Everything you love about breakfast in one easy and delicious casserole. Perfect for Thanksgiving and Christmas morning or whenever you have company over. Pop it in the oven when you get up and you are good to go.
1 lb bulk sage pork sausage
1 cup green bell pepper, chopped
1 cup red bell pepper, chopped
2 cups whole milk
¼ tsp ground black pepper
½ tsp garlic powder
½ tsp salt
3 cups frozen country style hash browns
1 cup French’s crispy fried onions
8 oz cheddar cheese
hot sauce, optional
Bake at 350 F uncovered for 40 minutes. Then cover with foil and bake 10 more minutes.
*Be sure to let the casserole sit out at least 20-30 minutes before baking because the sudden changes in temperature may cause the dish to shatter or break.

1 lb ground breakfast sausage (browned)
6 Slices of bread (cubed)
2 Cups of Milk
2 cups of shredded cheese (cheddar)
1 Brown the breakfast sausage then set aside
2 cube or break 6 slices of bread
3 In a mixing bowl, add 6 eggs, milk, breakfast sausage, and cheese - mix thoroughly
4 Add bread and let soak for 30 minutes
5 Pour in a 13 x 9 casserole dish or baking pan
6 Bake at 350 uncovered for 40-45 minutes.

16 ounces frozen hashbrowns defrosted (about 3 cups or half a 32-ounce bag)
1/2 to 1 pound breakfast sausage, browned
2 cups cheddar cheese shredded
1/2 cup milk or cream
1 teaspoon kosher salt
1/2 teaspoon black pepper
Preheat oven to 350 degrees and brown sausage.
Layer defrosted hash browns in greased 7x11 or 9x9 casserole dish.
Layer the browned sausage over the hashbrowns.
Sprinkle cheese over top the sausage and hashbrowns
Mix together the eggs with seasonings and milk and pour over the layers of hashbrowns, sausage, and cheese
Bake for 40-45 minutes or until eggs are set.

1 large red onion peeled and roughly chopped

20 mini chorizo the bitesize ones, chopped in half
3 cloves garlic peeled and minced
2 tsp paprika
1 tsp dried thyme
120 ml (1/2 cup) red wine (optional)
2 chicken stock cubes crumbled (replace with 2 tsp vegetable bouillon for gluten free)
3 x 400g (14 oz) tins chopped tomatoes
1 x 400g (14oz) tin haricot beans, drained and rinsed
1 x 400g (14oz) tin cannellini beans, drained and rinsed

I first presented this recipe a few years back during my culinary classes at Christmas in November. We received tons of positive feedback and the compliments just keep on coming. Who knew this one post for an easy ham and cheese breakfast casserole would be so popular!
With that in mind, wouldn’t it be nice if someone kind and thoughtful made this recipe? What a fabulous gesture to lighten the load for mom (or dad, your spouse, your siblings, etc.) on the big day. It’s also a great idea to share the recipe with those you love; PIN it, bookmark the page and forward the link.
Here are a few tips on making this ULTIMATE BREAKFAST CASSEROLE:
Finding the required ingredients should be pretty easy. As with everything we make, the recipe has been tested a number of times so you know it will turn out perfectly. The general rule is to make sure everything is as fresh as possible. If you can add organic ingredients into this gathering, even better. You will taste the difference.
This recipe will work using pretty much any bread, but we find challah always delivers best results. Challah is a rich yeast bread made with egg and a pinch of sugar to give it a hint of sweetness. It has a very dense crumb that helps soak up the creamy custard added to the casserole. Look for challah in the bakery section of your supermarket.
HAM AND CHEESE
I love the taste of a smoked cooked ham for this recipe. My favourite is something called prosciutto cotto or Italian Parma ham – it has a rich, smoky flavour but the meat itself is tender and ribboned with just enough fat to make it extra tasty. If you can’t find this speciality ingredient in your local deli, use your favourite, I’m sure it will still taste wonderful.
I’m hoping many of you appreciate the classic pairing of ham with cheese. In this recipe we really wanted flavours that make you stop mid-bite and go “wow”! We accomplished this by using Gruyère, that unique Swiss cheese with a buttery, almost nutty flavour. It also has a noticeable creamy stringiness about it, which is so fab when you dig in.
ARTICHOKE & SHALLOT
The chopped artichoke and shallot add a lovely vegetable compliment without taking centre stage in the flavour profile. I also find the hint of vinegar from the cured artichoke gives the dish a bit of bite.
Don’t worry about the onion flavour from the shallots; they soften and almost soak up the cream, making them perfect for this overnight breakfast casserole recipe.
We know the custard is rich, but it has to be. It’s essential to make the eggs, cream and milk puff up when soaked up in the bread before the breakfast casserole is baked. Don’t be surprised when the bread swells up in the dish too - it’s such an appetizing look.
Tossing breadcrumbs in melted butter and mixing them with grated Parmesan is always a welcome addition to recipes (think soups and salads) but for a breakfast casserole, it’s nothing short of brilliant. Sprinkling this mix on the casserole right before baking adds a bit of crispness to the finished dish. Don’t miss this day-of task.
I think my suggestion to present this with pure Canadian maple syrup allows for the ultimate taste sensation. A creamy, savoury custard casserole finished with a hint of sweetness – it’s beyond amazing!

It's easy to whip together, feeds a ton of people, and has all your major food groups represented: eggs, potatoes, sausage, veggies and bread. So, there's no need for any additional sides nor the clean up that goes with it. Enjoy!
Makes 1 9x12 (23cm x 30cm) casserole
¼ cup (60 g) unsalted butter, softened
1 cup (240 mL) cream
1 cup (60 g) sourdough baguette, cut into ½ inch (13 mm) cubes
1 cup (150 g) baby new potatoes, cooked and quartered
1 cup (230 g) breakfast sausage, cooked and crumbled
⅔ cup (60 g) mild cheddar cheese, grated
1 red bell pepper, seeded and diced
½ yellow onion, diced
3 green onions, thinly sliced
2 tsp (20 mL) salt
black pepper to taste
Preheat oven to 375°F (190°C).
Generously grease a 9x12 inch (23cm x 30cm) baking dish with the softened butter and place in the oven for 15 minutes.
In a mixing bowl, whisk together the eggs and cream until completely combined. Whisk in the remaining ingredients and season with pepper.
Remove the baking dish from the oven and carefully pour the egg mixture into the dish.
Place the baking dish back into the oven and bake for 45 to 55 minutes or until golden brown and fully set in the center.
Allow the casserole to cool for 5 minutes before serving.

Tater Tot Breakfast Casserole

Yield: 8 servings
One 16-ounce bag frozen Tater Tots
Butter, for the baking dish
1 tablespoon olive oil
1 pound spicy bulk breakfast sausage
1 medium onion, very finely diced
1 cup milk
1/2 cup half and half
1/4 teaspoon seasoned salt
1/4 teaspoon cayenne
4 large eggs
1 red bell pepper, very finely diced
1 green bell pepper, very finely diced
2 cups grated Cheddar cheese
1 cup grated pepper jack cheese
Kosher salt and freshly ground black pepper
Line up the tater tots in a buttered 9-by-13-inch baking dish.
Add the olive oil to a large skillet over medium heat. Add the sausage and onion and cook, breaking the sausage up with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Set aside to cool slightly, then sprinkle it over the tater tots.
In a large bowl, mix the milk, half-and-half, seasoned salt, cayenne, eggs, bell peppers, half of both cheeses and some salt and pepper. Pour over the tots and sausage mixture, then top with the rest of the cheese. Cover with foil and refrigerate overnight.
Preheat the oven to 350 degrees F.
Bake, covered, for about 25 minutes. Remove the foil and continue to bake until the cheese is brown and bubbly and the casserole is cooked through, another 20 to 35 minutes. Cut into squares and serve.

Betty demonstrates how to make her Stick-to-Your-Ribs Sausage Casserole. Layered with herb-flavored croutons, shredded Cheddar cheese, browned pork sausage, and a mixture of eggs, milk, cream of mushroom soup, and canned mushrooms, this is a hearty breakfast, lunch, or dinner.
Stick-to-Your-Ribs Sausage Casserole
2 ½ cups herb-seasoned croutons or stuffing mix
2 cups shredded Cheddar cheese
2 pounds pork sausage (mild or hot, or one of each)
¾ teaspoon dry mustard
2 ½ cups milk
10 ¾-oz. can condensed cream of mushroom soup
4-oz can mushroom stems and pieces, drained
cooking oil spray
Spray a 13-inch by 9-inch by 2-inch oven-proof baking dish. Place 2 ½ cups herb-seasoned croutons or stuffing mix in bottom of dish. Sprinkle 2 cups shredded Cheddar cheese evenly over croutons. Cook 2 pounds pork sausage over medium heat, stirring constantly, until brown and crumbly. Drain well, squeezing out any excess fat, and spread sausage evenly over shredded cheese. In a large mixing bowl, beat 4 eggs until well-beaten. Stir in ¾ teaspoon dry mustard, a 10 ¾-oz. can condensed cream of mushroom soup, and a 4-oz. can of drained mushroom stems and pieces. Stir until well mixed. Pour egg mixture over casserole and spread until even. Bake 1 ½ hours at 300 degrees. Serve hot! (This casserole can be stored and reheated.) Enjoy!!! --Betty

Sausage, Egg and Cheese Breakfast Casserole
Prep: 15 minutes plus overnight
Baking: 45-55 minutes
1 pound ground sausage
1 dozen eggs (NOT 12 dozen- like I said in the video--OOPS!)
1 cup milk or a non-dairy alternative
1 loaf of Italian or French bread
1 cup shredded cheese
Brown the sausage and drain.
Combine eggs and milk with whisk.
Place torn bread into 8x11 pan.
Spread sausage throughout the bread.
Cover with cheese.
Pour egg-milk mixture over the mixture making sure to wet all the bread.
Place in refrigerator overnight or freeze until the night before you want to use it. If you freeze the casserole, make sure you put it into the refrigerator the night before.
Bake at 350 for 45-55 minutes.

Make Your Own: Cracker Barrel Hashbrown Casserole
Learn how to make hashbrown casserole just like Cracker Barrel's!! This is the only recipe there is that uses the same ingredients Cracker Barrel does even though there are several copycat recipes online. First, Cracker Barrel uses colby cheese, not cheddar and second, they don't use sour cream in their hash brown casserole. Those recipes may be good in their own right, but they are not as close to the real deal as this is. These taste exactly like what you get served at the restaurant, especially when you let them sit for a bit like the restaurant does.
I got this recipe from a friend of mine who was a cook at Cracker Barrel for several years. They make it in big batches but this is cut down to go into a 9x13 pan which will serve 6-8 people.
What you'll need:
2 lbs frozen hash brown potatoes, thawed
1 (10.75oz) can Campbell's condensed cream of chicken soup
1/2 medium yellow onion, diced or chopped fine
1/4 cup margarine, melted
2 cups (8 oz) colby cheese, shredded or diced fine in a food processor
1/2 tsp salt
1/2 tsp black pepper
Combine everything except the hash browns in a large bowl. Add in the thawed hash brown potatoes and mix well. Put into a 9x13 baking pan and bake in a preheated 350*F oven for 45-50 minutes or until golden brown and bubbly. Enjoy!!

- 1 package Crescent Roll Sheet Pastry
1. Brown sausage over medium heat and drain on paper towel lined platter.
2. Add butter and olive oil to pan and sauté vegetables until tender about 3-4minutes.
3. Combine sausage and vegetables and set aside.
4. In a large mixing bowl crack eggs and whisk. Add cheese, sour cream, hot sauce, and a pinch of salt and black pepper. Whisk to combine.
5. Spray 9X11 inch baking pan with cooking spray and spread crescent roll dough in the bottom.
6. Spread sausage and vegetables over the dough evenly and top with egg mixture. Rest the casserole for at least 1 hour in the refrigerator.
7. Prepare Traeger pellet grill or other smoker for cooking at 350⁰.
8. Place casserole on bbq pit and cook for 1 hour rotating pan after 30 minutes for even cooking.
9. When top is brown and edges pull slightly away from pan the casserole is done. Remove from pit and cut into desired serving sizes. Serve with sour cream, crumbled bacon, pico, etc..
Pitmaster’s need breakfast too and this recipe is sure to start the day off right. I combine sausage, eggs, cheese, and a few vegetables (have to keep the doctor happy) for a tasty casserole that cooks right on the pit.
You can put it all together the night before and cook the next morning for breakfast or brunch. I serve it with plenty of fresh toppings (your friends can dress it up just right) and it goes perfect with a good Bloody Mary.
