Zest (outer yellow skin) of one lemon/ 2 limes
1 cup (100 grams) almonds, walnuts, cashew nuts and pistachios
1 teaspoon (4 grams) baking powder

Do you ever just want a bite or two of something sweet and or chocolatey, to satisfy a craving? I don’t always have a slice of cake at the ready — shocking considering how much I bake — so I decided to whip up some truffles. Since the weather is cooling down a bit, I used a drop (1/4 cup) of brandy helps to warm things up. I finished them off with a quick roll in the toasted coconut, pecan, and cocoa powder. Soooo GOOD! Does anyone else remember those little chocolates in the shape of liquor bottles? Not sure if I should have had those as a kid, but I guess the 80’s were a different time Enjoy this adult version of that.
I do think these truffles would be a PERFECT Valentine's Day treat in case you're wondering what to make.
Yes you can totally omit the alchohol if desired! To add some interest feel free to mix in toasted nuts, some coffee or candied cherries to make this recipe your own.

Fruit and Nut Balls, or you may know them as Sugarplums, are made with a variety of pureed dried fruits and nuts held together with a little honey (golden syrup or corn syrup) and a splash of alcohol (or fruit juice). I think what makes them so tempting is all the ways they can be decorated. You can roll them in different sugars (white, brown, or powdered), unsweetened cocoa powder, dried sweetened or unsweetened coconut, grated chocolate, and/or finely chopped nuts. But I must admit that my favorite way is to dip them in melted dark chocolate as I love the combination of dried fruits, nuts, and chocolate. They store very well, and while perfect for Christmas giving, they also make an excellent snack to take along on picnics or hikes when you need a quick boost of energy.

Its that time of year where I make the house smell festive....Christmas Cake Cupcakes. This recipe can make between 44-48 cupcakes. Alternatively it will make 1x cake which can be baked for 4 hours at 140degs C)
Christmas Cake Cupcakes
Pre-heat Oven to 140 degrees Celsius
Cupcakes:
350g Dark Brown Sugar
300g Unsalted Butter, room temperature
400g Plain Flour, sieved
575g Currants
375g Sultanas
200g raisins
150g Mixed Peel
150g Glace Cherries
150g Slivered Almonds
100g Ground Almonds
7x Large Eggs
4x tablespoons Grand Marnier
1 ½ teaspoon Mixed Spice
¾ teaspoon Ground Nutmeg
Zest of a Lemon
Zest of an Orange
Iced Topping:
Apricot Jam (mixed with a little boiled water)
1000g Icing Sugar
4x Egg Whites
Juice of ½ Lemon
2x teaspoons Glycerine

Orange Comfort
3/4 jigger Southern Comfort
1/3 jigger anisette
1/3 jigger orange juice
1/3 jigger lemon juice
Shake well with ice; strain into cocktail glass and garnish with 1 slice cocktail orange in syrup.
Southern Sunset
1 jigger Southern Comfort
1/2 jigger anisette
1 dash orange bitters
1 teaspoon grenadine
Shake Southern Comfort, anisette, and orange bitters well with ice. Strain over crushed ice into cock- tail glass. Float grenadine on top and garnish with mint sprig
Chocolate-Raspberry Cheese Cake
The subtle flavor of framboise, an exquisite, clear liqueur made from rasp- berries, and the audacious presence of chocolate, make this cheese cake a very special dessert. If desired, orange-flavored liqueur may be substituted for framboise in the recipe below.
Graham Cracker Crust (see below)
3 packages (8-oz size) cream cheese
1 cup sugar
2 eggs
1 package (8-oz size) semisweet chocolate
2 tablespoons heavy cream
1 cup dairy sour cream
1/4 cup strong coffee
1/4 cup framboise
1 teaspoon vanilla extract
Preheat oven to 350 F. Lightly grease 9-inch spring-form cheese cake pan and sprinkle graham cracker crust mixture on bottom, about 1/2 inch deep.
Let cream cheese soften to room temperature; stir in sugar; beat eggs and stir into cheese. In double boiler melt semisweet chocolate pieces with heavy cream. Stir melted chocolate, sour cream, coffee, framboise, and vanilla into cheese mixture. Pour into 9-inch spring-form pan.
Bake 45 minutes (cheese cake will be creamy and a little runny in center). Let cool and chill. To serve, unmold and garnish with chocolate curls.*
Yield: 8 servings.

Orange- Banana Bread
1 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1/3 cup butter
2/3 cup sugar
3/4 teaspoon grated lemon rind
1 teaspoon grated orange rind
2 beaten eggs
1 cup mashed ripe banana
3 tablespoons Grand Marnier
1/2cup chopped walnuts
Preheat oven to 350 F. Sift together flour and baking powder, set aside. Cream butter, gradually add sugar, grated lemon and orange rinds, and blend until smooth.
Beat in eggs, mashed banana, and Grand Marnier. Add flour-baking powder mixture a little at a time, stirring in thoroughly.
Fold in chopped walnuts. Grease glass loaf pan, 8x 5x 4. Spoon batter into pan. Bake 45 minutes. Cool before slicing.
Yield: 1 loaf.
ORANGE-BRANDY FRUIT CUPS
Macerated fruit cocktails go well with banana bread and coffee; serve them instead of an after-dinner drink if you like, or as dessert to be followed by Pink Squirrels.
Select fresh fruits in season, peel, remove seeds or cores, and chop into bite- size pieces. Place in large bowl and fill with orange juice to cover fruit.
Add 1/2 cup brandy. Marinate, covered, 24 hours. To serve, drain fruit and place in sherbet glasses or punch cups.

Liquor and Wine Filled Chocolate | Filled Chocolates (gift idea)
Liquor and Wine Filled Chocolate
Ingredients:
250g semisweet chocolates
20g white chocolate(optional)
Fillings:
1/8 cup Tanduay ice(blue)
1/8 cup vodka chocolate(Mudshake)
1/8 cup red wine
1/8 cup whisky
5 tbsp hot water
1 1/4 tsp gelatin, clear and unflavored
we need:
chocolate molds
Procedure:
1) Melt chocolate(bain marie)
2) To temper: Mix until chocolate is nice and cool to touch
3) Fill molds with melted chocolate
4) Tap few times to release air bubbles
5) Pour excess chocolate
6) Scrape off excess chocolate
7) Turn it upside down on a flat surface. freeze for 10 min.
8) Repeat steps for the remaining chocolate
9) Fill the chocolates
10)Chill or freeze until fillings are firm to touch
11)Cover it with melted Chocolate
12)Scrape off excess chocolate and freeze for 10 min.
13) Unmold chocolates
14)Melt white chocolate and let it cool
15)Decorate the chocolates with the white melted chocolate
Filling:
1) Vodka Chocolate:Combine 1/4 tsp gelatin and 1 tbsp hot water. Mix until gelati dissolves
2) Add vodka chocolate and mix well
3) Same procedure for the Tanduay Ice and whisky
4) Red wine filling: Dissolve 1/2 tsp gelatin in 2 tbsp hot water
5) Add red wine and mix wel
Fillings without gelatin:
1) Freeze liquor for 1 to 2 days

Halloween Pumpkin Chocolate Bundt Cake | Recipe by Teka
Turn on the oven and learn how to prepare this terrifying pumpkin Bundt Cake. The perfect dessert for your Halloween party and enjoy a sweet night of terror.

INGREDIENTS
- 160g Butter
- 180g Flour
- 150g Sugar
- 2 Eggs
- 40g Cocoa powder
- 1 teaspoon of vanilla extract
- 60ml Milk
- 60ml Cream
- 1 teaspoon of baking powder
- 1 teaspoon of salt
- 200g White chocolate
- 50ml Cream
- Orange food coloring

ELABORATION
1. Whisk the butter and sugar with a blender, medium to high speed, until you have a fluffy and pale batter.
2. Add the rest of the ingredients and whisk until everything is well-combined.
3. Pour the dough in molds with the shape of a half pumpkin or other funny molds.
4. Bake at 190ºC for 10 minutes or until you poke the dough with a toothpick and comes out clean.
5. Meanwhile, melt the white chocolate and cream in the microwave for 30 seconds.
6. Stir and add some orange food coloring. Heat again for 30 seconds until it is completely melted.
7. Put together the small sponge cakes to form a pumpkin shape.
Coat the sponge cakes with the orange chocolate and create the leave and the stem with fondant.

Black Velvet Cake (Whiskey Cake)
Black Velvet Cake
SO this is the simplest cake recipe ever. And the most decadent and sinful, guaranteed to get you tons of compliments, and requests to make it for any potluck style function you attend. You can even cheat on parts of it. But the cake itself HAS to be the one from the back of the Hershey's Unsweetened Cocoa Powder container. Here it is though, I know it by heart, been using the same recipe since I was 10!
1 3/4 cup flour
2 cups sugar
3/4 cup unsweetened cocoa powder (sifted)
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
Mix dry ingredients in large bowl, then add:
2 eggs
1/2 cup vegetable oil
1 cup milk
2 tsp vanilla extract
Beat well, until smooth. Then slowly pour in 1 cup boiling water and again, mix well.
Pour into greased and floured baking dish...either 9x13 pan, or 2 - 8 or 9 rounds. Bake at 350, approximately 30-40 minutes. I usually just watch it at the end, and once it no longer jiggles at all, and is firm to the touch, I call it good and remove from the oven. Cool for at least 4 hours before assembling.
Whipped Cream (here's where you can cheat):
2 cups heavy whipping cream
1/2 tsp salt
1 tsp vanilla (or any flavor you want...brandy extract is yummy too)
1/4 cup sugar (or more if you like sweeter)
whip the way you normally would to make whipped cream, and to make this set better, I usually dissolve 1/2 packet of Knox gelatin (about 2 tsp in 2 TBSP water) and add at the end of whipping. It holds up better under the top layer.
~OR~ just use Cool Whip!
Whiskey Sauce:
(this recipe makes more than you'll need, but trust me, you'll want leftovers to put on ice cream, french toast, cinnamon rolls...ANYTHING!)
1 cup butter (margarine will do too)
2 cups sugar
4 beaten egg yolks
1/3 cup water
1/2 cup (I usually use 3/4, sometimes even 1 whole cup) whiskey
(you can use cheap stuff, nobody will notice, and I've used amaretto, frangelico, and grand marnier too...ALL are yummy!)
In saucepan, melt butter. Stir in sugar, egg yolk, and water. Cook and stir constantly over medium heat for 8-10 minutes, or until sugar dissolves and mixture boils. Remove from heat and stir in whiskey. Cool at room temperature at least 4 hours before assembling cake.
NOW....place your bottom layer on your serving plate. Spoon some of the whiskey sauce on top of bottom layer and let it sink in. Then, use your whipped cream and spread a thick layer, making sure it goes all the way to the edge. Then place top layer on. Spoon more sauce over that to make a nice sticky base for nuts to hold on to. Either use Pecan halves, or chopped walnuts and completely cover the top with nuts. Then slowly spoon sauce over the entire top, letting it drip down sides. Refrigerate for a few hours, until sauce is hardened. Drizzle more over that if you wish.

Doctor Funk - How to Make the Only Classic Tiki Cocktail with a Polynesian Origin
Here's how to make the Tiki drink, Dr. Funk, which is made with Jamaican Pot Still Black Rum, Absinthe, Lemon Juice, Lime Juice, Grenadine, Rich Simple Syrup, Soda Water and, optionally, Mint for garnish. This is Smuggler's Cover version (more or less), but it is the only Tiki cocktail that was actually imported from Polynesia.
Donn Beach (born Ernest Raymond Beaumont Gantt) was a rum runner during Prohibition and a world-traveler who spent time in the Caribbean and the South Pacific. It was during his time in Polynesia that he discovered a drink, a local favorite known as Dr. Funk.
The drink was created by and named after a German-born physician, Doctor Bernard Funk, who spent 31 years in the South Pacific practicing medicine. The original drink bearing Funk’s namesake was a bold, tart concoction made with Absinthe, Grenadine, Lime Juice and Soda Water.
In 1933 when Donn opened the first Tiki bar, Don the Beachcomber, the Dr. Funk was on the menu. However, Donn adapted it. He lowered the Absinthe and added Light Rum to help fortify it.
Donn’s exotic bar served cuisine that was fairly exotic to the early 20th Century American palate, (Americanized) Chinese food. He hired a Chinese-American head chef and started a trend that continued in Tiki bars for decades. The whole Tiki bar experience was almost entirely fusion. It was a mix of faux-Polynesian, faux-Caribbean and faux-Asian that became it’s own thing.
This fusion, along with a couple other factors, lead to the Dr. Funk being renamed, depending on where it was served. It became Dr. Funk of Tahiti, Dr. Fong, Dr. Wong and Dr. Sam Tee. Some of the names evoked the imagery of a contemporary cinematic supervillain, Dr. Fu Manchu and the drink was commonly served in the iconic Fu Manchu Tiki mug.
I deviated from this, but kept the spirit of pop-culture fusion alive by serving this drink in a David Lo Pan mug from Boo Tiki. Jeff Wehenkel’s company, Boo Tiki, makes pop-horror-themed Tiki mugs and Lo Pan, the supervillain from Big Trouble in Little China, fits right in. It’s the perfect setting because Tiki cocktails, while sometimes exasperating to make, are really fun and are designed as escapism.
Vic Bergeron, who founded Trader Vic’s, tweaked Donn's Dr. Funk. He split the citrus, added a little sugar and swapped out the light rum for a dark Jamaican rum. This switch in the base spirit really helps balance the powerful anise flavor of the absinthe.
But like all the predecessors, Vic’s was still on the tart side. Decades later that was addressed by Martin Cate, founder of Smuggler’s Cove in San Francisco. Cate took Vic’s recipe and swapped out the sugar for rich simple syrup. He dialed up the level of sweetness so that it matched the level of tartness, thus achieving a better equilibrium. It may not have had a whole lot of resemblance to the doctor’s original drink, what Cate did was create the most evenly balanced version of the Tiki classic. One that’s sure to really shake the pillars of heaven. Okole Maluna!
Recipe:
2.5 oz Dark Jamaican rum
0.25 oz Absinthe
0.5 oz Lemon Juice
0.5 oz Lime Juice
0.25 oz Grenadine
0.5 oz Rich Simple Syrup
1 oz Soda Water
garnish Mint Sprig (optional)
Add all liquid ingredients except Soda Water into a shaker. Add 12 oz of crushed ice and 3-4 ice cubes. Shake. Stir in Soda Water. Pour unstrained into Tiki Mug or Double Old Fashioned Glass. Garnish with Mint or Pineapple Fronds. Serve with straw.
