You can cook a healthy creamed kale recipe that's not only incredibly tasty, but super simple to make. Although there are not many ingredients to this kale dish, it's crazy flavorful and makes a great side dish or a complete healthy meal when served over rice or quinoa.

Ingredients for Coconut Creamed Kale Recipe:
1 big bunch KALE
15 oz can COCONUT MILK
½ cup ONION (chopped)
5-9 cloves GARLIC (chopped)
1 JALAPENO (optional, chopped)
SALT and PEPPER (to taste)
OIL for cooking
serve over rice or quinoa,
and top with crushed peanuts
How to Cook Coconut Creamed Kale Recipe:
Buy Kale that is crisp and firm, not sad and wilted.
Wash and drain the kale and separate the leaves from the stem. We'll only be using the leaves for this recipe.
(If you can figure out something tasty to do with the stems, please let me know!)
Chop kale into a manageable sizes.
Heat a little oil in a large skillet or pot and saute the onion, garlic, and peppers for 2-3 minutes.
Add in the coconut milk and bring to a simmer.
Add in the chopped kale, cover and let the kale steam and wilt for a couple of minutes.
Stir the pot and mix ingredients well.
Bring to a simmer, cover, and let cook to desired consistency...simmering about 5 minutes is good for me...the kale
is cooked down, but still has a nice texture.
Remove the pot from the stove and serve.
This dish makes a great side, or a healthy entree when served over rice or quinoa.
If desired, top with crushed peanuts for added texture and flavor.

Coconut Cream Kale with Chickpeas Recipe
2 bunches of chopped kale
2 sandwich size ziplock freezer bags of chickpeas (pre-soaked, and rinsed)
4-6 sun-dried tomatoes soaked in spring water for 2 hours
2 tablespoons of sea moss gel
1 medium onion chopped
1 thumb of ginger
6 stalks of scallions chopped
2 plum tomatoes chopped
½ bunch of fresh thyme
10oz coconut cream
1 habanero pepper
¼ cup coconut aminos
1 tbsp of either sea salt, pink salt, or seasoning sea salt mix

Irish Mashed Potatoes with Kale - Colcannon Recipe
I got a big bag of kale from a food cooperative because the patrons didn't want it.
Since I had some leeks left from the fall garden and potatoes this time of year are on sale and cheap, I made Irish Mashed Potatoes with kale.
5 lbs russet potatoes, cleaned, and peeled
2 stick unsalted butter, divided
1 1/2 cup heavy cream
2 to 4 garlic cloves minced
4 leeks, cleaned and whites thinly sliced
4 bunches kale, stems removed and chopped
1 1/2 cup chicken broth
Salt and pepper to taste
Place the potatoes in a large pot and fill with water to cover.
Bring the potatoes to a boil on medium-high heat and continue to boil until the potatoes are fork tender, 20-25 minutes.
Place 12 tablespoons of butter, cream and garlic in a small saucepan and bring up to a simmer on medium-low heat. Cover to keep hot.
In a large saute pan melt the remaining 4 tablespoons of butter on medium heat and saute the leeks for about 1 minute.
Add the kale to the leeks and continue to saute for an additional 2 minutes. Season with salt and pepper.
Pour the broth over the kale and leek mixture, stir and cover.
Allow the mixture to cook until the kale has wilted and the liquid has cooked off, about 7 minutes.
Once the potatoes are fork tender, drain them and place them back into the pot.
Begin mashing the potatoes, while adding the cream mixture a little at a time, until the potatoes are smooth and creamy. Season with salt and pepper.
Fold the leeks and wilted kale into the potatoes, adjust the seasoning and serve.

This is a wonderful dish to make for a gathering or family meal. Potato & Kale Cream Bake! With nutritional kate and asparagus, it is a healthy alternative as well as tasty and appealing. Our potato & kale cream bake has a lovely rich flavour of onion with the mushrooms and the cream brings it all together. Try it today our potato & kale cream bake from the simpley cooking channel.
4 x large stalks of kale ( rinse and take off the leaves and rip into small pieces: you can even chop it if you like)
1 x bunch of asparagus ( rinse and remove the wooden ends & cut into small diagonal pieces)
500 - 700 grams of baby potatoes thinly sliced (leaving approx: 1/3 slices to cover the top of the bake)
300ml x fresh pouring cream
4 x medium mushrooms thinly sliced
1 x medium or 1/2 x large onion thinly sliced
salt for seasoning
-preheat oven to 180 degrees celsius
-cook ripped kale (with the water covering at least 3/4 of kale) in salted water for 2 minutes rapidly, then set aside, drain and cool
-slice the potatoes thinly and line a baking tray & salt to taste
-add another layer of thinly sliced potato the opposite way
-topped the two potato layers with the chopped asparagus spreading out evenly
-then add the cooked kale on top of the asparagus (spreading as best as you can evenly) set aside-heat oil in pan, to medium/high heat and add onion and cook till golden brown
-add mushrooms and cook till mushroom moisture has evaporated
-add cream and bring to boil, cook for three minutes (stirring occasionally and watching not to boil over)
-once cooked, pour the cream mixture over kale and spread out ingredients as evenly as you can
-add a final layer of potatoes, lightly season
-place in oven for 45 - 50 minutes
-remove from oven, let sit for five minutes and serve

We are talking about the Irish National Dish, Colcannon. Perfect as an easy side accompaniment for any savoury dish. Why not make it for your St Patricks day Celebtration This dish is so popular there are even songs written about it. Its a meal in iteself. Do try it, the kids will love it .
100 grams green cabbage
100 grams chopped bacon
1 chicken stock cube
small bunch of parsley chopped
40 grams roughly chopped spring onion
cracked pepper to taste
750 grams peeled cubed potato
30 grams cream
40 grams butter.
Cooked potatoes in boiling water with the chicken stock cube on a medium heat for about 13 minutes until tender. Stir fry bacon until crisp, add cabbage, pepper, spring onions and parsley until tender but still bright green. Do not overcook or put the lid on because the colour will go grey. Strain the potato from the liquid, retaining the liquid. It will be used later to ensure a rich creamy steaming hot mash. Mash the potatoes with the cream and half of the butter until rich and smooth, add a small amount of the water from cooking the potatoes and mash in until really creamy. Mix the cabbage mixture through the potato and mix well serve with the remaining butter dolloped into a little indent on top of the Colconnon. As it is served the butter will melt down and dribble down the sides.

Colcannon is a traditional Irish dish that is a St. Patrick's Day favorite. A combination of creamy golden potatoes and usually kale or cabbage, we are using both, with some added scallions for flavor.
So rich and creamy, you won't even miss the butter! A perfect accompaniment with lamb chops, carrots and soda bread.
1 bunch kale
5 - 7 Yukon Gold potatoes
extra virgin olive oil
1 T. extra virgin olive oil
Hi there, Jess in the Rada Kitchen, thanks for joining me. Today I’m going to show you how to make colcannon. It’s a super-healthy version of mashed potatoes that incorporates greens like kale, cabbage, and green onions. We’re going to start by prepping some veggies.
We have my half head of cabbage. We’re just going to quarter this. It’s going to go into a pot of salted water and we’re ready to boil. Now we’re ready to prep our kale. If you haven’t worked with kale before, it gets really woody the further down the stem you go. So we’re just going to pull it off. I don’t think you can have too much kale, but you can use as much or little as you like.
Our kale is pretty hearty. We’re going to boil this in our water as long as our potatoes so it gets nice and tender. I’m going to chop this up so we don’t have big, stringy pieces of greens in our mashed potatoes. We want it to be fairly creamy. Now we’re going to have our Yukon Gold potatoes and we’re going to use our Rada Super Parer for that. I’m going to quarter these because I don’t like it when my potatoes get super-water logged. I love to use Yukon Gold potatoes because they’re buttery and rich. I left the skin on to keep nutrients. About 5 to 7.
Now we’re ready to transport all our vegetables into our water. I’ve seasoned the water with some sea salt. Now we’re going to let this go until everything is nice and tender. Now I’ve strained our veggies to drain off that excess water. Now we’re going to put them back into our hot pot. Then we’re going to season them up and mix with our hand mixer.
To the pot we’re going to add some extra virgin olive oil instead of butter. To that I’m going to add some vegan broth-based seasoning. Some white pepper. Garlic powder. And then just a little bit of Rada’s Burger & Fry Seasoning that I like to use as my seasonal. And now we’re going to go ahead and mix it up.
So here’s the texture we’re looking for. So into my potatoes I’m going to add 3 thinly sliced green scallions and just give that a quick stir. Now they’re all ready to go! We have our creamy mashed potatoes, and I promise that you will not miss any of that cream or butter that would normally go into this dish. Thanks so much for joining me! Parsnip, Kale & Blarney Cheese Tart
Hearty nutrient-rich vegetables and Irish cheese in a cream cheese-based crust make for a hearty delicious tart!
Makes 1 tart
For the Tart Dough:
½ lb salted butter, room temperature
½ lb cream cheese
2 cups all-purpose flour
¼ tsp salt
pinch of pepper
For the Tart Filling:
4 tbsp olive oil
2 medium parsnips, peeled, cut in half lengthwise and thinly sliced
3 medium onions, peeled & thinly sliced
3 cups kale, chopped
½ cup buttermilk
7 oz Blarney Cheese (or your favorite cheese), shredded
salt & pepper to taste
Make Tart Dough:
Put butter in bowl of an electric mixer with a paddle attachment. Mix at medium speed for 1 minute
Add cream cheese to bowl and mix another minute
Slowly add in the dry ingredients and mix until dough forms
Place dough on a lightly floured surface and form until a disc. Wrap in plastic and place in refrigerator for 10-15 minutes
Place dough on a floured surface and roll out with a rolling pin, adding small amounts of flour to keep it from sticking. Place in a tart pan and press dough into the shape of the pan. Leave about an inch hanging over and cut off the rest. Fold the extra inch of dough inside the tart tin. Place in freezer for one hour
Preheat oven to 400 degress. Line dough with foil and add pie weights or dried beans to keep dough from puffing up. Place tart pan on tin foil lined baking sheet. Bake 15 minutes. Lift up foil and using a paper towel, press down anywhere that the dough has risen. Continue to bake until golden brown, about another 8-10 minutes. Let cool
Make Filling & Bake:
Preheat oven to 325 degrees
Toss parsnips with 2 tbsp of the olive oil and a pinch of salt and pepper
Place them on a sheet pan and roast until just tender, 12-15 minutes
Heat 2 tbsp olive oil in a large saute pan over medium-high heat. Add onion and cook until just golden brown, about 10 minutes. Add kale, salt & pepper and cook until kale is wilted, about 8-10 minutes
In a bowl, beat egg and buttermilk. Add onion mixture and cheese.
Arrange parsnip slices on bottom of a 9.5 or 10 tart pan. Add onion mixture and spread evenly
Place in oven and bake until filling is set and golden brown, about 25 minutes. Eat warm or at room temperature

Kale and Mushroom Potato Casserole
Prep: 15 minutes | Cook: 55 minutes | Serves: 6
1 tablespoon butter
2 cups Cremini mushrooms, thinly sliced
½ medium onion, finely chopped
1 teaspoon minced garlic
1 teaspoon dried thyme
½ teaspoon salt
¼ teaspoon pepper
2 cups kale, finely chopped
1 cup chicken or vegetable broth
3 tablespoons corn starch
1 cup 10% cream or whole milk
1 (1.5lb) bag Little Potatoes, quartered
2 tablespoons grated Parmesan cheese
Preheat oven to 400 degrees F.
In a large pan, melt butter over medium heat. Add mushrooms and onion, stir and cook until softened and golden brown. Add garlic, thyme, salt and pepper, stir and cook 1 minute.
Stir in kale and cook 1 minute until wilted.
In a medium bowl, combine broth and corn starch with a whisk. Add broth and cream to pan and cook over medium heat, stirring constantly, until sauce is thickened.
Place potatoes in a greased 2-2.5 quart casserole dish. Pour sauce over and stir to combine. Sprinkle with Parmesan cheese.
Bake at 400 degrees F until potatoes are tender, about 45 minutes. If the casserole is browning too quickly, cover with tin foil after 25-30 minutes.
Garnish with fresh parsley if desired and serve immediately.

½ red onion
2 tablespoons olive oil
1 clove of garlic
½ thumb-sized piece of ginger
½ a red chili (if you like it spice like Dave, leave the seeds in!)
1 tbsp curry powder
1 tsp cumin powder
1 tsp ground coriander
1 tsp ground paprika
1 400g tin chopped tomatoes
1 400g tin coconut milk
1 400g tin of chickpeas (drained and rinsed
1 tsp salt
½ tsp ground black pepper
small bunch of coriander
zest of ½ lime
juice of ½ lime
-Heat the oil on a medium heat.
-Thinly slice the onion and garlic and add to the pan.
-Grate the ginger into the pan. No need to remove the skin!
-Thinly slice the chilli and add to the pan.
-Add the spices and cook for 30 seconds.
-Add the chopped tomatoes, coconut milk and chickpeas.
-Add the salt and pepper.
-Chop the coriander and add to the pan along with the lime zest.
-Add the lime juice, season to taste and serve with avocado and the grain of your choice. Lovely!

Fun and easy, delicious and spiked, could you ask for anything more? Start the morning off right with these Irish cream kissed crêpes!
½ c water
½ c whole milk
2 tb melted butter
¼ ts fine salt
1 ts vanilla
2 tb Irish creme
Green food color
1 c sifted unbleached all purpose flour
8 oz softened cream/mascarpone cheese
2 tb softened butter
½-1 c sifted powdered sugar
1 tb Irish creme
Powdered sugar for dusting
