Nigella's poached peaches, perfect for summer!
Wine poached PEACHES. Easy and delicious twist of a classic recipe.
In the season of peaches i had to try this recipe of tender, wine poached peach with silky whipped cream and wine sauce. It turned out to be quite light and absolutely delicious dessert great for summertime!

Ingredients for 2:
- 350 ml White wine
- 200 ml Water
- 4 Tbsp Sugar
- 1 Tbsp Grenadine
- 2 hard Peaches
- 100 ml cream 30% fat
- Ice - cream, cookies, meringue
In a Saucepot combine 350 ml of white wine, 200 ml of water, 4 Tbsp of sugar, 1 Tbsp of grenadine (pomegranate syrup). Bring mixture to boil, then reduce to simmer, put peaches in and cover with lid or paper cartouche. Poach until peaches become soft, take them out and cool them down. In the meantime, increase the heat under the liquid and reduce it to syrupy consistency.
Unsweetened whipped cream will greatly compliment out poached peaches, so let’s take 100 ml of cream 30% fat or higher, otherwise it won’t whip. Use whisk or mixer, whatever works better for you. Bring cream to moderate peaks stage, when foam is holding the shape but still moves in the bowl.
Take of the skin from peaches put it on the plate, pour over some of the wine sauce, decorate with whipped cream, add crunchy cookies crumbs, portion of simple vanilla ice – cream, and some airy meringue.

It has become almost a pattern for me: every year when yellow peaches are ripe, I make the exact same things as I did last year - canned yellow peaches, jam, and dried peaches...
This year, I also picked out some soft ones and made yellow peach wine out of them.
I tried this vanilla & yellow peach & roasted ribs recipe which I thought was gonna be a gruesome combination,
but it turned out to be finger-licking delicious!

Poached Pears in Red Wine Recipe
Poached pears in spiced red wine recipe - aromatic and delicious dessert.
5-6 firm large pears
1 bottle red wine (750ml)
1 cinnamon stick
1/2 tsp clove
2 star anise
3/4 (150g) cup sugar
1 vanilla bean (optional)
1. peel pears, leaving stem intact and being careful not to blemish the flesh of the pears. Slice 1/2-inch off the bottom of the pears to create a flat bottom.
2. In a medium size saucepan combine red wine, cinnamon, cloves, star anise and sugar. Place pealed pears in the liquid. Bring to a boil, reduce heat and simmer for 30-35 minutes. turning every 5 minutes to ensure even color, until pears are cooked but still firm
3. Cool to room temperature. cover and chill in refrigerator at least 2 hours. Drizzle each pear with few tablespoons syrup and serve.
• Before serving you also can simmer the syrup without the pears for another 15-20 min to get more syrupy liquid.
• You can serve in cold or at room temperature.
• I used medium size pears but I recommend to use large pears for better results.

For this recipe you will need:

8 : Peaches
3/4 c : Sugar
1/3 c : Water
1/3 c : White Wine
Strawberry Peach Sangria
STRAWBERRY PEACH SANGRIA
2 cups water
1½ cups sugar
1 bottle white wine, chilled
¾ cup rum
Extra strawberries and peaches, sliced
1 bottle sparkling white wine or champagne, chilled
1. Discard the green tops of the strawberries and slice the peaches.
2. In a saucepan, dissolve sugar in water, then add the strawberries and peaches.
3. Bring to a rolling boil and reduce to medium heat. Boil for approximately 15 minutes, or until the strawberries become pale and the peaches are soft.
4. Strain the syrup and refrigerate for 2 hours, or until cooled. Discard boiled fruit.
5. In a pitcher, combine the cooled syrup, sliced fruit, white wine, and rum.
6. Scoop fruit into glasses with ice, pour sangria, and top with sparkling wine.

I remember my granpa preparing this Sicilian Cocktail and I was waiting to eat some piece of peach and...to be honest...drinking a little bit of wine from his glass.
It's enough to cut a peach ( you can peel it or leave unpeeled) and fill the glass. After that, poor the red wine, (nero d'Avola), until to cover the fruit.
