BETH'S PECAN BARS
Makes 18 small bars or 9 large squares

For the Crust:
1 ½ cups (360 g) of butter
1 cup (200g) white sugar
2 tsp (10 ml) vanilla extract
½ tsp (2.5ml) salt
4 tsp (20 ml) orange zest
3 1/3 (400g) cups of all-purpose flour
For the topping:
½ cup (120 g) of butter
1 cup (180g) light brown sugar
1/3 cup (80 ml) honey
pinch of salt
1 tbsp (15 ml) heavy cream
½ tsp (2.5 ml) vanilla extract
3 ½ cups (525 g) of raw pecan halves
Preheat Oven to 350F (176C)
To create the crust beat together the sugar and butter with an electric mixer. Once fluffy add the egg, and vanilla and beat to combine. Then add the salt and orange zest beat to combine, then add the flour in thirds, beating after each addition.
Turn dough out and fit it into a 10 x 10 pan that has been sprayed with baking spray. Preferably a removable bottom pan, otherwise line a 10 x 10 brownie pan with parchment paper or foil (2 sheets going opposite directions) this will make it easier to remove the bars once they are done.
Bake crust for 25-30 minutes or until fully set and golden brown.
Meanwhile prepare the pecan bar filling.
In a large sauce pot combine butter, brown sugar, honey and salt. Set over medium heat, whisking while the mixture melts and combines. Remove from the heat. Whisk in heavy cream and vanilla.
In a large bowl place the pecan halves, pour filling mixture over pecans and toss to combine so that all the nuts are well-coated.
Once crust has baked and is slightly cooled. Pour the pecan mixture on top, spreading it out with a spatula to form an even layer, making sure all corners of the crust are covered with the pecans.
Place back in oven, placing a baking sheet lined with foil, under the pan to catch any drippings.
Bake for 25 minutes, until filling is set. It will still look a little wet, but that’s OK it will set up as it cools.
Allow to cool completely at room temperature. Then place uncovered in the fridge for at least 2 hours, or overnight is even better to fully set. They will be easier to cut if you allow to stay refrigerated overnight.
Remove from pan, slice the pecan bars into 9 squares, and then cut each square in half to create a bar. Keep the pecan bars in the fridge until ready to serve. Lightly covered.
30 minutes before serving bring the bars to room temperature. Place on a cake stand and serve! Enjoy!

Healthy Pecan Pie Bars
- 2 cups almond flour
- 2 tsp vanilla
- 2 tbsp coconut oil
- 3 tbsp maple syrup
- 4 scoops vital proteins collagen (optional)

24 Rolo candies
24 Pecan Halves
Preheat oven to 250 degrees F.
Place pretzels on baking sheet.
Add a Rolo candy to each pretzel.
Place in oven for 3-4 minutes until candy is softened. Candy can be softened in the microwave (15-30 seconds) on a microwave safe dish.
Remove from oven and press a pecan into each softened candy.
Place candy in refrigerator for 5-10 minutes to set or allow to set on counter top.

Caramel Pecan Log Candy (no bake)- with yoyomax12
How to make a delicious no-bake dessert that has a soft center and a delicious caramel/pecan coating.
Candy making playlist:
Jar of marshmallow creme (7oz)
1 tsp vanilla
3 cups icing sugar
2 tbsp water
1 1/2 cups finely chopped pecans
Mix the vanilla with the marshmallow creme in a large bowl.
Add in the icing sugar, one cup at a time, until combined.
You may have to knead the mixture with your hands to get all the sugar incorporated. The dough will be stiff and feel dry.
Divide the dough into six portions and form them into logs with a diameter of 1 inch.
Place them on a cookie sheet and place in the freezer until firm.
Place caramels and water in a bowl and microwave until caramels are melted. You can also melt the caramels in a double boiler on the stove on medium low.
Stir the caramels until smooth.
Dip the chilled logs into the caramel until coated and then roll in the chopped pecans.
Place on cookie sheet and chill until firm.
Slice each log into about 10 slices.
Store at room temperature covered for up to 4 weeks.
**NOTES** I ended up using almost double the caramels for my recipe and about another 1/2 cup of pecans.
This will depend on the caramels you are using I guess.

They make a nice addition to your holiday baking, and are especially good when you're having a large group over for dinner and want to serve your desserts buffet style. The pastry is unique as it contains cream cheese, which adds both flavor as well as making the pastry wonderfully tender and flaky. I love how the custard-like filling is sweet and gooey and has lots of crunchy pecans. Pecans Tassies store very well and can also be frozen.

You can make a super simple and tasty pecan candy treat. This sugar pecan recipe is an easy way to impress friends and family. My mom gives out tins of pecan candies as gifts for the holidays, and it's a sure hit for any party or get together.

What You Need to Make Pecan Candy
1 lb. PECANS
1 cup SUGAR
1 tsp CINNAMON
½ tsp SALT
1 EGG WHITE
1 Tbsp WATER
How to make Pecan Candies
Buy a pound of pecan halves. When buying, be sure to choose pecans that are in good shape
...a bag of broken and busted up pecans doesn't look as pretty in a dish.
In a bowl, combine the cinnamon, sugar, and salt, and then mix well.
Set that bowl aside, and in another bowl, combine 1 egg white and 1 Tbsp. of water.
Whisk the egg white and water into a frothy foam.
Add the pecan halves into the egg white mix.
By hand, mix the pecans until coated thoroughly.
Once the pecans are coated completely, transfer then into the dry mix bowl. Still using your hand,
mix the pecans in the cinnamon sugar until they are coated well.
On an ungreased baking sheet, spread the coated pecans into a single layer.
Place the baking sheet in an oven preheated to 300 degrees Fahrenheit.
Remove the baking sheet every 10 minutes to give the pecans a stir and spread them out again; this will let the pecans
bake evenly and keep from sticking together.
After a total of 30 minutes baking time, remove the pecans for a final stir, then set aside to cool.
That's it. As soon as they're cool enough to eat, then eat away.
Be sure to allow the pecans to cool completely before sealing in a container.
These sugar pecan candies make a great holiday treat or anytime treat. My mom makes them all the time for family gatherings and they're
a sure fire hit.

New Orleans Pecan Pralines are on the menu in Chef Anna Olson's amazing kitchen, and she is going to teach you how to make this delicious recipe from scratch! Follow along with the recipe below!

Makes 3 to 4 dozen pralines
3 cups (350 g) coarsely chopped pecans
1 ¾ cups (350 g) granulated sugar
1 ¾ cups (350 g) packed light brown sugar
¾ cup (175 mL) whipping cream (35%)
6 Tbsp (90 mL) 2% milk
6 Tbsp (90 g) unsalted butter
1 tsp (5 mL) vanilla extract
1 tsp (5 g) salt
1. Preheat the oven to 350 F (180 C) and line a baking tray with parchment paper.
2. Sprinkle the pecan pieces in an even layer and toast for about 15 minutes until browned a little. Allow to cool and transfer to a bowl.
3. Place the granulated sugar, brown sugar, cream, milk and butter into a medium heavy-bottomed saucepan and bring to a full boil over high heat, stirring constantly, until the mixture reaches 230 F (110 C) measured on a candy thermometer. Add the pecans all at once and continue to cook to 237 F (114 C) while stirring constantly. Remove from the heat, stir in the vanilla and salt and then let sit without stirring until it cools to 212 F (100 C), 10-15 minutes.
4. Line 2 baking trays with parchment paper. Once the praline mixes cools to the correct temperature, use a wooden spoon to stir it vigorously to “seed” it, so that it thickens to a satin consistency and is thick enough to spoon out. Drop spoonfuls of the praline mixture onto the baking trays. If you see the sugar spreads a little after spooning, just let the mixture sit in the pot for 30 seconds to a minute – it will start to set. Since the praline mixture does set quickly, you may find that it starts setting in the pot, or the scooped pralines have a dull finish instead a satin sheen, you can return the pot to low heat and stir to melt a little until.
The pralines will keep for up to a week in an airtight container.

Betty's Glazed Party Pecans
Betty demonstrates how to make Glazed Party Pecans. These are great for the holiday season, but I think you will enjoy them year 'round.
Glazed Party Pecans
1 cup sugar
½ tablespoon ground cinnamon
2 cups pecan halves
½ tablespoon vanilla extract
¼ cup water
1 additional tablespoon water
In a small mixing bowl, combine 1 cup sugar and ½ tablespoon ground cinnamon. Set aside. Also, combine ¼ cup water and ½ tablespoon vanilla extract and set aside. Place 2 cups pecan halves in the bottom of a medium-sized, heavy pot. Add the cinnamon-sugar mixture and sprinkle the vanilla-water over the top of the pecans. Stir all together with a wooden spoon. Place pot over medium heat, and boil, stirring constantly, until mixture becomes thick, about 5 to 10 minutes. When the liquid is evaporated and stirring becomes more difficult, remove the pecans from heat. Add in 1 tablespoon water. Stir pecans to coat evenly. When the liquid begins to thicken, pour the glazed nuts out onto a shallow baking pan that is lined with waxed paper. Separate the glazed pecan, using your wooden spoon. 1 cup all purpose flour
1/2 cup (4 ounces/113 grams) butter, softened - I use unsalted
1 cup finely chopped toasted pecans
3 Tablespoons granulated sugar
1 teaspoon pure vanilla extract
1 cup powdered sugar for rolling

SUGAR FREE CANDIED PECANS!! CHRISTMAS IN JULY!!
Kicking off our Christmas in July celebration with a sweet treat! Candied pecans have long been a family favorite! An irresistible one at that! I get a lot of requests from people asking for sugar free version of their favorite treats and this one will not disappoint. Since we are still working hard to avoid extra sugar in our home these are the perfect way to enjoy a sweet snack without the sugar! These are actually packed with protein and still good for you. I dare you to tell the difference between these and some made with the real stuff! Candied pecans scream Merry Christmas no matter what time of year you make them!
I have shared a more traditional version of candied pecans that are made on the stove top with regular sugar and we love those. Everyone I know loves candied nuts. Don't limit yourself to pecans here! But not everyone can enjoy real sugar for whatever reason. Some simply don't eat it. Some can't. I believe everyone should be able to enjoy things and these nuts are no exception. These are simple to make and use few ingredients. Most of which you probably have in your kitchen right now! They are also quick to whip up and enjoy, but be sure to make enough because they will disappear quickly.
These start out with pecans or walnuts or raw cashews or even raw almonds. About 2 cups of nuts will do for a batch. Whip up one egg white with a bit of water until fluffy but not stiff. Add in those pecans and toss well to coat entirely. Next add in your vanilla extract and if you are a bit adventurous, a bit of maple extract as well. If you are using almonds add in a few drops of almond extract. Get the idea here? Stir the extract in to combine. Next I added some cinnamon to my sweetener. I am using a baking blend that will tolerate heat. You should use what you prefer, but make sure baking is acceptable, as not all artificial sweeteners can go in the oven.

Add in the cinnamon and sweetener mixture and stir well. This is where the texture of the nuts will change as the ingredients all blend together and form a delicious outer shell on the pecans. Once you get this all well blended, pour the nuts out onto a baking sheet that is lined with either non stick foil or parchment or whatever you prefer. Using your spoon, spread the nuts out evenly. Even though they will break up after they cool, this makes it even easier to have nice looking product in the end.
Bake in a 325 degree oven for 12 to 15 minutes, removing to stir half way through the cooking time. Then remove from the oven and allow to cool completely. Store in an airtight container in a cool, dry place for up to one week. I promise they will not last that long though!
If you plan to use these as part of your holiday gift giving, I suggest making these a day or two before passing out among friends and family. These should not be refrigerated or frozen because the build up of condensation will ruin the delicate coating and turn the nuts soft and mushy and sticky.
These would be lovely packaged in decorator frosting cones and tied with a bow, or in a pretty cellophane bag with a nice holiday tag. Of course these could be packaged in mason jars or stuffed in coffee mugs for festive holiday giving, but honestly, the recipient will long forget the coffee mug and always remember those nuts! Truth be told! And who needs another coffee mug anyway? Am I right?
So that is how you make simple and delicious, sugar free candied pecans that are going to blow them away and have them asking for more! I hope you give them a try sometime soon and I hope you love them!

Since I can remember, Mom has made pecan tassies once a year. The batch always makes a lot so they lasted the entire month of December. Pretty much, they're bite-size pecan pies! Leave it to us in the Midwest to figure out how to have pie on a cookie platter! ???????? These are fun to make with the whole family, so start a new tradition this year!

- 8 oz cream cheese
- 1 1/2 cups butter
- 2 2/3 cups flour
- 1 egg yolk
- 4 eggs
- 2 1/4 cups brown sugar
- 4 tbsp butter, melted
- 4 tsp vanilla extract
- 2 3/4 cups pecans, chopped
For the pastry:
Place the cream cheese in a mixer. Slice the butter into thin slices and add to the mixer. Cream the cream cheese and butter at high speed until smooth. Add the egg yolk and mix together. Add the flour slowly. Beat until combined into a pastry dough. The dough will be sticky.
For the filling:
Start with four eggs, slightly beaten. Add the brown sugar to the eggs.
Add the melted butter, vanilla, and chopped pecans. Mix until combined.
Use one rounded teaspoon of dough for each mini tart. Dip fingers in flour and press dough into the tart pan. If a hole is accidentally made, add excess dough to repair.
Place one teaspoon of filling in each tart.
Bake for 20-25 minutes at 350°F until golden brown.

Caramel Pecan Clusters
1 pound, 230 grams or 500ml, pecan halves, toasted
12 ounces, 340g, semi sweet chocolate, chips or baking bars
2 tablespoons, 24g, shortening
Toast pecan halves in a single layer in a 350°F, 180°C, oven until they begin to brown and are fragrant, about 8 minutes. Or roast the pecans in a dry skillet on top of the stove turning often until they begin to brown. Do not let the pecans burn. Roughly chop the pecans. Arrange the nuts in small clusters on a parchment lined baking sheet.
16 ounces, 450g, by weight, light brown sugar
2 cups, 473ml, light cream or half and half
1 cup, 237ml, light corn syrup
1 cup, 223g, lightly salted butter
1 teaspoon, 5ml, vanilla
Melt the butter in a 4 quart sauce pan over medium heat. Add the sugar, syrup, and half and half to the pan and bring the mixture to a gentle boil. Clip a candy thermometer to the side of the pan. Stirring frequently, bring the mixture to 242°F, 117°C. This will take close to an hour. Do not leave the caramel to boil unattended since the temperature can quickly rise, especially in the last few degrees. Once the caramel reaches temperature, remove the thermometer from the candy and the pan from the heat. Stir in the vanilla. Allow the caramel to cool in the pan until it can hold a mounded shape, about 15 minutes. Working quickly, scoop a tablespoon of caramel onto mound of pecans. Spraying the spoon with cooking spray helps prevent sticking. Excess caramel can be poured into a pan coated with cooking spray.
Allow the caramel to cool completely, about an hour. Melt the chocolate and shortening in the top of a double boiler. Spoon and smooth about a teaspoon of melted chocolate onto each pecan cluster.
Serve at room temperature.

Hillbilly Jilly Sweet and Spicy Pecan Recipe – Oven Roasted
● 2 cups pecan halves
● 2 tbsp. butter - melted
● 1 tbsp. white sugar
● 1 tsp. ground cumin
● 1 tsp. chili powder
● 1/2 tsp. crushed red pepper flakes
● 1/4 tsp. salt – Pink Himalayan salt tastes amazing on these!
1. Toss pecans in melted butter
2. Add remaining ingredients to pecans and toss until evenly coated
3. Spread on cookie sheet and bake at 325 degrees for 15 minutes – stir/flip every 5 minutes
4. Cool and store in airtight container.
Note: Makes 2 cups
