Italian marinated mushrooms: the best way to preserve them!
Here's how to make at home delicious mushrooms in olive oil!INGREDIENTS
500ml white vinegar
Whole black pepper
Cut a part of the stem of each mushroom. Wash and strain them.
Cut each mushroom in four vertically.
Pour water and vinegar into a pot. Add pepper and a bay leaf. Wait for it to boil. Add salt and then cook the mushrooms for 3 minutes.
Strain the mushrooms and dry them with kitchen paper.
Place the mushrooms in a bowl, add chili powder, finely chopped garlic, mint, parsley, salt, pepper and mix well.
Fill a glass jar with the mushrooms and fill with oil.

How To Make Marinated Mushrooms
1 pound small button or Bella mushrooms - cleaned
1 small jar rinsed pimento peppers
3/4 cup jarred drained pearl onions
2-3 tbsp. chopped fresh parsley
Dressing - OR can use favorite Italian, Greek or Vinagrette Dressing
1/4 cup extra virgin olive oil
1/4 cup apple cider vinegar / red wine vinegar
1/4 cup finely diced red onions
3-4 cloves minced or sliced garlic
1 tsp. dijon mustard
2 tsp. brown sugar
1/2 tsp. dried oregano
1 tsp. whole black pepper corns
1/4 tsp. crushed red pepper flakes - optional
1 bay leaf
salt and pepper to taste
*Mix above ingredients and whisk well to combine
Clean mushrooms and place in salted boiling water. Cook for 3-4 minutes
until tender. Drain and cool to room temp.
In bowl mix cooled mushrooms, dressing, chopped parsley, drained pimentos
and pearl onions. Gently mix.
Place in lidded container and refrigerate for 8 hours or up to 3-5 days.
Serve at room temperature.

Little mushrooms are marinated in a zesty mixture. They're great for buffet style gatherings. They keep well for a long time in the fridge, or you may can them in mason jars and store in cupboard.
Mushroom 150 g
Lime juice ¼ ts
Garlic chopped 1 ts
Crushed pepper 1 ts
Onion chopped 1 n
Basle leaf 15 g
Olive oil 1tb
Red wine vinegar ½ cup
Bell pepper (red) 1 n
Heat water in a pan add mushrooms, salt, squeeze the lime juice, once come to boil and drain it off.
Take a bowl add chopped garlic, crushed pepper, onion chopped, salt, crush it and Worcestershire sauce, Basle leaf, olive oil, bell pepper, red wine vinegar and add boiled mushrooms, mix it well and transfer to another bowl and rest for over night, at last add Parmesan cheese powder.

1/2 Bunch Fresh Cilantro
1/2 Bunch Fresh Oregano

Then this is the perfect recipe for you!INGREDIENTS
• 12oz mushrooms
• 1/4 cup olive oil
• 1/4 cup apple cider vinegar
• 2 garlic cloves, minced
• 1 tsp honey
• 1/2 tsp dried oregano
• 1/4 tsp thyme - (dried or fresh)
• 1/2 tsp salt
• 1/4 tsp red pepper
• 1 tbsp chopped fresh parsley
Wash the mushrooms and dry with a paper towel.
Fry the mushrooms in 1 tablespoon of oil and add some salt, cook for 5-7 minutes, until they release the liquid and almost half of it evaporates. Let cool for 5 minutes.
In a small bowl, mix all the ingredients for the marinade.
Place the mushrooms in a bowl and pour the marinade mixture on top. Let them sit for 5 minutes, then serve.

Being in a healthy mood i made this beautiful vegetarian appetizer. It is served a lot in Italy but so simple that even you can make this in your own kitchen. Please try this out and let me know what your thoughts are.

- Low budget tripod with flexible standard.
- Software used to edit video footage used is Lightworks.
- I will transfer at least 1 video per week from my custom build computerdesk with integrated computer to Youtube. At least I will try to.
Some people claim that it is easier to cook with electricity, like a ceramic hob, and that it is cheaper. I solely cook with gas since I have no other choice. Also most Chinese dishes are only cooked with fire instead of electricity.

1/4 cup Curd
1 tbsp Gram flour, roasted
1/2 tsp Garam Masala
1 tsp Ginger Garlic paste
1 tbsp Red Chilli powder
1/2 tsp Turmeric powder
1/2 tsp Chaat Masala
1 tsp Lemon juice
2 tsp Oil
2 cups Button Mushrooms
1 tbsp Oil
1 tbsp Butter
1 tbsp Butter
1/2 tsp Cumin seeds
1 Bay Leaf
1 cup Onions, sliced
1 tsp Ginger Garlic paste
2-3 Green Chillies
1 tsp Red Chilli powder
1/2 tsp Garam Masala powder
1/4 tsp Turmeric powder
1/2 cup Tomatoes, chopped
1 tbsp Cashew nuts
1 tbsp Oil
Coriander leaves chopped
Method of preparation:
In a bowl, add curd, gram flour, garam masala, ginger garlic paste, red chilli powder, turmeric powder, chaat masala, lemon juice, oil, salt and give it a good mix.
Add mushrooms to the marination, mix well and keep it aside for 10 minutes.
Heat a pan, add oil, butter, mushrooms and cook it on high flame till they are 3/4 cooked.
Heat a pan, add butter, cumin seeds, bay leaf, onion, cook the onion till they are translucent.
Add salt and mix well.
Add ginger garlic paste, cook it for a minute and add green chillies, red chilli powder, garam masala powder, turmeric powder, mix well.
Add tomatoes, cashew nuts, water, salt, mix well, cover the lid and allow it to cook on high flame for 10-12 minutes.
Switch off the flame, allow it to cool down and then grind it to a soft and fine paste.
Remove the bay leaf before grinding it.
Heat oil in a pan and add the ground masala.
Add some water in the mixer jar and give it a final grind.
Add water to the masala and allow it to cook for 10-12 minutes.
Once you see oil oozing out, add the mushroom tikka and give it a nice mix.
Allow the mushroom to cook in the masala for 2-3 minutes.
Add coriander leaves and mix well.
Our Mushroom Tikka Masala is ready.

Betty's Zesty Marinated Mushrooms
Betty demonstrates how to make Zesty Marinated Mushrooms. These are fresh sliced mushrooms, covered with a flavorful oil and vinegar sauce, and chilled before serving.
Zesty Marinated Mushrooms
1 pound fresh sliced mushrooms
2/3 cup vegetable oil
1/3 cup white vinegar
1 teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon to 1 tablespoon dried parsley flakes, as desired
1 tablespoon dried dill weed
1 medium onion, thinly sliced into half-circles
1 clove of garlic, crushed or finely chopped
Wash mushroom slices and pat dry with paper towel. Place mushroom slices in a large bowl or suitable jar. Pour each of the remaining ingredients over the top of the mushrooms. Stir well. Marinate at least 8 hours, stirring occasionally. Keep in the refrigerator (covered) for about 4 days. Enjoy! --Betty :)

Greetings! Let's start making all of the components for our Christmas Eve Antipasto Platter! I always, without fail, make an antipasto platter for Christmas Eve. It is hands down, my mothers favorite meal of the year, she will always relish this offering and tuck herself comfortably in front of this large platter at the kitchen table and just munch away. She always says she doesn't need the rest of the meal, just the antipasto.
I always put a vast selection of things on my antipasto platter and marinated vegetables are always a part of that. If you go to the store, and look in the specialty foods section, which is pretty much the only place you are going to find these, you will see that you are going to pay a hefty price for a little bit of product. There is no need to break the bank, with a little planning and a trip to the canned veggie aisle, you will be on your way to a great marinated artichoke heart and/or mushroom without blowing your budget.
Simply drain some canned plain artichoke hearts and put them in a container or jar that you can seal tightly, add some chopped garlic and herbs of your choice and top off with a 3 to 1 ratio of your favorite Italian salad dressing and water. Simple! Allow these to sit in the fridge for a couple days or at least one day to allow the flavors to mingle and you will be ready to put that platter together when the time comes.
