Today Sara Lynn Cauchon celebrates PB&J Day with some 3 new ways to enjoy this classic flavor combination
Grilled PB&J Sandwich:
1 teaspoon butter
2 crusty French bread slices
2 tablespoons crunchy peanut butter
2 tablespoons strawberry jam or jelly
1/4 cup sliced strawberries
Spread the peanut butter and jelly over a piece of the bread. Top with the strawberry slices. Spread the butter on the outside of the sandwich. Cook over medium heat until the bread is golden and the peanut butter begins to melt.
PB&J Oatmeal Muffins:
Parchment Baking Cups:
3 cups old fashioned rolled oats
1/3 cup brown sugar
2 teaspoons baking powder
2 large eggs
1 cup mashed banana
1 cup 2% milk
1 teaspoon vanilla extract
1/2 cup smooth peanut butter
1/2 cup raspberry jelly
Preheat the oven to 375ºF. Line a 24-cup muffin tin. Set it aside.
In a large bowl, whisk together the oats, sugar and baking powder.
In another large bowl, whisk together the eggs, banana, milk, and vanilla. Stir the dry ingredients into the wet and mix well. Scoop the mixture into the muffin tin and swirl in a spoonful of peanut butter and jelly into each muffin. Bake the muffins until the eggs have set and the tops are golden, 20 to 25 minutes.
Easy PB&J Thumbprint Cookies:
1 cup smooth peanut butter
1/2 cup oat flour
1/2 coconut sugar
1/2 strawberry jelly
Preheat the oven to 350ºF.
In a large bowl, mix together the peanut butter, oat flour, coconut sugar and egg. Roll the dough into 1 inch balls and place them on a parchment lined baking sheet. Using the palm of your hand, press the balls down slightly. Press your thumb into the centre of each cookie and fill with strawberry jelly.
Bake the cookies until they are golden, 8 to 10 minutes.

3/4 cup (150g) caster/granulated sugar
1 cup (240ml) buttermilk

1 cup (250g) smooth peanut butter
3/4 cup (245g) seedless strawberry jam

Our first attempt at these muffins failed when we tried to use regular jelly. We were determined to get them right so we tried again with jam. Watch and see how the new batch turned out!
These muffins combine the creaminess of peanut butter and the sweetness of jam. Recipe can easily be made with your favorite jam filling.
*Tastes best when eaten shortly after baking. We recommend making them on the day you will be eating them for best flavor and texture.

PB&J Muffins recipe
This recipe takes a regular muffin recipe and adds honey peanut butter to the batter. Once out of the oven, the warm muffins get a generous spread of sweet raspberry jam plus a sprinkling of chopped roasted salted peanuts – what a treat!
Great for breakfast, lunchboxes, or as an after-school snack!

Peanut Butter and Jelly Muffins Recipe | Back to School Recipe for Kids
Healthy Peanut Butter and Jelly Muffins (Vegan | GF) are the best Breakfast Muffins. Its easy to make and tastes so delicious.
½ cup Coconut Sugar
3 Tbsp Maple Syrup
2 Tbsp Coconut Oil melted
½ cup Peanut Butter more for topping
1 Tsp Cider Vinegar
¾ cup Unsweetened Apple Sauce
1 Tsp Baking Soda
½ Tsp Baking Powder
1 cup Gluten-Free Flour Blend
½ cup Almond Meal
⅛ tsp Kosher Salt
¼ cup Almond Milk
6-7 Tbsp Strawberry Jam naturally sweetened
Start by preheating the oven to 350F or 180C and grease a muffin tin with cooking spray and line with liners or parchment paper.
Mix Coconut Sugar, Maple Syrup, Coconut Oil, Peanut Butter, Cider Vinegar, and Apple Sauce. Whisk until combined.
Add Gluten Free Baking Flour Blend, Almond Meal, Salt, Baking Soda, and Baking Powder to it. Fold until combined.
Add Almond Milk and fold to combine everything. The muffin batter should not be too thin and pourable. It should be thick.
Scoop out the batter in a greased muffin tin. Top with some strawberry Jam and Peanut Butter. Pour it in the center. Swirl gently on the top using a toothpick. Bake @350F or 180C for 20-25 minutes or until a skewer inserted in the center comes out clean.
After the muffins get baked, cool them in the same pan for 5-10 minutes. After that, run a knife around the muffin and get them out gently. Serve

One of my favorite foods (aside from pancakes) is peanut butter and jelly sandwiches! I saw this recipe on instagram from @confessionofadietician for healthy* PB+J muffins. It was a 5 ingredient, healthy, recipe for one of my favorite foods. Immediately I thought the post was made for me, so I had to give it a try.

Recipe (Makes 6-ish Muffins)
1 Banana (The browner the better)
1/2 Cup peanut butter (can sub. for whatever nut butter you would like)
1/4 tsp baking powder
2 Tbs Jelly (of choice)
Combine all ingredients (except jelly) and blend or hand mix
Fill muffin tin half batter, little scoop of jelly, half batter, little scoop of jelly
350 in the oven for 16 Minutes**

What you need:
1 3/4 cups whole wheat flour
1/4 cup sugar
1/4 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups fat-free milk
1/3 cup creamy peanut butter
2 egg whites
2 tablespoons butter, melted
1 teaspoon vanilla extract
1/4 cup sugar-free grape jelly
1/4 cup sugar-free strawberry jelly
How to make it:
Preheat oven to 400.
Combine flour, sugars, baking powder, and salt in a large bowl; stir with a whisk.
Make a well in center of mixture. Combine milk, peanut butter, egg whites, butter, and vanilla;
add to flour mixture.
Spoon batter into 12 muffin cups coated with cooking spray. Fill each cup half full with batter.
Spoon 1/2 teaspoon of each flavor of jelly into each cup. Spoon remaining batter on top to cover jelly.
Sprinkle with Sugar In The Raw if a crunchy muffin top is desired.
Bake for 20 minutes or until muffins spring back when touched lightly in center.
Makes 12 muffins
