(THIS MAKES 25 TO 27 ONE TABLESPOON MEATBALLS DOUBLE OR TRIPLE RECIPE IF NEEDED)
* 1 pound ground chuck (you can also use ground beef or turkey)
* 1/4 teaspoon salt, garlic & herb, onion powder, cajun, and season salt
* 1 large egg
* 1 tablespoon minced garlic
* 1/4 cup onions (finely chopped)
* 1 tablespoon liquid smoke
* 1/2 cup breadcrumbs (I use a mixture of garlic and italian)
* cooking spray
* dipping sauces of choice
- preheat oven to 400 and line a baking sheet with foil and spray with cooking spray (set aside)
- combine all ingredients in medium/large bowl mix well with hands
- scoop mixture by 1 tablespoon and roll into ball and place on prepared baking sheet
- continue until no more mixture is left
- spray meatballs with cooking spray
- cook in oven for 15 to 18 minutes until done
- once meatballs are done place toothpicks in the middle and serve with dipping sauces or eat as is

Mini BBQ Meatloaf Bombs are a delicious and healthy dinner that is family friendly! For those of you who don't want to make one big meatloaf, I love making this 21 Day Fix mini meatloaf dinner made right in your Instant Pot!
1 cup tomato paste
1/2 cup water
1/4 cup honey
1/4 cup apple cider vinegar
1 tsp hot sauce
1 tsp smoked paprika
2 tbsp aminos
1 tsp minced garlic
1/8 tsp cumin
1 tbsp mustard
2 lbs ground beef
1 tsp salt
1 tbsp oregano
1 tsp pepper
1 tbsp aminos
2-3 medium-large yellow onions ends cut off and separated
In a medium sized bowl mix together all the BBQ sauce ingredients.
Cut the ends off your onions. Peel and separate the layers. You will need 8 large layers of onions.
Next combine all the meatball ingredients in a separate bowl. Using a red container (or a 3/4 cup measuring cup) measure and form your meatballs. Wrap each meatball in a layer of onion.
Arrange the meatballs in a stackable steaming rack, four meatballs on each layer. Smother each meatball with sauce then close the steaming container.
Add 2 cups water to the bottom of the Instant Pot insert and the trivet. Place the steaming rack onto of the trivet then close the Instant Pot lid, turning the pressure valve to sealing.
Using the manual setting cook the meatballs on high pressure for 15-18 minutes (I did 15). Let the pressure release naturally (about 8 minutes). Remove the steaming rack from the Instant Pot and serve the meatballs topped with any extra sauce you have.

1 - 2 medium leeks
1 tbsp butter
1 tbsp flour
2 cups milk
1 cup sour cream
300 grams ground pork
2 tbsp parsley
200 grams penne
½ grated cheese - gouda or cheddar
Remove external leaves from leeks. Rinse dirt. Cut into slices.
Preheat butter in a saucepan. Add leeks and stirring constantly fry it for 2-3 minutes.
Add flour, mix again. Then pour milk and sour cream. Mix it until your sauce starts to boil. Season it with salt and pepper. Set aside to cool down.
Put your meat into a bowl, add egg, parsley, salt and pepper. Mix it thoroughly with hands. Shape into six meatballs.
Take your casserole, smear butter in it and pour pasta into it. Then, pour your sauce mix it with pasta, add cheese on top.
Make six holes in your pasta, put meatballs inside them. Make sure that all pasta is covered with sauce and cheese.
Bake it for 35-40 minutes in a preheated to 160°C/320°F oven.
Serve with lettuce.
You can add a little bit of cheese to your sauce while it cools down, if you like a bit more thick sauce.

Finally got to do some Carnivore and Keto prep cooking today! It's been a while, and felt so good/exhausting to get this done! I'm excited for the week!
Sorry it's so long, I cut it about in half though! All told this took about 2 hours of prepping and baking. Still waiting on the ghee and bone broth to finish!

...For the cranberry sauce
1 cup of water
1 cup of apple cider
2 cups of sugar
2 bags of fresh cranberries
freshly squeezed juice of one navel orange
2 tbs of apple cider vinegar
ground nutmeg to taste
ground cloves to taste
ground allspice to taste
ground ginger to taste
ground cinnamon to taste
...For the glazed sweet potatoes
4 large sweet potatoes, sliced
1/4 cup of water
1/2 cup of dark brown sugar
1/3 cup of extra virgin olive oil
1/3 cup of honey
...For the turkey meatballs
2 lbs of ground turkey
1/2 onion, chopped
2-3 tbs of fresh parsley, chopped
1 egg, beaten
1 cup of seasoned bread crumbs
3 cloves of garlic, chopped
salt and pepper to taste
...For the greens
4 bags of spring mix greens
4 cloves of garlic, chopped
extra virgin olive oil

Brazi Bites Bourbon Meatballs Sliders Recipe

Bourbon sauce adds a special twist to this classic meatballs sliders recipe. These bite sized morsels are the perfect addition to your holiday table ????????
Serves about 10
For the meatballs:
2 lbs. ground beef
1/2 c. Chia seeds
1 3/4 tsp. salt
1/2 tsp. pepper
1/4 tsp. allspice
1/8 tsp. nutmeg
1 T. butter
1 c. Onion, fine diced
1 T. Dried oregano
1 T. Dried thyme
For the Bourbon Sauce:
1 c. ketchup
1/2 c. Bourbon
3 T. dark brown sugar
3 T. apple cider vinegar
1 T. Dijon mustard
1 T. honey
1 tsp. garlic powder
1 tsp. smoked paprika
1/2 tsp. chipotle chili powder
Salt and pepper to taste
For the slider buns:
1 - 2 bags of Brazi Bites
For the meatballs and slider buns:
1) Preheat oven to 400F.
2) In a medium saute pan heat butter. Add onion and saute until soft. Set aside.
3) In a large bowl combine beef, chia seeds, egg, salt, pepper, allspice, nutmeg, oregano and thyme. Add cooled, sauteed onions. Mix well.
4) Roll into 1 in balls and place onto a wire rack over a sheet pan.
5) Bake for 15-20 minutes until done and internal temperature is 155F. Bake the Brazi Bites at the same time as the meatballs, according to instructions on the bag.
For the Bourbon sauce:
6) In a medium saucepan combine ketchup, Bourbon, brown sugar, apple cider vinegar, Dijon, honey, garlic powder, smoked paprika, chipotle powder, salt and pepper over medium heat. Bring to a simmer and cook for 10-15 minutes until reduced.
7) Coat meatballs in the sauce. Slice Brazi Bites in half and stuff each with a sauced meatball. Skewer with a toothpick and serve
