Greetings! These rum balls are super easy to make and are non-alcoholic so your children can enjoy them without you going to jail!
Everyone has a different recipe for rum balls an mine is no exception. These are made in a similar fashion to my cake pops, but without a stick and they are super flavorful. They being with a standard recipe for chocolate cake. I have used a box mix in a chocolate fudge flavor that I prepared using a pound cake recipe where you do not follow the box instructions but you add the following to the cake mix ( I only ever use Duncan Hines) 4 eggs, 1 box of instant pudding in a coordinating flavor, 1 cup water and 1/2 cup of vegetable oil. Mix that all up and bake as preferred.
I had some buttercream frosting on hand from another recipe I made a few weeks back so I added 1 cup of buttercream to the mixing bowl and added 1/2 cup of melted chocolate chips and whipped that together to give me a chocolate buttercream. You can feel free to use a cup of prepared chocolate frosting if you like! To all that I added some rum flavor. I used a bakery emulsion, but you can use extract. I also added some vanilla and then whipped that all together. Then I just crumbled in that cooled cake. Added a couple cups of flaked sweetened coconut and made it into a thick dough.
Roll this into balls and put in the fridge for about 30 minutes until they are firm. Then I dipped them into melted chocolate and put them back in the fridge until they were completely set, about an hour.
These are wonderful and they are delicious and not too time consuming.
I hope you will try them and I hope you love them!
