Pear and Ricotta Tartlets
A beautiful and delicious dessert in no time!
For 4 Tartlets:
1 cup ricotta cheese
1 egg yolk
2 tablespoons sugar
½ teaspoon vanilla extract
¼ teaspoon almond extract
2 ripe pears, peeled, cored, and each pear cut into 8 wedges
1 sheet puff pastry, thawed in refrigerator overnight
Cinnamon sugar made of ¼ cup sugar and ¼ teaspoon cinnamon
Heat oven to 425 degrees. Lightly butter 4 ramekins.
In a mixing bowl, combine ricotta, egg yolk, sugar, vanilla and almond extract.
Use a sharp knife to cut puff pastry sheet into 4 squares. Place one square in each prepared ramekin. Press with fingers to shape to dish.
Divide ricotta mixture evenly amongst the ramekins. Sprinkle 1½ teaspoons of cinnamon sugar over each one. Arrange 4 pear wedges in each ramekin. Sprinkle 1½ teaspoons cinnamon sugar over pears in each dish. Bake in preheated oven for 25 to 30 minutes, until pastry is golden brown and filling is bubbling. Allow to cool before serving. Makes 4 tartlets.
Serve warm Tartlets with a dollop of freshly whipped sweetened cream or a small scoop of premium vanilla ice cream.
Feel free to use some of your own favorite fruits to replace pears in these tartlets. During the summer, try fresh blueberries or raspberries. Peeled and sliced peaches are delicious in these Tartlets.
