How to Make Meatball Sub Casserole
1 (26 oz) bag of frozen meatballs (yield, approx. 52 meatballs) Amount can be doubled if desired
1 (24 oz) jar of marinara or meat sauce (I used Rao’s Tomato Basil Sauce)
1 cup shredded mozzarella cheese
1 cup shredded Italian Blend or Pizza Blend cheese
1 cup grated Parmesan cheese
1 fresh baguette, sliced
2 cloves fresh garlic, minced
½ cup extra virgin olive oil
Preheat oven to 350 degrees. In a medium to large saucepan, combine the pasta sauce and frozen meatballs. Cook over medium heat until warmed completely through, about 10-15 minutes, stirring so meatballs don’t stick to pan. While meatballs are cooking, cut baguette into approximately 12 slices (enough to go around the edge of your baking dish.) Combine garlic and olive oil and brush over slices of bread. Place meatballs in the center of a 9x12 baking dish. Sprinkle mozzarella, Italian blend cheese and Parmesan over top of meatballs Line the pan all the way around with bread slices, (standing up) pressing them slightly into the meatball mixture. If desired, sprinkle the bread lightly with any remaining cheese. Bake for about 20 minutes or until cheese is melted and bubbly and bread has toasted to a golden brown. Serve as a side or as a main dish with vegetables or a salad. Casserole can be made ahead and heated in the oven when ready to serve.

Freezer Meal #1 - Spaghetti & Meatballs
I make my meatballs first, that way I have them for several recipes. I make plenty of homemade pasta sauce as well; using this for several other recipes as well. So, the firsts recipe may take 2 hours or so to make, but the next few recipes only take as long as it takes to boil pasta! I then boil up extra pasta and use this in my 'cold pasta in a jar' recipe which takes mostly the same veggies and black olives my other 'freezer' meals take, so it's done in a jiff too! Lunch sides are always a good thing!

Sloppy Joe and Macaroni Casserole

Yield: 4 to 6 servings
3 tablespoons dark brown sugar
3 tablespoons red wine vinegar
3 tablespoons Worcestershire sauce
One 15-ounce can tomato sauce
2 tablespoons EVOO
1 1/2 pounds ground beef (80-to-85-percent lean)
Kosher salt and freshly ground pepper
3 to 4 cloves garlic, finely chopped
1 red bell pepper, seeded and finely chopped
1 onion, finely chopped
1 cup beef broth
12 ounces elbow macaroni with ridges
2 cups shredded yellow Cheddar
1/2 cup chopped crisp deli-style dill pickles
Preheat the oven to 400 degrees F.
Combine the brown sugar, vinegar, Worcestershire sauce and tomato sauce in a small bowl. Heat the EVOO in a large skillet or Dutch oven over medium-high heat. Add the beef and cook until well browned. Season with salt and lots of pepper. Add the garlic, bell peppers and onions and cook, stirring, for 5 minutes. Pour the tomato mixture over the beef, add the beef broth and stir until well combined. Simmer until thickened, 5 to 10 minutes.
Meanwhile, cook the macaroni in a large pot of salted boiling water until not quite tender, about 5 minutes. Drain and add to the sauce. Pour the mixture into a casserole dish and top with the cheese.
Bake until the casserole is bubbling and the top is browned. Top with the pickles and serve from the dish.
The unbaked casserole can be covered and refrigerated for a make-ahead meal. Bring to room temperature and bake as directed before serving.

One Pot Spaghetti and Meatballs
1 lb of short cut pasta
1 bag of meatballs
1 jar of spaghetti sauce
4 cups of beef broth
1. Add ingredients to the pan, in the order listed above.
2. Add enough water to cover pasta.
3. Bring to a boil.
4. Reduce heat to low, cover and simmer for fifteen minutes.
