Ingredients to Soak:
Assorted dry fruits: Raisin, cranberry, blueberry, black currants, chopped figs: 10 gm tutti fruttis (red, green, yellow and orange: 50 gm).
150 ml rum
Ingredients For Cake Batter:
2 cups/ 260 grams all-purpose flour/ refined flour
3/4 cup/ 75 grams finely ground almonds
1 cup/ 225 grams butter, at room temperature
1 cup/ 210 grams powdered sugar
3 large eggs at room temperature
Extra rum for brushing the cake
Juice and zest (outer orange skin) of one orange
Zest (outer yellow skin) of one lemon/ 2 limes
1 cup (100 grams) almonds, walnuts, cashew nuts and pistachios
1 teaspoon (4 grams) baking powder
1/8 tsp nutmeg powder

This easy no bake recipe makes the most scrumptious chocolate truffle! They come together in a snap, are beyond addictive and yes they’re brimming with brandy!
Do you ever just want a bite or two of something sweet and or chocolatey, to satisfy a craving? I don’t always have a slice of cake at the ready — shocking considering how much I bake — so I decided to whip up some truffles. Since the weather is cooling down a bit, I used a drop (1/4 cup) of brandy helps to warm things up. I finished them off with a quick roll in the toasted coconut, pecan, and cocoa powder. Soooo GOOD! Does anyone else remember those little chocolates in the shape of liquor bottles? Not sure if I should have had those as a kid, but I guess the 80’s were a different time Enjoy this adult version of that.
I do think these truffles would be a PERFECT Valentine's Day treat in case you're wondering what to make.
Yes you can totally omit the alchohol if desired! To add some interest feel free to mix in toasted nuts, some coffee or candied cherries to make this recipe your own.

Fruit and Nut Balls, or you may know them as Sugarplums, are made with a variety of pureed dried fruits and nuts held together with a little honey (golden syrup or corn syrup) and a splash of alcohol (or fruit juice). I think what makes them so tempting is all the ways they can be decorated. You can roll them in different sugars (white, brown, or powdered), unsweetened cocoa powder, dried sweetened or unsweetened coconut, grated chocolate, and/or finely chopped nuts. But I must admit that my favorite way is to dip them in melted dark chocolate as I love the combination of dried fruits, nuts, and chocolate. They store very well, and while perfect for Christmas giving, they also make an excellent snack to take along on picnics or hikes when you need a quick boost of energy.

Pumpkin Pie with orange sauce | Pumpkin Pie Recipe
This pumpkin pie with walnuts and orange so moist and delicious, and with to addition of the orange sauce, it just can’t get any better! The Orange Sauce gives a special taste of this pie. Homemade Pumpkin Pie is not very sweet and is perfect with a cup of tea or coffee in an autumn day.
Pumpkin Pie with orange sauce
14 oz (400g) of pumpkin pulp purée from a sugar pumpkin or from canned pumpkin purée. How to make fresh pumpkin purée you can see here
2 cups (275g) all purpose flour
1 cup (200g) white sugar
3 large eggs
1 cup (200g) extra virgin olive oil
3 handfuls of walnuts
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon pure vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon salt
pinch of ground cloves
pinch of ground nutmeg
5 tablespoons white sugar
1/8 cup (30g) unsalted butter
2/3 cup (150ml) heavy cream
1. Preheat oven to 375°F/190°С
2. Put the ingredients into a mixing bowl — flour, ground ginger, ground cinnamon, ground cloves, ground nutmeg, salt, baking powder and baking soda.
3. Add chopped walnuts and grated orange peel to the flour. Mix well.
4. In a large bowl, beat sugar with eggs and in two steps to add olive oil.
6. Add pumpkin puree, vanilla extract and half orange juice to the beaten eggs, mix well until you have an even sandy consistency.
7. Combine your pumpkin mixture with dry mixture (from flour and walnuts) and mix just until combined.
8. Lay a piece of parchment paper over a 8-inch baking dish and transfer your mixture to baking dish, spread evenly.
9. Bake 40-50 min or until a toothpick inserted in the center comes out clean.
10. While your pie is baked, we are going to make our orange sauce.
11. Clean 2 oranges really well, divide it into segments, place into the pan and cook for 10 minutes over medium heat.
12. Add the juice of the third orange, sugar, butter and heavy cream into the pan and cook for another 5 minutes.
13. Using electric mixer, beat orange mixture until smooth. Refrigerate for 30-40 minutes.
14. Once your pie is cooled down, add icing sugar and walnuts on top. Serve with orange sauce. Enjoy!

1 cup bittersweet chocolate chunks
1 3/4 cups heavy cream, chilled
3 large egg whites
1/4 cup sugar
Bittersweet chocolate, shaved, for garnish
1. Temper chocolate, stirring until melted. Turn off the heat and let stand.
2. Beat heavy cream until it forms soft peaks. Set aside.
3. Whip egg whites with a hand mixer until soft peaks form, gradually adding in sugar.
4. Using a whisk, fold the tempered chocolate into the egg whites. Once fully incorporated, fold in the whipped cream. Transfer to a baking dish if desired, cover and refrigerate until set (about 1 hour).
5. Serve with shaved chocolate and enjoy!

Its that time of year where I make the house smell festive....Christmas Cake Cupcakes. This recipe can make between 44-48 cupcakes. Alternatively it will make 1x cake which can be baked for 4 hours at 140degs C)
Christmas Cake Cupcakes
Pre-heat Oven to 140 degrees Celsius
350g Dark Brown Sugar
300g Unsalted Butter, room temperature
400g Plain Flour, sieved
150g Mixed Peel
150g Glace Cherries
150g Slivered Almonds
100g Ground Almonds
7x Large Eggs
4x tablespoons Grand Marnier
1 ½ teaspoon Mixed Spice
¾ teaspoon Ground Nutmeg
Zest of a Lemon
Zest of an Orange
Apricot Jam (mixed with a little boiled water)
1000g Icing Sugar
4x Egg Whites
Juice of ½ Lemon
2x teaspoons Glycerine

Black Velvet Cake
SO this is the simplest cake recipe ever. And the most decadent and sinful, guaranteed to get you tons of compliments, and requests to make it for any potluck style function you attend. You can even cheat on parts of it. But the cake itself HAS to be the one from the back of the Hershey's Unsweetened Cocoa Powder container. Here it is though, I know it by heart, been using the same recipe since I was 10!
1 3/4 cup flour
2 cups sugar
3/4 cup unsweetened cocoa powder (sifted)
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
Mix dry ingredients in large bowl, then add:
1/2 cup vegetable oil
1 cup milk
2 tsp vanilla extract
Beat well, until smooth. Then slowly pour in 1 cup boiling water and again, mix well.
Pour into greased and floured baking dish...either 9x13 pan, or 2 - 8 or 9 rounds. Bake at 350, approximately 30-40 minutes. I usually just watch it at the end, and once it no longer jiggles at all, and is firm to the touch, I call it good and remove from the oven. Cool for at least 4 hours before assembling.
Whipped Cream (here's where you can cheat):
2 cups heavy whipping cream
1/2 tsp salt
1 tsp vanilla (or any flavor you want...brandy extract is yummy too)
1/4 cup sugar (or more if you like sweeter)
whip the way you normally would to make whipped cream, and to make this set better, I usually dissolve 1/2 packet of Knox gelatin (about 2 tsp in 2 TBSP water) and add at the end of whipping. It holds up better under the top layer.
~OR~ just use Cool Whip!
(this recipe makes more than you'll need, but trust me, you'll want leftovers to put on ice cream, french toast, cinnamon rolls...ANYTHING!)
1 cup butter (margarine will do too)
2 cups sugar
4 beaten egg yolks
1/3 cup water
1/2 cup (I usually use 3/4, sometimes even 1 whole cup) whiskey
(you can use cheap stuff, nobody will notice, and I've used amaretto, frangelico, and grand marnier too...ALL are yummy!)
In saucepan, melt butter. Stir in sugar, egg yolk, and water. Cook and stir constantly over medium heat for 8-10 minutes, or until sugar dissolves and mixture boils. Remove from heat and stir in whiskey. Cool at room temperature at least 4 hours before assembling cake.
NOW....place your bottom layer on your serving plate. Spoon some of the whiskey sauce on top of bottom layer and let it sink in. Then, use your whipped cream and spread a thick layer, making sure it goes all the way to the edge. Then place top layer on. Spoon more sauce over that to make a nice sticky base for nuts to hold on to. Either use Pecan halves, or chopped walnuts and completely cover the top with nuts. Then slowly spoon sauce over the entire top, letting it drip down sides. Refrigerate for a few hours, until sauce is hardened. Drizzle more over that if you wish.
