How to Make Brown Gravy from Scratch
Thanks for watching! In this video I'm showing you how easy it is to make brown gravy.
✨First you want to make the roux and season it.
✨Add your broth/stock.
✨Then add the other ingredients.
The flavor of your gravy will be determined by the BROTH/STOCK. Use high quality ingredients for best results! Cook your roux long enough to get rid of the flour taste. It should also turn brown.
This wasn't stated in the video, but I recommend that you taste your broth/stock before using it! In the video I used a brand called Simple Truth beef broth (which was very weak). NOW I USE SWANSON BEEF BROTH WHICH IS THE BEST! So if your broth tastes weak, then you can add a little chicken or beef bouillon powder to kick up the flavor.
ALWAYS taste as you go and build the flavor of your gravy to your desired preference. Add a dash of salt LAST.

• 2 cups chicken, beef, turkey, or vegetable broth (or pan drippings)

1️⃣ 00:01:20 - In a medium-size saucepan, melt butter* over medium high heat.
2️⃣ 00:01:23 - Whisk in flour* until well combined and no white specks remain. Let cook 2 minutes.
3️⃣ 00:01:48 - Slowly pour in broth* and whisk well.
4️⃣ 00:02:01 - Bring to a simmer and heat until thickened to desired consistency, about 2 minutes, whisking constantly.
*You can use any kind of fat you'd like to when making a gravy in the same amount. Coconut oil, vegetable oil, olive oil, margarine, or bacon fat are all commonly used in addition to butter.
**For a gluten-free gravy, or for sweet gravy like chocolate gravy, use 2 tablespoons of cornstarch in place of the all-purpose flour.
***Any kind of broth, stock, or other liquid can be used in the same ratio to make gravy. Use vegetable broth for a vegetarian gravy.
****When using pan drippings from roasting a turkey, chicken, or beef roast, be strain the drippings through a fine mesh strainer to remove any gristle or fat.
*****You can also thicken your pan drippings using a cornstarch slurry directly into the pan rather than using the traditional gravy making method. This works well when there are a lot of pan drippings from a roast and the gravy is made while the pan drippings are still very hot, straight from the oven. Skim off any fat or gristle, then spoon out 1/4 cup of the pan drippings into a small bowl. Whisk in 2 tablespoons of cornstarch (for approximately 2 cups of drippings), and then pour this slurry back into the pan. Whisk well until gravy thickens.

Yield: 12 servings
1 pound breakfast sausage, hot or mild
1/3 cup all-purpose flour
3 to 4 cups whole milk, more to taste
1/2 teaspoon seasoned salt
2 teaspoons freshly ground black pepper, more to taste
Biscuits, warmed, for serving
With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly.
Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning.
Spoon the sausage gravy over warm biscuits and serve immediately!
This recipe can be easily doubled to serve 24.

Ingredients for Restaurant Style Chicken Gravy:
- Chicken, curry cut pieces with bones- 500 gms
- Onions, chopped- 2 medium
- Ginger Garlic paste- 2 tsp
Cashew-Red Chilli-Tomato paste:
- Cashew nuts- 10
- Whole red chillies- 5-6
- Red ripe tomatoes-2 medium
- Turmeric powder- 1/2 tsp
- Red Chilli Powder- 1 tsp
- Coriander powder- 2 tsp
- Garam Masala Powder- 1/2 tsp (Link to our Garam Masala Recipe:
- Kasuri Methi (Fenugreek Leaves)- 1 tsp (roasted and crushed)
- Oil- 4 tbsp
- Salt- 1 tsp
- Chop the onions and quarter the 2 red tomatoes
- Dry roast the cashew nuts and the red chillies in a pan on low heat for 2-3 mins. Set aside to cool. Coarse grind first and then add the quartered tomatoes. Continue to blend it into a smooth paste.
- Dry roast the fenugreek leaves in a pan, allow it to cool and then crush lightly with your hand.
- Heat oil in a pan/kadai.
- Add the chopped onions and fry on medium heat for 5-6 mins till translucent.
- Now add the Ginger garlic paste and fry for 2 mins on low heat.
- Add turmeric, red chilli and coriander powders and mix it well. Fry it on low heat for 2-3 mins after adding a splash of water.
- Now add the chicken pieces, mix well and fry it on medium heat for 5-6 mins till the chicken is browned well.
- Add the salt and mix it well.
- Now add the cashew-red chilli-tomato paste, mix well and fry for 5-6 mins on medium heat till oil separates.
- Add the Garam Masala Powder, mix and cook for 1 min.
- Add 200 ml water, mix and cover & cook for 15 mins.
- Remove the lid and add Kasuri Methi, mix and simmer for around 2 minutes.
- Serve with chapati or rice.

For Onion Paste (1 Cup)

1 Inch Ginger

1/2 tsp turmeric powder

1/2 ltr Water

Biryani Masala :
1. Take oil in a wok, add bay leaves, fenugreek leaves, onion paste and saute it.
2. Now put tomato into it and saute till the oil separates.
3. Also add some coconut paste till the oil separate.
4. Add into it turmeric powder, red chilli powder, coriander seed powder & biryani masala powder and saute it.
5. Finally add water, salt and coriander leaves and let the curry boil properly.
6. Once the curry is boiled well, turn off the flame and serve the delicious & hot biryani gravy.

Punjabi Chicken Gravy Recipe | Tari Wala Chicken | Punjabi Chicken Curry | Chicken Curry | Chicken Gravy Recipe | Punjabi Chicken Recipe
Ingredients for Punjabi Chicken Gravy Recipe:
- Chicken, curry cut with bones- 500 gms
- Whisked curd/yogurt- 1/2 cup
- Salt- 1 tsp
- Turmeric powder- 1/4 tsp
For paste, to be fried & blended:
- Cumin seeds- 1 tsp
- Green cardamom- 4
- Cinnamon- 1/2 inch piece
- Black cardamom-1
- Bay leaf-1
- Onion sliced-2 medium
- Ginger chopped-1” piece chopped
- Garlic cloves- 5
- Oil- 1.5 tbsp
- Tomato purée- 1 cup or purée of 2 fresh tomatoes
- Red Chilli powder- 1 tbsp
- Coriander powder-2 tsp
- Cumin powder-1 tsp
- Garam masala powder- 1/2 tsp (Link to our Garam Masala Recipe:
- Kasuri Methi (Roasted and Crushed) - 1 tsp
- Amchur powder (Dry Mango Powder)- 1/4 tsp
- Oil- 3-4 tbsp
- Marinate the chicken pieces with turmeric powder, curd/yogurt & salt as specified. Set aside for 30 mins.
- To make the paste, heat oil in a pan & add all the whole spices as specified above, sliced onions, ginger & garlic. Mix well & fry it on medium heat for 4-5 mins till the onions are soft & start changing colour. Remove and cool. Grind it into a coarse paste first, then add 3 tbsp of water & blend it into a smooth paste.
- Make a purée of 2 medium sized tomatoes. Alternatively use readymade tomato purée.
- Heat oil in a kadai or pan & add the blended paste.
- Sauté & stir on medium heat for around 4 mins till the mixture is fried & oil separates. Make sure the colour doesn’t become brown.
- Now add the tomato purée and sauté for around 2 mins till oil separates.
- Add the Red Chilli powder, Coriander and Cumin powder, mix well and sauté on medium to low heat for around 5 mins till oil separates. You can add a splash of water and continue sautéing if the masala tends to stick to the pan.
- Now add the marinated chicken and fry & stir it on high heat for around 3 mins.
- Continue to bhunno(sauté)on medium heat for another 10 mins.
- Mix it well, lower heat to minimum and cover & cook for 5 mins.
- Remove lid, add garam masala powder, give a stir and then add 250 ml water and 1/4 tsp salt.
- Mix it well and cover & cook on low heat for 15 mins.
- Now add the fenugreek leaves & amchoor powder. Mix it and simmer for 3-4 mins.
- Serve hot with roti or rice.

Easy Chicken Curry in Thick Gravy Recipe
Hi Guys, today I’ll show you how to make a Simple and Easy Chicken Curry in Thick Gravy. It’s also a healthy curry since we are not using much fat. All the ingredients are listed below in the description section. I’ll be using boneless skinless chicken breasts. You can substitute thighs if you like. This recipe saves time on cutting up a whole chicken and also saves cooking time.
Chicken breast, boneless, skinless, 2.2 lbs - 1 kg
Yellow Onion - 1.5 lbs - 4 large
Ginger 2 tblsps
Garlic 2 tblsps
Green chiles - 4
Tomatoes - 2 medium
White Vinegar - 2 tablespoons
Garam masala - 1 tsp
Turmeric - ½ tsp
Red Chili powder - ½ tsp
Ground black pepper - ½ tsp
Salt - 1 tsp
Cumin seeds - 1 tsp
Garam masala - 1 tblsp
Ground Turmeric - ¼ tsp
Oil - few tablespoons
I’m using 2.2 lbs or 1kg of boneless skinless chicken breasts cut into 1 inch pieces. Sprinkle 1 tsp salt on the chicken, ½ tsp ground black pepper, ½ tsp ground turmeric, 1 tsp garam masala, ½ tsp red chili powder. Mix this really well. Cover and marinate for at least 1 hour. While the chicken is marinating, you can prep the other ingredients. Cut up 4 large onions, about 1.5 lbs, this is what makes the gravy thick without having to use any fatty ingredients like cream, coconut milk or nuts. 2 tablespoons finely chopped ginger, 2 tablespoons finely chopped garlic and 4 green chiles chopped finely. If you want a mild curry, use 2 green chiles and if you want a very spicy curry, feel free to add more chiles. 2 medium tomatoes chopped. After the chicken is marinated, heat up a pan and pour in a few tablespoons of oil, enough to coat the bottom of the pan, remember we have to sautee a lot of onions. Add 1 tsp of cumin seeds and cook for 20 seconds or until you smell them. Add the chopped onions, ½ tsp salt and sautee until golden brown. This will take at least 10 minutes. Stir in between. Before the onions are golden, add the garlic, ginger and green chiles. Sautee until everything is golden. Now we can add the tomatoes. 1 tablespoon of garam masala, ¼ tsp ground turmeric. Mix this, cover and cook until the tomatoes have broken down. Stir occasionally. You can mash the tomatoes a bit. That looks good. Here is the marinated chicken. Add the chicken to the pot and mix well. Cover and cook for 15 - 20 minutes or until the chicken is cooked and soft. If you’re using chicken thighs, you’ll need to cook for an extra 10 minutes. Also cut the thighs into smaller pieces than the breast. Stir the curry occasionally and add salt if you need to. Here is the thick chicken curry all ready to eat. 1 chicken cut up with or without bones
All purpose flour or Self rising flour
One whole onion chopped
One bell pepper chopped
Vegetable oil for frying chicken
Creole seasoning ( optional)
Complete seasoning by Badia
Season chicken and flour to your liking.
Heat cooking oil to 350
Use 1inch of oil in skillet for frying chicken. Fry chicken on each side for 3 to 4 minutes for up to 16 minutes. Turn every three to four minutes so as not to burn your chicken. Pour excess oil out of skillet leaving the pan drippings and only about 4 tablespoons of oil. Add onions and bell pepper to sauté. Then add about 5 tablespoons of flour and stir constantly until the flour cooks a light color brown. This can take about 4 minutes. Then add about 5 cups of chicken broth to flour make sure your cooking temp is low heat. Allow to simmer a few minutes adjust the desired thickness of you gravy with more broth or water. Please add more black pepper to taste. Then place chicken in skillet and cover on top of stove or bake in oven for about 35 minutes to 45 minutes.

after 5mins,add few corriender leaves & cok the gravy in 2mins.that's all
