tomatoes. (4-5)
okra. (1/2 cup to 1 cup)
1/2 yellow onion
1 jalapeño pepper (take out the seeds)
bell pepper
celery
garlic
How to make Okra and Stewed Tomatoes
2handfuls Okra sliced
1-28 oz can stewed tomatoes
1-14.5 oz can stewed tomatoes
Rice
1small onion chopped
5 to six pieces of bacon chopped

NOW FOR THIS FAMILY RECIPE:
FRIED OKRA DELUXE
1 LB FRESH OKRA
1 SMALL VIDALIA ONION ( SLICED)
1 LARGE GREEN TOMATO (CHOPPED)
1 SIDE OF BELL PEPPER (SLICED)
1/8 CUP WHOLE BUTTERMILK
1.5 CUPS SELF-RISING FLOUR
SALT & PEPPER
Wash okra and snip off base and tip (if desired) with a knife. Cut okra in 1/4-inch-thick pieces. Place in a medium bowl with other vegetables. Pour buttermilk on it and mix it well with your hands.
Put ½ cup self-rising flour in bottom of a pie plate. Add half of okra. Salt and pepper generously. Using a sifter to coat the okra well with self-rising flour. Pour in remaining okra and repeat by adding salt, pepper, and flour.
IRON SKILLET, WOK, OR LARGE SKILLET
SHORTENING
Put enough shortening in skillet to be about 1” deep after melting. Oil must be HOT. Put a breaded piece of okra in oil and once it floats and sizzles WELL, your grease is hot and ready! It takes a good 20-30 minutes to fry up okra. DO NOT RUSH. Flip a maximum of three times. Let okra sit in hot grease until it is golden brown before turning it over. Add more shortening after turning once. You may have to rotate okra from edges to middle, so all will brown. Fry until it is golden brown. Take out with large slotted spoon and place on a paper towel-covered platter/plate.
NOTE: Fry frozen okra the same way. Let it sit out at room temperature for 4 hours before adding buttermilk. Cut in smaller pieces while partially frozen if desired.

Bhindi pyaaz (okra recipe)
ingredients
500 grams okra (bhindi or lady fingers)
2 medium to big onions sliced (pyaaz)
1 big tomato sliced(tamater)
1/4 tsp mustard seeds(rai)
1/2 tsp cumin seeds(jeera)
5 to 6 whole green chillies as per taste (haru mirch)
1/4 tsp asafoetida(hing)
1/2 tsp turmeric (haldi)
salt to taste (namak)
Method
Wash bhindi wipe with clean cloth and dry them
Then cut into 3 to 4 pieces each depending on the lenght of okras
Heat oil in a kadhai add mustrd seeds then add cumin seeds
Once they splutter well add whole green chillies slit and add ( u can even chop them )
Then add asafoetida add sliced onions sautey till onions are pink and translucent
Then add bhindi mix well cover and cook on low to medium for 5 minutes
After 5 minutes open and mix once
then cover again till onions are golden and bhindi shrink a little keeo the flame to lowest seeting now
After 5 minutes open mix once add tomatoes salt and turmeric mix well
Simmer another 5 minutes till tomatoes are soft
Garnish with coriander leaves serve with phulka roti dal rice

Oyster sauce--3 Tbsp
Salt------1/2 tsp
Ground black pepper-1/2 tsp
Msg-----1/2 tsp
Water---250 ml
Oil-------20 ml
Add the garlic ginger onion and tomato saute for 5 minutes then add the ladyfinger (Okra) fresh chili oyster sauce and water cook it again for another 5 minutes. add the msg which is optional only ground black pepper and salt..cook it for another 3 minutes and it is ready to serve.

Greetings! Tonight I was throwing together a quick weeknight meal of Molly's magnificent macaroni and cheese along with some pan fried polish sausage and decided to make this veggie side to go along with it. I wanted to share this easy and quick vegetable side dish to show you that you don't always have to have the same old thing. Sometimes it is nice to mix things up. Literally! Get yourself a bag of frozen okra and add some tomatoes, onions and garlic and you will have a delicious and different side dish that is very common here in the south. In fact, I had never had this dish before I moved to North Carolina.

How to Make Southern Okra and Tomatoes (RECIPE)
Easy Okra and Tomatoes (Fresh or Frozen) is the best Southern recipe for stewed vegetables with bacon seasoned with Creole Seasoning. This dish is quick to make using canned tomatoes.
Get recipe tips here:
Ingredients
3 slices bacon, chopped into pieces
1/2 cup chopped onions
3 cups frozen or fresh chopped okra
14.5 oz canned diced tomatoes
1/2 teaspoon Creole Seasoning
salt and pepper to taste
Instructions
Cook the bacon in a skillet on medium-high heat. Cook the bacon until crisp and remove the bacon and set aside.
You can drain the fat from the bacon if you wish or leave it. I reserve at least a teaspoon of fat. Add the onions to the pan and saute for 3-4 minutes until fragrant.
Add in the okra, diced tomatoes, and all of the seasonings. Stir.
Reduce the heat to medium-low and cover the pot. Simmer for 15-20 minutes until the okra is soft.
Open the pot and add the cooked bacon. Stir.

Curried Tomato & Okra Stew
Southern Farmers Market Cookbook
Ingredients:
3 tablespoons olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
2 tablespoons curry powder (or to taste)
Salt and freshly ground pepper
3 cups sliced fresh okra
3 tomatoes, peeled and coarsely chopped
3/4 cup water or chicken stock
pinch of sugar, if desired (this depends on the sweetness of the tomatoes, and your tastebuds)
1/4 cup chopped fresh parsley, optional
*tomatoes must be peeled to ensure a silky texture. To do so, cut the stem at the top of the tomato and carve out a small 'x' across the bottom with your knife tip. Prepare a pot of boiling water and submerge the tomatoes for about 30 seconds. Chill under cold running water and the skin will peel right off.
Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, and seasonings; stir. Reduce heat to medium and cook until soft, about 5 minutes. Add the okra and saute 5 minutes. Add the tomatoes, stock, and sugar. Cook until tender, about 30 minutes. Serve warm over rice or grits or as is with a fat wedge of cornbread.
