Chicken breast - 8 halves, cut into strips
Salt - 1 tsp
Black pepper - ½ tsp
Canola oil - 1 tbsp
Yellow onion - 1, chopped
Papaya - 1, peeled, seeded and sliced
Coconut milk - 1 cup
Sweet potatoes - 2
Banana or plantain - 1
PERSONAL NOTE ✒️
Papaya chicken in coconut milk is a simple and delicious dish - perfect for the spring weather. I am not used to having Papaya in my cooking, but the sweetness of the fruit made the sauce really tasty. My family loved it. I wish I could be somewhere on the beach, in the Solomon Islands, eating some papaya chicken right now....oh well, maybe after the lockdown. Anyway, a delicious dish ???? Highly recommend!

In this short movie we show you how to roast whole chicken and bake vegetables in earth oven. This is natural and traditional way of cooking. We do it without oil and foil and even without microwave.
Many Pacific islanders use earth oven for cooking This type of oven you could find in any Pacific culture. Polynesian food and primitive technology of cooking very popular in Samoa Tonga and Hawaii. Hawaiian underground oven called imu. In Tonga and Samoa Tongans and Samoans call it umu. In Melanesian and Micronesian primitive technology cooking also very popular. In Fiji indigenous people call it lovo.
Earth oven recipes are simple but it is job for all tribe or village. Earth oven construction is also very simple. With some instructions everyone able to cook in underground oven. As you know stones perfect store heat. We use them as main source of heat in the earth oven. We put in the earth hole pieces of wood and cover it with some stones. For roast vegetables need to cover hot stones by leaves and umu or love is ready for baking. While imu or earth oven is heating guys bring vegetables and peel them. It is pleasure to watch how people work and telling jokes. So this primitive technology of cooking quite funny also.

Traditional way of cooking on Fiji island very popular on Kadavu and Vanua Levu. Other Fijian island Vanua Levu and Taveuni also bake food in earth oven but little bit less. Fijians often use sigidrigi with jokes and fun when they roast anything for better taste!

“Breadfruit is one of the highest-yielding food plants, with a single tree producing up to 200 or more grapefruit-sized fruits per season. It requires very limited care. In the South Pacific, the trees yield 50 to 150 fruits per year.
“Breadfruit can be eaten once cooked, or can be further processed into a variety of other foods. A common product is a mixture of cooked or fermented breadfruit mash mixed with coconut milk and baked in banana leaves. Whole fruits can be cooked in an open fire, then cored and filled with other foods, such as coconut milk, sugar and butter, cooked meats, or other fruits. The filled fruit can be cooked further so the flavor of the filling permeates the flesh of the breadfruit.
“Because breadfruit trees usually produce large crops at certain times of the year, preservation of the harvested fruit is an issue. One traditional preservation technique is to bury peeled and washed fruits in a leaf-lined pit where they ferment over several weeks and produce a sour, sticky paste. So stored, the product may last a year or more, and some pits are reported to have produced edible contents more than 20 years later.
“British and French navigators introduced a few Polynesian seedless varieties to Caribbean islands during the late 18th century, and today it is grown in some 90 countries throughout South and Southeast Asia, the Pacific Ocean, the Caribbean, Central America and Africa. Its name is derived from the texture of the moderately ripe fruit when cooked, similar to freshly baked bread; it has a potato-like flavor.

The Mortlock Islands Flying Fox and the Pohnpei Flying Fox are both endemic to Micronesia.
Liduduhniap Falls is a double waterfall located just outside of Kolonia. It is a very easy hike with easy access from the road.

Nan Madol is a ruined city adjacent to the eastern shore of the island of Pohnpei that was the capital of the Saudeleur Dynasty until about 1628. Palikir is a town with about 4,600 people and the capital of the Federated States of Micronesia. Palikir is located in the northwestern center of Pohnpei Island.
The island of Yap is notable for its “stone money” (Rai stones), large disks usually of calcite, up to 4 metres in diameter, with a hole in the middle. The islanders, aware of the owner of a piece, do not necessarily move them when ownership changes.
