Today we have one of the most important, sides, mashed potatoes. I don't know about you but sometimes after cooking a big holiday meal the thought of making the mashed potatoes is a daunting one. Mostly because my kitchen is small and hot. Boiling a vat of potatoes is the last thing I want to do. Never fear! I have you covered! Today I am sharing how to make these delicious, creamy, make ahead mashed potatoes that can be frozen weeks in advance and thawed and heated on the day of your gathering. This is like a casserole with delicious body and a creaminess you will love!
Being able to make dishes ahead of time for your holiday get togethers is a real bonus. You can actually work this into your meal plan and just make a big batch that includes enough for your menu meal as well as your holiday meal. So many things can be ticked off your list up to a month in advance and on your big day you will be calm, cool and collected.

Make Ahead Mashed Potatoes - Freezer Recipe
When using Russet Potatoes in this Freezer Mashed Potatoes recipe they turn out light and fluffy. This recipe can be used in two different ways. 1) It can be made months ahead of when you want to serve them and the potatoes are frozen. Or 2) they can be cooked a couple of days before the day you want to serve them and then any left overs can be frozen. You can also package them with the number of servings you want.
When I prepare these for Thanksgiving or Christmas I thaw the frozen potatoes in the fridge for a couple of days and then I put them in the slow cooker on the day of the meal to warm up. When they reach the desired temperature I reduce the heat and keep them warm in the slow cooker until it’s time to eat.
