This meal prep is GREAT to eat cold and SO easy to make! These grilled veggies are BOMB and the grilled tofu and roasted potatoes will make your mouth water. This prep will take you only 30 minutes and you can make TONS to save in the fridge or freezer to eat whenever you need a quick meal!

INGREDIENTS (to make 6 meals, but can double or triple to make a ton!):
6 small russet potatoes
2 (420g) package of tofu
3 bell peppers
1/4 cup olive oil
1/4 cup balsamic vinegar
2 tbsp Sir Kensington’s Spicy Brown Mustard
STORAGE AND REHEATING DIRECTIONS:
1. All meals will be fine in the fridge for 5 days.
2. Freeze all the meals you will not eat in the first 4 days.
3. If you decide to freeze them they will last for 3 months.
4. Take the meal out the night before you plan to eat and place in fridge to thaw.
5. Once thawed, reheat in the oven or saute pan for a few minutes or eat cold... or put in your Hot Logic!

Grilled Tofu Tikka
2 bell pepper (green & red) diced
1 onion diced
400 grams extra firm tofu / paneer diced
1 cup yogurt
2 tsp corn flour
1 tsp cumin powder
1 1/2 red chilly powder
1 tsp ginger garlic
1 tsp coriander powder
1/2 garam masala powder
1/2 dry fenugreek leaves
1/2 turmeric powder

Learn how to cook crispy baked tofu three delicious ways. The base of this tofu recipe is made up low-sodium tamari, avocado oil, salt, pepper, garlic powder and cornstarch.

25oz Super Firm Tofu (1.5 pack - I used the Trader Joe's version)
3 Tbsp BBQ Seasoning (I used ‘Grill Mates Memphis BBQ Pit rub)’
3 Tbsp Mesquite Seasoning ( used Grill Mates)
2 Tbsp Coconut Aminos
1 Tbsp Liquid Smoke
1 Tbsp Vegan Worcestershire Sauce (I used Annie’s)
1 Tbsp White Wine Vinegar
1/4 Tsp Cayenne Pepper
2 Tbsp Complete Seasoning (I used the brand Badia)
Ingredients for Veggies
2 Tbsp Coconut Aminos
1 Tbsp Coconut Oil
1 Tbsp White Wine Vinegar

Grilled BBQ Tofu
The best and easiest marinade ever – no-fuss and packed with so much flavor! You’ll never need another grilled tofu recipe again!
Seriously. It doesn’t get any easier than this recipe. And it’s practically fool-proof.
Grilled BBQ Tofu
450 g extra firm tofu
4 tbsp soy sauce
4 tbsp maple syrup
1 tbsp Worcestershire sauce
2 tbsp olive oil
2 tbsp lime juice
2 tsp onion powder
2 tsp garlic powder
1/4 tsp smoked paprika
Cut tofu into thick slices, set aside.
In a medium bowl, whisk together soy sauce, maple syrup, worcestshire sauce, olive oil, lime juice, onion powder, garlic powder and smoked paprika.
In a gallon size Ziploc bag or large bowl, combine the marinade and tofu; marinate for at least 1 hour to overnight, turning the bag occasionally. Drain the tofu from the marinade.
Preheat grill to medium high heat. Add tofu to grill and cook, flipping once and basting with marinade until cooked through, about 2 minutes on each side
Serve with the remaining marinade.

Spicy braised tofu (Dubu-jorim: 두부조림)
Today's recipe is dubu-jorim (spicy braised tofu). It's fresh tofu braised in a savory-spicy sauce and pan fried with caramelized onion, garlic, and green onions, making it juicy, a little spicy, crispy on the outside and soft on the inside. It's a delicious side dish for rice, noodles or porridge, and tastes meaty even though it's a totally vegetarian dish.
