- 1 package of sugar-free lime Jello
- 1/2 cup boiling water
- 1 8oz package of cream cheese softened (fat free)
- 1 tablespoon lime juice
- 1/2 a lime peel grated
- 2 cups of cool whip or any whipped topping thawed

Key Lime Pie
Key lime pie is an easy and delicious dessert. It originated a number of years ago in the Florida Keys. This is a variation of the original recipe. I have changed a few things. For example, it was traditionally a no bake recipe. If you are brave, you could still make it this way. Because of the use of eggs, I bake the pie for 15 minutes to kill off the risk of any bacteria. 3 tbsp Xylo Sweet to already crushed 1 1/2 cups of gram crackers
6 Tbsp unsalted butter, melted
bake at 375 for 12 minutes
1 cup XyloSweet
1/2 cup water
boil on high for a few minutes
then let it cool
1/3 cup unsalted butter
1/3 cup dry milk powder
add 4 egg yolks
1/2 cup keylime juice
poor on top of crust
bake for 15-17 min at 325 degrees
1 1/2 cups heavy cream, chilled
3 tbsp Xylosweet
Low Carb & Sugar Free Lemon Meringue Pie
Here are the details for this recipe:
3 cups of Almond Flour
2 tablespoons of no calorie sugar
1/2 teaspoon of salt
1/4 teaspoon of baking soda
4 tablespoons of cold, unsalted butter
1 large cold egg
2 1/4 cups of water
1/2 cup of lemon juice
1/2 of arrowroot powder
2 egg whites
1 1/2 teaspoons of lemon zest
1 1/2 cups of zero calorie sugar
3 egg whites
1/4 teaspoon cream of tartar
2/3 cup of no calorie sweetner
Mix all dry ingrediants until well combined.
Rub the butter into the dry ingredients until completely blended.
Add in the egg and mix well until a dough forms
Spray the pie pan with cooking oil and place pie dough into the pie tin in a even layer
Bake at 350 degrees for 15-20 minutes
Beat eggs, 2 egg whites and lemon zest in medium bowl. Add 1 1/2 cups of no calorie sweetner in two parts. Set off to the side.
Combine water, lemon juice and arrowroot powder in a medium saucepan. Bring to a boil over medium-high heat, stirring constantly.
Stir the arrowroot powder mixture into egg mixture. Return all to saucepan.
Cook for about 1 more minute
Set off to the side
Beat the egg whites and cream of tartar until foamy.
Then add in zero calorie sweetner and beat until you get stiff peaks
Pour filling into the cooled pie crust and spread the meringue on the top.
When the top of the pie is covered with meringue, use your spoon to make small peaks.
Place the pie in a 425 degree oven for 5 minutes until the meringue turns golden.

KEYLIME PIE CHEESECAKE

4.5 oz (125g) of chocolate wafer cookies
1 tsp (5 ml) sugar
pinch of salt
3 tbsp (45 ml) butter, melted
16 oz (452 g) of whipped cream cheese
1/3 cup (65 g) of sugar
1 ½ tsp (7.5 ml) vanilla
2 tbsp (15g) flour
1 14-oz (400 ml) can Sweetened Condensed Milk
4 egg yolks
½ cup (120 ml) key lime juice (about 12-13 key limes + one more key lime for the garnish)
2 cups (480 ml) heavy cream
2 tbsp (13 g) powdered sugar
1 tsp (5ml) vanilla extract
Preheat oven to 350F (176C). Spray a spring form pan with baking spray and distribute well with a pastry brush and set aside.
Place the cookies, the sugar and salt in a food processor. Process until crumbs form. Add melted butter, continue to process until wet crumbs form. Transfer crumbs to the spring form pan and shake the pan to level the crumbs and then press them tin with a measuring cup or the bottom of a glass.
Bake crust for 5-6 minutes until fragrant. Allow to cool.
In the bowl of an electric mixer, combine cream cheese and sugar, beat on high until smooth. Add eggs, one at a time, beating in between each addition. Add vanilla extract and beat and then add flour and beat just until combined.
Pour cheesecake filling into cooled cookie crust, smoothing out with a spatula until layer is leveled out. Set aside.
In a large mixing bowl combine sweetened condensed milk, egg yolks and key lime juice. Whisk until smooth.
Pour the key lime mixture on top of the cheesecake mixture, making sure you are covering all the cream cheese with the pie filling. Smooth out with a small spatula.
Bake in a 350F(176C) oven for 35-40 minutes until cheesecake is set and jiggles slightly.
Allow to cool completely.
For whipped cream topping, combine heavy cream, powdered sugar and vanilla in the bowl of an electric mixer. Whip on high until stiff peaks form. Transfer to a pastry bag with a round tip. Pipe little dollops of whipped cream all of over cheesecake until covered.
Garnish with fresh lime zest on top and a thinly sliced lime wheel in the center. Chill overnight to set.

Key Lime Pie
- 1 1/2 Cups Graham Cracker Crumbs
- 1 Stick Unsalted Butter
- 7 Eggs
- 1 14 oz Can Sweetened Condensed Milk

Yield: One 8 Pie
* You can use regular or key limes
* It's best to let the crust cool before filling it
* It's best to let the pie cool before topping it
* To check if the sugar is dissolved when making the meringue taste a tiny bit, if you can feel sugar granules on your tongue it's not dissolved yet
*Medium Peak is when the meringue almost stays standing but falls over slightly
* If you don't have a blow torch you can put the topped pie in the oven at 400F and it will color up, just keep an eye on it as this process happens quickly
* This pie slices best when refrigerated

4 1/2 teaspoons grated lime zest
1/2 cup lime juice (3-4 limes)
4 egg yolks
1 (14 ounces) can sweetened condensed milk
11 graham crackers
3 tablespoons granulated sugar
5 tablespoons unsalted butter (melted)
3/4 cup heavy cream
1/4 cup confectioners’ sugar
1 tablespoon lemon zest
Whisk zest and yolks in a bowl until tinted light green, about 2 minutes. Beat in the milk and juice then set aside at room temperature to thicken.
Pre-heat oven to 325 degrees. crush graham crackers in a bag, then mix in sugar and butter. mix until thoroughly, then press into muffin pan. Bake for 8 minutes or until golden brown. let cool for 15 minutes.
Pour filling into the crust, then bake until it has a slight jiggle. (15-17 minutes), then cool to room temperature, cover and refrigerate until chilled (2-3 hours).

Coconut Lime Pie!
- ½ C almonds
- ½ C walnuts
- 1 C Toasted coconut (flakes or shreds)
- ½ C quinoa flakes (sub oats for non-gf version)
- 2 Tbsp coconut sugar
- 5 Tbsp (75g) melted coconut oil
- ½ avocado
- ½ C soaked dates in boiling water
- 1 can light coconut milk
- Juice of 2 limes (small sized)
- 4 Tbsp corn starch (mixed with water to form a paste)
- Preheat oven 175°C
- Grease a standard pie plate with coconut oil and set aside
- Blend almonds and walnuts in food processor until a fine meal is achieved.
- Add toasted coconut, quinoa and sugar and blend until a loose dough is formed. Add oil and quickly blend to combine
- Press the dough into the prepared pie plate, making it even in all areas. Use a spoon to help press around the edges. Take your time and do a good job
- Bake 20-22 min until lightly golden, remove from oven and cool completely
- Blend dates (with water) and avocado until smooth (use a smoothie cup blender for best results)
- Combine coconut milk, lime juice and date mix in a med saucepan. Add cornstarch paste. Whisk until well combined.
- Heat stove to med and gently heat the filling, whisking constantly, the mix will begin to thicken. One it has reached a pudding like consistency and a visible ribbon appears when you lift the whisk, it is ready. Allow the filling to completely cool before adding it to the crust.
- Once cool, scoop filling into the crust, gently spreading with a spoon to even out. Grate some zest of lime on top for an added touch.
- Place in the fridge for 6 hours / the afternoon / overnight to set
- Cut, lift, and enjoy your creamy and zesty pie!

Paleo Dessert - No Bake Lime Cheesecake Recipe
For the crust
1 ½ cups - almonds
10 - pitted dates (soaked in warm water for 10 minutes then drained)
For the filling
3 - large limes, juiced and zested
½ cup - full fat coconut milk
2 ½ cups - cashew nuts, soaked overnight in cold water
¼ cup - coconut oil
1/3 cup - pure honey
For the deco
1 - lime, thinly sliced
To make the crust
1. Place the almonds and dates in a food processor and pulse until combined.
2. Grease an 8-inch spring form pan and line with parchment paper.
3. Press the mixture firmly and evenly against the bottom of the cake pan.
To make the filling
1. Rinse the cashew nuts and drain them well.
2. Place them in a high power food processor with the rest of ingredients and blend until smooth.
3. Pour the lime filling over the cake base and place the cake in the freezer for at least 2 hours.
4. Remove from the freezer for 10-15 minutes to thaw.
5. Decorate with lemon slice before serving.
