How to Make Caramelized Onions
Onion type, skillet type, and other important considerations
Makes 2 cups of caramelized onions
3 Lb yellow onions, sliced pole to pole
1/3 cup olive oil
1 tsp balsamic vinegar or to taste
Set a 12 inch stainless steel skillet over medium-high heat and add the oil. When the oil starts to shimmer, add the onions and a couple of big pinches of salt. Mix to integrate the salt and then leave your onions alone until they brown on the bottom. Stir, and continue cooking over moderately-high heat only stirring after you get color. As they continue to cook, browning will happen faster and faster, so you need to watch them closely. If the bottom of the pan ever looks dry, add more oil and if onions or the brown bits are turning black instead of brown, lower the heat just a bit. This stage takes 10-20 minutes.
Reduce heat to low and cook stirring occasionally until the onions are very soft, jammy, and mahogany in color, 20-30 minutes. Add the vinegar. Taste and correct for salt. Tilt the pan, move the onions to the higher end, and let the oil drip out for at least 5 minutes. At this point the onions are ready to use, but I usually let them cool in the pan and then move them to a container. Store in the fridge for up to 10 days.
Note: For a smaller amount, you can cook 1.5 Lb of onions with ¼ cup of olive oil in a 10 inch skillet. That’s the smallest batch that works well.

Balsamic Roasted Red Onions

These Roasted Onions Are Perfect in Sandwiches and Salads, or Served on Their Own as a Side Dish
I've always thought all the members of the culinary lily family (onions, shallots, garlic, scallions, leeks etc...) to be the cornerstone of the culinary world. Imagine what recipes would be like without onions? They are one of the most basic, yet key ingredients in so many recipes, that it's impossible to contemplate cooking without them.
Although onions show up just about everywhere, it's not often that we cook (and eat!) them on their own.
This recipe honors the plump bulbs in the most delicious way. Here red onions are oven-roasted with balsamic vinegar and olive oil. The roasting process quickly transforms the bulbs into mellow and slightly-sweet morsels, but their essence intensifies even more as the balsamic permeates the onion layers with its own sweetness.
These lovely “lilies” make a marvelous side vegetable or condiment, but they’re also quite tasty tucked in sandwiches or salads.

The key to quicker caramelized onions is the ingredient we least expected: water. Here's what you need to know about buying a santoku knife:
Here's how to break down a chicken for parts:
We start our caramelized onions in a covered nonstick skillet over high heat with ¾ of cup water. The water and steam help the onions quickly soften. Then we remove the lid, lower the heat to medium-high, and press the softened onions into the bottom and sides of the skillet to allow for maximum contact with the hot pan. Instead of finishing with sugar or honey as many recipes call for, we add baking soda, which speeds up the reaction that converts flavorless inulin (a polysaccharide present in onions) to fructose.

Rich lamb stew with honey and Caramelised onion
The best stew you will ever taste. This slow braising method fuses the ingredients together leaving you with an incredible tender, moist and rich flavoured meat.
Lamb is becoming a more fashionable red meat as it’s a healthier meat as it contains many vitamins, minerals and B12. Try and buy grass fed and it will also have the heart healthy omega 3 fatty acids.
But enough about health, this recipe is about taste. If you like those rich casserole stews, then look further, this is a complete meal cooked in one pot. The slow cooking process tenderises the meat and develops the flavour.
A complete meal because it has carrots, peas, potatoes all built in. The best part is that it will taste even better the next day, so make a big pot. It’s also easy to freeze for ready made meals when you’re short on time. I usually place them in glass storage containers and then microwave them or add a splash of water in a saucepan and reheat on very low heat.
For the wine, make sure you buy a full bodied wine, like a shiraz or cabernet sauvignon. Do not go crazy on the price but don’t skimp either, the quality of the wine will affect the sauce. It is a red wine sauce after all.
As an option, I like to serve it with a crusty toasted bread, rubbed with a clove of garlic for that extra flavour. This is of course optional. Sprinkle some freshy chopped parsley or you can even use the celery leaves to add colour and freshness before serving.

How to Caramelize Onions! Noreen's Kitchen Basics
Greetings! A couple of weeks ago I did a BBQ Bacon Burger video and in that video I used some caramelized onions on top of our burgers. Since then I have had an overwhelming cry from my viewers to show how to caramelize onions! So here is how I do it.
There is no mystery. Onions, butter, salt and a bit of sugar and the most important ingredient, patience! You cannot rush caramelized onions. You must wait for them to be ready. Rushing the process will yield undesired results such as cooked, limp and pale onions. Never use oil, only butter! You can caramelize to a degree with oil, but with butter you get a much better result. Trust me on this one, these onions are perfect.
Put them on your burger, on a steak, next to a London broil or on top of a Foccacia that has been seasoned with rosemary, thyme and oregano then throw some smooth goat cheese on for good measure. Any leftover onions can be stored in an airtight container in the fridge and used within a week. I make a killer caramelized sweet onion dip that I promise to share with you soon! Be on the lookout for that video as well as the Foccacia!
I hope you give caramelizing onions a try soon and I hope that you love it!

CARAMELIZED ONION BURGER WITH SMOKED CHEESE! - THE BEST HAMBURGER RECIPE - Dunyas Kitchen
This caramelized onion hamburger with smoked cheese is so delicious and easy to make. The smoked cheese in the beef patty makes it extra yammy! Try this recipe out and comment down below how they came out and how they tasted!
Ps: be generous when adding the sauce to the bun. The sauce is very important, because the beef patty has no salt or whatsoever. Using a sauce with a little bit of hot sauce, ketchup and mayo gives this burger a good taste!
Tip: When you want to caramelize your onion, you need to fry the onion until they are soft and light brown. Fry them for a few min. than add a tsp brown sugar. Brown sugar has a delicious taste especially when you're caramelizing your onions. If you have no brown sugar, than add regular white sugar. Let it fry together with the sugar for about a min. or until the sugar is melted. Than turn off the heat.
Tip: Using smoked cheese inside of the beef patty gives this burger an extra delicious taste. If you have no smoked cheese than use a regular cheese like edamer cheese. Ps: You should definetely try to make once with smoked cheese, because I really recommend it!
