toothpick inserted in the center of the cake comes out clean.
8. Remove the cake from the oven and let it stand for about 5 minutes.Then run a knife around the edges of the cake to loosen it from the sides of the pan and invert the cake onto a cake plate.
9. Can be served as it is or with vanilla ice cream. Enjoy!

1 t. pineapple juice
2 T. crushed pineapple (or 1 whole ring)
1 maraschino cherry
6 T. flour
2 T. sugar
1/8 t. baking soda
1/2 an egg (beat, and use just half)
1/8 t. vanilla
2 T. butter, melted
2 T. pineapple juice
Spray a large coffee mug with non-stick spray.
Mix the brown sugar, pineapple juice, and crushed pineapple together, put it in the mug and add the cherry.
Cover mug with paper towel and cook on high for a minute.
While the topping is cooking, mix the cake in a bowl. Mix until everything is well incorporated. Do not over mix.
Remove the mug from the microwave and add the cake batter.
After adding the cake batter, cover with paper towel again and microwave for 1 minute 50 seconds.
Remove and let cool. Turn it out on a plate, enjoy!

Homemade pineapple upside-down cake is a delicious summer classic featuring a rich buttery cake topped with caramelized pineapples and juicy cherries!

½ cup (100g) dark or light brown sugar, packed
4 tablespoons (50g) unsalted butter
2 tablespoons pineapple juice, from the canned pineapple
1 (20-ounce) can pineapple slices in juice (drained, reserving juice)
Maraschino cherries (optional)
2 (250g) cups all-purpose flour
½ teaspoon salt
2 teaspoons baking powder
¼ teaspoon baking soda
¾ cup (150g) granulated sugar
½ teaspoon cinnamon powder (optional)
½ teaspoon ginger powder (optional)
2 large eggs, at room temperature
⅓ cup (80g) sour cream, at room temperature
½ cup whole milk (120ml), at room temperature
¼ cup (60g) reserved pineapple juice
½ cup (113g) unsalted butter, melted and cooled
1 teaspoon vanilla extract

Pineapple Upside-Down Cake by The Secret Slice
1/4 Cup Butter
2/3 Cup Packed Brown Sugar
1 Can Pineapple Rings Drained (save the juice)
1-1/3 Cups Flour
1 Cup Sugar
1/3 Cup Shortening
1/2 Cup Milk
1/4 Cup Canned Pineapple Juice (saved from the rings)
1-1/2 tsp Baking Powder
1/2 tsp Salt
1 Large Egg
1 tsp Vanilla
Heat oven to 350. While it is heating, make your batter, stirring liquids together first, then adding dry ingredients.
When oven is hot, throw in the butter and let it melt. When it is melted, add the brown sugar, and distribute it evenly. Then add pineapple slices to the bottom of the pan and put cherries in the centers. Carefully spoon in the batter slowly.
Put it in the oven for 35-45 minutes or until a toothpick inserted into the middle comes out clean.
Take it out of the oven and let it sit for 5 minutes, and then quickly but carefully turn it out onto a serving dish. Make repairs if necessary by scooping any sugary glaze retained in the skillet to wherever it came from. (you should be able to see the spots where it is missing from the cake. )

●1/4 teaspoon ground nutmeg
●1/4 teaspoon salt
●1/4 cup molasses
●1/4 cup milk
●1/2 cup whipping cream, whipped
●8 maraschino cherries with stems
