Here is what you'll need!
HEALTHIER RASPBERRY CHEESECAKE
10 graham crackers
3 tablespoons milk
16 ounces reduced-fat cream cheese, room temperature
⅓ cup honey
2 cups greek yogurt
1 tablespoon vanilla extract
2 tablespoons cornstarch
3 cups raspberries
Preheat oven to 350°F/180°C.
Place graham crackers in a plastic bag and crush with a rolling pin until fine.
In a medium bowl, mix the cracker crumbs with the milk, stirring until the milk has incorporated completely into the crackers with the texture of slightly wet sand.
Pour the cracker mixture into a 9-inch springform pan. Press down the crust evenly using the back of a flat measuring cup or spoon. Bake for 15 minutes, then cool.
Reduce the heat to 300°F/150°C.
In a large bowl, whisk the cream cheese until there are no lumps.
Add the honey, greek yogurt, eggs, vanilla, and cornstarch, mixing until smooth.
Pour the cheesecake batter into the graham cracker crust. Spread evenly.
Bake for about 1 hour, then cool for about 30 minutes.
Top with fresh raspberries in a ring pattern on the top of the cheesecake.
Chill until the cheesecake has set, 2-4 hours.
Unmold, slice, then serve!

300g low fat cream cheese
2 tablespoons of butter
3 egg yolks
1/8 cup of sugar
2 teaspoons of cornstarch
3/4 cups of milk
3 egg whites
1/4 cup of sugar
2 teaspoons of cornstarch
1 pan (7in diameter)
Oven 180C for 15 minutes
Turn down to 160C for 25 minutes
let sit in the over for 1 hour after baking
(NEVER open the oven door while it's baking - keep the heat in)
Also totally forgot to mention to let it chill in the fridge before eating/decorating :DDDDDDDD

Homemade Low Fat Cream Cheese Recipe | How to make Low Fat Cream Cheese at home
Make this extremely low fat homemade Cream cheese and relish it in your favourite recipe without any guilt. This fresh Low-fat cream cheese has about 40 percent less calories than regular cream cheese. Opting for this lighter version allows you to enjoy cream cheese without going overboard on fat and calories.
Ingredients to make low fat Cream Cheese:-
1/2 litre low fat skimmed cow milk
1.5-2 tsp lime/lemon juice
1 pinch salt ( optional)
Method to make low fat Cream Cheese:-
1. Heat milk in a heavy bottom pan when the milk starts to boil add 2 tsp of lemon juice. Keep stirring
2. Soon the milk will start to curdle, when you milk solids separated from the water, switch off the flame.
3. In a large bowl, place a strainer and cover it with a cotton/muslin or cheese cloth, pour the curdled milk on top.
4. This way the water will get separated from the solid.
5. Use this leftover water in preparing dal, rice, dough or any batter.
6. Now add the solid into a grinder on top add a pinch of salt ( optional).
7. Grind to a smooth paste, if you see fine grains add some left over water and grind again.
8. When you get a very smooth creamy texture that means your cream cheese is ready.
9. You can store it in an airtight container for up to 6-7 days in fridge. You can garlic paste to it for flavour and use it as a spread.
Other than that you can use it to make cheese cakes, other desserts, toasts, sandwiches, dips, salads or spread it on your parathas.

Dough: 1 egg, 1 cup of oat flour, 1 tablespoon oil, 50ml sour cream, 1 tablespoon sugar or stevia
Stuffing: 500 gr cottage cheese, 100 ml sour cream, 2 tablespoon sugar or stevia, 25 gr gelatin
Decoration: jam or chocolate
Soak gelatine in water (25 minutes), then cook on low heat for a few minutes, there was no pellets (attention: do not bring it to a boil).
Bake the dough 15 minutes at 180 degrees. Now put the stuffing on the cake, and then put the cheesecake in the refrigerator for 2 hours (only dough baked in the oven).
Information: 12 servings
Per serving: calories 129, fat 1.5g, carbohydrates 7.7g, protein 24.4g.

With Wimbledon just around the corner, it's the ideal time of year to enjoy a spot of al fresco dining. For the perfect finale to a summer barbeque, impress friends and family by conjuring up these scrumptious and smooth low fat strawberry cheesecake pots.
Created by the queen of homemade, Kirstie Allsopp, these little pots of creaminess are super quick, easy to make, delicious and low fat -- what more could you want?
To make, simply crumble light digestive biscuits and divide between six wine glasses or small tumblers. You'll find that there is no need to add gelatine to these cheesecake pots as the next step, mixing half a can of Nestlé Carnation Condensed Milk Light together with the juice and zest of a lemon, will magically set the mixture.
Next, whisk together some extra light cream cheese and 0% fat Greek yoghurt until smooth, fold in the thickened condensed milk and spread the decadent creamy mixture over the biscuits. Once chilled, chop some fresh strawberries and mix with strawberry jam. You'll find that the jam not only sweetens up the fruit but also creates a professional, glazed look. To finish, pop the strawberries at the top of your cheesecake mixture and enjoy!

12 Ounces (339g) Fat Free Cream Cheese
5.3 Ounces (150g) Fat Free Blueberry Greek Yogurt
1/2 Teaspoon Vanilla Extract
2 Extra Large Eggs
3 Tablespoons (54g) Blueberry Jelly
2 Scoops (60g) Vanilla Protein Powder
1/3 Cup Sweetener
6 Tablespoons (56g) Graham Cracker Crumbs
1/2 Cup Blueberries
Calories in the WHOLE recipe:
Saturated Fat: 2g
Calories in each Mini Cheesecake (if you make 15):
Saturated Fat: .1g
Combine all of your ingredients into a bowl aside from your Graham Cracker Crumbs and Blueberries. Mix everything together (if your Cream Cheese is soft you should be able to use a spoon). Take out around 15 Silicone Muffin Cups and coat them with some non-stick cooking spray. Evenly distribute your Graham Cracker Crumbs into the bottoms of your Silicone Cups. Pour your mix into them. Top them with 1/2 Cup Blueberries. Bake on 350°F/176°C 15:00-20:00. Enjoy!
Tips: Let your Cream Cheese soften up a bit before you add it in (to make mixing easier)!
Top them with some whipped cream, cool whip, sugar free syrups, or even some protein frosting!

Easy Low-Fat Cheesecake
Macros per serving:
12oz fat free cream cheese
10oz plain nonfat greek yogurt
2 whole eggs
3 mini packs splenda
1/4 cup low fat milk
1 scoop whey protein
3 mini packages of mini eggs
Preheat oven to 325'c
Soften cream cheese
add eggs and splenda, mix
add all other ingredients and mix well.
Pour into crust and bake at 325 for 25 mins.
Lower temp to 200'c and bake for another hour.
Let cool in fridge for 4 hours.
Add toppings and enjoy!

Fat Free/ Low Fat Cheesecake Recipe
This is a simple and fulfilling recipe for those cheesecake loves like myself who want to enjoy the delight-fullness of a cheesecake without all the calories. Try it and tell me what you think.
4 packs (8 oz) fat free cream cheese
1/3 cup fat free sour cream
1 cup sugar
1 tsp vanilla
1 tbsp flour
1/2 butter (light)
1 cup honey graham crackers
Cooking temperature 250- 275
Cooking time about 90 min (depending on baking container use)
When mixing all items need to be at room temperature.
Cooking at lower temperature for longer time produce better quality.
After baking is complete, leave out to cool down to room temperature before putting into the refrigerator.
Cheese needs to be refrigerated for at least 4 hour before serving (Leaving cheesecake in refrigerator overnight is best).

Chef Anna Olson takes you step by step through her amazing New York cheesecake recipe.
This makes a 1 9-inch cheesecake.
- 1 cup (225 g) graham cracker crumbs
- 2 Tbsp (25 g) sugar
- ¼ cup (60 g) unsalted butter, melted, plus extra for greasing the pan
- 4 pkg 250 gram packages of cream cheese, at room temperature
- 1 1/4 cup + 2 Tbsp (275 g) sugar
- 3 Tbsp (22 g) cornstarch
- 2 tsp (10 ml) vanilla extract
- 2 tsp (4 g) finely grated lemon zest
- 3 large whole eggs
- 1 large egg yolk
- 1 ½ cup (375 ml) sour cream (not low-fat), divided
- 2 tsp (10 ml) lemon juice
1. Preheat the oven to 350ºF (176 C).
2. For the crust, stir the graham crumbs, sugar and melted butter until evenly combined and press this into the bottom of an ungreased 9-inch springform pan.
3. Bake this for 10 minutes, then cool. Brush the sides of the pan with a little melted butter.
1. For the cheesecake, increase the oven temperature to 400ºF (205 C).
2. Beat the cream cheese until light and fluffy. Add the 1 ¼ cups of sugar a little at a time, and scraping the sides and bottom of the bowl often.
3. Beat in the cornstarch, vanilla and lemon zest.
4. Beat in the eggs one at a time, on a lower speed, and scraping after each addition, then beat in the yolk.
5. Still on low speed, beat in ¾ cup of sour cream. Scrape this over the cooled crust.
6. Bake the cheesecake for 10 minutes at 400ºF (205 C) and then reduce the oven temperature to 225ºF (107 C) and bake for 25 more minutes. Turn off the oven, and leave the cheesecake in for an hour, cracking the oven door after 30 minutes. While the cheesecake is baking, prepare the sour cream layer.
7. Stir the remaining ¾ cup of sour cream with the remaining 2 Tbsp of sugar and the lemon juice. Spread this over the top of the cheesecake as soon as it has come out of the oven.
8. Allow the cheesecake to cool completely to room temperature, then carefully run a spatula around the outside of the cheesecake to loosen it from the pan, then chill the cheesecake for at least 6 hours before slicing and serving. The cheesecake will keep, refrigerated, for up to 4 days.
