Cheesy Chicken Stuffed Pasta Shells with Mariana Sauce by Tiffin Box for Kids Lunch / Dinner
Today's recipe is yummy Cheesy Chicken Stuffed Pasta Shells with Mariana Sauce for Kids lunch or Dinner !
Boiled pasta shells
Boiled chicken (roughly chopped)
salt and pepper to taste
mozzarella cheese - 1/4 cup
Ricotta cheese - 1/2 cup
chopped fresh veggies - 1/2 cup
I used paprika, spring onion and carrot
Tomato puree - 400 g
butter - 1/2 tblsp
chopped onion - 1 tblsp
chopped garlic - 1/2 tsp
salt to taste sugar 1/2 tblsp
chilli flakes - 1/2 tsp
dried OrEgano - 1 TSP

cheesy chicken stuffed shells Recipe
Jalapeno Cream Sauce
3 tablespoons unsalted butter
1 jalapeno seeded and diced
1 clove garlic minced
3 tablespoons all-purpose flour
2 cups Kroger half-and-half
7 strips Kroger thick-cut bacon
12 ounce package jumbo shells pasta
16 ounces Kroger Neufchatel cream cheese softened
2 cups Kroger sharp cheddar cheese divided
1 whole rotisserie chicken skin removed & shredded (about 3 cups)
1 jalapeno cut into rings (seeds removed, optional)
Preheat your oven to 350 degrees F.
Jalapeno Cream Sauce:
Place a medium-sized pot over medium heat. Add butter and cook until just melted. Add the jalapeno and garlic to the butter. Cook for 1 minute stirring constantly until fragrant. Add flour and whisk to combine. Cook for 1 minute.
Slowly pour the half-and-half into the pot whisking constantly to help prevent lumps. Cook for 8 to 10 minutes or until the sauce has thickened, whisking occasionally. Remove from the heat and set aside.
Place the bacon strips in a large skillet and cook over medium-high heat, turning as needed, until crispy, about 8 minutes. Remove to a paper towel lined plate to drain. Once cool enough to handle chop the bacon into small pieces.
While the bacon & sauce cooks, place the jumbo shells in a pot of boiling water and cook according to package directions until al dente. Drain the pasta and set aside.
To a large mixing bowl, add the Neufchatel cream cheese and 1 1/2 cups of the cheddar cheese. Use a wooden spoon or sturdy rubber spatula to stir until combined.
Add the shredded chicken and 2/3 of the bacon to the cheeses. Stir to combine.
Add 1/3 of the jalapeno cream sauce (it's fine that the sauce is still warm) and stir until combined. The sauce will help loosen the cream cheese mixture.
Pour 1/3 of the jalapeno cream sauce into a 9-inch x 13-inch baking dish. Spread into an even layer.
Use a spoon to stuff the jumbo pasta shells with the chicken jalapeno popper filling. Don't be afraid to add a generous amount of filling. Arrange the stuffed shells in the prepared baking dish until filled.
Spoon the remaining sauce over the shells. Sprinkle the rest of the cheddar cheese over the shells.
Bake for 20 minutes, or until the cheddar cheese is melted and the filling is warmed through.
Carefully remove the baking dish from the oven. Immediately top the pasta with the jalapeno rings and reserved bacon. Serve immediately.

1 package jumbo pasta shells 16oz
4 cups ricotta or cottage cheese
12 oz shredded mozzarella cheese
2 Eggs lightly beaten
4 tsp garlic powder
1 tsp dried oregano
3/4 cup parmesan grated or shredded is fine
1 large jar spaghetti sauce
4 cups spinach rough chopped and stems removed if you prefer
1 lb ground Italian sausage or ground beef
dried parsley for garnish
*any other seasonings you might want to add
In a skillet over medium heat brown and crumble your meat.Drain any excess fat and remove from heat. In the same saucepan, cook spinach until wilted or about 1-2 minutes. Cook the shells according to package directions.
In a mixing bowl, combine the ricotta, 8oz of mozzarella, 1/2 cup of parmesan, eggs, oregano, and garlic powder. Stir in the spinach.
Coat the bottom of a 9x13in pan with the entire jar of spaghetti sauce. ( I saved a little to spoon over the top) .Spoon the cheese mixture into the shells and place shells open side up, very close together in the dish. There will be more shells than will fit into this pan and you can either make a second smaller pan (5x8 is good) or freeze for future use. Sometimes the shells also break in the box so this is fine.
Sprinkle your meat over the top of the shells. Then sprinkle with the remaining 4oz of mozzarella and 1/4 cup of Parmesan cheese.
Cover with aluminum foil and bake at 350 degrees F for 25-35 minutes or until the cheese is bubbly. If you like a cheesy crust, you may broil it uncovered for 3-5 minutes (watch closely). Let stand 10 minutes before serving.

1 1/2-2 pounds of boneless chicken breast
2 cups of half and half (can substitute for heavy cream)
4-5 cloves of garlic
2 cups of mozzarella cheese
1 cup of Parmesan cheese( 3/4 cups for Alfredo sauce) 1/4 for chicken mixture)
3 cups of Spinach
4 ounces Cream cheese
16 ounces Cottage cheese (1 container) (2 cups)

1 c shredded carrots
1 c diced mushrooms
1 c sliced red peppers
1 c diced tomatoes

Cooked large shells
1. Pre heat oven to 350'F. Cook pasta according to box. You can steam all your veggies ahead of time or you can mix them uncooked as I did.
2. In a large bowl add chopped veggies and mix in tofu ricotta.
3. Add tomato sauce to a casserole dish. Stuff cooked shells with veggie mixture and arrange on top of sauce. Add additional sauce over the top of the stuffed shells.
4. Cover with foil and bake for 30-35 minutes.

Well here it is! You guys voted to see the alfredo stuffed shells....and they were absolutely delicious! So a big thanks to Catherines Plate for the recipe :) Also guys, meals of the week will be up in the next couple of days....I was away for a week to the Yorkshire Dales in the north of England and most of our meals were had whilst we were away....so I've added in some video and photos along with the usual meals of the week video. Just editing it now so It will be up soon :) If you want to give this recipe a go....here's what you'll need guys:
3 Tablespoons of butter
2/3 cup or 80g Grated parmesan cheese
One & a half cups or 3/4 pint Whole milk
One & a half cups/ 200g Chopped broccoli
2 Beaten egg yolks
One cup/half a pint Double/heavy cream
3/4 cup or 90g Mozarella cheese
3 small chicken breasts
1 Tablespoon garlic
2 cups/1 Pint chicken stock/broth

Cheesy Spinach Pasta Shells
If you want a healthy alternative to your meat pasta, you can try the spinach stuffed pasta shells.
In this recipe I have used frozen spinach or you can use a fresh blanch spinach as a replacement and to make this recipe more cheesy i have used the four cheese sauce along with cheddar and mozzarella.
This is a very special holiday recipe and if you have fuzzy eaters at home i am sure no one can resist CHEESE, so even your kids who are picky with veggies like spinach , i am sure this could change a whole different concept for them.

These are not only easy, but they are incredibly delicious! The key is to not overcook your shells so that they hold their shape and are easier to stuff.
I found this recipe in my Italian magazine by Taste of Home, but they have the recipe available on their website:
20 uncooked jumbo pasta shells
1 pound ground beef
1 large onion, chopped
1 carton (15 ounces) ricotta cheese
2 cups (8 ounces) shredded Italian cheese blend, divided
1/2 cup grated Parmesan cheese
1/4 cup prepared pesto
1 jar (26 ounces) spaghetti sauce, divided
Cook pasta shells according to package directions to al dente; drain and rinse in cold water. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. In a large bowl, combine the ricotta cheese, 1-1/2 cups Italian cheese blend, Parmesan cheese, pesto, egg and half of the beef mixture.
Spread 3/4 cup spaghetti sauce into a greased 13-in x 9-in. baking dish. Spoon cheese mixture into pasta shells; place in baking dish. Combine remaining beef mixture and spaghetti sauce; pour over shells. Sprinkle with remaining cheese. Cover and refrigerate overnight.
Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 40 minutes. Uncover; bake 5-10 minutes longer or until cheese is melted. Yield: 10 servings.
Nutritional Facts: 2 shells equals 405 calories, 22 g fat (10 g saturated fat), 90 mg cholesterol, 730 mg sodium, 26 g carbohydrate, 2 g fiber, 25 g protein.

1 lb. jumbo shells
1 lb. ground beef
1/2 tsp. ground cumin
1 tsp. chili powder
1 c. fire-roasted tomatoes
1 c. shredded Cheddar
1 c. Shredded Monterey Jack
Freshly ground black pepper
1 jalapeño, finely chopped
1 tbsp. extra-virgin olive oil
1/2 large onion, chopped
2 cloves garlic, minced
2 tbsp. chopped fresh cilantro (plus more for garnish)
1 28-oz. can crushed tomatoes
Sour cream, for serving
Lime wedges, for serving
1. Preheat oven to 350º.
2. In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain and return to pot.
3. Cook beef: In a large skillet over medium heat, add ground beef, cumin and chili powder and cook until beef is no longer pink. Drain fat, then return skillet to heat and stir in tomatoes, most of the cheddar (reserve some for topping) and most of the Monterey Jack (reserve some for topping). Season with salt and pepper. Cook, stirring often, until cheese has melted, then remove from heat.
4. Make sauce: In a medium sauce pan over medium heat, heat olive oil. Add onion and cook until tender, about 5 minutes. Add garlic and jalapeño and cook until fragrant, about 1 minute more. Add crushed tomatoes and season with salt and pepper. Bring mixture to a boil then reduce heat and simmer, 10 minutes. Stir in cilantro. [Editor's note: You can also skip making your own Alfredo sauce by using a jarred tomato sauce.]
5. Spoon a thin layer of sauce in the bottom of a large casserole dish. Stuff meatball mixture into shells and arrange stuffed shells on top of sauce, side by side. Spoon remaining sauce over shells and sprinkle with cheese.
6. Bake until cheesy is melted and bubbly, 18 to 20 minutes. Garnish with cilantro and serve with sour cream and lime wedges.

Chicken Alfredo Stuffed Shells
Chicken Alfredo Stuffed Shells are a savory pasta dish filled with the classic Chicken Alfredo flavors. Using either homemade or jarred Alfredo sauce, it pairs perfectly with the filling made up of shredded chicken, parmesan cheese and cottage cheese.
10-15 pasta shells
1 cup cottage cheese
1 1/2 cup parmesan cheese divided
1 cup shredded chicken
2 tsp dried parsley
salt and pepper to taste
1 1/2 cup Alfredo Sauce
1.Pre cook the pasta shells. (I suggest cooking 15 even though you will only fill 10 just in case a few shells rip!) If using your Instant Pot to pre cook the shells, cover the shells with water and cook on Manual HIGH for 3 min with a 5 min NPR. If using the stove top, boil the shells until al dente.
2.Rinse the shells under cold water when they are finished cooking.
3.While the shells are boiling, make the cheese filling.
Combine the cottage cheese, 1 cup of parmesan cheese, shredded chicken, parsley, salt, pepper and the egg in a medium sized bowl. Stir thoroughly.
4.Preheat the oven to 350°.
5.Pour 1/2 cup of the Alfredo sauce on the bottom of an 8×8 pan.
6.Spoon the filling into each shell, one at a time, arranging the shells in the pan as you go. You will end up with 2 rows of 5 shells.
7.Pour the additional 1/2 cup of Alfredo sauce on top of the shells. 8.Top with the remaining 1/2 cup of parmesan cheese.
9.Bake at 350° for 30 minutes.
10.Allow the shells to cool for 5-10 minutes before serving.

18 jumbo pasta shells
2 ¼ cups pasta sauce, divided
1 cup fat free Ricotta cheese
2 oz finely shredded Parmesan cheese, divided (I used the smallest hole side of my box grater)
3 oz shredded 2% Mozzarella cheese, divided
1 teaspoon Italian seasoning
Salt, to taste
10 oz chopped cooked boneless skinless chicken breast
1.5 oz croutons, partially crushed (leave a few larger pieces)
Cook the pasta shells according to package instructions. Drain and rinse shells and allow them to cool before handling.
Pre-heat the oven to 350. Spread ½ cup of the pasta sauce across the bottom of a 2 quart casserole dish (such as a 7×11) and set aside. In a large mixing bowl, combine the ricotta with 1 ounce of the Parmesan, 1 ounce of the Mozzarella, the Italian seasoning and a sprinkling of salt. Stir together until well combined. Add the chopped chicken and ½ cup of the pasta sauce to the cheese mixture and stir until thoroughly combined.
When the pasta shells are cool enough to handle, use a spoon to stuff them full of the chicken/cheese filling. Lay the stuffed shells in a single layer in the prepared casserole dish, open side facing up. Pour the remainder of the pasta sauce over the top of the stuffed shells and spread it around to coat evenly. Sprinkle the remaining ounce of shredded Parmesan and the remaining 2 ounces of shredded Mozzarella over the top of the dish and follow with the crushed croutons. Place the dish in the preheated oven and bake for 30 minutes.

4 garlic, minced
½ c onion, chopped
2 c zucchini, grated
6 cups spinach
½ tsp salt
½ tsp black pepper
¼ tsp Italian Seasoning
2 c of ricotta cheese (15 oz)
1 c parmesan cheese
½ c mozzarella cheese
1 tbsp parsley, chopped
Bake at 350-degree F for 20 mins and Broil on High for 4 mins
