Ferrero Fantasia Dessert – Bruno Albouze – The Real Deal
Everyone can recall the taste of Ferrero Rocher – An incredible chocolate and hazelnut confectionery. Let's turn this treat into a fabulous plated dessert: A melt in your mouth hazelnut ganache montée coated with milk chocolate and toasted hazelnut crumbs, wrapped into a buttery pastry ring and garnished with comme un petit jardin – fruit bouquet with dots of lemon curd, candied orange, edible flowers, micro mint, blueberries and raspberries.. Ferrero Fantasia Recipe
Sweet Dough / Pâte Sucrée

210g all-p flour.
Pastry rings used in this video: Valrhona Perforated Tart Ring - 4.25 inch Diameter, Set of 6 units
In a food processor, cream butter and salt – add sugar and almond meal; blend to smooth. Add the egg and vanilla and blend well. Add flour and process until combined. Wrap up the pastry and chill a couple of hours or until firm.
Work the chilled pastry over a floured work surface until it turns supple but still cool. Cut out strip of dough slighlty higher than the pastry ring and its diameter (1”x14” / 2.5x35.5cm). Chill pastry for about 30 min. Carefully, apply each pastry strip against the sides of each greased ring. Trim off any excess from the bottom of the ring first and chill for 30 min. Trim off excess pastry from the top and freeze before baking. Save leftover pastry for later use – it can be stored in the freezer for weeks.
Bake pastry rings at 350ºF (180ºC) for 12 minutes. Then carefully, flip pastry and put back in the oven for 6 min more. Total baking time ≈18 min. Cool.
Take extra care regarding the baked pastry rings, these are fragile!..
Praliné (Hazelnut Spread)
10 ounces (300g) whole hazelnuts
8 ounces (200g) sugar.
Using Caramel a-sec- Method (caramel without water)
Toast nuts. Cook sugar in a hot frying pan to caramel stage. Toss in warn nuts, turn heat off and transfer onto a silicone baking mat to cool.
In a running food processor, blend caramelized nuts with a pinch of salt until it turns into paste. Set aside.

Betty's Pineapple Orange Layered Gelatin Salad
Betty demonstrates how to make a colorful, delightful Pineapple Orange Layered Gelatin Salad, sometimes called Sawdust Salad. It tastes great, goes with just about anything, and is very inviting! It will be one of your favorites!!!
Pineapple Orange Layered Gelatin Salad
1 small box lemon JELL-O (I used sugar-free, but I suggest you use regular, unless you are accustomed to using sugar-free.)
1 small box orange gelatin (Again, I used sugar-free, but I suggest you use regular, unless you are accustomed to using sugar-free.)
2 cups hot water
1 1/2 cups cold water
2 bananas, sliced
20 oz. can crushed pineapple, drained (Save the juice for later in this recipe!)
1 cup (or more to taste) miniature marshmallows
1 cup reserved pineapple juice
1/2 cup sugar
2 tablespoons flour
1 well-beaten egg
1/2 pint whipping cream (very cold)
3 oz. cream cheese, softened
12/ cup to 1 cup shredded Cheddar cheese
Dissolve 1 small box lemon JELL-O and 1 small box orange JELL-O in 2 cups hot water. Add 1 1/2 cups cold water. Place in a large, clear bowl. Add 2 sliced bananas and 20 oz. drained, crushed pineapple. Stir. Sprinkle approximately 1 cup of miniature marshmallows over the top. Cover the bowl with plastic wrap and refrigerate until set, at least 4 hours. Meanwhile, begin your pineapple pudding layer. Combine 1 cup reserved pineapple juice, 1/2 cup sugar, 2 tablespoons flour, and 1 well-beaten egg. Stir until smooth. Place over low heat and cook, stirring constantly, until thickened and bubbly. Allow to cool to room temperature. (You may place it in the refrigerator, until your JELL-O mixture is congealed.) When your JELL-O is set and your pineapple pudding is cooled, spread the pudding over the JELL-O mixture. Now whip the cold whipping cream until it holds its shape. Also, whip the 3 oz. of softened cream cheese until light. Blend the whipped cream cheese into the whipped cream. (I do this with an electric mixer.) Spread the whipped cream mixture over the pudding layer. Sprinkle grated sharp Cheddar cheese over the top. it is read to eat immediately, or you may cover it with plastic wrap and keep it in the refrigerator until ready to serve. This fruit salad is *so* pretty--and *so* tasty!

Holiday Punch - Ginger Ale & Grape Juice
This punch uses ginger ale, grape juice, Maraschino cherries and crushed pineapple. This version suggests Canada Dry ginger ale. - See more at:

Holiday punch, something my grandmother made every single holiday. Something we all look forward to. I vividly remember where she placed it in her kitchen, and I'd like to prepare it for you today. I guarantee, wherever you serve this punch, it'll sure be a big hit. The first thing I'm going to do is I'm going to take Maraschino cherries and I'm going to place one in each ice cube. I'm doing this because the punch bowl that I'm using today is a small punch bowl. You could also use a punch bowl ring. This is just some ginger ale. I'm going to pour it into the tray. And here it is. It smells so good. And just drop these into your freezer and let them freeze. So that'll be step one for the holiday punch.
And if you're going to use the ring, just pour a jar of Maraschino cherries into the ring and fill your ring up with ginger ale and place it into the freezer-- as simple as that. So here is our finished ice cubes. Just dump it right into our punch bowl. Now you can see they don't totally freeze because it's soda, but they freeze just enough. I have prepared two trays. And like I said, if you had one big punch bowl, you could use your ring.
Next-- this is so simple --one can of crushed pineapple with the juices into the punch bowl, one can of Maraschino cherries with their juices into the punch bowl. Now, I have to share a funny story with you. The next two ingredients, according to my grandmother, they had to be the exact ingredients. She always used Welch's grape juice. Years ago it used to come in a can. And believe me, I've searched high and low for the can because it's just something about having to make it just the way she did. They don't make it in a can as far as I know, but they still make it. So it's one bottle or can of Welch's grape juice poured right in.
My grandfather and grandmother at a holiday when we were doing our shopping or baking, because preparing for a holiday at my grandmother's, we cooked for a week before the cooking started, so how often my grandfather was sent to the grocery store to pick up last-minute items that we forgot for our recipe, I can't even begin to tell you. But one day I vividly remember my grandmother she forgot to get the ingredients to the punch. And we're like, Grandma, you have to make the punch. It won't be holiday without it. So she said, Joe, you have to go to the grocery store. I need Canada Dry ginger ale and Welch's grape juice.
So they got into a little argument, why does it have to be Canada Dry ginger ale? We have the Twin Lights soda in the [? speeza ?] closet downstairs in the basement, just get one of those, he used to say, [? Felina. ?] That's what he called her, [? Felina. ?] And she'd say, Joe, it has to be the right way. So off to the store-- because he was an angel --he would go and he would buy us our Canada Dry ginger ale for our holiday punch. So that's what we use Canada Dry.

Rainbow Jello - Cathedral Window Recipe
Rainbow jello or cathedral window recipe is a delicious combination of condensed milk, evaporated milk, and four different flavours of jello. It is great for the Holidays or any time of year. Make it up and let us know what you think.
There are a few trips to this recipes. First off, I use blueberry, orange, strawberry, and lime jello. You can use the flavours of your choice, however. I just find these really colourful. Also, more than four flavours can be used but do not overdue it. The jello instructions call for two cups of water, but I only use a cup and a half to make it a little firmer. You can also reduce the jello in half if you do not want as much.
The jello will set in about four hours, so I usually make this a two day recipe. The jello on the first day, and the rest on the second day. I know it seems like a bit of time, but it is well worth it.
The pineapple juice it optional, but I find it adds a great twist of flavour to the dish.
I use a bundt pan, but if you do not have one or cannot find one, use the pan of your choice.

Dessert Recipe: Upside Down Citrus Cake by Everyday Gourmet with Blakely
This recipe is so great because you can change out the citrus for whatever is in season! I love using grapefruit and oranges but you can use whatever you would like. So light and delicious and very impressive. Also, it's not too sweet so even non-desert eaters will be asking for seconds.
