How to make PICKLED SHRIMP! This stuff is great.
Recipe: Use 8 cups vinegar and 6 cups sugar if you want to back the sweetness down a bit. Some folks go only 4 cups sugar but I like the sweet!
Put shrimp in a one gallon jar put a layer of shrimp and salt. (canning salt) use a total of 1 and 1/3 cups of salt and then cover with white vinegar.
Put it in the frig for 5 days shaking once every day.
After 5 days rinse of all the salt and vinegar.
Put the shrimp in fresh water and ice cubes for 1 hour.
In a pot put 8 cups of white vinegar, 5 to 7 cups of sugar, and
1/3 cup pickling spice, and 1/4 cup white zinfandel wine.
Bring to a boil and simmer for 3 to 5 minutes then cool until
cold. Put your shrimp in the gallon jar layered with sweet onions and pour the cooled mixture over the shrimp and onions and put it in the frig for at least 3 to 5 days before eating.
It lasts..... not very long! About 6 weeks to 2 months easy!

In today's Pickled Shrimp video, I'll show you how to make Pickled Shrimp and Onions. This is a really easy recipe! With the NCAA Basketball tournament coming up, pickled shrimp make a great appetizer. Easy to make and the pickled shrimp can be made in advance of your party.
Pickled shrimp are a southern coastal tradition, particularly in Charleston, South Carolina. It’s a simple and quick way to use excess shrimp. I put these in the refrigerator and snack on one every time I open the refrigerator door!
• 1 lb shrimp
• 3 cups water
• 6 tbsp apple cider vinegar
• 1 large onion
• 1 tsp minced garlic
• 1 tbsp lemon juice
• 1 tbsp celery salt
• 2 tbsp peppercorns

I needed a seafood man for Shrimp Week, so I called in my brother Bubba, the best seafood man I know! Bubba owns the wonderful Uncle Bubba's Oyster House restaurant which has been in business for five years now, so he knows his way around a shrimp! He also has a great cookbook called Uncle Bubba's Savannah Seafood Cookbook, which has more than 100 down home, Southern-style recipes. I'm so proud of my brother!
Just like we used to day when we were kids, we pickled some shrimp together. We used beautiful new glass jars to hold the dish, and the shrimp came out looking beautiful and tasty. My son Bobby has a wonderful pickled shrimp recipe that we included below. Bubba and I put our own spin on our pickled shrimp dishes. I always suggest that when you cook something for the first time you follow the recipe but after that have fun with it and give the dish your own signature. Bubba took his home with him, so he could enjoy it all by himself!

Pickled shrimp: an easy recipe to try!
You can serve them on a skewers on a toast!INGREDIENTS
- cooked shrimp, shelled⠀
- 1/2 lemon juice
- 1/2 small fennel bulb
- 1/2 cup olive oil⠀
- 1/2 cup vinegar⠀
- 1 tsp sugar⠀
- 1/2 tsp salt⠀
- 1/2 tsp Tabasco⠀
- 1/4 cup capers⠀
- 2 cloves garlic
- 1 tsp celery seeds⠀
In a jar, add the shrimp and squeeze the lemon juice over them.⠀
In a saucepan, add the fennel, oil, vinegar, sugar, salt and Tabasco. Then switch off the heat.
Stir in the capers, garlic and celery seeds. Pour the mixture into the jar over the shrimp.
Refrigerate between 1 to 3 days.

Pickled seafood is a popular side dish in your average Korean meal. It’s also a key ingredient in kimchi. Ahead of the winter kimchi-making season, a number of salted seafood festivals will open in former port areas in Chungcheongnamdo Province.
A salted seafood market has opened near Ganggyeong Port which was one of the two major ports in the Joseon dynasty era. All kinds of pickled seafoods such as salted shrimp and more spicy varieties lure tourists' taste buds as they sample the offerings. People can't stop eating.
[Soundbite] Go Hye-yeong(Jeollabuk-do Prov. Resident) : I love the salty and chewy taste. I can eat loads of rice with this side dish.
This is the largest salted seafood festival in the country held ahead of the winter kimchi-making season. Kimchi is the spicy Korean cabbage dish. Over 130 vendors are at the festival selling a dozen different pickled seafood at a lower cost than market prices. The vendors' glib talk and their generosity is an added bonus for the customers.
[Soundbite] Min Seong-goo(Vendor) : I give generously for customers to share with their children, daughters-in-law, fathers-in-law and others.
Various participatory events are also held on the sidelines including a hands-on kimchi making session for visitors which of course includes the use of salted seafood.
[Soundbite] Kim Chang-han(Daejeon Resident) : The salted seafood is delicious and the cabbage has well matured. I tried the seafood wrapped in cabbage leaf. It's so good.
In Hongseong in the same Chungcheongnam-do Province, a salted shrimp festival opens Friday to greet shoppers preparing for the kimchi making or kimjang season. What's special about the pickled shrimp here is that they are fermented in an underground cave.

Bobby Stoky Cooks Southern Pickled Shrimp
1 lb cooked shrimp, shelled⠀
1/2 lemon, juice only⠀
1/2 small fennel bulb, thinly sliced, plus fronds⠀
1/2 cup olive oil⠀
1/2 cup cider vinegar⠀
1 tsp sugar⠀
1/2 tsp salt⠀
1/2 tsp Tabasco⠀
1/4 cup capers⠀
2 cloves garlic, finely chopped⠀
1 tsp celery seeds⠀
In a large Mason jar, add the shrimp and squeeze the lemon juice over them.⠀
In a saucepan, add the fennel, oil, vinegar, sugar, salt and Tabasco and bring to a gentle simmer, then switch off the heat. Stir in the capers, garlic and celery seeds. Pour the mixture into the jar over the shrimp. Give it a good jiggle to make sure it’s all covered.⠀
Seal the jar tightly and refrigerate for a minimum of 24 hours, or up to 3 days. Serve chilled, as canapés on skewers or small pieces of toast.

250 gms prawns (medium)
30 no red chillies
1 tbsp jeera/ cumin
100 grams garlic cloves
3 tbsp oil
100 ml white vinegar
- In bowl add red chillies, garlic, cumin, white vinegar, salt and give it a light stir.
– Keep it aside for 15-20 minutes.
- Run the mixture into the grinder and grind it into a smooth paste.
- In a pan heat the oil and once it is medium hot add the pickle masala and mix it lightly
- Add the prawns to the mixture and keep stirring. Check for salt and add according to your taste.
- When the pickle comes down to the room temperature. Store it into a glass jar
