Apple Cake Recipe
This apple cake is so moist, so rich, so delicious and its so easy to make. only 15-20 minutes of work and have super tasty homemade apple cinnamon cake.

My favorite kitchen equipment:
1 cup (125g) All-purpose flour
1 teaspoon Baking powder
3/4 cup (150g) Sugar
1/4 teaspoon Salt
1 teaspoon Cinnamon
2 large eggs
1/2 cup (115g) Butter, melted
1 teaspoon Vanilla extract
3 tablespoons Dark rum/apple juice
2 tablespoons powdered sugar for dusting
1. Preheat oven to 350F (175C). line a parchment paper on the bottom of a 8-inch (20cm) springform pan and grease the parchment.
2. In a small bowl whisk flour, baking powder, salt and cinnamon. Set aside.
3. Peel and dice the apples into 1-inch (2.5cm) pieces.
4. In a large bowl, whisk eggs until light and fluffy, add sugar and whisk 1-2 minutes more, add vanilla extract, melted butter, rum/juice and whisk until combined. Gradually add flour mixture and mix until incorporated.
5. Fold in the apples and transfer into the prepared pan.
6. Bake for 35-40 minutes or until the cake is golden and a toothpick inserted into the center comes out clean. Let cool for 10 minutes, release from the pan and let cool to room temperature.
7.Dust with powdered sugar and serve with ice cream (optional)

NOTE: make sure the pastry is fully cooked on the inside before removing the roses from the oven! If after 30 minutes the apples on top look fully cooked, move the pan to a lower rack in the oven, and wait for 10-15 more minutes to avoid undercooking the puff pastry.
AND: If you prefer, you can simmer the apple slices in water over medium heat for a few minutes until slightly softer (and easy to roll). Also, the preserve can be warmed up with the water on a small pan over medium heat for a minute or so.

Welcome to the Peña barn house kitchen! Today June and Isla will help their momma bake the perfect apple pie. Yup, you read that correctly... PERFECT. Look forward to some busy-momma shortcuts and helpful pie baking hints as well as some lessons in patience from June Olive. Come on in!
How to Make Apple Pie

Yield: One 9- to 10-inch deep-dish pie
Active time: 45 minutes
Start to finish: 2 hours
3 pounds Granny Smith apples (about 7-8 apples)
1/3 cup all-purpose flour
3/4 to 1 cup granulated sugar (depends on sweetness of apples)
1 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
1 recipe Pie or Tart Dough (see our How to make Pie Dough video)
2 to 3 tablespoons unsalted butter, cut into small pieces
Heavy whipping cream as needed for brushing the top
Granulated sugar as needed for sprinkling on top
For the whipped cream:
1 cup heavy cream
1 tablespoon powdered sugar
1 teaspoon vanilla bean paste
1. Preheat oven to 375º (or 350º convection).
2. Peel and core the apples, and cut them into1/2-inch wedges.
3. Toss the apples, flour, sugar (vary amount depending upon tartness of apples), cinnamon and salt in a large bowl to mix. Let sit while rolling dough.
4. Lightly dust a clean surface with flour and roll out one disk of dough into a 1/8-inch-thick circle. Tip: As you’re rolling, lift and turn the dough occasionally to ensure it does not stick.
5. Gently roll the dough onto the rolling pin, lift, and place into a 9- or 10-inch pie dish or seasoned cast iron skillet. Gently push the dough to fit the pie dish, allowing excess to hang over the edge.
6. Add the filling to the pie. Sprinkle pieces of butter on top of the filling.
7. Roll the second disk of dough into a 1/8-inch-thick circle. Insert a knife in several places through the top crust to create vents. Place the top portion of dough over the filling and trim the edges of the crust, leaving about 1 inch of excess dough all around.
8. Close the crust by folding the edges under and pinching or using a fork to crimp. Brush the top of the pie with heavy cream and sprinkle generously with sugar.
9. Place the pie on a parchment-lined sheet tray, and bake until the filling is bubbly in the center, the apples are tender and the top crust is golden brown, about 1 to 1 1/2 hours. Allow to cool.
10. While the pie is baking prepare the whipped cream. Place the heavy cream, powdered sugar and vanilla bean paste in a cold bowl. Use a whisk or an electric mixer to whip the cream until soft peaks form.
11. Cut the pie into slices and top each slice with a dollop of whipped cream.

Peach Cobbler Made With Canned Peaches Recipe
Get 2 cans of Sliced Peaches in thick syrup
Drain the juice from 1 can and keep the juice from the other can
Get a big bowl, and poor both cans of peaches into the bowl
Add 1/4 cup of white sugar, 1/4 cup of brown sugar, 1 1/2 tsp of lemon juice, 1 tsp of vanilla extract, 1 tsp of cinnamon, 1/2 tsp of nutmeg and stir well
Place a pot over high heat and add the bowl of seasoned peaches to the pot
Add 1 stick of butter and 3 tbs of cornstarch to the pot of peaches and stir. Allow them to cook on high heat until the syrup thickens up which should take anywhere from 5-10 minutes.
Take your pie crust and cover the bottom of a baking pan with the pie crust. Add your peaches to the baking pan, placing them over the crust. Add some of the syrup but not too much.
Cover the peaches with another layer of pie crust
Poor 1/2 stick of melted butter over the pie crust and sprinkle a tsp of sugar over the crust
Pre heat your oven and allow the oven to heat up for 10 minutes
Once hot add the peach cobbler to the oven and allow it to bake until it's brown on top

Apple pie potstickers are a family favorite recipe, watch Sarah and Rachel make one of our favorite varieties of dumplings/ wontons/ potstickers/ jiaozi ...a dish that goes by many names! These are mini fried apple pies that are created using wonton wrappers as the 'crust'--a technique which makes them very easy indeed!
The ingredients are simple:
A couple dashes of cinnamon
(Can add a bit of lemon juice or ginger to make the filling a bit more tangy)

INGREDIENTS: For the double crust: 2 Ã‚_ c. flour 1 1/2 tbsp sugar 1 tsp salt 20 tbsp or 2 1/2 sticks unsalted butter (cold) 4-5 tbsp ice water. For apple filling: 5-6 medium apples (I like to use 2 to 3 different varieties of tart, crisp apples) 3/4 c. sugar Ã‚_ tsp lemon zest 1 tbsp lemon juice 1/4 tsp salt 1/4 tsp ground cinnamon 1/4 tsp ground nutmeg For finishing: 1 egg white 1 tbsp sugar for dusting
OK. Let's grab the apple pie crust bottom out of the fridge. It's had a few minutes to set up now, so that's going to be a little bit more durable. We can work with it. We can put the apple filling in it with a little more confidence.
I'm going to take a pair of scissors and trim the edge just a little bit, wherever I think it's a little bit too long. I want a little bit hanging over. That doesn't bug me. You don't want to trim too much, but if there's a lot of excess, it's going to get in the way as you're trying to put that top crust on there.
OK. So that's ready to go. I've got my apples. Now they've been steeping for a few minutes, so there's a little bit of nice liquid that's come out of there. Sometimes it gives off a lot of juice and I'll hold back a little bit of that juice just because the final pie might get a little bit runny, but that looks about right. It's a mound of apples, looks really good. Now let's go and get that second crust out of the fridge and top it and then finish with a little decorative edge.
So at this point you can really handle this crust. OK? You could roll it up if you're a little bit afraid, but you're going to do OK. Don't worry about that crack. It'll be fine. Don't get nervous about it.
I'm going to trim a little bit if I see any really long pieces, but this is pretty nice. So what I'm going to do is start tucking this under. You tuck the top crust underneath the bottom crust and I'm sealing it. I am pinching it a little bit with my fingers. Tucking it under, it seals the side and then I'm going to crimp the edge for a little decorative edge on this pie. And you'll get this, it's really, really easy.
And at this point I just want to round it a little bit, make sure my filling is all nice and tight. I'm going to get a little bit of flour on my hands and I'm just going to make this basic motion all around the pie. It's really simple. The more you do it, the easier it becomes. If it starts sticking, just give yourself a little bit more flour.
OK. Right now, I'm going to get a little bit of milk wash. You can use an egg wash, a little egg white wash, it doesn't really matter. I'm just going to use milk. You need to put something sort of liquidy on top of the pie so the sugar will stick to it and also the fat in the milk or the eggs is going to give the pie a rich, dark brown color. So milk is fine.
OK. I've got my milk, a little sugar and my pastry brush. Again, you don't want a lot. It's just a little bit. You want to brush it on there, but you want to try to avoid big puddles of milk. That's not what you're going for. Just a really thin layer.
So, again, I've got a little crack in the middle of the pie, but it's not anything to worry about. I'm just going to use it as part of my venting. So I'm going to do three slices with my knife. All right. That pie is ready to go. We're going to stick it in the oven. It's going to bake for a long time and just let it do its thing. It'll darken and you'll see some bubbles forming in the vents and that's how you know it's going to be done. But let's stick it in the oven and we'll look at that in a few minutes.
OLD SCHOOL FRIED PEACH PIE ( a easy quick dessert) FRIDAY NIGHT PIE
This is my recipe for something i grew up on,its simple and so easy
Here the simple recipe
6-8 peaches ( sliced)
1 1/2 cups granulated sugar
24 oz pineapple juice or nectar
6 oz butter
1 tablespoons cinnamon
1 teaspoon nutmeg
2 oz cornstarch ( slurry)
OR YOU CAN USE 1 JAR OF OLD SCHOOL PEACH PRESERVES
1 package Pillsbury pie dough
Combine all ingredients ( except cornstarch)in pot and bring to a boil
Add cornstarch and let thicken
Simmer for 5 minutes
Cut pie dough into 5 in circles
Add 2 tablespoons of peach mixture in center of circles
Brush dough edges with beaten eggs
Fold over corner to corner and seal with fork
Fry in vegetable oil 15 minutes or until golden brown

MY ULTIMATE APPLE PIE RECIPE
For the pastry:
8 oz / 227g plain flour
4 oz / 114g butter
Pinch of salt
c 5 tbsp ice cold water
Mix the butter, flour and pinch of salt together, ideally in a stand mixer, until you have what looks like breadcrumbs. Add the ice cold water a little at a time to bring the dough together, being careful to work quickly and confidently so as to not overwork the dough. Wrap in clingfilm or a beeswax wrap and chill in the fridge for half an hour.
For my ultimate apple pie filling:
1200g apples (ideally a sharp tasting or cooking variety, such as Bramleys or Granny Smith, but feel free to do what I did and just use what you have growing in your garden or allotment!)
1/2 tsp cinnamon
2 tbsp cornflour
40g butter for the pan
Peel, core and slice your apples into chunks. Measure out the sugar, cinnamon and cornflour into the sliced apples and stir through. Melt the butter in a large saucepan and tip your apple mix in. Cook on a medium heat for 5-10 minutes, until the juices have come out of the apples and thickened slightly into a sauce. This avoids the dreaded 'soggy bottom'!! The goal is to keep the apples as whole as possible and not turn them into pulp, so be careful not to stir too vigorously. Once you have achieved the desired consistency, turn the heat off and allow the apples to cool.
Preheat your oven to 190c (170c fan). Roll out your pastry, being careful to flour all surfaces well to avoid stickage. Trim the edge of the pastry about 1/2 inch away from the edge of your pie dish to avoid shrink back. Fill the dish deeply with your apple mix. To make a lattice top, reroll the pastry cut offs and cut strips about an inch wide. Lattice these as shown in the video. Be sure to egg wash the top of your pie for that beautiful golden crust, then bake in the oven for 40-45 minutes in the preheated oven, until golden. Allow to cool slightly and enjoy your pie!

225g bleached all-purpose flour (ideally Gold Medal or Pillsbury)
15g sugar (1 Tbsp)
3g salt (1 tsp Diamond Crystal Kosher or 1/2 tsp table salt)
225g unsalted butter (2 sticks), cold
115g cold water (1/2 cup)
There is a reason I don't give a cup measurement for flour. Flour is a powder. It's compressible. It can't be measured accurately by volume. If you are not used to weighing ingredients, watch this video about how to measure ingredients for baking:

Making cherry pie is easy - all you need is a little patience when pitting the cherries. We promise it’s worth it. You can use sweet cherries, sour cherries or a combination of both, just remember to dial the sugar back or up depending on what you choose.
