Quick and Easy Pasta With Cherry Tomato Sauce
This is the fastest, easiest way to make pasta sauce from scratch. The secret is using cherry tomatoes. Cherry tomatoes are almost always sweeter, riper, and higher in pectin than larger tomatoes at the supermarket. All of these factors means that cherry tomatoes are fantastic for making a rich, thick, flavorful sauce. Even better: it only takes four ingredients and about 10 minutes start to finish - less time than it takes to cook the pasta you're gonna serve it with.
1 pound dry pasta
4 medium cloves garlic, thinly sliced
6 tablespoons extra-virgin olive oil, divided
1 1/2 pounds cherry tomatoes (about 2 pints; 750g)
1 ounce fresh basil leaves, roughly chopped (about 1 cup; 30g)
Freshly ground black pepper
Parmesan cheese, for serving
1. Place pasta in a large skillet or sauté pan and cover with water and a big pinch of salt. Bring to a boil over high heat, stirring occasionally. Boil until just shy of al dente, about 1 minute less than the package instructions.
2. Meanwhile, heat the garlic and 4 tablespoons olive over in a 12-inch skillet over medium heat, stirring frequently, until garlic is softened but not browned, about 3 minutes. Add tomatoes and cook, stirring, until tomatoes begin to burst. You can help them along by pressing on them with the back of a wooden spoon as they soften.
3. Continue to cook until sauce is rich and creamy, about 5 minutes longer. Stir in basil and season to taste with salt and pepper.
4. When pasta is cooked, drain, reserving a cup of pasta water. Add pasta to sauce and increase heat to medium-high. Cook, stirring and tossing constantly, and adding pasta water as necessary to adjust consistency to a nice, creamy flow. Remove from heat, stir in remaining olive oil, and grate in a generous shower of Parmesan cheese. Serve immediately, passing extra Parmesan at the table.
how to make QUICK and EASY ROASTED CHERRY TOMATO SAUCE
In today's episode, we learn how to make quick and easy roasted cherry tomato sauce from fresh, sweet cherry tomatoes from the farmers market. The idea of Weekday sauce was to be able to make tomato sauce any night of the week without relying on a jar to make pasta. Of course we normally use cans for our sauce because tomatoes suck most of the year, but August is the one time I want to make my tomato sauce fresh, but usually, it takes a lot of time and effort. So how do you make a fresh version of Weekday Sauce? You roast sweet cherry tomatoes. This isn’t a dish you make all year round, that's what weekday sauce is for. This the pasta to make right now, in August/September when you can get the freshest and sweetest cherry tomatoes.

Roasted Tomato Pasta Sauce With Penne Pasta
Roasted tomato pasta sauce with penne pasta is a delicious recipe that you can put together quickly in your own home kitchen! This dish uses just a handful of really high quality ingredients such as fresh basil, extra virgin olive oil, and high quality aged parmigiano reggiano cheese. When using the highest quality ingredients, you do not need to do much to draw out amazing flavor! Join Eric from Simply Elegant Home Cooking as he shows you just how easy it is to create a pasta dish worthy of being served at the finest Italian restaurants.
-1 pound grape tomatoes or cherry tomatoes
-1/2 pound penne pasta
-3 tablespoons Italian extra virgin olive oil
-3 cloves garlic
-2 small shallots
-1/2 tablespoon high quality balsamic vinegar
-1/4 teaspoon crushed red pepper flakes
-1 large handful fresh basil
-salt and pepper
-Cut the tomatoes in half using a serrated knife.
-Thinly slice the garlic and the shallots.
-In a large bowl, combine the tomatoes with 2 tablespoons of the extra virgin olive oil, the sliced garlic, red pepper flakes, balsamic vinegar, salt and pepper. Toss together using your hands.
-Lay out the tomato mixture in an even single layer onto a roasted pan.
-Add the sliced shallots into the same bowl used for mixing the other ingredients and add the remaining tablespoon of extra virgin olive oil. Toss to coat evenly.
-Lay the shallots overtop of the tomato mixture.
-Roast the tomato mixture in a preheated oven at 350 degrees Fahrenheit for 40 minutes, do not stir during this process. While the tomatoes roast, it will draw out the liquid and concentrate the flavor.
-While the tomatoes roast, preheat a large pot with 2 quarts of water. Once the tomatoes have been roasting for 35 minutes, this is the right time to add in the pasta. Be sure to salt the water liberally before you add the pasta. Cook the penne pasta for about 10 minutes or according to the box for al dente.
-After a total of 40 minutes in the oven, remove the tomatoes and allow them to cool for the next 5 minutes while the pasta finishes cooking.
-When less than a minute is remaining for the pasta, reserve a cup of the starchy cooking liquid which will later be added to the sauce.
-Once pasta is cooked, drain but do not rinse the pasta and immediately return the pasta to the pot.
-Add in the roasted tomato mixture, using a spatula to get as much of the liquid as possible.
-Turn on the heat to medium high and add in about ¼ cup of the starchy water. Bring to a simmer.
-Allow the pasta sauce to simmer for about 2-3 minutes or until it has thickened up, stir occasionally to evenly coat the pasta.
-Once desired consistency is reached, turn off the heat and grate some of the parmigiano reggiano cheese over the pasta. Stir to incorporate.
-Add in the fresh basil and stir again.
-Serve and enjoy!

Trader Joes instant pot pasta with cherry tomato sauce and parsley
A quick and easy one-pot pasta. Delicious, healthy and perfect for weeknight cooking
Instant Pot Pasta with Cherry Tomato Sauce and Parsley
I N G R E D I EN T S
⅓ cup extra-virgin olive oil, plus more to serve
4 medium garlic cloves, thinly sliced - I used Trader Joes frozen, minced
¼ teaspoon red pepper flakes
2 bay leaves
2 pints cherry or grape tomatoes, halved (2 pounds total)
1 teaspoon white sugar
1/4 cup chopped flat-leaf parsley
1 Tablespoon Kosher salt
1 pound bucatini or spaghetti pasta, broken in half
1 teaspoon smoked paprika
3 cups of water
Pecorino Romano cheese, shaved or finely grated, to serve
I N S T RU C T I ONS
START: On a 6-quart Instant Pot, select More/High Sauté. Add the oil and heat until shimmering. Add the garlic, and bay, then cook, stirring, until the garlic is light golden brown, about 2 minutes. Stir in the tomatoes, pepper flakes, sugar, 1 tablespoon salt, smoked paprika and 3 cups water. Add the pasta, placing the strands horizontally so they lay flat, then press them into the liquid until submerged.
FAST: Press Cancel, lock the lid in place and move the pressure valve to Sealing. Select Pressure Cook or Manual; make sure the pressure level is set to High. Set the cooking time for 8 minutes. When pressure cooking is complete, quick-release the steam by moving the pressure valve to Venting. Press Cancel, then carefully open the pot. (I like to place a towel over the vent)
FINISH: Using tongs, toss and stir the mixture to separate the strands of pasta, toss with parsley, grate fresh pecorino romano on top and serve.

Shrimp Pasta with Cherry Tomatoes, Basil, and Lemon-Wine Sauce
This is a recipe I found from a video posted by Gordon Ramsay online. I'll admit, I love red sauce with pasta. But sometimes pasta with red sauce gets redundant. A recipe like this that uses wine, stock, and lemon with butter emulsified is a refreshing change.
You can use any type of pasta and white wine you like. Make sure the shrimp are peeled and deveined at least. If you can find them without the tail, even better. If not it just adds a little more prep time but is a simple task. Don't cut your basil too far in advance, as it may turn brown - especially if your knife is not very sharp. Capers are optional if you don't like them. For the stock, because we are cooking seafood, a fish stock would fit well, but you can use chicken or veggie if that's what you've got on hand. Avoid heavier stocks like beef or veal.
Olive Oil - as needed
Shrimp - about 20pc, medium sized, tails removed
Shallot - 2 ea, sliced
Garlic - 4 cloves, minced
Cherry Tomatoes - about 15, halved
Chili Flakes - 1/4 tsp
White Wine - 1 cup
Stock - 1/2 cup + more for adjusting sauce
Capers - 2 tbl
Lemon Juice - 1/2 lemon
Basil - 6 leaves, chiffonade + more for garnish
Butter - 2 tbl
To start, bring a big pot of water to a rolling boil and season with salt. When you are ready at any point in this recipe, add the pasta to the water and cook until al dente.
Over medium heat, add olive oil to pan and sweat shallots until lightly brown. Add garlic and sweat 1 minute. Add cherry tomatoes, season, and cook 2 minutes until skin blisters. Add chili flakes, then white wine. Cook until wine reduces slightly. Add stock, capers, and lemon juice. Reduce slightly, then add basil. Add seasoned shrimp to the pan and cook about 90 seconds on each side, Then remove from the pan. Add butter and swirl to emulsify the sauce. Add your cooked pasta to the pan and simmer for a minute or two in the sauce. Garnish with fresh basil and parmesan, serve immediately.
