Make-Ahead Lasagna Roll-Ups
Here is what you'll need!
MAKE-AHEAD LASAGNA ROLL-UPS
16 lasagna noodles
1 pound ground beef
½ pound ground pork sausage
½ onion, chopped
1 teaspoon salt
½ teaspoon pepper
3 cups marinara, divided
30 ounces ricotta cheese
2 cups fresh baby spinach
1 tablespoon Italian seasoning
1 cup shredded mozzarella
1 cup parmesan
Preheat oven to 350°F/180°C.
Cook lasagna noodles al dente.
In a skillet over medium heat, cook beef, sausage, onion, salt, and pepper until fully cooked.
Add spinach and 1 cup of marinara sauce, and let simmer. Remove from heat.
In a bowl, combine ricotta, Italian seasoning, and egg.
Spread mixture over each lasagna noodle, then top with meat mixture. Roll up tightly and place in a disposable casserole dish.
Let cool completely, then freeze up to 4 days.
To bake, let thaw in the refrigerator during the day.
Preheat oven to 350˚F/180˚C .
Top with remaining 2 cups of marinara, cover tightly, and bake for 40 minutes.
Uncover, and top with mozzarella and parmesan. Broil an additional 5 minutes or until cheese is melted to your preference.

Yields: 16 balls
1 can (16.3 oz) biscuit dough
mozzarella, cut into cubes
3 tablespoons butter, melted
2 cloves garlic, minced
salt and pepper, to taste
1 tbsp italian seasoning
shredded parmesan cheese, for topping
1. Cut each biscuit in half. Press each half into a circle with your thumb.
2. Place a small dollop of marinara sauce, 1 pepperoni, and 1 cube of mozzarella on each biscuit round.
3. Bring the edges up and over, pressing them together and being sure to leave no gaps for the filling to leak out. Lay the pizza bombs on a baking sheet lined with greased parchment paper
4. Combine melted butter, garlic, salt and pepper, and italian seasoning in a small bowl. Brush the butter mixture onto each pizza bomb and top with parmesan.
5. Bake at 375 for 15-20 minutes (until biscuits have nicely browned).
6. Once pizza bombs are cool enough to handle, serve immediately. Enjoy!

Pizza Roll Ups Appetizers!! Noreen's Kitchen
Greetings! Let's start this one off by saying, I am tired! This holiday season has simply wiped me out! I can't remember a year when I was this tired. We worked very hard this year for some reason to get the holiday pulled together. I don't know if it was the fact that we work a lot or the fact that pay schedules did not allow us to do our holiday shopping as early as we would have liked, but in the end, Christmas was wonderful and now that we are through it, we are focusing our sights on the coming new year.
With that in mind I thought it might be nice to do a couple of videos featuring fun foods that you can serve to guests as pick ups or appetizers. I am also planning on doing a couple other special things for the grown ups, but this one will be for anyone who loves a pizza!
I made this pizza roll up a couple of weeks back for Rick so he could try it out for lunch one day and he loved it. I used what I had on hand and it turned out lovely. This goes together quickly with ingredients that you probably already have on hand and this idea can go a long way. If you want to take this in a different direction you go right ahead!
A large burrito sized tortilla is where we start and then I layered on about a half cup of shredded Italian blend cheese. Topped that with a layer of thin sliced, good quality pepperoni and a sprinkle of both pizza seasoning and Parmesan cheese. Popped that in the microwave for about a minute just until the cheese was melted and then rolled the whole thing up tight. When I made this for Rick, I just sliced it in half on an angle but if you are making these for a crowd as an appetizer or a pick up finger food, then you may want to slice each one in to four or even six slices. I would not recommend slicing them too thin though because they will unravel and fall apart while eating. You don't want your guests to ruin their party clothes. I served this with some marinara sauce on the side for dipping. Voila'! Easy appetizers!
You can easily change this up and make it into any type of pizza you like, vegetarian, ham and pineapple, meat trio, even layer in some ham and swiss cheese and serve with some honey mustard for dipping. Simply delicious. This is the perfect quick and easy appetizer that you can make at the drop of a hat. Any time you have people drop by you will be ready to greet them with a love warm platter of this quick and easy treat.

* 6 oz of Mozzarella Cheese
* 1.5 ounces of Cream Cheese
* 1/4 cup of Almond Meal/Flour
* 1 Large Egg
* Parchment Paper
Keto Pizza Toppings:
* 3 spoonfuls of your favorite pizza sauce (the lower the carbs, the better)

Homemade Frozen Pizzas are easy to make. Stock up your freezer with a quick meal full of homemade goodness. It's better than take-out!
How long do these pizzas take to put together?
It takes approximately 8 minutes to make the dough and get it rising. It will need to rise for 90 minutes to 2 hours. After that it will take approximately 15 minutes to roll out and top 3 pizzas. This brings your total hands on time to just 23 minutes. You can't even get a pizza delivered in 23 minutes!
Can I double this recipe?
Absolutely! Doubling it can be done if you have a heavy duty, large capacity stand mixer. If you don't, you can simply make two batches back to back and have them rise in separate bowls. A professional series Kitchen Aid stand mixer can handle a double batch, while their Artisan series is best suited to a single batch.

1 1/2 tablespoons instant dry yeast
1 1/2 tablespoons brown sugar
1 1/2 teaspoons salt
2 cups warm water
3 tablespoons olive oil
5 cups flour
1. In the bowl of a stand mixer, combine yeast, brown sugar, salt, water, and flour.
2. Knead on low until dough starts to come together. Continue kneading until the dough forms a nice, soft dough ball and the sides of the bowl are clean.
3. Let rise in a lightly greased bowl, covered, for 1 to 2 hours, until doubled.
4. Divide the dough into three equal pieces and roll out into pizza crusts.
5. Place crust on a tray for freezing.
6. Top with desired sauce, cheese, and other toppings.
8. Once solid, wrap with plastic wrap and store in the freezer. Pizzas stay good for 1 to 3 months.
9. To bake, preheat a pizza stone in the oven at 500 degrees. Bake until cheese is browning and bubbly, about 10 to 15 minutes.

We all know and love those addicting frozen pizza rolls! They are the most addicting after school/after work snack there is. But health wise? Not so great for you. Here is a small fraction of the ingredients listed on the pizza rolls we all know and love...
Aluminum Phosphate, Potassium Chloride, Citric Acid, Potassium Sorbate (Preservative), Titanium Dioxide (Artificial Color), Sodium Citrate, Sodium Phosphate, Maltodextrin, Magnesium Oxide, Zinc Oxide, Vitamin A Palmitate, Riboflavin, Vitamin B12), Imitation Mozzarella Cheese

And the best part? You can make them ahead of time, and freeze them the exact way the premade ones are! When you want some, just throw them in the oven to warm them up!

DIY Pizza Rolls
| Ingredients |
1 Package Wonton Wrappers
¾ Cup Pizza Sauce (My recipe link below)
½ - ¾ Cup Finely Shredded Pepperoni
½ - ¾ Cup Finely Shredded Mozzarella
Oil of your choice for frying (DO NOT USE OLIVE OIL)
Water as needed
| Instructions |
Take one wonton wrapper and dampen the outer edges using a small amount of water on your finger. In the center, place a small dollop of pizza sauce, a sprinkle of pepperoni, and a sprinkle of mozzarella. Lay another wonton wrapper overtop and press to seal the edges. Lightly wet the ends and roll.
Heat oil in a heavy bottom pot or dutch oven to 350°F – 375°F. Gently drop in wonton rolls. Fry no more than 3 at a time to prevent the oil temperature from lowering. Fry until golden brown on all sides and remove to a plate lined with paper towel to drain.
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Brush each wonton wrapper on both sides with your choice of cooking oil.
Bake in a 400°F oven for about 15-20 minutes, flipping half way through.
