EASY Pizza Rolls: Make ahead and Freezer Friendly! | The Recipe Rebel
PRINTABLE RECIPE & NUTRITION INFO:
Easy Pizza Dough
1 ½-2 cups all purpose flour (195-260 grams) plus more for rolling
1 package instant or quick rise yeast 2 1/4 teaspoons
1 teaspoon granulated sugar
¾ teaspoon salt
½ teaspoon dried oregano
¼ teaspoon garlic powder
⅔ cup warm water
2 tablespoons oil
⅓ cup pizza sauce
¾ cup finely chopped pepperoni
2 cups shredded mozzarella cheese
In a medium bowl, stir together 1 cup of flour, yeast, sugar, salt, oregano and garlic.
Add water and oil and stir until combined — it will be very wet and sticky.
Gradually add just enough of the remaining flour so that a soft but not sticky dough forms. Add a small amount and knead briefly until combined so that you can feel when it is ready — it will still be soft (not feel firm or tough) but won’t stick to your hands. To knead, simply press the flour into the dough, fold the dough and press, fold and press.
Set covered in a warm, draft-free place to rise for 25-30 minutes until puffed and doubled.
Preheat oven to 425 degrees F.
On a lightly floured surface, roll out pizza dough into a rough 16x14 rectangle.
Spread pizza sauce on dough to within 1 of the sides, then top with pepperoni and cheese.
Roll the dough up tightly, starting at the long end. Pinch the seam to seal and place on a cutting board.
To slice even rolls, start in the middle and make a mark where half is. Then divide each half into two (so you will have 4 quarters), then each quarter into 3 rolls.
Place the rolls on a parchment lined baking sheet a few inches apart, and bake for 15-20 minutes, until light golden brown.

Make Ahead Pizza Crust
I love homemade pizza. It is something I like to make on Saturday nights for a fun treat. Pizza dough only has a few ingredients, but the magic happens when you give those ingredients time to do their magic.
How do you make Make Ahead Pizza Crust?
Make ahead pizza crust is simple to make! Simply mix flour, salt, yeast, and water in a bowl to form a craggy and rough dough. Let it sit covered at room temperature for 24 to 48 hours. The yeast will work magic and transform the craggy dough into soft and elastic dough full of bubbles and flavor.
Time is the key to making great pizza crust dough. You only need a little yeast and a lot of time to get a pizza dough with amazing flavor and lots of bubbles.
Why does the pizza crust dough smell like alcohol?
Pizza dough actually goes through a fermentation process that is similar to making beer. If your dough smells like alcohol, it will likely have lots of great yeasty flavor.
How do you get a crispy pizza crust?
The secret to the balance between crispy and chewy in pizza crust is to have a high ratio of water to flour. The wetter the dough, the crispier the crust will be. It is a delicate balance, because you also want dough that is easy to work with and not too sticky.
One thing that really helps is to let the pizza dough ferment for a long time. I like to make it at least one day, but up to three days in advance. The crust will develop more flavor and gluten the longer it sits at room temperature.
Can I freeze make-ahead pizza crust?
Yes! After the dough has fermented for 24-48 hours, you can freeze it. I like to put it in a zip top bag that has been coated on the inside with a tablespoon of olive oil to keep the dough from sticking to the bag.
How do I use frozen pizza crust?
Remove the frozen crust dough from the freezer 24 hours before you plan to bake the pizza. Three-four hours before you plan to bake the pizza, take the dough out of the zip bag, place it in a medium bowl that has been coated with a tablespoon of olive oil, and cover with a lid or plastic wrap. Let the dough sit a room temperature for three to four hours, then form into pizzas and bake as usual.
How do you shape the pizza crust?
This recipe will make three 12-inch round pizzas or one sheet pan pizza.
To make 12-inch rounds, divide the dough into three parts, roll gently into a ball on a floured surface and let rest for 30 minutes to an hour. Gently use your hands to stretch each dough ball into 12-inch rounds. Place each round on parchment paper or a pizza peel, top with pizza sauce, toppings, and cheese, then transfer to a preheated pizza stone and bake in the oven at 550 degrees Fahrenheit for five to seven minutes.
To make a sheet pan pizza, coat a rimmed baking sheet with two tablespoons of olive oil. Transfer the dough to the oiled pan and gently pull the dough to stretch it toward the corners. (See video.) Let it rest five minutes and stretch again. Repeat the stretching and resting process several times until the dough reaches the edges of the pan. Top with your favorite toppings and cheese and bake on the bottom rack of a 500 degree oven for 10-15 minutes until the crust is browned on the bottom and the cheese is melted and browned on top.
Can you refrigerate pizza crust dough after it rises?
Yes! You can refrigerate for up to two days after it sat at room temperature for 24-48 hours. You want to take it out of the refrigerator three to four hours before baking to let it come back to room temperature.

How to cold ferment your pizza dough
In this tutorial, I will show you how to cold ferment your pizza dough!
I start straight away with the making part. At min 1:19 I will explain the different processes that take place inside the dough.
You can use this method to make Neapolitan, Canotto, Sicilian, roman, or American style dough.
Cold fermentation is also great in combination with a sourdough. Only make sure you don’t put the dough straight in the refrigerator like in the video, the reason for this is that the natural yeast inside the sourdough is less powerful than fresh or dry yeast, so it will first need to rise for 4 to 8 hours to get all the process started and bring the dough alive. Then you can place your dough in the refrigerator and continue like in the video

Pepperoni Pizza Pinwheels
From Brandi Milloy, POPSUGAR FOOD
1/2 tbsp. flour
1 can refrigerated pizza dough
3/4 cup pizza sauce
1 cup mozzarella cheese, shredded
2 tbsp. butter, melted
1 tsp. garlic powder
2 tbsp. parmesan cheese
Optional Dipping Sauces: pizza sauce, ranch dressing and hot wing sauce
Preheat oven to 350ºF.
Onto a piece of parchment paper, sprinkle flour and roll out pizza dough. Press fingers into dough to dent to prevent the crust from puffing up.
Spoon sauce onto dough, leaving 1 around the sides. Sprinkle cheese on top of sauce and then place pepperonis on top (4 x 5). Into a small dish, mix butter and garlic powder. Roll dough into a log, long ways and as you roll the dough, brush the outside of the crust with garlic butter. Wrap in parchment paper and place in freezer for 15 minutes to firm up.
Slice log into 1 1/2 slices and place on parchment lined baking sheet. Brush with egg wash and sprinkle with grated parmesan. Bake for 30 minutes or until dough is golden and cheese is melted. Serve warm with dipping sauces.

Sheet Pan Sicilian Pizza Recipe
I have such wonderful memories of my Sicilian grandmother making sheet pan pizza, or as you may call it, Sicilian pizza. My grandma was a really good baker and I always remember eating all of her cookies, spaghetti and of course Sicilian pizza.
My grandma cut the sheet pan pizza every time with scissors, which I always thought was so funny. I’m guessing she liked making sheet pan Sicilian style pizza because well it’s the size of a sheet pan, which is huge, and can feed a whole gang of people. With the gigantic family we have (my dad has 40 first cousins), it’s a no brainer to make this.

For the Dough:
5 cups of Bob’s Red Mill All Purpose Flour
1 teaspoon of sea salt
1 tablespoons of sugar
3 tablespoons of extra virgin olive oil
1 tablespoons of yeast
1 ¾ cups of warm water (110° to 115°)
For the Toppings:
6 cloves of finely minced garlic mixed with 1 tablespoon of olive oil
½ cup of crushed tomatoes
8 ounces of shredded mozzarella
8 ounces of sliced mozzarella
¼ pound of crisp cooked bacon, cut into 2” pieces
10-12 pepperoni slices
¼ pound of raw loose sausage separated into chunks
1 sliced tomato
2 sliced domestic mushrooms
½ peeled and thinly sliced green pepper
¼ cup of grated parmesan cheese
15-20 basil leaves
sea salt and fresh cracked pepper to taste
prep time: 25 minutes
cook time: 14 minutes
resting time: 90 minutes
1. Dough: Preheat the oven to 500°.
2. Add all of the ingredients to standing mixer with the hook attachment or to a clean surface. Mix until combined and knead in a mixer on low speed for 2 to 3 minutes or by hand for 5 to 6 minutes.
3. Cover with a towel and let double in size, about 90 minutes.
4. Next, drizzle some olive oil onto your sheet pan that you will be cooking in, I used a 12”x18”x2” sheet pan. If you have smaller sheet pans, then divide the dough and make 2 pizzas or reserve the remaining dough in the freezer.
5. Form the pizza dough to the sheet pan so that it is completely covered.
6. Next, evenly spread on the garlic and olive mixture all over the pizza making sure to leave a 1” crust around the outside.
7. Evenly spread on the crushed tomatoes also leaving a 1” edge around the outside and then layer on as followed: shredded mozzarella, sliced mozzarella, bacon, pepperoni, sausage, tomatoes, mushrooms, green peppers, parmesan cheese, basil leaves, salt and pepper.
8. Cook the pizza for 12 to 14 minutes at 500° or until browned and cooked through out.
9. Slice and serve!

200 ml warm milk
120 ml warm water
100 ml oil
2 tsp granulated sugar
10g instant yeast
3 ¼ cup all-purpose flour
1 tsp salt
For the sauce:
2 long green peppers
1. For the dough, place 200 ml warm milk, 120 ml warm water, 100 ml oil, 2 tsp sugar and 10g instant yeast in the large bowl. Mix together using a spoon.
2. Add half of the flour and 1 tsp salt, knead until the dough begins to form. Continue to knead, bringing in the rest of the flour. Keep kneading until you have a smooth, springy, soft dough.
3. Cover the dough with plastic wrap and then, with a kitchen towel and let rise in a warm place until doubled in size, about 30 minutes.
4. Meanwhile, prepare your desired toppings.
5. Remove the plastic cover, punch the dough down and turn it out onto a work surface.
6. Knead for another minute so it deflates a bit. Flatten it with your hands and roll it out into a rough circle. Try not to roll too thick as it will keep rising until you put it in the oven.
7. With a round cutter, or a glass, cut the dough into rounds.
8. Lay the bases on baking sheet lined with parchment paper.
9. Do the same with the rest of the dough.
10. Spoon on the tomato sauce and spread over the bases evenly using a brush.
11. Top with the shredded mozzarella cheese, and place your desired toppings on the pizzas.
12. Bake in the 180°C preheated oven about 20-25 minutes. Prepare the second tray the same way.
13. Mini pizzas are ready to be served!
* This recipe will make 30 mini pizzas.

The Biggest Mistakes Everyone Makes When Making Homemade Pizza
Pizza night is the best night of the week and making your own is simpler than you think. However, there are plenty of tiny steps that could trip you up, or make things much more complicated than they need to be. Avoid these common pitfalls to achieve a perfect homemade pizza.
Most grocery stores sell all manner of pre-made pizza crusts, but taking this shortcut will make your final product less-than-stellar.
So, what can you do? Making your own crust is easier than you probably think, especially if you have some sourdough starter running. A simple sourdough crust will be firm enough to stand up to all the toppings you could possibly want to pile on, but if you don't have the time, there's a few other options.
Consider calling your favorite pizza joint to ask if they'll sell you a bit of their dough, or head to the grocery store and think outside the box. Pick up some naan and use that for your crust, or get a nice loaf of French bread and make French bread pizzas. All of these are better options than a disappointing pre-made crust, we promise.
