This week, we are going to make another one of my grandmother's comfort food recipes! Moroccan rice pudding flavored with Orange Blossom Water. YUMMY!
1 cup rice (any size of cup)
2 cups of water (same cup used for rice)
2 cups of milk (may need 1 extra cup)
1 small piece of lemon peel
1 cinnamon stick
1/3 cup of sugar (or to taste) - same cup used for the rice
1 teaspoon of orange blossom water (or to taste)
1 tablespoon of butter

Basic Rice Pudding
Serves 6 to 8
1 cup medium grain white rice
4½ cups whole milk
1 tablespoon butter
½ cup sugar
1 cinnamon stick
1 teaspoon pure vanilla extract
½ cup heavy cream
ground cinnamon (for garnish)
1. Place the rice, milk, butter, sugar and cinnamon stick into a non-stick saucepan. Bring the mixture to a simmer, reduce the heat and simmer gently, covered but stirring occasionally for 35 minutes, or until the rice has absorbed the liquid. Stir in the vanilla extract, the heavy cream and any other flavoring ingredients you choose. Loosen to the desired consistency.
2. Remove the cinnamon stick and decide if you are serving this warm or cold. If you are serving this warm, spoon the pudding into bowls, topping with a sprinkling of ground cinnamon or a little heavy cream, some nuts, raisins, chocolate, or whatever you like. If you are serving this cold later, transfer the pudding to a baking dish and cover with plastic wrap (pressing the wrap right down onto the surface of the pudding). You may need to loosen the pudding again once it is cool.

Rice Pudding with 20 Minutes Prep
Watch as Better Homes and Gardens shows you how to make rice pudding in a snap! Looking for a timeless dessert in a pinch? This creamy rice pudding recipe only has a 20 minute prep time, allowing you to create a crowd-pleasing dessert in a limited amount of time. Start out by cooking the rice yourself for truly homemade rice pudding. Pour 1 cup of water into a medium saucepan over medium heat and add 3/4 cup of milk and 1/4 teaspoon of salt. Once the liquid is almost boiling, add 1/2 cup of Arborio or long-grain rice and 1 teaspoon of butter. For a creamier baked rice pudding, go for Arborio rice, which has a higher starch content. Stir the mixture and bring to a boil, then reduce the heat to very low and cover the pan. Simmer the easy rice pudding until it's thick and the liquid has almost evaporated, which should take between 25 to 30 minutes. Keep an eye on the rice toward the end of the cooking time so it doesn't burn, stirring it every five minutes. While the rice is finishing up, pour 1 cup of half and half into a small saucepan over medium heat. The vanilla flavoring is what's really going to give this rice pudding recipe a rich taste! Take half of a vanilla bean and slice it lengthwise, using a paring knife to scrape out the seeds. Add the seeds to the cream and heat it until it's just boiling. You can use vanilla extract, but this gets added later. Whisk together two egg yolks and 1/3 cup of sugar in a bowl, then gradually whisk in the heated half and half. Return this mixture back to the saucepan and stir constantly until it thickens. Pour this sauce over the cooked rice and stir together. This is where you would add 1 teaspoon of vanilla extract if you so choose. What's great about this rice pudding with cooked rice is you have the option to serve it warm or chill it for several hours and serve cold. Serve up the rice pudding in individual dishes and allow everyone to dress it up however they choose, whether that be by sprinkling it with cinnamon or topping it with fresh fruit!

Let's make one of the best Moroccan dessert the crunchy and sweet Milk Bastilla!
MILK CREAM INGREDIENTS:
2 cups (1⁄2 liter) whole milk
3/4 cup (150 grams) granulated white sugar
2 tablespoons cornstarch
1 cinnmon stick + 4 whole cloves
1 tablespoon orange blossom water
Warka sheets (or substitute with phyllo dough)
Vegetable oil for frying
Roasted almonds (chopped)
Powdered sugar and ground cinnamon for decoration

8cups of milk
1 cinnamon stick
2 1/2 cups Egyptian (soaked for at least 30 mins)
1 teaspoon ground cardamom
1 cup sugar
1 tablespoon orange blossom water
1 tablespoon cornstarch
Crushed Pistachio for garnish
-place a pot on medium/high heat and pour in milk. Place cinnamon in milk. Make sure to constantly stir the milk to prevent it from burning.
-the rice for this recipe MUST be washed and soaked before cooking. Soaking the rice insures that it will be tender when cooked. Drain the rice and add to the milk. Continue to stir
-add in the ground cardamom, orange blossom water, and sugar. Once the milk begins to boil, allow the rice to cook for 20 minutes, stir every few minutes.
-once the rice is completely cooked, add the cornstarch. You can premix the cornstarch in a separate bowl with 4 tbsps cold milk to prevent the cornstarch from clumping. Stir the pots once more and turn off the heat.
-you can eat this rice pudding hot, or cool in the fridge and eat it cold. Add whatever garnish you’d like, crushed pistachio works perfectly. Enjoy!
Moroccan almond stuffed Msemen (fried cake) recipe
Msemen or R'ghayf is a fried almond cake, a specialty of Eid al-Fitr in Morocco. A crispy cake stuffed with almonds and covered in honey just like my grandmother taught me.
2 pound flour (1kg)
4 tablespoon finely crushed sesame
1 tablespoon of finely crushed fennel
1 tablespoons of orange blossom water
3 tablespoons white vinegar
2 egg yolks
1/2 cup of melted butter
Some salt and sugar
7g of baking powder
Warm water according to the dough
1 pound sweet almonds (500 g)
1/2 pound caster sugar (250 g)
1/4 teespoon frankincense powder

Rice Pudding Recipe | How to Make Rice Pudding
This rice pudding recipe is so creamy, rich and super easy to make. Rice pudding is a perfect dessert/breakfast for weekends. There are different ways to make rice pudding, this time I chose to make a very simple, egg-free, no-bake version with raisins and cinnamon.

Makes 3-4 servings
1/2 cup (92g) Rice
3 cups (720ml) Milk
1/4 teaspoon Salt
1/4 cup (50g) Sugar
1/4 teaspoon Cinnamon
1 teaspoon Vanilla extract
1 tablespoon (15g) Butter *optional
1/4 cup (30g) Raisins
1. In a medium-sized, heavy-bottomed saucepan combine the milk, rice and salt. bring to a boil over high heat. Reduce heat to low and simmer until the rice is tender, about 20-25 minutes. Stir frequently to prevent the rice from sticking to the bottom of the pan.
2. Add sugar, ground cinnamon, stir and simmer for 5-10 minute more, until reaches to desired thickness.
3. Remove from heat, add vanilla extract, raisins, butter and stir well.
4. Spoon the pudding into your serving dishes and serve or let cool slightly, then cover with plastic wrap and refrigerate until ready to serve.
• Can be served warm or cold.

Louise Leonard of gives us a delicious twist on classic rice pudding by adding cardamom, raisins and mango. This creamy dessert has plenty of sweet and a hint of spice...it's sure to please!
Cardamom Rice Pudding with Golden Raisins and Mango
1 cup cooked rice
½ cup whole milk
½ cup heavy cream
1 can coconut milk
1 tbsp rosewater
¼ cup sugar
½ tsp cardamom, ground
¼ tsp cinnamon, ground
½ cup golden raisins
½ cup mango, diced
In a medium pan, add the rice and milk and bring to a boil. Turn the heat down and add the cream, coconut milk, rosewater, sugar, cardamom and cinnamon. Simmer, stirring frequently for 10-15 minutes or until the rice has thickened. Remove from the heat and stir in the raisins. Transfer the pudding to individual serving bowls. Garnish with the mango.
*Note: This pudding can be served at room temperature or cold. If you are planning on chilling the pudding, make sure that you put a layer of plastic wrap on the surface of each pudding to prevent a film from forming.

Very easy, very creamy and delicious comfort food. After making this rice pudding recipe you will never try another one.
To make it you need:
8 cups milk ( i used the full fat one)
3/4 cup long grain rice ( you can also use the short grain one also)
3/4 cup sugar
2 tsp vanilla sugar
1/2 tsp orange blossom water ( i strongly suggest to use it, it will give a very nice flavor).
- First add the rice to the milk and cook on low heat for about 45-55 minutes until the rice is fully cooked.
- Then add the sugar and stir until dissolved.
- Last, add the vanilla sugar and orange blossom water and take of the heat.
NOTE: If you prefer your rice pudding more runny, then consider using a little bit less rice. Also the key to this recipe is cooking the rice low and slow so it releases all the starch that helps to bind the pudding.
- Serve at room temperature or chilled with a sprinkle of cinnamon on top.

1 cup coconut milk
2 cups of milk
2 cans of evaporated milk
2 cans condensed milk
1/8 tsp of salt
1 tsp lemon zest
1 1/2 tablespoon of vanilla
Soak Rice for several hours in water (optional)
Start with rice and water cook as you stir do not let rice stick to the bottom of your pan could take about 5 minutes before all the water absorbs , add coconut milk, later add cinnamon sticks, salt and lemon zest.
Always stirring reduce heat to medium to cook for 5 minutes then add evaporated milk and reduce heat to low and cover so it can boil check and stir every 5 min for a total of 15-20 min at this time it should be creamy the more moist the better remove from hot grill immediately move it to cold grill until it cools off I like to add some cold milk to the rice pudding after is remove from the heat this way i control the consistency the runny the better because it usually drys as it cools off, with the left overs in the fridge i do the same right before I serve it I soften it by adding a bit of cold milk
You can serve it with fresh fruits and cinnamon ground.

The best rice dish ever has got to be Yotam Ottolenghi's mejadra, or as some know it mujaddera, or simply as lentils and rice. It's an easy plant based recipe where lentils and rice are cooked with spices and served under a mountain of fried onions. What's not to love? In this video I show you how to make mejadra using a recipe from Otolenghi's book, Jerusalem. His signature style is to take a classic recipe and breath new life into it, here he does that by adding coriander seed, cumin seed, allspice, turmeric and cinnamon. What I love most about this dish is that it is so economical, using pantry staples while being exotic at the same time. In this video I show you how to fry perfect onions every time and which rice is best for making mejadra. I serve mejadra with a simple dollop of yogurt or a simple cucumber salad made of cucumbers, garlic, red onion, cilantro and a little lemon juice. The fresh sour salad pairs beautifully with the earthy warm lentils and chewy sweet fried onions. Syrian Rice is a traditional holiday food in my family. It’s butter, rice, pine nuts and cinnamon but it’s not a sweet dish and it’ll be a favorite Thanksgiving recipe in your family from the first bite!

Cinnamon Rice Pudding

2 cups (450 grams) rice
2 cups (500 ml) milk
2 cinnamon sticks
1 ounce (30 grams) butter
1/2 cup (100 grams) sugar
1 teaspoon vanilla extract
Cinnamon (for topping)
Heat a saucepan over medium heat, add water in it and bring it to a boil.
Add the rice, cover the pan with a lid, and cook it according to the instructions on the package.
When the rice is ready, pass the rice through a strainer and drain it of the excess water.
Pour the milk in a separate saucepan, and heat it over medium heat. Shred lemon and lime zest in the pan.
Add the cinnamon sticks, butter, and cook until the butter melts. Add the cooked rice, sugar, and vanilla extract.
Bring it to a boil and cover it with a lid. Simmer everything for 10 minutes.

Creme caramel/flan is one of the easiest desserts that we can make at home.
Here is how we can make this easy creme caramel in three simple steps.

Prepare the caramel
Pour in sugar and enough water to dissolve the sugar.Here i have used 1/3 cup of water for 6 tbsp of sugar.
Stir until the sugar dissolves.
Heat the sugar syrup for caramelizing in a sauce pan over a medium low heat. Once it starts caramelizing, do not stir. Just swirl the pan. Do not make it too dark as it will taste bitter. When it reaches a nice golden color, remove from flame.
Pour the prepared caramel into ramekins or into moulds of your preference. Swirl the pan well to coat the base of the moulds evenly.
Let it set aside and while you make the custard.
Prepare the custard
For the custard - Add eggs, sugar,Vanilla extract and a pinch of salt in a blender. Blend for a few seconds.
Then add milk to it and again blend well. We don't want to get too much froth into the mixture as it may cause a foamy layer on top when baked.
Strain it into a bowl (for the perfect smooth texture).
Pour this mixture into the prepared ramekins.
Fill a baking dish with hot water up to a quarter portion of the tray. Place the prepared ramekins in it ).
Bake it in a 320 F preheated oven for 45 to 55 minutes.
Once done, let it cool and then refrigerate it for 4 hours or preferably overnight.
Take it out from the refrigerator, carefully run a knife along the sides of the pan.
Place a plate over the pan, then slowly turn it upside down. Serve chilled.
You can also prepare this in a steamer or pressure cooker. If so, you have to cover the moulds with an aluminum foil. Lower the heat once the steam comes out. Never use the weight or whistle.

SAUDI FOOD WITH EMAN
800 GRAMS MEAT
3 CUPS BASMATI RICE
3 SLICED BIG ONIONS
2 TBSP. MEGAZLIA SPICE MIX
1 TSP. GRIND CARADAMON
2 GRINDED BIG TOMATOES
2 TBSP. YOGURT
1 TSP. TURMERIC POWDER
2 TBSP. GHEE OIL
2 TBSP. Salt
1) Cook meat in pressure cooker for 20 to 30 minutes.
2) Golden brown onions in a pan with oil.
3) After meat is cooked, add meat on golden brown onions and cook 5 min.
4) Remove from heat; add 1Tbsp. Megazlia Mix, Yogurt, Cardamon, 1 Tbsp. Salt, Turmeric Powder, and grinded Tomatoes.
5) Add ¾ rice in pot, add the meat mix, and then add the remaining rice.
6) On top of rice add 1 Tbsp. Salt, 1Tbsp. Megazlia Mix, Meat Stock, Water.
7) Pour hot Ghee Oil over rice.
8) Cover and let cook for 30 minutes on low heat.

The Ingrediends for 3-4 people are:
✿ 500ml or 2 1/2cups fresh milk
✿ 2 1/2 tbsp Sweet Rice ( the kind used for soups)
