Easy and Simple Poached Pears Recipe | The Sweetest Journey
Learn how to make poached pears in a sweet sauce from scratch with this easy recipe. ????????????
1 1/2 Cups Water (360ml)
1/4 Cup Fresh Orange Juice (60ml)
1 Tablespoon Vanilla Extract (15ml)
1/2 Cup Sugar (95g)
Piece of Orange Rind (Peel)
1 Cinnamon Stick
3 Ripe Pears, Peeled
1. Combine the water, orange juice, vanilla, and sugar in a medium saucepan and stir together to combine. Add the rest of the ingredients. Cover and bring to a simmer over low heat. Cook until pears have softened and sauce is flavorful, about 30 to 35 minutes.

Gluten-Free Orange Almond Pear Cake Recipe
prep time: 20 minutes
cook time: 70 minutes
makes 1 cake
1 ½ cups of softened unsalted butter
1 ½ cups of sugar
3 tablespoons of heavy cream
¼ cup of mascarpone cheese
zest of ½ an orange
2 cups of Bob’s Red Mill Almond Meal
2 cups of Bob’s Red Mill 1-to-1 Gluten Free Baking Flour
1 tablespoon of baking powder
3 peeled, stemmed and cored Bartlett pears, sliced in half long ways
1 cup of sliced almonds, orange zest and powdered sugar for garnish
Preheat the oven to 350°.
Add the butter and sugar to a standing mixer with the paddle attachment and whip on high speed until light and fluffy, about 5 to 7 minutes.
Next, add in the mascarpone and heavy cream on low speed and then add in 1 egg at a time until they are completely mixed in.
Mix in the orange zest.
In a large bowl whisk together the flour, meal and baking powder until combined and then slowly add it to the standing mixer on low speed until mixed in.
Transfer the batter to a prepared 9” spring form pan, smooth out the top and place the pears over top to form a circle.
Bake at 350° for 60 to 70 minutes or until browned and firm in the center.
Cool completely before garnishing with the sliced almonds, orange zest and powdered sugar.

Pear and Ricotta Tartlets
A beautiful and delicious dessert in no time!
For 4 Tartlets:
1 cup ricotta cheese
1 egg yolk
2 tablespoons sugar
½ teaspoon vanilla extract
¼ teaspoon almond extract
2 ripe pears, peeled, cored, and each pear cut into 8 wedges
1 sheet puff pastry, thawed in refrigerator overnight
Cinnamon sugar made of ¼ cup sugar and ¼ teaspoon cinnamon
Heat oven to 425 degrees. Lightly butter 4 ramekins.
In a mixing bowl, combine ricotta, egg yolk, sugar, vanilla and almond extract.
Use a sharp knife to cut puff pastry sheet into 4 squares. Place one square in each prepared ramekin. Press with fingers to shape to dish.
Divide ricotta mixture evenly amongst the ramekins. Sprinkle 1½ teaspoons of cinnamon sugar over each one. Arrange 4 pear wedges in each ramekin. Sprinkle 1½ teaspoons cinnamon sugar over pears in each dish. Bake in preheated oven for 25 to 30 minutes, until pastry is golden brown and filling is bubbling. Allow to cool before serving. Makes 4 tartlets.
Serve warm Tartlets with a dollop of freshly whipped sweetened cream or a small scoop of premium vanilla ice cream.
Feel free to use some of your own favorite fruits to replace pears in these tartlets. During the summer, try fresh blueberries or raspberries. Peeled and sliced peaches are delicious in these Tartlets.

When in doubt, start with dessert! It's easy to do when you use a tortilla for the crust as Jacques Pépin does in his Crisp Pear Tart. Fresh bay scallops are shown in the shell at their very best (and become too tempting for Jacques who can't resist nibbling on them) in the light and vibrant Bay Scallops in Mignonette Sauce. For a homier dish, Jacques shares his comforting Sausage Patties with Pumpkin Seeds and Mushrooms served with Cornmeal Mush.

Spanish Stew with Beans & Potato
This tasty vegan Spanish stew with beans and potato is so easy to make: you just put all the ingredients in a pot, bring to simmering point and transfer to the oven for 1 hour whilst you do something else. Serve it with fresh crusty bread to mop up the juices.
500g new potatoes (or salad potatoes)
2 red bell peppers, cut into thick slices (to save time, you can replace the fresh peppers with a jar of chargrilled peppers)
1 red onion, cut into thick slices
3 garlic cloves, minced
2-3 bay leaves
100g sun-dried tomatoes
2 x 400g tin of cannellini beans, drained and rinsed
15-20 mixed olives, no need to pit them first
2 tbsp olive oil
6 fresh thyme sprigs
1 tsp paprika
½ tsp hot smoked paprika
½ cup red wine
1 tbsp white wine vinegar
1 tin chopped tomatoes
1 tbsp tomato purée
salt & pepper
If using fresh red bell peppers: cut into quarters or sixths, place on a lined baking tray, brush with olive oil, season and roast at 220°C for 30 minutes.
Put all the ingredients into a large, shallow casserole. Add 200ml water.
Bring to a boil and transfer to a preheated oven at 180°C for 1 hour.
