This video will also show you the best way to peel garlic cloves with no mess and with no sticky garlic juices. This is the microwave technique of peeling garlic cloves. The oysters were baked at 375°F (190°C) for about 10 minutes using a Breville Smart Oven Pro.

Oysters Rockefeller Recipe: fresh oysters on the half shell coated in cream, spinach and cheese for an unbelievable flavor that is sure to wow your guests.
I remember the first time I saw an oysters Rockefeller. I thought it was beautiful the way the oyster shells were still being used on the bright white plate. The extra parmesan cheese everywhere. It just, caught my eye. I never in a million years wanted to eat an oysters Rockefeller because it was an oyster so no way.

Oysters Rockefeller Recipe
• 2 tablespoons of olive oil divided use
• 1/2 whole small diced yellow onion
• 2 cloves finely minced garlic
• 2 cups heavy cream
• 4 cups packed baby spinach
• 24 whole shucked oysters on the half shell oysters and shells divided
• 1/4 cup chardonnay wine
• ½ ounce julienne prosciutto ham
• 2 ounces shredded asiago cheese
• ½ cup breadcrumbs
• shredded Parmesan cheese
• sea salt and fresh cracked pepper to taste
Prep Time: 20 minutes
Cook Time: 10 minutes
1. Preheat the broiler to high heat. In a large sauté pan on medium-high heat with 1 tablespoon of olive oil, caramelize the onions and garlic. Once brown add in the cream, turn the heat down to medium and reduce until the cream is the consistency of Alfredo sauce.
2. Once the heavy cream is to the desired consistency add in the baby spinach and cook until mixed in and slightly wilted. Season the mixture with salt and cracked black pepper. Set pan aside.
3. In a separate medium sauté pan on medium-high heat with 1 tablespoon of olive oil add in the raw oysters (without the shell) and sauté for 1 to 2 minutes to slightly cook. Add the Chardonnay wine to deglaze the pan while you sauté the oysters for a further 2 minutes.
4. Place the oyster shells on a sheet pan that you’ve lined with parchment paper and divide the cooked oysters amongst the shells. There should be 1 oyster for 1 shell.
5. Top each oyster with a little bit of the cream-baby spinach mixture followed up with julienne prosciutto ham and shredded Parmesan cheese. Note: Simply divide all the ingredients between the oysters.
6. Broil the pan of oysters in the oven on high for 2 minutes or until the cheese is melted and golden brown.
7. To Plate: Remove oysters and shells from the pan and add to a tray along with lemon slices.

12 oyster half shells
1-pound rock salt
½ stick (4 tablespoons) salted butter
1 teaspoon garlic, minced
1 bunch green onion, finely chopped
1/8 cup celery, minced
¼ dry white wine, whatever you like
2 ½ cups baby spinach, chopped
4 slices crispy bacon
4 ounces cream cheese, softened

Rockefeller & Somerset oysters-
* 2 dozen raw oysters (in shell)
* 1 lb raw spinach
* 1/2 red onion, chopped
* 1 cup white wine
* 1/4 cup Perno liqueur
* 3 dashes Worcestershire sauce
* 1 cup parmesan cheese, grated
* 1/3 cup oyster liquor (juice from oyster)
* 1/2 cup whole milk
* 1/3 cup bread crumbs
* 1/2 tsp crab seasoning
* 1 tbsp smoked paprika
* 5 tbsp butter, salted
* 5 tbsp flour
* salt and pepper, to taste
* 1/2 cup ketchup
* 2 tbsp horseradish
* 1/2 lemon, juice only
* 1 tbsp sriracha
* 2 dashes Worcestershire sauce
* 1/3 tsp crab seasoning
* 4 tbsp red onion, small diced
* 1/2 cup red wine vinegar
* 1 tsp black pepper, freshly cracked
* 1/3 cup Old Bay seasoning
* 1 tbsp salt
* 1/2 tbsp black pepper
Crab Seasoning: Combine all spices in a bowl. Mix well.
Cocktail Sauce- Combine all ingredients in a small bowl. Mix well. Season and adjust sauce accordingly.
Mignonette Sauce- Combine all ingredients in a small bowl. Mix well. Season and adjust sauce accordingly.
Oyster Rockefeller- Shuck a dozen raw oysters. Preheat oven to 400ºF. Pour the juice from the oyster in a small bowl and set aside. KEEP THE SHELLS! Heat a pan over medium high heat. Melt your butter in the pan. Slowly incorporate you flour, whisking constantly, until you have made a roux. Add red onions and sauté for 2 minutes. Slowly pour in 1/2 cup of white wine. Continue to whisk until the wine is absorbed and the roux is no longer sticking to the pan. Remove half of the roux and set aside. With the remaining roux, begin tearing your spinach and adding it to the pan. Cook out all of the moisture from the spinach. Slowly whisk in whole milk until the sauce has a creamy consistency. Season with crab seasoning. Add Perno liqueur to taste! Remove sauce from heat and let cool. Once cooled, pour sauce over each oyster until the oyster is completely covered. Sprinkle parmesan cheese and bread crumbs on each oyster. Cook oysters in oven for about 8-10 minutes.
Somerset Oysters- Shuck a dozen raw oysters. Preheat oven to 400ºF. Reheat leftover roux in a medium high heat pan. Slowly whisk in white wine until sauce is smooth. Once smooth, begin whisking in the oyster liquor. Season with a few dashes of Worcestershire sauce. Mix well. Slowly incorporate grated parmesan cheese into sauce. Whisk constantly. Cook sauce until wine has cooked out. Season with salt and pepper to taste. Remove from heat and set aside to cool. Cover each oyster with sauce and sprinkle grated parmesan on each oyster. Lightly dust with smoked paprika. Place in oven, and cook for 8-10 minutes.
Serve and enjoy :)

Salt and water( to rinse oyster)
1/2 tbsp grated garlic
400 cc/ ml fresh milk
500 cc water
1 tsp chicken powder
1/4 tsp white pepper
1/2 tsp salt
160 g potato
100 ml nestle cream
80g Japanese spinach

New Orleans Style Charbroiled Oysters
This is an oven method but the same steps could be used for the grill! Heat your grill to 450 degrees and cook away!! The butter will drip from the oysters on the grill and cause a small flame off and on but that's perfectly normal.

How to cook New Orleans inspired and Spicy Oysters!

New Orleans inspired and Spicy Oysters Mukbang:
New Orleans Inspired Serving: 2 people (12 oysters)
1 stick of salted butter
4 garlic cloves (minced, or pureed)
¼ tsp smoked paprika
¼ tsp cayenne
½ tsp hot sauce
¼ tsp Worcestershire
1 tsp Italian seasoning
1 stalk green onion (chopped)
2 Tbsp fresh parsley (chopped)
1 cup bread crumbs (unseasoned)
1/4 cup grated parmesan cheese
pinch of salt and pepper to taste
2 tbsp lemon juice
Optional garnish: fresh lemon wedges and ½ loaf of bread.
1. Melt butter on low heat in a pot. Combine garlic, paprika, green onion, cayenne, hot sauce, Worcestershire, salt, pepper, and Italian seasoning. Allow to simmer 1-2 minutes, then turn off heat.
2. Allow butter to slightly cool (about 3-5 minutes), then add parsley. Mix.
3. In a separate bowl, combine bread crumbs and cheese.
4. Shuck open oysters, leaving them on the half-shell. Place on to grill, or oven pan (oyster meat facing up).
5. Once water around the oyster begins the bubble, spoon on butter mixture to each oyster. Sprinkle breadcrumb mix over the sauce.
6. Cook until most of the oyster juice has cooked off, and the breadcrumb mix is beginning to brown.
7. Serve fresh with loaf of bread and garnish with lemon (optional).
*Garlic bread, or toasted bread is best to serve with dish.
*Freezing your oysters for at least one hour will make shucking them easier.
*Always soak your oysters for at least 30-60 minutes to allow any dirt to fall off, or pushed out by the oyster.
Red Spicy Thai Sauce (Serving size: 2-4 people)
8-12 fresh Thai chili peppers
1 tbsp. of dried Thai chili powder
2 tbsp. chopped Cilantro
2 tbsp. Tamarind Concentrate
1 small shallot- chopped
1clove of Garlic- minced
1Tbsp. Roasted Rice Powder
1/4 cup of Fish Sauce
Juice 1/2 a lime
1 tsp of water
2 tbsp. of sugar
Pinch of salt
1. Either grind Thai chili peppers in a mortar and pestle, or mince on a cutting board. Then mix in dried Thai Chili powder.
2. Mince garlic, chop up cilantro, green onion, and shallot. Combine with chili peppers.
3. In a bowl, stir in fish sauce, tamarind concentrate, rice powder, lime, water, sugar and salt until combined.
4. Mix all ingredients together, and serve.
Tip: *Optionally, may heat up fish sauce, sugar, salt, and tamarind juice on low heat in a pot until sugar has dissolved. Must be completely cooled before adding remainder of ingredients.

Oysters Rockefeller | Quick And Easy Way To Shuck An Oyster | Stay At Home Recipe
In this video, we are going to show you a homemade fine dining ideas by making Oyster Rockefeller and easy tricks to shucking oysters safely. #Stayathomerecipe
1 dozen fresh raw oysters
2 Tbsp unsalted butter
2-3 cloves chopped garlic
1-2 Tbsp chopped shallots
1 Tsp salt
1 cup cream or half and half
3-4 Tbsp Parmesan Cheese
1 cup baby spinach
Low heat slowly incorporate all ingredients. Set aside and let cool
Clean oysters with a brush
Use a kitchen rag or paper towel to wrap around the oysters. This way you can get a better grip of the oyster. Be careful because the shucker is sharp.
Place cup side down and hold flat side up. There is a hinge at the end of the oyster. Gently place sharp point of shucker in the hinge, light tap the top of shucker until you feel your shucker has been inserted. Once it’s insert, wiggle shucker side to side to get a better hold. Then gently twist your shucker and the lid will pop. Work your way around the top of the shell and cut through the tiny part where the oyster is attached to the top and your top shell will come loose.
Use clean water to rinse off any shell fragments. Place it back on your plate upside down to drain the remaining water. Once you have cleaned all oysters. Organize oysters on a salted oven safe plate. You can use rock salt or regular table salt. This will hold your oysters in place.
Seasoning with spinach mixture:
Place small amount of spinach on each oyster, then scoop sauce and shallots on top. End with finely shredded cheddar and mozzarella cheese mix.
Set oven on Broil. Place oysters on middle rack. Broil for 3 minutes until cheese has brown.
