How to Make Peach Cheesecake
Hello! Today, for Mother's Day, I'm making peach cheesecake. It has that buttery and soft (and perfect) graham cracker crust with a creamy and light cheesecake full of peach chunks and flavor, and on top is a peachy jelly that compliments the whole cheesecake! I bet a cup of coffee would go well with this!
I actually made this on Saturday, but I put this video up by Sunday. So I'm sorry this video was late for Mother's Day..but you can still make this for other occasions! :D
Ingredients (makes one 6 x 3 inch cake):
--- Graham Cracker Crust ---
- 10 square graham crackers (or 5 rectangle sheets)
- 1/2 stick (1/4 cup/4 tbsps) salted butter
--- Cheesecake Layer ---
- 1 (15oz) can canned peaches (almost 1 cup -- leave 2 tbsps out for top layer)
- 4 tsp warm water or peach syrup
- 1 (8oz) package cream cheese, room temperature
- 1/4 cup hot water
- 1 1/2 tsp gelatin powder
- zest of 1 medium orange
- 3/4 tsp lemon juice
- 1 tsp ~ 1 tbsp white granulated sugar (adjust to your sweetness)
- 3/4 tsp vanilla extract
- 5 sliced peaches, chopped into chunks
Let set in fridge for at least 2 hours
--- Peach Puree Jelly (top layer) ---
- 2 tbsps peach puree
- 1/2 cup peach syrup
- 1 tsp gelatin powder
- 3 tbsps hot water
Microwave 45 seconds
Let whole thing set in fridge for 2-3 hours or overnight
Notes/Tips:
- Use salted butter for this recipe because it's makes the graham crackers more flavorful and extra buttery and delicious!
- The peach syrup is the syrup from the canned peaches

Betty's Easy Piquant Dip
Betty demonstrates how to make Easy Piquant Dip as an appetizer for Mother's Day. This dip is very simple to make, and it can be served with chips, crackers, or fresh vegetables.
Easy Piquant Dip
8-ounce package cream cheese or Neufchatel cheese, softened
2 teaspoons caraway seeds
1 teaspoon paprika
¼ cup mayonnaise
1 ½ teaspoons minced chives
dash of Worcestershire sauce
chips, crackers, and/or fresh vegetables for dippers
In a medium-sized bowl, stir all ingredients until thoroughly mixed. Transfer dip from bowl to an appropriate serving dish. Cover with plastic wrap and refrigerate until ready to serve. Betty's Cheddar Onion Potato Bake
Betty demonstrates how to make Cheddar Onion Potato Bake. This is a cheesy potato casserole that is made from mashed potatoes, French fried onion rings, and Cheddar cheese.
Cheddar Onion Potato Bake
2 ½ cups leftover mashed potatoes (You may use instant mashed potatoes following the instructions on the package to make 2 ½ cups, or purchase a 24-ounce package of refrigerated mashed potatoes at your grocery store.)
1 well-beaten egg
2.8-ounce can French fried onion rings
¼ teaspoon salt
½ cup shredded Cheddar cheese
In a medium- to large-sized bowl, mix together all ingredients. Spoon mixture into a 2-quart oven-proof baking dish. Bake, uncovered, for 18 minutes at 350 degrees (F), switching to “Broil” for 2 additional minutes. Cheese will be melted and the top will be beginning to brown. Remove from oven and serve immediately. This is a delicious side dish to accompany almost any entrée. Enjoy! --Betty :)

How To Make Filet En Croute
FULL RECIPE BELOW
Follow along with us to create the most perfect Filet en Croute in this online cooking class. We’ll make this semi-complicated dish seem like a breeze.
FILET EN CROUTE RECIPE:
Ingredients
1 Tsp olive oil
2 (6 oz.) beef tenderloin filets
1 Tbsp. butter
8 oz. fresh white mushrooms, minced
2 minced shallot
2 garlic cloves, minced
2 Tbsp. white wine
4 6” squares of puff pastry
1 cup red wine
1 egg
4 oz. veal demi-glace
Salt and pepper
Directions
1. Heat olive oil in a heavy skillet over high heat. Sear the filets until well browned on both sides, 1 to 2 minutes per side/ Remove the filets from the skillet, and chill for at least ½ hour. Filets must be cold.
2. In the same skillet over medium heat, melt the butter, and cook the mushrooms, half the shallots and garlic until the shallots are tender and translucent and the mushroom have given off their juices, 6 to 8 minutes. Add the white wine, scraping the browned bits from the pan. Transfer the mushroom mix into a sheet pan, and chill for about 45 minutes.
3. Place 2 pieces of puff pastry on a work surface, and top each with a chilled filet. Spread half the mushroom mixture in a neat layer on top of each filet, and top each with a piece of puff pastry. Fold and pinch the edges of the pastry together and trim to make a tidy package. Cut a small slit into the top of each package. Whisk egg and brushed the pastry packages with the egg mixture.
4. Pour the red wine into a sauce pan over medium heat with shallots, and simmer until the wine is reduced by half, add the veal demi-glace, seasoned with salt and pepper.
5. Preheat an oven to 450° F. Line a baking sheet with parchment paper. Place the puff pastry bundles on the baking sheet.
6. Bake in the preheated oven until the pastry is golden brown and crisp and the filets are the desired degree of doneness. (For medium rare about 15 minutes) or check with a thermometer. Served each filet with the wine sauce.
