Oyster & Artichoke Soup
Perfect soup to cook when you're feeling cold and want to splurge a little. The richness of the oyster and artichoke play nicely in this soup that can be made ahead of time and even stores well in the freezer for when you need a quick meal.

Artichoke Oyster Soup
2 Cans Artichoke Hearts
2 Bunches Chopped Green Onions
5 Cloves Crushed Garlic
1 stick Butter (1/4 lb)
2 Cans 14-1/2 oz Chicken Broth
2 cups Whipping Cream
1 Pinch Thyme
1 Pinch Basil
1/2 cup Chopped Parsley
1 Can 8 oz Chopped Mushrooms
1 pt Fresh / Drained Oysters or Clams
1 lrg Spoon Flour
*** Melt butter and mix with flour to make a roux in a big pot. Cut onions course and blend with 1/3 cup water until liquified. Add garlic and blend again. Add this mixture to butter and flour. Add chicken broth slowly while stirring. Put 1 can of artichoke hearts in blender with the juices. Add to mixture. Drain second can of artichoke hearts and chop up. Add to mixture. Add mushrooms. Cook for 30 minutes of low heat. Add cream slowly while stirring. Add thyme, parsley, and basil. Add oysters or clams (can add juice if desired) and cook till oysters curl.

ARTICHOKE SOUP (Last Supper)

Yields: about 8 bowls
1/2 of a large onion
5 garlic cloves
3 Tbsp (45mL) Olive oil
3Tbsp of butter
2 14oz cans (792g) of artichoke hearts (NOT IN OIL)
1 large russet potato, peeled and cut into 1/2 inch cubes
1 Tbsp (20g) of salt (to taste)
2 tsp (15g) of pepper (to taste)
6 cups (1425mL) of chicken stalk
2 cups (475mL) of heavy cream
Add oil, butter, onion, and minced garlic to a pot. Sweat out onions and garlic for a few minutes./ Strain your artichoke hearts and then add them to your pot. Let cook for a few minutes.
Then add in your salt, pepper, and chicken stock. Bring your mixture to a boil and then reduce to a simmer. Let cook for 10-15 minutes.
Next add in your potatoes and heavy cream. Let cook for another 15 minutes or until the potatoes are fully cooked. Make sure to taste to make sure you don't need anymore seasoning.
Blend your soup using a blender or immersion blender.
Garnish with either a little olive oil, sour cream, or marscapone cheese.
