• 1/4 cup – apple cider vinegar
• 1/4 cup – sour cream
• 5 Tbs – Dijon mustard
• 1/2 tsp – Worcestershire sauce
• 2 tsp – lemon juice
• 1/2 cup – oil
• liquid substitute = 2 tsp reg. sugar
• 1/2 tsp – garlic powder
• 1/8 tsp – salt
• 1/2 tsp – ground black pepper
• 1/8 tsp – cayenne pepper

Honey Lemon Dijon
¼ cup lemon juice
2 tbsp dijon mustard
1-2 tsp honey, to taste
¼ cup olive oil
Salt and pepper to taste
Add all ingredients into a mason jar and shake.
Enjoy!
Raspberry Balsamic
¼ cup balsamic vinegar
2 tbsp raspberry jam
¼ cup olive oil
Salt and pepper to taste
Add all ingredients into a mason jar and shake.
Enjoy!
Peanut Lime
½ cup natural peanut butter
3 limes, juiced
2 tsp honey
2 tbsp soy sauce
1 tbsp ginger, freshly grated
1 tbsp Sriracha
¼-½ cup warm water to thin
Add all ingredients into a large bowl and whisk together. Gradually add warm water to thin until you reach your desired consistency.
Enjoy!
Herb Vinaigrette
1 tbsp dill, chopped
1 tbsp basil, chopped
1 tbsp chives, chopped
¼ cup white wine vinegar
¼ cup olive oil
Roasted Red Pepper & Feta
1 cup plain yogurt
½ cup roasted red peppers
½ cup feta, crumbled
1 garlic clove, peeled
3 tbsp red wine vinegar
¼ cup dill
Salt and pepper to taste
Add all ingredients into a blender or food processor and blend until smooth. Season with salt and pepper to taste and enjoy!

I won't lie to you, sometimes I just don't feel like cooking. There - I said it! Gasp!
But just because I don't feel like cooking doesn't mean my diet has to suffer! On these nights, I turn to a big hearty salad:
Mesclun mix. Dried cranberries. Walnuts. Chickpeas. Quinoa. Cherry tomatoes. Avocado.
Toss it all together with this honey dijon vinaigrette that takes 60 seconds to make, and you've got the makings of something wonderful.
Here is what you will need:
1 tablespoon dijon mustard
1 tablespoon honey
3 tablespoons balsamic (can substitute red wine vinegar if you want to change it up)
6 tablespoons olive oil (you can add up to 8 tablespoons if you want to)
lots of pepper (about 1/2 teaspoon)
a pinch of sea salt (about 1/8 teaspoon)
1. Put all the ingredients in a jar with a lid and shake it up, making sure everything is incorporated. Be careful: the honey likes to stick to the bottom of the jar.
2. Pour over any salad of your choice, toss, and enjoy!

This dressing is very easy to make and will go well with any salad of your choice. It will keep in the fridge for up to 2 weeks, in a closed container. Enjoy!
Makes about 1 ½ cups dressing
1 TBS Dijon mustard
1 TBS honey
¼ cup balsamic vinegar
Salt and Pepper
½ cup extra virgin olive oil
In a bowl, whisk together the mustard, honey, balsamic vinegar, salt and pepper. Slowly add the olive oil while constantly whisking. The slower you go the better -- you will ensure an emulsified dressing that will not separate.
Keep the dressing in a closed container, in the fridge, for up to two weeks. Enjoy with your salad of choice.

Here is what you'll need!
Honey Mustard Chicken Salad
Servings: 4-6
INGREDIENTS
⅓ cup honey
¼ cup Dijon mustard
2 tablespoons olive oil
2 cloves garlic, minced
2 teaspoons salt
1 teaspoon pepper
4 boneless, skinless chicken thighs
¼ cup bacon, chopped
4 cups romaine lettuce, chopped
1 cup cherry tomatoes, halved
¼ red onion, sliced
1 avocado, pitted and sliced
PREPARATION
1. In a small bowl or liquid measuring cup, mix the honey, mustard, oil, garlic, salt and pepper.
2. Place the chicken thighs in a dish and pour the marinade over the chicken, reserving half for later.
3. Flip the chicken thighs over, fully covering them in the marinade.
4. Cover the dish with plastic wrap and refrigerate for 30 minutes to an hour.
5. Heat a large skillet over medium heat and place the chicken thighs in the pan.
6. Cook for five minutes on each side, or until the chicken is cooked through.
7. Remove the chicken and set aside.
8. Wipe the pan clean and place back on the heat.
9. Add the chopped bacon to the pan and cook until crispy, about ten minutes.
10. Transfer the bacon to a paper towel-lined plate to drain.
11. Add three tablespoons of water to the reserved marinade and stir to combine.
12. Slice the chicken into strips.
13. Add the romaine, cherry tomatoes, red onion, avocado, cooked bacon, and chicken to a bowl and drizzle with the remaining honey mustard dressing.
14. Enjoy!
