Old Fashioned Strawberry Shortcake Recipe
My recipe for old fashioned strawberry shortcake...you know, the kind that's more like a biscuit than a cake. Also use other berries or peaches too...whatever you like--it's your masterpiece!

Old Fashioned Strawberry Jam Recipe:
INGREDIENTS
2 Cups All purpose flour
2 Tablespoons sugar Plus more for sprinkling
1 Tablespoon baking powder
1/2 Teaspoon salt
6 Tablespoons butter Chilled
3/4 Cup milk Plus more for brushing
4 Cups Strawberries Washed and hulled
1/2 Cup Strawberry jam Optional
2 Cups Whipping cream
1/4 Cup Confectioner’s sugar
1 Teaspoon vanilla
INSTRUCTIONS
In a large bowl combine flour, sugar, baking powder and salt. Mix well.
Add cold butter and cut in with a pastry blender or 2 knives until mixture resembles coarse oats. Add milk gradually, stirring to form a soft dough. Knead 5-6 times by hand so that leaves the sides of the bowl clean. Do not overwork. Cover with plastic wrap and chill in freezer for 30 minutes.
Preheat oven to 425F/218C. Line a baking sheet with parchment paper or leave ungreased. Divide dough into 8 equal portions and space evenly on baking sheet. Pat into neat rounds or leave them rustic. Brush tops generously with milk and sprinkle with more sugar. Bake 12-15 minutes or until puffed and lightly golden. Transfer shortcakes onto racks to cool.
Half or quarter strawberries and combine with jam, tossing to coat well. This step is optional and you can also sweeten with plain sugar or leave berries as they are. Set aside.
Using chilled bowl and beaters, whip cream until soft peaks form. Add sugar and vanilla and continue to beat until firm peaks form. To assemble shortcakes, split each one across the middle and place a dollop of whipped cream on bottom half. Top with a few strawberries, a little more whipped cream, then top with the second shortcake half. Add one more dollop of whipped cream and top with a single strawberry. Serve immediately.

Old Fashioned Strawberry Shortcake Recipe ~ How to Make
Strawberry Shortcake....with Milk!
INGREDIENTS:
1 cup shortening
4 cups flour
4 tsp. baking powder
1 1/2 tsp salt
2 to 2 1/2 cups sugar
2 tsp. pure vanilla extract
1 1/2 cups milk
4 eggs
Preheat oven to 350 degrees
In a large bowl cream the shortening and eggs.
Add the remaining ingredients alternating the
milk and dry ingredients. Mix well each time.
Add batter to a well greased and floured
9 x 13 pan.
Bake for 45-50 minutes or until golden brown or
a toothpick comes out clean.
Strawberries:
1 pound strawberries, cleaned and sliced
1-2 tbsp. honey or sugar
Mix well and refrigerate for 1-2 hours until juice
forms. I refrigerate over night.
Spoon strawberries over shortcake.
Drizzle with milk and enjoy. :)

Japanese Strawberry Cake in cups and gram ( Makes 6 servings):
- 2 Egg Yolks
- 4 Egg Whites
- 120 gr Sugar ( 1/2 cup + 2 tbsp)
- 110 gr Milk (7 tbsp)
- 45 gr Butter (3 tbsp)
- 120 gr All Purpose Flour ( 3/4 cup + 1 tbsp)
- 1 tsp Baking Powder
- 1 tsp good Quality Vanilla
- 1 tsp Lemon Zest ( optional )
- Pinch of Salt
- Strawberries for the filling
I used 7 inch pans. Keep in mind the layers are meant to be thin, just like the ones you see in the video.
Whipped Cream:
- 600 gr COLD Heavy Cream ( 22 ounces)
- 1 1/2 tsp Vanilla
- 3 tbsp Sugar ( BUT You can add more sugar based on your personal preference)
- Pinch of Salt
Whip to medium peaks.
For a sturdier whipped cream you can add 200 gr Mascarpone.

FOR THE CAKE
- 2/3 cup sugar
- 2 cups flour
- 3 teaspoons baking powder
- 1/3 cup (5 1/3 tablespoons) butter, room temperature
- 1 egg
- 1 cup milk
- 1 teaspoon vanilla
FOR THE WHIPPED CREAM
- 1 1/2 cups whipping cream
- 4 ounces cream cheese, room temperature
- 3 tablespoons sugar
- 1 teaspoon vanilla
- 2 tablespoons orange zest
- 2 cups strawberries, cleaned and hulled
FOR THE SHORTCAKE
Preheat oven to 350 degrees.
In the bowl of an electric mixer, combine sugar, flour, and baking powder.
With the mixer running on medium-low, add butter one tablespoon at a time. Mix until the ingredients are a sandy texture.
In a measuring cup or bowl, mix the egg, milk, and vanilla.
With the mixer running, add milk mixture to the dry ingredients and mix until no dry streaks remain.
Grease two 8-inch round cake pans and evenly distribute the batter between pans. Bake in preheated oven for 20-30 minutes until just slightly golden and a wooden skewer inserted comes out clean.
Remove from oven and cool in pans for 10 minutes. Then invert onto a cooling rack and cool until completely cooled.
While cooling, prepare the whipped cream.
FOR THE WHIPPED CREAM
Whip cream cheese until light and fluffy.
Add whipping cream, sugar, vanilla, and zest.
Whip until the cream reaches stiff peaks.
TO ASSEMBLE THE CAKE
Place one cooled cake on the plate. Top with approximately one cup of whipped cream mixture.
Spread evenly and top with one layer of sliced strawberries.
Top with second cake round, pressing slightly to adhere. Then add another cup of cream mixture.
Finish with more berries. On this final layer, take more time to assemble as this is the final presentation.

BETH’S NO-FUSS STRAWBERRY SHORTCAKES
Serves 6
FOR SHORTCAKES:
1 1/4 cups (150 g) flour
2 tablespoon (25 g) white sugar
½ teaspoon (2.5 ml) salt
1 tbsp (15 ml) baking powder
8 tablespoons (120 g) cold butter, diced into cubes
2/3 cup (160 ml) heavy cream
1 egg
Raw, turbinado sugar for tops
FOR STRAWBERRIES:
2 ½ cups (375g) fresh strawberries, quartered
2 tsp sugar
WHIPPED CREAM:
2 cups heavy cream
2 tbsp (13 g) powdered sugar
1 tsp (5 ml) vanilla
METHOD:
Preheat oven to 400F/200C.
In a large bowl add flour, sugar, salt, baking powder, and whisk until combined. Then add butter working it into the flour with your hands, creating a coarse meal.
In a smaller bowl whisk together the egg and the cream until combined.
Make a small well in the center of the flour mixture. Pour cream mixture into the well and work dough together with a fork until combined. Do not over mix. Allow dough to rest 5 mins to activate baking powder.
Scoop out dough with an ice cream scooper placing 6 mounds on a parchment lined cookie sheet. Top each mound with a sprinkle of Turbinado sugar (or plain white sugar)
Bake for 12-13 mins until golden brown and set.
Meanwhile toss the strawberries together with the sugar. Keep refrigerated until ready to use.
To make cream place all ingredients in a bowl fitted with an electric mixer whip until soft peaks form.
To assemble. Slice the top 1/3 of shortcake off, set aside. Lay a layer of whipped cream on the base of the short cake, top with a scoop of strawberries, then place top of shortcake on top, Garnish with another small dollop of cream, and a sprig of mint of another whole strawberry.

An Easy Classic Strawberry Shortcake Recipe
In this video, we’ll show you how to make an American Classic dessert, easy, Old-fashioned Strawberry Shortcake! Fresh strawberries, sliced and macerated in sugar, spooned over freshly baked Shortcake Cupcakes, topped with whipped cream (your favorite brand straight from your grocery store.) It’s all about convenience and no Strawberry Shortcake is complete without a dollop of whipped cream.
The Shortcake Cupcakes batter is made with flour, sugar, baking powder salt, canola oil, evaporated milk and eggs. So for this recipe we are making a batch of 12 cupcake size Shortcakes.
Shortcake is an American classic dessert made with a sweet cake or biscuit (your choice). In American June 14th is National Strawberry Shortcake Day. Let's Celebrate!

촉촉한 제누와즈에 동물성 생크림과 마스카포네, 생딸기를 이용해 샌드를 하고, 크림치즈 프로스팅으로 마무리 해 주었어요 !
크림치즈 프로스팅이 딸기 생크림 케이크랑도 조화롭게 어울리는 맛이에요 :D
크림만드는법, 조색, 아이싱과 다양한 모양의 깍지로 데코레이션 하는법, 레터링하는 방법 위주로 영상을 만들었기 때문에

전란 140g 바닐라 익스트렉 2g 설탕 80g 꿀 15g 박력분 75g 우유 25g 버터 20g
(시럽)
물 30g 설탕 15g 쿠앵트로 10g
(샌드크림)
생크림 180g 마스카포네 20g 설탕 15g
(크림치즈 프로스팅)
크림치즈 150g 슈가파우더 75g 바닐라 익스트렉 2g 생크림 150g
* 샌드용 딸기 10개, 스프링클
* 윌튼 로얄블루, 핑크, 브라운 컬러 식용색소
* 모양깍지 822번, 5번, 3번, 18번, 103번
▶레시피
* 무화과 생크림케이크 영상에 나온 지름 15cm 제누와즈를 준비해줍니다
(
* 크림치즈는 실온에, 생크림과 휘핑크림은 차게 준비해줍니다
(시럽)
1. 물과 설탕을 한번에 계량해주세요.
2. 전자렌지에 30초씩 2번 돌려준뒤 설탕을 저어 완전히 녹여줍니다.
3. 쿠앵트로나 키르슈같은 좋아하는 리큐르를 넣어 섞어주세요.
(샌드하기)
1. 완전히 식은 시트를 1.5cm의 두께로 3장 잘라주세요.
2. 딸기의 꼭지를 제거해주시고, 일정한 두께로 썰어 준비합니다.
3. 크림재료를 한번에 계량해 핸드믹서 중-고속으로 90% 단단한 크림을 만들어주세요.(뿔이 뾰족하게서는 상태)
4. 돌림판 정중앙에 가장 아랫면 시트를 올려놓고, 시럽을 충분히 발라주세요.
5. 크림을 올려 평평하게 펴주세요. 딸기를 올리고, 크림을 추가로 올려 평평하게 펴바릅니다. 스패출러를 세워 옆면의 튀어나온 크림도 깔끔하게 정리해주세요.
6. 맨 윗부분의 지저분하게 잘린 시트를 중앙에 샌드해주세요. 시럽을 바르고 5의 과정을 반복합니다.
7. 맨윗면에도 시럽을 발라주고, 남은 샌드크림으로 얇게 초벌아이싱을 해줍니다. (저는 크림이 조금 남아서 해줬는데, 이 작업은 생략하셔도 상관 없어요)
8. 아이싱 크림을 준비하는 동안 냉장고에 잠시 둡니다.
(크림치즈 프로스팅)
1. 식물성 휘핑크림을 중-고속으로 아주 단단하게 휘핑해주세요. (휘퍼에 크림이 걸리고, 뿔이 뭉툭하게 만들어지는 상태까지 휘핑해주시면 좋아요)
2. 실온의 크림치즈를 덩어리 없이 부드럽게 풀어줍니다.
3. 슈가파우더를 추가해 가루가 보이지 않을 정도로 섞어주세요. (가루가 날릴 수 있으니 저속으로 섞어주세요)
4. 바닐라익스트렉을 추가해 잘 섞일정도로만 휘핑해줍니다.
5. 핸드믹서의 가장 낮은 속도로 생크림을 두번에 나눠 크림치즈 믹스에 섞어주세요.
6. 단단하고, 약간 거칠어보이는 상태로 완성이 되는데, 색소를 섞으면서 묽어지기 때문에 여기서 멈춰주세요.
(조색, 크림치즈 아이싱, 데코레이션, 레터링)
1. 깨끗한 볼에 만들어둔 크림치즈 프로스팅을 절반정도 덜어, 얇은 꼬치를 이용해 핑크색 색소와 브라운 색소를 소량 넣어줍니다. (톤다운된 핑크컬러)
2. 핑크색 크림치즈 프로스팅을 넉넉히 올려, 스패출러를 왔다갔다하며 크림을 펴발라주세요.
3. 그대로 고정시킨뒤 돌림판을 회전해 평평하게 만들어줍니다.
4. 스패출러를 세워 옆면의 흘러내린 크림을 펴발라주시고, 크림을 추가해 시트가 보이지 않게 덧발라줍니다.
5. 스패출러를 잡은 손을 고정하고, 돌림판을 천천히 돌려가며 매끈하게 만들어줍니다.
6. 스패출러를 눕혀 바닥면의 크림을 한번 정리해주세요.
7. 윗면의 올라온 크림을 안쪽으로 쓸어가며 마무리 해줍니다.
8. 케이크를 접시에 옮겨주세요.
9. 남은크림의 2/3를 덜어 꼬치를 이용해 로얄블루 색소와 브라운 색소를 소량 섞어주세요. (톤다운된 하늘색 컬러)
10. 남은 프로스팅은 색소를 섞진 않을꺼지만, 글씨를 쓸 거기 때문에 살짝 치대 부드러운 텍스쳐로 만들어주세요.
11. 5번깍지를 끼운 짤주머니에는 흰색크림을, 822번, 3번, 18번, 103번에는 하늘색컬러를 넣어 준비해주세요.
12. 케이크 윗면에 822번 깍지를 이용해 파이핑해줍니다. 손에 살짝 힘을 줘서 왼쪽으로 살짝갔다가 오른쪽으로 오면서 힘을 빼주세요. (영상참고)
13. 18번깍지로 아랫면에도 12번같은방식으로 파이핑해줍니다.
14. 케이크를 8등분해 옆면에 자국을 내고, 103번 깍지로 프릴을 짜줍니다.
15. 18번깍지로 12번같은 방식으로 아랫방향을 향해 짜서 장식을 만들어줍니다.
16. 5번깍지로 레터링 베이스를 깔아주세요.
17. 3번깍지로 레터링위에 한번 더 글씨를 써줍니다.
18. 스프링클을 뿌려 마무리 해줍니다.

How We Make Strawberry Cake, Best Old Fashioned Southern Bakers
Heads up y'all: Yes the cake didn't get quite done, I did this on purpose so I could have the oven to finish my Easter meal. I was unable to cook it the day before because my mother was sick. If you cook this cake until done it rises beautifully! This video is taken from live footage on Easter 2019. I am making our traditional Easter strawberry sheet cake. It is so moist and delicious and easy to make. This is an old recipe that everyone made in the 70's so your Mama or Grandmother probably made it! It is always popular at a gathering.

NOW FOR THIS FAMILY RECIPE:
Use 10-12 oz frozen strawberries, put them in a bowl and microwave for 3 minutes. Take them out of the microwave and mash them with a potato master or large spoon against bottom of bowl.
For Cake:
Strawberry 70’s Cake
Cake:
1 BOX OF WHITE CAKE MIX
3 OZ. STRAWBERRY GELATIN
3/4 CUP OIL
1/2 CUP WATER
4 EGGS (ROOM TEMPERATURE)
1/2 HEAPING CUP OF STRAWBERRIES *See note below
Mix all ingredients and pour into a well-greased 1/4 sheet cake pan. Bake at 350 degrees for 30-35 minutes or until a toothpick comes out clean and the cake has begun to pull away from the edges of the pan. Leave in the pan and cool on a cooling rack.
Icing:
1 STICK MARGARINE
3 1/2 CUPS POWDERED SUGAR
1/2 CUP STRAWBERRIES (STRAIN WELL)
Mix the above ingredients together well. Make sure the strawberries are not too syrupy or the icing will be runny. Ice cooled cake in the pan.
*Strawberries
Thaw 15 oz. frozen sliced strawberries in sugar OR use 1 1/2 cups fresh strawberries, slice thin and add 1/2 cup sugar. Microwave sugared berries for 2 minutes, then mash and chill.

YOU CAN MAKE THIS WITH A MIXER OR BY HAND
CAKE RECIPE
1 ⅔ cup all-purpose flour
▢ 1 cup granulated sugar
▢ 1 tsp baking powder 4g, heaping
▢ ¼ tsp baking soda 1g, heaping
▢ ¼ tsp kosher salt 1g, heaping
▢ ¾ cup butter 170g unsalted, room temperature or melted
▢ ¼ cup whole milk warm
▢ ¼ cup strawberry preserves
▢ ½ cup sour cream room temperature
▢ 1 tbsp vanilla extract
▢ 3 egg whites large
▢ 3/5 cup fresh strawberries chopped (optional)
▢ 1 tbsp lemon zest
▢ pink food coloring
FROSTING RECIPE
▢ 1 lb confectioners sugar,
▢ 1 cup or 2 sticks butter room temperature OR slightly melted
▢ 1 tbsp strawberry preserve
▢ 1/4 tsp kosher salt heaping
▢ Red food coloring
▢ Baby strawberries sliced for topping garnish
Instructions
For the Cake:
Preheat oven to 350F. Butter and flour two 9-inch cake pans.
Zest a lemon.
Sift dry ingredients (including sugar). Whisk to combine.
In another bowl, whisk together wet ingredients (including lemon zest).
Combine wet and dry mixtures. Whisk until combined. Add a few drops of pink food coloring until you reach a desired consistency. If you're adding fresh strawberries then fold into the batter now.
Evenly distribute the batter into the prepared cake pans.
Bake for about 30 - 38 minutes or until the centers are set and springy to the touch or a toothpick comes out clean.
Leave the layers to cool in the pans for about 4 minutes, then dump out onto cooling racks.
For Buttercream:
In a stand mixer, cream the butter until fluffy.
Sift in half of the confectioners sugar. Mix, then add the rest. Add salt.
Add in 1 tbsp of strawberry preserves to the batch. Mix until combined.
Add a drop of base red food coloring.
Add lemon juice to frosting until combined
spread frosting in between each layer. Fill in gaps on the outside of cake. Smooth out with a bench scraper or offset spatula
top with sliced strawberries
Chill in the fridge.

In this video, I made strawberry shortcake.
You think 'oh you're not BEGINNER', but no, I don't know how to icing like some kind of bakery.
So in this video, I'll show you how I icing the cake, for not good at icing like me
Scraper literally changes my life. It makes I'm really good at icing the cake!
Please, follow my recipe. I highly recommend this. One of my favorite recipes in the past 5 years!
= INGREDIENTS =
• Genoise (high 15cm/6inch round pan)
3 eggs
120g(1/2cup plus 4tsp) sugar
120g(3/4cup plus 2Tbsp) pastry flour
Pinch of salt
5g(1tsp) vanilla extract
50g(3 1/2Tbsp) melted unsalted butter
• Simple Syrup
30g(2Tbsp) sugar
30g(2Tbsp) water
• Whipped Cream
600ml(2 1/2cups) heavy cream
60g(4Tbsp) sugar
Strawberries
-Genoise
Check out this video:
1. In a bowl, put eggs and sugar. Using a double boiler, whip about 8~10min until fluffy. When water is boiling, turn off the heat and whip.
2. Add the sieved pastry flour, salt, and vanilla extract and mix until well combined.
3. In melted unsalted butter, put a dollop of the batter, and mix. Put it back to the batter and mix again.
4. Transfer the batter into the round pan. Tap it to get out air pockets, and bake 170C / 340F for 30~40min.
5. After fully chilled, slice the cake into 3 layers.
-Simple syrup
1. In a microwavable bowl, put sugar and water. Microwave and mix until all sugar are melted. Chill it in a room temp until use, or refrigerate up to 7~10 days.
-Assembly
1. Place one layer on a cake stand. Put the simple syrup with a brush or spoon, etc. Spread the thin layer of whipped cream evenly. Place halved strawberries on top. Spread whipped cream evenly, and place another layer of cake. Repeat with remaining layers.
2. Put the whipped cream in a piping bag, about 1/3~1/2cup.
3. Spread remaining frosting all over the top and side with spatula or scraper.
4. Pipe the whipped cream for decoration, and put some strawberries on top.
5. Refrigerate at least 30 min before slicing the cake.

Old Fashioned Strawberry Shortcakes Recipe | Summer Baking
Today we are going to make a classic recipe. Strawberry Shortcakes. This recipe was found in a Old Fashioned recipe book!
It's quick and simple and very tasty!
Here's the recipe:
2 cups flour, sifted
1/3 cup sugar
1 TBS baking powder
1/2 tsp. salt
1/2 cup cold butter or margarine
3/4 cup milk
2 eggs, beaten
Combine dry ingredients in medium mixing bowl. Cut inn butter with pastry blender. Beat eggs and milk in a separate bowl and pour over dry ingredients all at once. Mix ingredients with a fork just enough to moisten. Place dough in ungreased muffin cups 2/3 full. (I greased my pan. Didn't make a difference lol) Bake 400 degrees for 15-20 minutes. Turn out and serve immediately with strawberries etc.
that's it! Pretty simple!
